The staff structure was analyzed according to such criteria as work experience, age, gender, level of education and level of English language proficiency. In the course of the work, a market analysis of the cafe business sphere was carried out; the seating capacity of 70 seats and the work schedule from 11 a.m. to 23 p.m. were justified. A menu with a free choice of dishes, technological documentation, schemes of the functional relationship of the cafe premises were developed. The cafe management scheme was presented, the staffing table was compiled, and a two-week work schedule for 26 employees of the cafe was developed. A job profile of a cook, a standard for the procedure for giving second hot dishes and a list of potential suppliers were drawn up. Measures to ensure safe working conditions for employees and fire safety measures were developed. The main economic indicators were determined; calculated the income and expenses of the cafe. A children’s cafe menu was developed, regulatory and technical documentation and a flow chart for the process of production and sale of products in the cafe were compiled. Based on the calculations made and taking into account the current plan of the leased premises with an area of 254 sq.m., a children’s cafe’s layout was developed. Measures were developed to ensure the safety of life of employees and consumers in the children’s cafe. The calculation of the annual economic indicators of the children’s cafe was made. The payback period is about 2.2 years. The enterprise is cost-effective, and its opening is advisable.

The restaurant’s menu was developed, which presents dishes of Western European and Mediterranean cuisine. Technological calculations of functional groups of premises: storage, production, auxiliary and premises for consumers, were completed. Based on the calculations made and taking into account the current plan of the leased premises with an area of 641 sq.m., a restaurant planning solution was developed. The enterprise management scheme was presented, a staffing schedule was compiled, and a two-week work schedule for 45 restaurant employees was developed. The potential contingent of the enterprise was determined, competitors were analyzed and the pastry shop concept was developed. The seating capacity was substantiated – 80 seats, and the work schedule was established - from 10:00 to 22:00. The capacity of the pastry shop is 646 people, production capacity - 1924 dishes. The menu of the pastry shop was developed, which presents dishes: cakes, pastries, sweet dishes, cold dishes, as well as hot and cold drinks. The technological calculations of the functional groups of premises: storage, production, auxiliary and premises for consumers were made. Based on them and taking into account the current plan of the leased space of 233 sq.m., a pastry shop planning solution was developed. The enterprise management scheme was presented, the staffing table was compiled, and the two-week work schedule for 33 pastry shop employees was developed. The job profile of the chef of the pastry shop, the standard for the procedure for receiving an order and a list of potential suppliers were compiled. Measures to ensure comfortable working conditions in the production premises of the pastry shop and fire safety measures were developed. The calculation of the main economic indicators was made. Capital investments in the enterprise amount to 3730400 rubles. Payback period – 3,5 years.

Measures have been drawn up to create safe, comfortable working conditions. The basic economic parameters are calculated, which showed that: the amount of net profit in relation to the turnover will be 14 % and the payback period of profit will be 3 years.
