With the increase of consumer demand for high-quality animal protein, it becomes imperative to improve meat quality through nutritional strategy. Resveratrol is a plant polyphenol that exists in grapes and grape products, and it has been considered as a potential functional feed additive. Here, we aimed to explore the optimal dose of resveratrol in Pekin ducks' diet and its effect on improving meat quality. A total of 432 male Pekin ducks (1-day-old) were selected and randomly allotted to 4 treatment groups, with each group containing 6 replicates. Four different levels of resveratrol were evaluated (0, 150, 300, and 450 mg/kg) for 42 d. The carcass traits, meat quality, and muscle fiber characteristics of Pekin ducks were investigated. Results showed that a∗ 24h , b∗ 24h , intramuscular fat, crude protein, total flavor amino acid content of duck breast muscle, and a∗ 45min of duck leg muscle were increased (P < 0.05) by resveratrol. Resveratrol also reduced abdominal fat deposition, shear force, L∗ 45min of breast muscle and drip loss, shear force, and L∗ 45min of leg muscle. In addition, the breast muscle fibers of resveratrol-fed ducks had lower diameter and cross-sectional area and higher density (P < 0.05). Overall, we conclude that dietary resveratrol supplement can effectively improve Pekin duck meat quality, the optimal additional range in diet being 300 to 450 mg/kg. Its underlying mechanism might be partly through stimulation of intramuscular fat and flavor amino deposition and alteration of muscle fiber characteristics. [ABSTRACT FROM AUTHOR]

The aim of present study was to investigate the effects of Lycium chinense Miller (LCM) stem powder on the carcass traits in White Roman geese. A total of sixty males were randomly divided into control group and 3 treatments. The percentage of 0, 1, 3, or 5% of LCM stem powder were added in daily feed, whereas three replicates (5 geese per pen) were set up in the study. The geese were fed on the jacked with full mesh floor in the non-opening house at the 3 to 12 weeks of age. Feed and water were ad libitum. At the 12th week of age, 2 geese were randomly selected from each pen for slaughter, then their breast meat was taken for proximate analysis. The results showed that there were no significant differences between each treatment for preslaughter liveweight, carcass weight, dressing percentage, gizzard weight and abdominal fat weight. In addition, there were no significant differences among treatments in composition analysis of breast meat. In conclusion, there were no adverse effects on the carcass traits by feeding 5% LCM stem powder in meat-type geese. [ABSTRACT FROM AUTHOR]

The article presents a study which investigate the single nucleotide polymorphism (SNP) of insulin-like growth factor binding protein 3 (IGFBP3) gene and the correlation between polymorphism and carcass traits in red steppe. The study states that polymorphisms has a vital effect on marbling. The study concludes that IGFBP3 gene is a major gene or a QTL linked gene that is connected with meat quality traits in red steppe.

Simple Summary: In the traditional single marker regression approach for genome-wide association studies, if the number of involved individuals is small and the number of single nucleotide polymorphisms (SNPs) to be tested is very large, the probability of getting a significant association simply due to chance becomes enormous. Other techniques, such as the Bayesian methods, require several a priori assumptions, as an a priori posterior inclusion probability threshold, that can limit their effectiveness. In the present study, a multivariate algorithm able to partially overcome this problem was proposed. On simulated data, with 3000 individuals, only 13 and 3 quantitative trait loci (QTLs) were obtained with the single marker regression and the Bayesian approaches, respectively. On the other hand, the multivariate algorithm detected 65 QTLs in the same scenario. The gap between the single marker regression and the multivariate methods slowly decreased as the number of animals increased. This figure was also confirmed on real data. Genome-wide association studies (GWAS) are traditionally carried out by using the single marker regression model that, if a small number of individuals is involved, often lead to very few associations. The Bayesian methods, such as BayesR, have obtained encouraging results when they are applied to the GWAS. However, these approaches, require that an a priori posterior inclusion probability threshold be fixed, thus arbitrarily affecting the obtained associations. To partially overcome these problems, a multivariate statistical algorithm was proposed. The basic idea was that animals with different phenotypic values of a specific trait share different allelic combinations for genes involved in its determinism. Three multivariate techniques were used to highlight the differences between the individuals assembled in high and low phenotype groups: the canonical discriminant analysis, the discriminant analysis and the stepwise discriminant analysis. The multivariate method was tested both on simulated and on real data. The results from the simulation study highlighted that the multivariate GWAS detected a greater number of true associated single nucleotide polymorphisms (SNPs) and Quantitative trait loci (QTLs) than the single marker model and the Bayesian approach. For example, with 3000 animals, the traditional GWAS highlighted only 29 significantly associated markers and 13 QTLs, whereas the multivariate method found 127 associated SNPs and 65 QTLs. The gap between the two approaches slowly decreased as the number of animals increased. The Bayesian method gave worse results than the other two. On average, with the real data, the multivariate GWAS found 108 associated markers for each trait under study and among them, around 63% SNPs were also found in the single marker approach. Simple Summary: Fungal and bacterial fermentation improves the nutritional quality of soybean meal (SBM). The beneficial effects of fermented soybean meal (FSBM) on growth performance and gut health of broiler chickens have been demonstrated. However, FSBM is usually used in pre-starter diets of broiler chickens due to the high cost. In the present study, the SBM in diets was partially replaced by FSBM to evaluate its effect on the growth performance, carcass traits, and meat quality of broiler chickens. The growth performance and major carcass traits were not significantly affected by FSBM treatments. Different levels (2.5%, 5.0%, and 7.5%) of FSBM supplementation influenced the meat color, pH, nutritional composition, and antioxidant properties. The improvement of meat quality would extend the shelf life of meat and increase consumer acceptability to chicken. The 2.5% FSBM was recommended in a broiler diet. The usage of fermented soybean meal (FSBM) in poultry feed is limited due to the high cost. The present study was conducted to examine the carcass traits and meat quality of broiler chickens that were fed diets with partial replacement of soybean meal (SBM) with FSBM. The 336 one-day-old chicks were assigned to four groups with 0% (control), 2.5%, 5.0%, and 7.5% FSBM addition in corn-SBM-based diets. Compared with the control, 2.5% and 5.0% FSBM decreased leg muscle yield, breast drip loss, and cooking loss (p < 0.05). The 7.5% FSBM increased the ultimate pH of breast and thigh muscles, and all FSBM treatments decreased muscle lightness and breast malondialdehyde content (p < 0.05). The 2.5% FSBM increased breast total superoxide dismutase activity, while 7.5% FSBM reduced breast hydrogen peroxide level (p < 0.05). All FSBM treatments elevated breast contents of bitter and sour tasting amino acids, and 2.5% and 7.5% FSBM increased breast glutamic acid and total free amino acids (p < 0.05). The 5.0% and 7.5% FSBM elevated thigh isoleucine and leucine contents (p < 0.05). In conclusion, FSBM replacing SBM affected meat quality with the decrease of lightness and increase of pH, water-holding capacity, antioxidant properties, and free amino acids. Objective: This study was conducted to investigate the effect of fermented cottonseed meal (FCSM) on growth performance, carcass traits, and fat deposition in white-feather broiler chickens., Methods: A total of 480 male one-day-old white-feather broiler chickens were selected randomly and divided into four groups with six replicates of 20 chickens in each. The experimental chickens were fed diets including 3%, 6%, or 9% FCSM fermented by Candida tropicalis until 42 days old. In the experiment, the chickens of the control group were fed soybean meal., Results: FCSM supplementation linearly decreased the feed conversion ratio from d 15 to 21 and d 36 to 42, respectively (p<0.05). The percentage of carcass and semi-eviscerate increased in response to dietary FCSM supplementation at d 21 (p<0.05). The percentage of eviscerated and semi-eviscerate of 3FCSM was higher than that in other groups at d 35 (p<0.05). At the age of 42 d, the percentage of carcass increased in a quadratic way among increasing FCSM in diets (p<0.05). The subcutaneous fat thickness linearly decreased with the increasing levels of FCSM at d 21 (p<0.05). Gompertz and Logistic functions provided a better fit on abdominal fat and subcutaneous fat, respectively. The best fitted equation predicted that the maximum growth rate of abdominal fat weight and subcutaneous fat thickness occurred at d 28. FCSM had no significant effects on the shape of growth curve of abdominal fat weight and subcutaneous fat thickness, but reduced the height of the curve. Birds receiving the 6FCSM diet for 21 d had smaller adipocyte surface and lower serum glucose as well as triglyceride concentration., Conclusion: FCSM is beneficial for broiler chickens as it positively affects their growth and carcass in addition to altering their fat deposition.

Short chain fatty acids (SCFA) are the main products of indigestible carbohydrates undergoing bacterial fermentation in the hindgut, which are related to some physiological functions. This study was designed to investigate the effects of SCFA infusion by ileum on the carcass traits, meat quality and lipid metabolism of growing pigs. In a 28-day study, 24 growing barrows fitted with a T-cannula in distal ileum were divided into 4 treatments: 1) Control, 2) antibiotics (AB), 3) AB + 300 mL of SCFA1 solution (ABS1), 4) AB + 300 mL of SCFA2 solution (ABS2). The concentrations of acetate, propionate and butyrate in SCFA1 solution were respectively 61.84, 18.62 and 12.55 mmol/L, and in SCFA2 were respectively 40.08, 15.41 and 9.78 mmol/L. The results showed that the SCFA infusion increased the average daily feed intake and average daily gain of pigs ( P <  0.05). Meanwhile, the SCFA treatments increased longissimus dorsi area ( P <  0.05) and carcass weight ( P  = 0.058), decreased the drip loss of longissimus dorsi ( P  = 0.059), and reduced serum concentrations of triglyceride, total cholesterol and urea nitrogen ( P <  0.05). Besides, the SCFA administration inhibited the mRNA expressions of fatty acid synthase ( FAS ) and acetyl-CoA carboxylase in longissimus dorsi ( P <  0.05), the mRNA expression of FAS in the liver ( P <  0.05), and the mRNA expression of hormone-sensitive lipase in abdominal fat ( P <  0.05). Short chain fatty acid infusion also enhanced the mRNA expression of carnitine palmitoyltransferase-1α in the liver ( P <  0.05), the mRNA expressions of peroxisome proliferator activated receptor gamma and lipoprotein lipase in abdominal fat ( P <  0.05), and the mRNA expressions of free fatty acid receptor 2, glucose-6-phosphatase and phosphoenolpyruvate carboxykinase 1 in the colon ( P <  0.05). The use of sexed semen to produce purebred replacement heifers allows a large proportion of dairy cows to be mated to beef sires, and quantitative and qualitative improvements to be made to beef production from dairy herds. The major dairy and beef breeds are undergoing rapid genetic improvement as a result of more efficient selection methods, prompting a need to evaluate the meat production of crossbred beef × dairy cattle produced using current genetics. As part of a large project involving 125 commercial dairy farms, we evaluated the combined use of purebreeding with sexed semen and crossbreeding with semen from beef sires, particularly double-muscled breeds. A survey of 1,530 crossbred calves revealed that, whereas purebred dairy calves are destined almost exclusively for veal production, beef × dairy crossbred calves are also destined for beef production after fattening on either the dairy farm of birth or by specialized fatteners. In veal production, compared with Belgian Blue-sired calves (taken as the reference), double-muscled INRA 95-sired calves had a lighter slaughter weight (303 vs. 346 kg), but a greater dressing percent (62.3 vs. 58.4%). Limousin (also known as Limousine)-sired calves had a smaller average daily gain (1.26 vs. 1.34 kg/d), and lighter slaughter (314 vs. 346 kg) and carcass weights (182 vs. 201 kg). Last, Simmental-sired calves had a similar growth rate, but lighter carcass weight (177 vs. 201 kg), smaller dressing percentage (55.3 vs. 58.4%), and smaller muscularity scores (3.25 vs. 3.72). In the case of young bulls and heifers fattened on the dairy farm of birth, Belgian Blue-, Piemontese (also known as Piedmontese)-, and Limousin-sired calves performed similarly; the only exception was that Piemontese-sired calves had a greater dressing percentage. Belgian Blue- and Limousin-sired calves performed similarly when fattened by specialized beef producers. In both veal and beef production, the effects of dam breed were less important than sire breed. Considering the entire project, we can conclude that the combined use of sexed semen for purebreeding and conventional beef semen for terminal crossbreeding improves meat production from dairy herds, especially when the sires are double-muscled beef breeds., (Copyright © 2021 American Dairy Science Association. Seaweeds are functional feed ingredients that have antioxidant, antimicrobial, and growth-boosting properties that can improve poultry product quality. This study, therefore, investigated the effect of graded levels of green seaweed meal (Ulva spp.) (SWM) on visceral organ sizes, carcass characteristics, and meat quality and stability of Boschveld indigenous hens. A total of 275, four-week-old female chicks (202.4 ± 6.65 g of live weight) were reared on 5 isocaloric and isonitrogenous diets formulated by adding SWM at a concentration of 0 (SW0), 2 (SW20), 2.5 (SW25), 3 (SW30), and 3.5% (SW35). Birds were humanely slaughtered at 14 wk of age. Cecum weight linearly increased (R 2  = 0.366, P = 0.002), whereas proventriculus (R 2  = 0.205, P = 0.025) and duodenum (R 2  = 0.242, P = 0.010) weights linearly decreased with SWM levels. Neither linear nor quadratic trends (P > 0.05) were observed for carcass traits, meat quality parameters, and shelf life indicators in response to dietary SWM levels. Repeated-measures analysis showed a significant time × diet interaction effect on meat redness (a∗). After 24 h of storage, meat from hens fed with SW35 (2.47) diet had a higher a∗ value than meat from hens fed with SW30 diet (0.48). However, the inclusion of SWM promoted similar (P > 0.05) shelf life indicators as the control diet for the rest of the 7-d storage period at room temperature. In conclusion, dietary inclusion of SWM had no adverse effect on visceral organ size, carcass and meat quality traits, and meat stability of Boschveld indigenous hens., (Copyright © 2020. Objective: The aim of this study was to determine the effect of pineapple cannery by-product (PCB) level on the growth performance and carcass characteristics of finishing Hanwoo steers., Methods: The feeding stage was divided into early and late finishing stages. A total of 60 castrated Hanwoo steers (13.9±0.8 months old, 418.8±36.5 kg initial body weight [BW]) were blocked by initial BW and then randomly allotted into 12 pens (five head/pen). The pens were randomly assigned to control (CONT), low PCB (LPCB), or high PCB (HPCB) treatments. These diets contained 0%, 1.5%, or 3.0% of PCB (on a dry matter [DM] basis; as-fed basis was 0%, 10.6%, or 21.2%), respectively., Results: For the early finishing stage, body weight gain (BWG) and average daily gain (ADG) of the CONT and LPCB feeding groups were greater (p<0.05) than those of the HPCB feeding group. In addition, there were linear and quadratic effects on BWG and ADG with increasing dietary PCB level (p<0.05). The gain to feed (G:F) ratio tends to quadratically decrease with an increasing PCB level in the early finishing stage (p = 0.076). Growth performances of late finishing stage were not affected by PCB level. The marbling score of the LPCB feeding group was similar to that of the CONT feeding group. However, there was a linear decrease (p< 0.05) in marbling score and quality grade among treatments as PCB was increased in the diet. In the longissimus muscle free amino acid profile, histidine composition increased linearly (p<0.05) with an increasing level of PCB., Conclusion: The level of PCB 1.5% DM in diet can be used for finishing steers without any adverse effects on growth and carcass performances. However, there were some negative effects on growth and carcass performance in the HPCB feeding group.

The addition prebiotics in broiler diets can benefit digestion and nutrient abortion. The objective of the present study was to evaluate the effects of moringa leaf powder and agave inulin on growth performance, intestinal morphology, and slaughter traits of broiler chickens over 40 d of grow-out. A total of 280 broilers (Ross 308) aged 1 d were randomly allocated to 4 treatments, with 7 replicates each and 10 chicks per replicate: T1 = control diet, T2 = control diet with 15 g/kg of moringa leaf powder, T3 = control diet with 15 g/kg of agave inulin, and T4 = control diet with 15 g/kg of moringa leaf powder and 15 g/kg of agave inulin. The results showed that analysis of treatments at time were not different (P > 0.05) for broiler weights, feed and water intake, and weight gain. Treatment was significant (P < 0.05) for feed efficiency at 22 to 40 d; the T4 group presented higher (P < 0.05) values, and the T1 group presented lower (P < 0.05) values. However, the villus lengths of intestinal sections were different (P < 0.05) among treatments. In the duodenum, jejunum, and ileum, villus lengths were highest (P < 0.05) in the T2 group and lowest (P < 0.05) in the T3 and T4 groups. Villus widths in the duodenum and ileum were highest (P < 0.05) in the T2 group, but the T1 group showed highest (P < 0.05) values in the jejunum sections. The T3 and T4 groups showed lowest (P < 0.05) values in villus width in the duodenum, jejunum, and ileum. Thigh yield was highest (P < 0.05) in the T2 group and lowest (P < 0.05) in the T4 group. The T1 group exhibited the highest (P < 0.05) piece yields for leg, wing, and hip-back. The T4 group showed lowest (P < 0.05) leg and wing yields. Moringa leaf powder and agave inulin at a concentration of 15 g/kg in diets did not affect broiler performance, whereas moringa leaf powder improved intestinal morphology and thigh yield, and agave inulin improved leg yield. Fattening performance, slaughter, and carcass traits of intact and castrated Angora goat kids slaughtered at different slaughter weights were examined. A total of 96 (48 intact, I-kids, and 48 castrated, C-kids) single Angora kids were fattened, and 48 of them (24 I-kids and 24 C-kids) were slaughtered at slaughter weights (SW) of 20, 25, and 30 kg. Castration negatively affected fattening performance, and the kids showed rising daily weight gain with increasing SW. While dressing percentages were not affected by castration, it caused a tendency for a decrease in offal. However, with the increase in SW, dressing percentages increased, and offal decreased. Castration increased non-carcass fat percentages and back fat depth. The proportions of individual cuts did not generally vary because of castration but changed with SW; foreleg percentages decreased (P < 0.001) while neck percentages increased (P < 0.05). Carcass composition was affected by castration; the percentages of carcass lean (P < 0.001) and bone (P < 0.01) dropped, and total fat (P < 0.001) increased. SW had an impact on carcass composition; the percentages of carcass bone (P < 0.001) declined, and lean (P < 0.001) and total fat (P < 0.001) raised as SW increased. The lean/fat ratio was affected by castration (P < 0.001) and increasing SW (P < 0.05). Castration reduced the lean percentage in all cuts. The leg showed the highest lean percentage, whereas the greatest fat ratio was found in the breast+flank in all SW groups. Consequently, castration of Angora male kids negatively affected fattening performance and altered the carcass composition, while the increase in slaughter weight improved fattening performance and slaughter and carcass characteristics.

The objective of this study was to estimate variance components related to imprinting for carcass traits and physiochemical characteristics in Japanese Black cattle. The carcass records obtained from 4,220 Japanese Black feedlot cattle included carcass weight (CW), rib eye area (REA), rib thickness, subcutaneous fat thickness, and beef marbling score (BMS), and the physiochemical characteristics were fat, moisture, glycogen per proportion of moisture content, oleic acid, and monounsaturated fatty acids (MUFA). To detect gametic effects, an imprinting model was fitted. High additive heritabilities were estimated for all traits (from 0.516 for glycogen to 0.853 for fat) and were reduced in Mendelian heritability. The range of the differences was from 0.002 (CW) to 0.331 (fat and moisture), and the reductions were due to their imprinting variances. The ratio of the imprinting variance to the total additive genetic variance for REA (0.374), BMS (0.291), fat (0.387), moisture (0.388), and MUFA (0.337) were large (p < 0.05). These imprinting variances were due to the maternal contribution and suggested the existence of maternally expressed genomic imprinting effects on the traits in Japanese Black cattle. Genomic imprinting should be considered in animal breeding systems to avoid lead in bias in genetic parameter estimation. The objective of this study was to clarify the effects of pedigree information on imprinting variances for carcass traits and fatty acid composition in Japanese Black cattle. Carcass records [carcass weight, rib eye area, rib thickness (RT), subcutaneous fat thickness and beef marbling score (BMS)] and fatty acid composition were obtained for 11,855 Japanese Black feedlot cattle. To estimate and compare the imprinting variances for the traits, two imprinting models with different pedigree information [the sire-dam gametic relationship matrix (Model 1) and the sire-maternal grandsire (MGS) numerator relationship matrix (Model 2)] were fitted. The ratio of the imprinting variance to the total additive genetic variance for RT (6.33%) and BMS (19.00%) was significant in Model 1, but only that for BMS (21.09%) was significant in Model 2. This study revealed that fitting the sire-MGS model could be useful in estimating imprinting variance under certain conditions, such as when restricted pedigree information is available. There is evidence to suggest that poultry may have a dietary requirement for metabolically available chromium (Cr) that exceeds the amount provided through wheat soybean meal diets. The objective of the present study was to investigate the effects of dietary supplemental organic Cr from Cr propionate at different dose levels (control = 0 μg/kg, T1 = 200 μg/kg, T2 = 400 μg/kg) on the growth performance, carcass traits, and meat quality of broilers. Weight gain and feed intake of each treatment were recorded at the start and after 14, 28 and 35 d, and feed conversion ratios (FCR) were calculated accordingly. At 35 d of age, birds were randomly selected and euthanized for carcass evaluation. Results of the first trial indicate that both Cr propionate treatments increased final body weight ( P  < 0.05), feed efficiency ( P  < 0.05) and body weight gain ( P  < 0.0001). Furthermore, Cr propionate supplementation improved ( P  < 0.0001) all carcass characteristics. Interestingly, with increased Cr dosage, carcass yield, dressing percentage and breast meat yield increased linearly ( P  < 0.0001). The second study reveals that the feed intake in the control group was significantly higher compared to both Cr propionate supplemented groups (T1 & T2). Furthermore, the Cr propionate supplemented T2 group displayed a significantly lower FCR than the control and T1 group ( P  = 0.027). Finally, Cr propionate supplementation increased the dressing percentage compared to control birds ( P  < 0.0001). In the third experiment, Cr propionate supplementation (T1 & T2) increased final body weight and decreased FCR compared with the control treatment. These effects were highly significant ( P  < 0.0001) throughout all feeding phases of the trial. Cr propionate supplementation also increased ( P  < 0.0001) carcass yield, dressing percentage, breast meat yield, leg and thigh weights compared with the control treatment. In conclusion, growth performance, feed conversion, carcass yield, breast and leg meats of broiler birds can be significantly improved by dietary inclusion of Cr propionate. Star anise (Illicium verum Hook. f) has been used as spice and herbal medicine for many years with lacking researches on evaluating its application for improving relative organ weight, intestinal development, and quality of animal products. The experiment was conducted to investigate the effects of star anise, its essential oil and leavings on carcass traits, relative organ weight, intestinal development, and meat quality of broiler chickens. A total of 384 broilers were randomly assigned to 4 treatments with 8 replicates of 12 birds each. The 4 dietary treatments were basal diet (Control), basal diet supplemented with 5 g/kg star anise (Star anise), basal diet supplemented with 0.22 g/kg essential oil (Essential oil), and basal diet supplemented with 5 g/kg leavings (Leavings). The concentration of main active components in the experimental diets was 0.204 g trans-anethole/kg of diet. All birds were fed a starter diet (0-21 d) and a grower diet (22-42 d). Birds supplemented with star anise and essential oil had a greater (P < 0.05) final body weight (BW) than control birds and those supplemented with leavings. However, the carcass yield, half chamber rate, eviscerated rate, and percentages of breast muscle and thigh muscle in birds were similar (P > 0.05) among all treatments. Birds supplemented with star anise and essential oil had higher (P = 0.010) relative weight of thymus than those in control and leavings groups. Essential oil supplemented groups appeared to contain the highest (P < 0.05) villus height in ileum and villus height/crypt depth ratio in ileum and jejunum among all the groups. Meanwhile, among all the groups, breast muscles of essential oil-supplemented groups appeared to contain the lowest (P = 0.012) boiling loss but highest (P < 0.001) concentration of inosinic acid (inosine 5'-monophosphate, IMP). In conclusion, dietary supplementation of 5 g/kg star anise and 0.22 g/kg essential oil improved BW, relative organ weight, and intestinal development, and 0.22 g/kg essential oil can also increase the concentration of IMP but decrease the boiling loss in breast muscles of broilers; however, 5 g/kg leavings had no effect., (Copyright © 2020. Chinese and imported pig breeds differ in fat production potential, which is associated with the polymorphisms in the 5' proximal regulating region (5'PRR) of thyroid hormone responsive gene ( THRSP ). In three Chinese breeds (Dingyuan, CDY; Wannanhua, CWH; and Jixi, CJX) and one introduced breed (Yorkshire, YKS), three variant sites were located at T/C-400, A/G-376, and G/A-98 in the 5'PRR. Chinese pig breeds had higher C - 400 allele frequencies than YKS. The frequencies of A - 376 in CDY and G - 376 in CWH were about 0.8. G - 98 allele frequencies in CWH and YKS were 0.8617 and 0.8149, respectively. TGG was the dominant haplotype in YKS, CGG in CWH and CJX, and CAA in CDY. According to haplotype frequency, four breeds were clustered into three types, which was consistent with the geographical distribution of the breeds. In CDY, the average backfat thickness (BFT) was the highest with the CC-400 genotype, followed by CT-400 and TT-400 genotypes. In YKS, the pigs with CC-400 or CT-400 genotypes had higher BFT and average daily weight gain, whereas those with CC-400 or TT-400 genotypes had larger lion-eye area. No significant difference was observed in carcass traits among different genotypes at the A/G-376 and G/A-98 loci. The mRNA abundance of THRSP expression for the CCAGAG genotype was significantly higher than that for CTAGAG or TTAGAG genotype. Aim: This study was carried out to investigate the effects of dietary sodium butyrate supplementation on growth performance, carcass traits and intestinal of growing-finishing pigs., Methods and Results: Thirty pigs (27·4 ± 0·4 kg) were randomly assigned to receive one of three diets: basal diet (negative control group), basal diet + 40 ppm zinc bacitracin (positive control group) and basal diet + 0·2% sodium butyrate (sodium butyrate group), respectively. The experiment lasted for 69 days, including 3 days for diet and housing condition adaptation. On day 70, five piglets from each diet group were slaughtered for collecting blood and tissue samples. When compared to the control group, final body weight, daily body weight gain and daily feed intake of pigs in the sodium butyrate group were increased (P < 0·05) and feed intake/body weight gain ratio was decreased (P < 0·05). Carcass weight of pigs in the sodium butyrate group was higher than that of pigs in the negative and positive groups (P < 0·05); backfat thickness of pigs in the positive group was higher than that of pigs in the negative group and sodium butyrate group (P < 0·001). When compared to the negative and positive groups, pigs fed diet supplemented with sodium butyrate showed a increased relative abundance of bacteroidetes in the caecum and a decreased relative abundance of fiemicutes and proteobacteria in the caecum (P < 0·05)., Conclusion: The results indicated that dietary sodium butyrate supplementation increased growth performance of growing-finishing pigs and improved the carcass traits and intestinal health., Significance and Impact of the Study: Antibiotic-free feed has become an inevitable worldwide trend. This study was conducted to investigate the effect of intramuscular fat (IMF) on carcass traits of Chaohu ducks. Two-hundred-forty ducks were separated by sex and raised in separate pens. Slaughter performance, meat quality, and serum lipid parameters were identified. Based on IMF, samples were divided into males with high IMF (CHM) or low IMF (CLM) and females with high IMF (CHF) or low IMF (CLF). There were significant differences in the living body weight, abdominal fat ratio (%), shear force, IMF, total cholesterol (TC), high-density lipoprotein (HDL) and low-density lipoprotein (LDL) content between female and male ducks. In addition, compared with the CLM group, the shear force ( p  = 0.001) was significantly greater but the lightness ( p  = 0.006) was lower in the CHM group. TC, HDL and LDL content were also significantly higher ( p  = 0.033, 0.027 and 0.012, respectively) in the CHM group. The butcher ratio (0.028), eviscerating rate (0.039) and breast meat ratio (0.028) in the CHF group was significantly lower than that in CLF group, while these parameters showed no difference between CHM and CLM. In conclusion, IMF had a significantly positive correlation with subcutaneous fat and abdominal fat and was also positively correlated with TC, HDL and LDL in Chaohu ducks.

This study aimed to use RNA-Seq to identify differentially expressed genes (DEGs) in muscle of uncastrated Nelore males phenotypically divergent for ribeye muscle area (REA). A total of 80 animals were phenotyped for REA, and 15 animals each with the highest REA and the lowest REA were selected for analyses. DEGs found (N = 288) belonging to families related to muscle cell growth, development, motility and proteolysis, such as actin, myosin, collagen, integrin, solute carrier, ubiquitin and kelch-like. Functional analysis showed that many of the significantly enriched gene ontology terms were closely associated with muscle development, growth, and degradation. Through co-expression network analysis, we predicted three hub genes (PPP3R1, FAM129B and UBE2G1), these genes are involved in muscle growth, proteolysis and immune system. This study investigated the effects of beak trimming on a local broiler breed. A total of 648 one-day-old birds were randomly allocated into three treatments: no trimming (NBT), infrared beak trimming (IRBT), and hot-blade beak trimming (HBBT). The performance, beak length, behavior, carcass traits, organ percentages, and meat quality were inspected. The body weight (BW) from 7 to 35 days in the IRBT group was significantly lower than that in the NBT group, and the BW from 7 to 49 days was lower than that in the HBBT group (p < .05). Compared with untrimmed birds, birds in the IRBT group had lower average daily feed intake (ADFI) from 15 to 21 days, and higher heart percentage and L* value in the breast muscle. The upper beak length at 28 and 49 days of age were longest in untrimmed birds, intermediate in birds in the HBBT group, and shortest in the IRBT groups (p <.05). No evidence was found that HBBT caused changes in performance, behavior, carcass traits, organ percentages, and meat quality except for lower change in spleen percentage. The objective of this study was to determine the effect of including 15% of raw or fermented rapeseed cake (RRC or FRC) in turkey diets on growth performance, carcass traits, and breast meat characteristics. A total of 1,350 day-old female Hybrid Converter turkeys were allocated to 3 dietary treatments (9 replicates per treatment and 50 birds each) and fed complete isocaloric and isonitrogenous diets. In the control group, soybean meal was the main source of dietary protein, whereas the experimental groups were fed diets containing 15% of RRC or FRC. The fermentation of rapeseed cake reduced the content of glucosinolates and phytate-phosphorus. In comparison with RRC, turkeys receiving FRC achieved significantly higher final BW, comparable with that noted in the control group. The experimental factor had no effect on carcass dressing percentage or carcass fat content, whereas turkeys fed diets containing rapeseed cake were characterized by lower relative weight of breast muscles and higher relative gizzard weight. The muscles of birds from groups RRC and FRC had also significantly lower cholesterol concentration. In comparison with control diet, diets RRC and FRC contributed to a significant decrease in the levels of saturated fatty acids and an increase in the share of n-6 polyunsaturated fatty acids in the total fatty acid pool in breast meat. The highest concentrations of n-3 polyunsaturated fatty acids and the most desirable n-6/n-3 polyunsaturated fatty acid ratio were noted in the breast muscles of RRC group turkeys. Both RRC and FRC reduced catalase and superoxide dismutase activity, and decreased the malondialdehyde content of muscle tissue. In conclusion, the replacement of RRC with FRC in diets led to an increase in the final BW of turkeys, but it had no influence on carcass quality and the majority of meat quality traits. Simple Summary: Yaks (Bos grunniens) inhabit the Qinghai-Tibetan Plateau and adjacent highlands at elevations between 2000 and 5000 m, where they are important domestic animals, as they provide meat, milk, fuel, and other necessities for Tibetans and nomads in China. Yak meat is fine in texture and high in protein, yet poor in muscular marbling and tenderness. Diacylglycerol acyltransferase-2 (DGAT2), which regulates fat deposition in animals, is a candidate gene for meat quality and quantity traits. However, there have been few reports on the effects of the DGAT2 gene on the meat quality of yak. Our study elucidated tissue expression of the yak DGAT2 gene and association of variation in the gene with Warner–Bratzler shear force of longissimus muscle. The results provide guidance for the molecular-assisted selection of meat tenderness in yak. Diacylglycerol acyltransferase-2 (DGAT2) plays a key role in the synthesis of animal triglycerides (TGs). This study investigated the relative expression of the DGAT2 gene in tissues, variation in the gene, and its association with carcass and meat quality traits in yaks (Bos grunniens). DGAT2 was found to be expressed in twelve tissues investigated, but the highest expression was detected in subcutaneous fat, and moderate levels were observed in the liver, heart, longissimus dorsi muscle, and abomasum. Three variants (A1 to C1) were found in intron 5 and another three variants (A2 to C2) were found in intron 6, with two single-nucleotide polymorphisms (SNPs) being identified in each region in 694 Gannan yaks. Variants B1 and C2 were associated with a decrease in Warner–Bratzler shear force (WBSF) (p = 0.0020 and p = 0.0441, respectively), and variant C1 was associated with an increase in WBSF (p = 0.0434) and a decrease in drip loss rate (p = 0.0271), whereas variant B2 was associated with a decrease in cooking loss rate (p = 0.0142). Haplotypes A1-A2 and B1-A2 were found to be, respectively, associated with an increase and a decrease in WBSF (p = 0.0191 and p = 0.0010, respectively). 1. An experiment was conducted to investigate the effects of ambient temperature on growth performance and carcass traits in male growing Pekin ducks from 14 to 42 d of age in order to establish their optimal temperature requirements. 2. A total of 216 14 d old male White Pekin ducks were allocated randomly to six environmentally controlled chambers with ambient temperature set at 20°C, 22°C, 24°C, 26°C, 28°C, and 30°C from 14 to 42 d of age, respectively. 3. As ambient temperature increased from 20°C to 30°C, the body weight and weight gain decreased linearly or quadratically (P < 0.05) and was accompanied by linearly decreasing feed intake (P < 0.05). According to broken-line regression, the upper critical level of ambient temperature during the growing period for body weight, weight gain, and feed conversion ratio were 27.4°C, 27.4°C, and 26.0°C, respectively. 4. The weight of breast meat, leg meat, and abdominal fat decreased linearly or quadratically as ambient temperature increased and declined to a minimum when the temperature increased to 30°C (P < 0.05). The percentage of breast meat and abdominal fat showed a linear or quadratic decreasing response to increasing temperature, but leg meat percentage increased as temperature increased and reached maximum at 30°C (P < 0.05). According to broken-line regression, the upper critical ambient temperatures during the growing period for breast meat weight and percentage were 25.5°C and 25.6°C, respectively. 5. It was concluded that both growth performance and breast meat of growing ducks were sensitive to increasing ambient temperature and this should be kept below the upper critical temperature during the growing period in order to optimise growth performance and carcass traits at market age.

This study investigated the effects of dietary zinc on carcass traits, meat quality, antioxidant capacity, and tissue zinc accumulation of Pekin ducks. A total of 768 1-day-old Pekin ducks were randomly allocated to six dietary treatments and penned in groups of 16 with 8 pens per treatment. Ducks were fed a basal corn-soybean meal diet supplemented with graded levels of zinc sulfate (0, 15, 30, 60, 120, 240 mg zinc/kg) for 35 days. The slaughter weight, carcass weight, eviscerated weight, and breast and leg muscle weight of Pekin ducks were increased with increasing dietary zinc levels (P < 0.05). Zinc supplementation increased the pH value at 24-h postmortem and the intramuscular fat (IMF) (P < 0.05), but decreased the lightness value, drip loss, and shear force in breast meat of ducks (P < 0.05). Increasing dietary zinc increased the activity of superoxide dismutase (SOD), glutathione peroxidase (GPX), glutathione reductase (GR), catalase (CAT), and the content of glutathione (GSH), as well as decreased the malondialdehyde (MDA) level in breast muscle (P < 0.05). RT-qPCR analysis demonstrated that supplemental zinc notably enhanced the transcription of SOD, GPX, GR, CAT, and nuclear factor erythroid 2-related factor 2 (Nrf2) (P < 0.05). Meanwhile, zinc accumulation in plasma, breast muscle, liver, and tibia were linearly increased with increasing zinc supplementation (P < 0.05). These results indicated that zinc supplementation could improve carcass traits and meat quality and increase the activities and mRNA levels of antioxidant enzymes in breast muscle of Pekin duck. Base on broken-line regression analysis that 91.32 mg/kg of dietary zinc was suggested for optimal carcass traits, meat quality, antioxidant capacity, and zinc deposition of Pekin duck.

Preimplantation genomic selection using genomic estimated breeding values (GEBVs) based on single nucleotide polymorphism (SNP) genotypes is expected to accelerate genetic improvement in cattle. To develop a preimplantation genomic selection system for carcass traits in Japanese Black cattle, we investigated the accuracy of genomic evaluation of carcass traits using biopsied embryonic cells (Experiment 1); we also performed an empirical evaluation for embryo transfer (ET) of vitrified GEBV-evaluated blastocysts to assess the efficiency of the preimplantation genomic selection system (Experiment 2). In Experiment 1, the mean call rate for SNP genotyping using approximately 15 biopsied cells was 98.1 ± 0.3%, whereas that for approximately 5 biopsied cells was 91.5 ± 2.4%. The mean concordance rate for called genotypes between ~15-cell biopsies and the corresponding biopsied embryos was 99.9 ± 0.02%. The GEBVs for carcass weight, ribeye area, and marbling score calculated from ~15-cell biopsies closely matched those from the corresponding calves produced by ET. In Experiment 2, a total of 208 in vivo blastocysts were biopsied (~15-cell) and the biopsied cells were processed for SNP genotyping, where 88.5% of the samples were found to be suitable for GEBV calculation. Large variations in GEBVs for carcass traits were observed among full-sib embryos and, among the embryos, some presented higher GEBVs for ribeye area and marbling score than their parents. The conception rate following ET of vitrified GEBV-evaluated blastocysts was 41.9% (13/31). These findings suggest the possible application of preimplantation genomic selection for carcass traits in Japanese Black cattle.
