Sunset Yellow (SY) is an azo dye used in various food and pharmaceutical industries that deserves special attention because of its allergic and carcinogenic properties. Recently, electrochemical techniques have come to the spotlight because of their high sensitivity, simplicity and rapidity as compared to other techniques. In this work, we have developed a cost‐effective and stable electrochemical sensor by a simple method using Vitamin B12‐derived cobalt oxide coupled with g‐C3N4 (V12‐CoO/gCN) modified Au electrode. The composite prepared for the sensor was characterized using techniques such as FTIR, Powder XRD, SEM analysis, EDAX, and mapping. For electrochemical sensing of the dye Sunset Yellow, CV, DPV, and LSV techniques have been used, out of which DPV shows a better detection limit of 1.39 nM followed by LSV and CV that displayed detection limits of 3.3 nM and 4.14 nM respectively. When 5 real samples obtained from the local market are analyzed using the DPV technique, the detection limit is obtained in the range between 2.1 nM and 6.9 nM. This method leads to the development of an electrochemical sensor for the detection of Sunset Yellow to get a lower detection limit that can be used in food toxicology and related fields. High content analysis combines automated microscopy and quantitative image analysis to visualize in vitro models for multi-parameter analysis， which has the advantages of high efficiency， rapidity and multi-targeting， and it has been applied in the field of in vitro toxicology research. Food toxicology， as a branch of toxicology， plays an important role in safeguarding food safety and human health. Traditional experiments can hardly meet the current rapidly increasing demand for safety evaluation of various food-related risk substances， for which high content analysis provides an efficient technical approach. Recent applications of high content analysis in the field of food toxicology would be reviewed in this article， in order to provide reference for food safety assessment methods and technological innovation.

Rigorous risk assessment of chemicals in food and feed is essential to address the growing worldwide concerns about food safety. High-quality toxicological data on food-relevant chemicals are fundamental for risk modeling and assessment in the food safety area. The organization and analysis of substantial toxicity information can positively support decision-making by providing insight into toxicity trends. However, it remains challenging to systematically obtain fragmented toxicity data, and related toxicological resources are required to meet the current demands. In this study, we collected 221,439 experimental toxicity records for 5,657 food-relevant chemicals identified from extensive databases and literature, along with their information on chemical identification, physicochemical properties, environmental fates, and biological targets. Based on the aggregated data, a freely available web-based databank, Food-Relevant Available Chemicals Toxicology Databank (FRAC-TD) is presented, which supports multiple browsing ways and search criterions. Applying FRAC-TD for data-driven analysis, we revealed the underlying toxicity profiles of food-relevant chemicals in humans, mammals, and other species in the food chain. This study investigated lead (Pb) and cadmium (Cd) transfer in three dairy farming areas in the Mantaro river headwaters in the central Peruvian Andes and at varying distances from the mining complex at La Oroya. At each of these sites, the transfer of trace metals from the soil to raw milk was estimated, and a hazard assessment for lead and cadmium was carried out in scenarios of minimum, average, and maximum milk consumption in a Peruvian population aged 2–85. Pb and Cd were quantified by flame atomic absorption spectrometry. Significantly, the concentrations of lead and cadmium were found to exceed the maximum limits recommended by the World Health Organization, with a positive geospatial trend correlated with the distance from mining activity. Both Pb and Cd were found to be transferred through the soil–pasture–milk pathway, with the primary source of Cd being phosphate-based fertilizers used in pasture improvement. Pb was found to be the most significant contributor to the Hazard Index (HI) with those under 19 years of age and over 60 recording an HI of >1, with infants being the most vulnerable group due to their greater milk consumption in relation to their body weight. The increasing and diversified use of rare earth elements (REE) is considered a potential source of pollution of environmental media including soils. This work documents critically overview data on the occurrence of REE in the fruiting bodies of wild and farmed species of edible and medicinal mushrooms, as this was identified as the largest published dataset of REE occurrence in foodstuff. Most of the literature reported occurrences of cerium (Ce) and lanthanum (La), but a number of studies lacked data on all lanthanides. The Ce, La, and summed REE occurrences were assessed through the criteria of environmental geochemistry, analytical chemistry, food toxicology, mushroom systematics, and ecology. Ce and La accumulate similarly in fruiting bodies and are not fractionated during uptake, maintaining the occurrence patterns of their growing substrates. Similarly, there is no credible evidence of variable REE uptake because the evaluated species data show natural, unfractionated patterns in accordance with the Oddo-Harkins' order of environmental lanthanide occurrence. Thus, lithosphere occurrence patterns of Ce and La as the first and the third most abundant lanthanides are reflected in wild and farmed mushrooms regardless of substrate and show that Ce is around twice more abundant than La. The current state of knowledge provides no evidence that mushroom consumption at these REE occurrence levels poses a health risk either by themselves or when included with other dietary exposure. Macromycetes appear to bio-exclude lanthanides because independently reported bioconcentration factors for different species and collection sites, typically range from < 1 to 0.001. This is reflected in fruiting body concentrations which are four to two orders of magnitude lower than growing substrates. Human exposure to foodborne inorganic nanoparticles (NPs) is a growing concern. However, identifying potential hazards linked to NP ingestion often requires long-term exposure in animals. Owing these constraints, intestinal organoids are a promising alternative to in vivo experiments; as such, an in vitro approach should enable a rapid and reliable assessment of the effects of ingested chemicals on the gut. However, this remains to be validated for inorganic substances. In our study, a transcriptomic analysis and immunofluorescence staining were performed to compare the effects of food-grade TiO2 (fg-TiO2) on enteroid-derived monolayers (EDMs) from murine intestinal organoids to the known impacts of TiO2 on intestinal epithelium. After their ability to respond to a pro-inflammatory cytokine cocktail was validated, EDMs were exposed to 0, 0.1, 1, or 10 µg fg-TiO2/mL for 24 h. A dose-related increase of the muc2, vilin 1, and chromogranin A gene markers of cell differentiation was observed. In addition, fg-TiO2 induced apoptosis and dose-dependent genotoxicity, while a decreased expression of genes encoding for antimicrobial peptides, and of genes related to tight junction function, was observed. Diverse models have been long explored to impel the progress of food science, while Caenorhabditis elegans (C. elegans) models applied in food toxicology and food function evaluation received vigorous advances recently. With multifaceted advantages such as short lifespan, apparent phenotypes and well-recognized genetic background, C. elegans is becoming a driving model organism in food science. In this review, we comprehensively reviewed the research progress of C. elegans models based on the literature published in past two decades, and systematically categorized the methods of C. elegans models' construction, summarized the applications of nematodes in food toxicology, mainly involved in microbial contamination, food additives, pesticide residues, heavy metals, food packaging, and physical pollution. C. elegans models' exploitations for functional foods assessments were also exemplified, and biological properties included anti-oxidant, anti-aging, anti-obesity, anti-glucotoxicity, anti-neurodegenerative and immunoregulation. Research gaps between present shortcomings and future orientations have been further discussed. Background: Skin is one of the abundance side products of the striped catfish (Pangasius hypophthalmus) fillet industry in tropical countries. The previous histological study revealed that the skin of striped catfish contains high collagens which has the potential to supply the increasing halal gelatin demands. However, the texture of striped catfish skin gelatin (SCSG) at room temperature is mushy. This can be enhanced by the transglutaminase (TG) modification. SCSG modified with TG (SCSG_TG) needs to be tested for safety and consumer acceptance before being marketed. The research aims to decide the level of acute toxicity of SCSG_TG in mice (Mus musculus) and discover the organoleptic quality of SCSG_TG. Methods: Striped catfish skin gelatin modified with transglutaminase (SCSG_TG) was acquire by CH3COOH (acid) and NaOH (base) extraction at a temperature of 58°C. Toxicity tests using mice were worked by the Limit Test Procedure of the Organization for Economic Cooperation and Development (OECD) and then analyzed descriptively and qualitatively. While organoleptic tests were worked using hedonic assessment and the Friedman test. Results: The result shows SCSG_TG did not induce any toxic effects or death in mice. SCSG_TG 10 mg film was the most favored treatment group by the panelists (4.9-6.5) compared with SCSG_TG 0 mg (3.8-6.0) and SCSG_TG 50 mg film (4.1-6.3). Conclusion: Hence, the striped catfish skin gelatin film modified with transglutaminase (SCSG_TG) was declared safe, non-toxic, and accepted according to the organoleptic assessment that has met the standard ("dislike" criteria <25%). Novel techniques and methodologies are being developed to advance food safety risk assessment into the next-generation. Considering the shortcomings of traditional animal testing, new approach methodologies (NAMs) will be the main tools for the next-generation risk assessment (NGRA), using non-animal methodologies such as in vitro and in silico approaches. The United States Environmental Protection Agency and the European Food Safety Authority have established work plans to encourage the development and application of NAMs in NGRA. Currently, NAMs are more commonly used in research than in regulatory risk assessment. China is also developing NAMs for NGRA but without a comprehensive review of the current work. This review summarizes major NAM-related research articles from China and highlights the China National Center for Food Safety Risk Assessment (CFSA) as the primary institution leading the implementation of NAMs in NGRA in China. The projects of CFSA on NAMs such as the Food Toxicology Program and the strategies for implementing NAMs in NGRA are outlined. Key issues and recommendations, such as discipline development and team building, are also presented to promote NAMs development in China and worldwide.

Over the last decade, many nano-innovations have been introduced in the agri-food sector. The documented risks associated with nanotechnologies have early raised the interest of regulatory national and international bodies. Nevertheless, within the European Union (EU), the accelerated rate of innovation has not been met by adequate regulatory interventions. This study provides an assessment of the current EU nanotechnology regulatory framework. In order to analyze the rationale for regulation, the different fields of application of nanotechnologies in the food system are presented together with the associated social and economic risks. Limitations of the current toxicological knowledge and the scarcity of environmental studies are also highlighted for raising the case of a precautionary stance. The results of the regulatory assessment highlight that technical-scientific and economic considerations have been overwhelmingly used by European policymakers in the regulatory process. Instead, considerations regarding the respect of the precautionary principle and the accountability of the legislative process have been largely overlooked. As a consequence, regulatory policies have been weak and inadequate to address the health and economic risks created by nanotechnologies. Food safety has long been an area of concern. The selection of stable and efficient model organisms is particularly important for food toxicology studies. Zebrafish (Danio rerio) are small model vertebrates, and 70% of human genes have at least one zebrafish ortholog. Zebrafish have advantages as model organisms due to their short life cycle, strong reproductive ability, easy rearing, and low cost. Zebrafish embryos have the advantage of being sensitive to the breeding environment and thus have been used as biosensors. Zebrafish and their embryos have been widely used for food toxicology assessments. This review provides a systematic and comprehensive summary of food toxicology studies using zebrafish as model organisms. First, we briefly introduce the multidimensional mechanisms and structure–activity relationship studies of food toxicological assessment. Second, we categorize these studies according to eight types of hazards in foods, including mycotoxins, pesticides, antibiotics, heavy metals, endocrine disruptors, food additives, nanoparticles, and other food‐related ingredients. Finally, we list the applications of zebrafish in food toxicology studies in line with future research prospects, aiming to provide a valuable reference for researchers in the field of food science. Aim: In order to avoid side effects of lithium doses in some patients, some commonly cultivated mushroom species including A. bisporus have been successfully lithiated, with the potential to provide more acceptable sources of Li. This study assessed the in vitro release (potential bioaccessibility) and possible intake of Li using the action of artificial gastrointestinal juices on lithiated and nonlithiated (control) button mushrooms (Agaricus bisporus) that were subjected to certain modes of culinary processing. Methods: In the in vitro release study, mushrooms were processed using a number of routinely used domestic treatments including rehydrating dried mushrooms, blanching and blanching followed by pickling of fresh or frozen mushrooms. The in vitro digestion procedure used artificial gastrointestinal juices in a two‐stage methodology that was adapted from 'The Bioaccessibility Research Group of Europe' method. The Li concentrations were determined using an inductively coupled argon plasma–dynamic reactive cell–mass spectrometer. Results: Lithium was found to be more bioaccessible from caps of lithiated mushrooms compared with nonlithiated. Releases from the caps and stipes of blanched or blanched and then pickled mushrooms through gastric digestion ranged from 32 ± 2 to 50 ± 1% relative to the dried product and was lower for gastrointestinal digestion, which ranged from 16 ± 1 to 20 ± 1%. Conclusion: Losses of Li sustained through blanching or blanching followed by pickling of fresh mushrooms (41–87% wet weight) combined with limited accessibility during gastrointestinal release (16–55%) result in much lower bioavailability of the dose from lithiated products. A 300‐g meal would provide <5% of the Li (6 mg) required for potential preventative treatments, such as reducing suicide rates and lowering dementia risk. [ABSTRACT FROM AUTHOR]

There is a dearth of data on rare earth elements (REE), yttrium and scandium in foods which extends also to baseline datasets for edible wild mushrooms, though this has started to change in the last decade. Concentrations and shale normalized patterns of REE and Y (REY) were studied by using inductively coupled plasma–quadrupole mass spectrometer in 22 pools (2235 specimens) of Cantharellus cibarius (Golden Chanterelle) collected in Poland and also a pool of C. minor (Small Chanterelle) (153 specimens) from Yunnan (Chinese Province). The total REY plus Sc varied in C. cibarius from 10 to 593 µg kg−1 dw whereas that for the Yunnan's C. minor was 2072 µg kg−1 dw. C. minor from Yunnan has higher REY and Sc compared to the C. cibarius. Sc concentrations in twenty C. cibarius pools were below 1 µg kg−1 dw, but 17 and 27 µg kg−1 dw were detected at the other two sites and 66 µg kg−1 dw was detected in C. minor. The median Y content of C. cibarius and C. minor was 22 µg kg−1 dw and 200 µg kg−1 dw. The difference in REY and Sc concentrations and shale normalized patterns between mushrooms from Poland and Yunnan seems to reflect the regional difference in concentration and composition of these elements in the soil bedrock. La, Ce, Pr, Nd, Sm, Gd, Tb, Dy, Ho, Er, Tm, Yb and Lu are lanthanides, also referred to as "rare earth" elements (occurring at ultra-low concentration, i.e. each, at ppb or lower levels) in plant and animal foods including edible wild mushrooms. Could it be that lanthanides when collectively reported as a summed value (widely referred to as REE) are at relatively high concentrations because extremely high contributions from individual elements? REE elements naturally occur in environmental media such as the soil substrate in which plants and fungi grow in a characteristic pattern (Oddo-Harkins rule), with most of the available literature confirming the extension of this pattern in fungi. In the current study, we assessed health risk posed to Iranian consumers through exposure to metals via oral consumption of coffee, tea, and herbal tea of various trademarks collected from Iran market. Level of As, Cd, Cr, Cu, Fe, Hg, Ni, and Pb in 243 samples was quantified by inductively coupled plasma-optical emission spectrometry (ICP-OES). The metal levels in coffee samples from different trademarks of a specific country had statistically similar levels of metals; however, metal levels differed significantly among brand names form different countries. Metal levels in tea samples differed significantly between domestic and imported products, while different trademarks of similar countries did not show significant variations in this respect. Metal level in herbal tea samples did not show significant variations among different trademarks. Nevertheless, it should be highlighted that mean concentrations of metals statistically differed among different herbal tea samples. Deterministic hazard quotients (HQs) were <1.0 for all non-carcinogenic metals and total hazard index (HI) values indicated no risk; however, probabilistic assessment calculated HI values >1. In both deterministic and probabilistic scenarios, carcinogenic metals As and Ni had an estimated incremental lifetime cancer risk (ILCR) of medium level while that of Pb indicated no cancer risk. Recently, an article by Seneff et al. entitled "Innate immunosuppression by SARS-CoV-2 mRNA vaccinations: The role of G-quadruplexes, exosomes, and MicroRNAs" was published in Food and Chemical Toxicology (FCT). Here, we describe why this article, which contains unsubstantiated claims and misunderstandings such as "billions of lives are potentially at risk" with COVID-19 mRNA vaccines, is problematic and should be retracted. We report here our request to the editor of FCT to have our rebuttal published, unfortunately rejected after three rounds of reviewing. Fighting the spread of false information requires enormous effort while receiving little or no credit for this necessary work, which often even ends up being threatened. This need for more scientific integrity is at the heart of our advocacy, and we call for large support, especially from editors and publishers, to fight more effectively against deadly disinformation. Biogenic amines (BAs), which are mainly generated by the microbial decarboxylation of amino acids, are important nitrogen compounds in fermented foods because of their toxicology. However, amino acids, the precursors of BAs, also play an important role in generating volatile and non-volatile metabolites, which are strongly associated with quality indicators for foods. Bacillus subtilis is one of dominant fermentative microorganism in various fermented foods and is well known as a BA-producing bacterium. In this study, B. subtilis strains which have different BAs-producing capacities, higher level of BAs production strain (BH) and lower level of BAs production strain (BL), were applied to compare the formations of volatile and non-volatile metabolite profiles according to cultivation times. In this study, histamine, putrescine, and spermidine were detected in all strains, however, 2-phenylethylamine was detected only in BH. Partial least squares discriminant analysis (PLS-DA) was applied to investigate the difference of metabolic profiles according to strains. In BH, some amino acids (phenylalanine, leucine, and threonine) and related volatile metabolites (3-methylbutanoic acid, pyrazines, styrene, and 1H-indole) were produced higher levels. On the other hand, BL produced significantly higher contents of metabolites associated with metabolism of fatty acids and nucleotides. Aging is the most prominent risk factor for many diseases, which is considered to be a complicated biological process. The rate of aging depends on the effectiveness of important mechanisms such as the protection of DNA from free radicals, which protects the structural and functional integrity of cells and tissues. In any organism, not all organs may age at the same rate. Slowing down primary aging and reaching maximum lifespan is the most basic necessity. In this process, it may be possible to slow down or stabilise some diseases by using the compounds for both dietary and pharmacological purposes. Natural compounds with antioxidant and anti-inflammatory effects, mostly plant-based nutraceuticals, are preferred in the treatment of age-related chronic diseases and can also be used for other diseases. An increasing number of long-term studies on synthetic and natural compounds aim to elucidate preclinically and clinically the mechanisms underlying being healthy and prolongation of life. To delay age-related diseases and prolong the lifespan, it is necessary to take these compounds with diet or pharmaceuticals, along with detailed toxicological results. In this review, the most promising and utilised compounds will be highlighted and it will be discussed whether they have toxic effects in short/long-term use, although they are thought to be used safely. The article titled "Syzygium aqueum: A polyphenol-rich leaf extract exhibits antioxidant, hepatoprotective, pain-killing and anti-inflammatory activities in animal models" published in Frontiers in Pharmacology on 5 June 2018 has been retracted due to concerns about image integrity. Cellular fluorescence imaging (CFI) uses fluorescent substances to label specific biomarkers in cells, recording their dynamic changes via fluorescent signals to study physiological processes. With advancements in fluorescent probe technology and cell biology, CFI has been widely used in food toxicology studies. CFI offers significant advantages over conventional toxicological methods, but no articles summarize this development. This paper reviews the application of CFI in detecting and evaluating toxic metal elements, chemical residues, mycotoxins, bacteria, viruses, and food processing contaminants, as well as evaluating vitamins, functional minerals, functional amino acids, functional peptides and polyphenol compounds. Abstract The food industry will be impacted by the acceleration of nanotechnology, its creative applications and constant advancements. Nanostructured materials are utilized to encapsulate food components, packaging and nanosensors. These materials make the compound more soluble, bioavailable and increase its delivery speed, while also keeping the active components safe throughout production and storage. The review outlines the effects of nanotechnology on food systems and describes the outcomes of antimicrobial nanostructural materials on bacteria. It also highlights the characteristics of food‐nanotechnology along with its existing and possible future applications in food science. The potential for nanoparticles to be used in the food industry to supply customers with safe, contaminant‐free food and to increase the acceptance of the food due to its enhanced functional characteristics has been summarized as well.

The purpose of the conference session summarized in this article was to bring together international experts on food toxicology and food safety and share the current scientific knowledge on these topics. The presentations covered a wide range of interdisciplinary issues, including (i) the impact of diet on body weight and health outcomes including results from animal models of carcinogenesis, (ii) methods for microbial oil extraction, (iii) food processing and its impact on food safety and health, (iv) novel compounds to avoid mycotoxin contamination of agricultural products, and (v) the safety of cannabidiol in food supplements based on Cannabis sativa extracts. Some of the conclusions of the presentations included that correct food choices may impact on the risk of non-communicable diseases such as cancer, that food processing may have an influence on health, by either reducing or increasing risks, and that research regarding novel compounds is important, which may have preventive but also detrimental effects on health. In the field of (food) toxicology, there is a strong trend of replacing animal trials with alternative methods for the assessment of adverse health effects in humans. The replacement of animal trials is not only driven by ethical concerns but also by the number of potential testing substances (food additives, packaging material, contaminants, and toxicants), which is steadily increasing. In vitro 2D cell culture applications in combination with in silico modeling might provide an applicable first response. However, those systems lack accurate predictions of metabolic actions. Thus, alternative in vivo models could fill the gap between cell culture and animal trials. In this review, we highlight relevant studies in the field and spotlight the applicability of alternative models, including C. elegans, D. rerio, Drosophila, HET-CAM and Lab-on-a-chip. Methylmercury is one of the most toxic chemical compounds, which raises concern for assessing its effects at local and global levels. The Minamata Convention is a worldwide action established in 2013 to redouble efforts against mercury pollution and its adverse effects on human health. During the last decade, there was an exponential increase in investigating the impacts of methylmercury on food toxicology, human health, economy, among others, although there is a lack of studies that link them. The present study proposes an integrated approach among food toxicology, public health, and economy, to reduce the amount of methylmercury in food. The information generated may allow local regulatory agencies and international organizations to identify which food groups should be focused, thus reducing dietary methylmercury exposure, and developing effective action plans against foodstuffs most harmful to human health. Microalgae biomass can offer several compounds beneficial to human nutrition, including lipids, proteins, minerals and pigments. In this sense, microalgae-based foods are already evident as opportunities for food research and development. Thus, the consumption of foods containing declared compounds from microalgae (e.g., omega 3/proteins) can be sold in the form of supplements and other innovative products, including chocolates and beverages. Furthermore, the production of microalgae brings advantages to global food security and reduces the impact considering environmental problems related to the expansion of food production in agricultural land. In this sense, the quality and safety of derivatives depend on good cultivation, harvesting and processing practices since unwanted organic and inorganic compounds may be present in microalgae biomass due to environmental contamination or processing steps. Moreover, this may pose a risk to human health, and it is essential for consumer protection that microalgae biomass be monitored for levels of residues and contaminants. The optimization of processes and knowledge of cultivation steps and their reagents are crucial for quality control. These aspects are discussed throughout this review, focusing on recent reports on potential microalgae-based food contaminants.

Lithiated products such as button mushrooms that are cultivated in substrates fortified with lithium (Li) salts, have the potential to provide accessible and safe Li dosing as a treatment for some neurological disorders. However, Li losses sustained during culinary processing are not known. This study of commonly used culinary treatments including various combinations of drying, maceration, blanching (of fresh, deep-frozen and re-hydrated mushrooms) and pickling (of fresh and deep-frozen mushrooms) shows that Li is lost from the edible flesh at varying rates depending on the treatment. Blanching of fresh lithiated mushrooms resulted in a 40% loss, increasing to 77–87% when blanching was followed by pickling. Corresponding losses were similar (47–72%) for non-lithiated mushrooms. Higher losses through the combined treatment relative to just blanching appear to be due to chelating and acidifying effects of the vinegar used. This finding has important dose implications for potential future use of lithiated products.

Background: Nephrotoxicity of drugs contributes to acute kidney injury with high mortality and morbidity, which crucially limits the application and development of drugs. Although many publications on nephrotoxicity have been conducted globally, there needs to be a scientometric study to systematically analyze the intellectual landscape and frontiers research trends in the future. Methods: Publications on nephrotoxicity from 2011 to 2021 were collected to perform bibliometric visualization using VOSviewer, CiteSpace, and Scimago Graphica software based on the Web of Science Core Collection. Results: A total of 9,342 documents were analyzed, which were primarily published in the United States (1,861), China (1,724), and Egypt (701). For institutions, King Saud University (166) had the most publications; Food and Chemical Toxicology, PLOS One, and Antimicrobial Agents and Chemotherapy were productive journals, primarily concentrating on the mechanisms of nephrotoxicity and renoprotective in cisplatin and antibiotics, especially in oxidative stress. Burst detection suggested that cisplatin, piperacillintazobactam, vancomycin-induced nephrotoxicity, antioxidants, and new biomaterials are frontiers of research. Conclusion: This study first provides an updated perspective on nephrotoxicity and renoprotective strategies and mechanisms. This perspective may benefit researchers in choosing suitable journals and collaborators and assisting them in the deep understanding of the nephrotoxicity and renoprotective hotspots and frontiers. An Extensive Literature Search (ELS) to collect and identify all studies published since 2009 and relevant to the topic organic arsenic in combination with the substance group characterisation, occurrence in food and toxicity was performed in the three databases PubMed, Web of Science and Scopus for eight scientific Areas. After combination of the searches from the three databases and removal of the duplicates, the total number of references was 6998. The evaluation of all retrieved references for relevance by screening the title and abstract and applying eligibility criteria (inclusion/exclusion) for group (a) small methylated arsenic species resulted in a total number of relevant references for 406 for Area 1a, 246 for Area 2a, 287 for Area 3a, 31 for Area 4a, 56 for Area 5a, 108 for Area 6a, 38 for Area 7a and 95 for Area 8a. In comparison a smaller number of relevant references was retrieved for substance group (b) arsenic species other than small methylated species and including any other organic species: 352 for Area 1b, 73 for Area 2b, 257 for Area 3b, 14 for Area 4b, 23 for Area 5b, 30 for Area 6b, 57 for Area 7b, and 18 for Area 8b. However, these were assigned to be relevant for more than one Area or substance group. All relevant references were additionally screened to extract available information at a high level by full paper review. The presence of selenium (Se) in foods and the pertinent toxicological data are reviewed. In most regions of the world, the average daily intake of man is thought to be between 60 and 250 micrograms for adults and between 4 and 35 micrograms for infants. The current practice of adding selenium supplements to animal feeds may increase the selenium content of meats by up to 30%, but this does not result in a biologically meaningful increase in the selenium intake of people. Se is mostly absorbed after ingestion, according to the available metabolic data. Up to 50% of it is eliminated in the urine, while the remaining percentage builds up primarily in the liver and kidneys. Recent epidemiological and animal studies show that Se is not a carcinogen, and in some cases may have anti-cancer properties. The aim of the study was to develop an efficient method for the determination of monomethyl-mercury (MeHg) and total mercury (THg) content in materials such as fungal sporocarps and sclerotia. Certified Reference Materials (CRMs) with the assigned values of MeHg and THg as well as the control materials (dried mushrooms) with known content of THg were evaluated for method validation. Recovery of MeHg from reference materials was at the following levels: from tuna fish at 87.0 ± 2.3% (THg at 101.9 ± 1.2%), from fish protein at 99.4 ± 1.3% (THg at 92.70 ± 0.41%), and from dogfish liver at 96.45 ± 0.73%. Recovery of THg from the fungal control material CS-M-5 was at 104.01 ± 0.60% (contribution of MeHg in THg content was at 6.2%), from CS-M-4 at 101.1 ± 2.0% (contribution at 3.2%), from CS-M-3 at 100.55 ± 0.67% (contribution at 0.6%), and from CS-M-2 at 101.5 ± 2.7% (contribution at 3.7%). The content of MeHg in randomly selected wild fungi and their morphological parts was in the range from 0.006 to 0.173 mg kg−1 dry weight (dw). In the case of THg, the concentration values were in the range from 0.0108 to 10.27 mg kg−1 dw. The MeHg content in the control materials with the assigned THg values was determined. Since the control materials play an important role in all elements of the quality assurance system of measurement results, they can be used to analyse MeHg as the first control material for fungi. The article discusses the need for more toxicology experts in veterinary medicine, as there are currently fewer than 100 active toxicologists nationwide. Kansas State University has developed a training program to address this need, utilizing diagnostic service, collaborative research, and teaching in the professional program. The program aims to provide practitioners with access to specialists who can assist with sample and test selection, as well as interpretation of results. This Special Issue contains articles on applications of various new approach methodologies (NAMs) in the field of toxicology and risk assessment. These NAMs include in vitro high-throughput screening, quantitative structure-activity relationship (QSAR) modeling, physiologically based pharmacokinetic (PBPK) modeling, network toxicology analysis, molecular docking simulation, omics, machine learning, deep learning, and "template-and-anchor" multiscale computational modeling. These in vitro and in silico approaches complement each other and can be integrated together to support different applications of toxicology, including food safety assessment, dietary exposure assessment, chemical toxicity potency screening and ranking, chemical toxicity prediction, chemical toxicokinetic simulation, and to investigate the potential mechanisms of toxicities, as introduced further in selected articles in this Special Issue.
