Abstract

The antillisterial bacteriocin-like inhibitory substance (BLIS) produced by pediococcus parvulus VKMX133 is incorporated into protein film matrices of ethnol-soluble corn zein (CZ), and water -soluble whey protein isolate (WPI). High concentration of BLIS does not improve the microbial effectiveness against Listeria innocua, as high BLIS concentration in films might lead to aggression phenomena that reduce antimicrobial effectiveness of CZ films.
