The paper reports the newly devised method and nanotechnology for production of curd desserts for healthy nutrition. They include the mechanical processing of curd grains accompanied by processes of mechanical activation and non-enzymatic catalysis of the casein-calcium-phosphate complex into a nanoscale form, as an innovation. The nanotechnology of cryo-additives made from fruits and vegetables has been devised. We used them as fortifiers with biologically active substances (BAS), natural structure formers and colorants in curd desserts. New curd desserts have the nanoscale form and possess a high content of natural BAS of fruits and vegetables (β-carotene, phenolic compounds, tannins, chlorophylls, L-ascorbic acid and soluble pectin substances). The latter serve as natural fortifiers and structure formers in curd desserts. The above makes it possible to eliminate a need to use food additives and synthetic additives. The low-fat curds were used as a base for production of curd desserts for healthy nutrition. We selected the following raw materials for production of fruit and vegetable cryo-additives: carotene-containing fruits (pumpkin, apricots, and sea buckthorn), citruses (lemons with rind), Jerusalem artichokes, spinach, and apples. We considered homogenization of a product as a technological approach, which leads not only to obtaining of a homogeneous structure of a product, but also to processes of mechanical activation, mechanical destruction and mechanolysis, which is destruction of a protein to its individual components. An increase in the mass fraction of free α-amino acids and simple peptides occurs during the mentioned processes. The study showed that 40...45% of the bound α-amino acids of protein transform into a free, easily digestible form. The size of α-amino acid molecules is from 0.3 to 1.5 nm. We revealed the mechanism of the process associated with the mechanocracking of protein and its components with mineral substances in the study. The fillers in the form of cryopaste made of fruits and vegetables for curd desserts have been prepared. They are the source of a unique complex of natural biologically active substances, namely, phytocomponents, such as phenolic compounds (1...2.1%), carotenoids (32.6...45.6mg per 100g), L-ascorbic acid (102...260mg per 100g), and chlorophylls (800...1,680mg per 100g). We showed that fruit and vegetable cryopastes exceed raw materials by 2.5...3.5times in the content of biologically active substances, due to extraction of hidden forms of BAS from raw materials. In addition, they have a high content of soluble pectic substances due to extraction of hidden inactive forms into a free form from fresh raw materials when preparing paste-like cryofillers. We developed formulations and technology for curd desserts and studied the content of BAS. Curd desserts exceed the known analogues by chemical composition.

Разработано нанотехнологію криодобавок из плодов и овощей, которые использованы в творожных десертах как обогатители биологически активными веществами (БАВ), натуральные структурообразователи и красители. Новые творожные десерты находятся в наноразмерной форме и отличаются высоким содержанием натуральных БАВ плодов и овощей (β-каротина, фенольных соединений, дубильных веществ, хлорофиллов, L-аскорбиновой кислоты, растворимых пектиновых веществ. Последние в творожных десертах выполняют роль натуральных обогатителей и структурообразователей. Это дает возможность исключить необходимость применения пищевых добавок и синтетических добавок.В качестве основы при изготовлении творожных десертов для здорового питания использовали обезжиренный творог. В качестве сырья для изготовления плодоовощных криодобавок были выбраны: каротинсодержащие плоды (тыква, абрикосы, облепиха), цитрусовые (лимон с цедрой), топинамбур, шпинат, яблоки.Гомогенизация продукта рассматривается как технологический проём, который приводит не только к получению гомогенной структуры продукта, а также к процессам механоактивации, механодеструкции и механолизу - разрушению белка до отдельных его составляющих. При этом происходит увеличение массовой доли свободных α-аминокислот и простых пептидов. Показано, что 40 ... 45 % связанных α-аминокислот белка трансформируются в свободную легкоусвояемую форму. Размер молекул α-аминокислот составляет от 0,3 до 1,5 нм. Раскрыто механизм процесса, который связан с механокрекингом белка и его компонентов с минеральными веществами.Разработаны наполнители для творожных десертов в форме криопаст из плодов и овощей. Последние являются источником уникального комплекса натуральных БАВ – фитокомпонентов: фенольных соединений (1…2,1 %), каротиноидов (32,6…45,6 мг в 100 г), L-аскорбиновой кислоты (102…260 мг в 100 г), хлорофиллов (800…1680 мг в 100 г). Показано, что плодоовощные криопасты по содержанию БАВ превышают исходное сырье в 2,5 ... 3,5 раза, что объясняется извлечением из сырья скрытых форм БАВ. Кроме того, отличаются высоким содержанием растворимых пектиновых веществ за счет извлечения из свежего сырья скрытых неактивных форм в свободную форму при получении пастообразных крионаполнителей. Разработано рецептуры, технологию творожных десертов, изучено содержание БАВ. По химическому составу творожные десерты превышают известные аналоги, Розроблено новий спосіб та нанотехнологію сиркових десертів для здорового харчування, які включають як інновацію механічну обробку сирного зерна, що супроводжується процесами механоактивації та неферментативного каталізу казеїн-кальцій-фосфатних комплексів в нанорозмірну форму. Розроблено нанотехнологію кріодобавок із плодів та овочів, які використані в сиркових десертах як збагачувачі біологічно активними речовинами (БАР), натуральні структуроутворювачі та барвники. Застосування кріодобавок дає можливість виключити необхідність використання харчових домішок та синтетичних добавок Сиркові десерти знаходяться в нанорозмірній формі та відрізняються високим вмістом натуральних БАР плодів та овочів (β-каротину, фенольних сполук, дубильних речовин, хлорофілів, L-аскорбінової кислоти), розчинних пектинових речовин.Як основу сиркових десертів використовували знежирений кисломолочний сир. Як сировину для плодоовочевих кріодобавок використовували каротиновмісні плоди (гарбуз, абрикоси, обліпиха), цитрусові (лимон з цедрою), топінамбур, шпинат, яблука.Гомогенізацію сиру розглянуто як технологічний прийом, що призводить до отримання гомогенної структури та до процесів механоактивації і механолізу – руйнування молекул білку до окремих складових. При цьому відбувається збільшення масової частки вільних α-амінокислот та простих пептидів, розмір яких становить від 0,3 до 1,5 нм. Показано, що 40…45 % зв’язаних α-амінокислот трансформуються у вільну легкозасвоювану форму за рахунок механокрекінгу білку та його компонентів з мінеральними речовинами.Розроблені плодоовочеві кріопасти є джерелом унікального комплексу натуральних БАР: фенольних сполук (1…2,1 %), каротиноїдів (32,6…45,6 мг в 100 г), L-аскорбінової кислоти (102…260 мг в 100 г), хлорофілів (800…1680 мг в 100 г).У порівнянні з вихідною сировиною плодоовочеві кріопасти відрізняються високим вмістом розчинних пектинових речовин та за вмістом БАР перевищують якість свіжої сировини в 2,5…3,5 рази за рахунок вилучення при отриманні кріопаст прихованих неактивних форм у вільну форму.Розроблені сиркові десерти за вмістом БАР перевищують відомі аналоги

Latent forms of pectic substances and biologically active substances (BAS) in nanocomplexes with biopolymers and minerals in fruits and vegetables are discovered. It is shown that in the latent form they are found in fruits and vegetables 2.5 ... 5 times more than determined by traditional chemical research methods. As an innovation, the complex effect of steam thermal treatment, cryoprocessing and mechanolysis during fine grinding on biopolymers and BAS is used. It is established that under the influence of these processes, a more complete extraction of pectic substances and BAS from the raw material (4.5 ... 7.3 times) from the latent form and transformation into a soluble form occurs

Відкриті приховані форми пектинових речовин та біологічно активних речовин (БАР) в нанокомплексах з біополімерами та мінералами в плодах та овочах. Показано, що в прихованій формі їх знаходиться в плодах і овочах в 2,5…5 разів більше, ніж визначається традиційними хімічними методами досліджень. В якості інновації використано комплексний вплив процесів паротермічної обробки, кріообробки та механолізу при дрібнодисперсному подрібненні на біополімери та БАР. Встановлено, що при дії указаних процесів відбувається більш повне вилучення із сировини пектинових речовин та БАР (в 4,5…7,3 раз) із прихованої форми, і трансформація у розчинну форму, Открытые скрытые формы пектиновых веществ и биологически активных веществ (БАВ) в нанокомплексах с биополимерами и минералами в плодах и овощах. This review attempts to document the most relevant data currently available on the in situ localization of nucleolar chromatin on plant cells. The data provided by the most powerful and recent in situ techniques, such as DNA specific ultrastructural staining, immunogold labelling, in situ molecular cytochemistry, in situ hybridization or confocal microscopy, are summarized and discussed in the light of the potential and limitations of each individual methodology. The presence of DNA in both fibrillar centres and regions of the dense fibrillar component is extensively documented. Data on the nucleolar distribution of other important macromolecules involved in ribosomal transcription are also shown and referred to with regard to the location of DNA.
