Given the low compliance with healthy eating among patients with diabetes, personalized dietary plans incorporating their food preferences are urgently needed. However, few studies have explored the food preferences of adults with diabetes or prediabetes (AdDMP). We aimed to examine taste and food preferences among AdDMP, comparing them by sex, age, and weight status. A total of 415 AdDMP completed the survey via Amazon Mechanical Turk in 2023 (53% women, 47% men; 20–70 years old). Food/taste preferences were measured using Likert-type scales for six taste-cluster food groups, as well as basic tastes/spicy flavor. Open-ended questions assessed comfort, favorite, and least favorite foods, which were then categorized into five groups. Independent t-tests, analysis of variance, and Tukey–HSD were performed to compare outcomes across the groups. Men, the 41–70-year-old group, and the obese group regarded warm food as a comfort food more than in other comparable groups, while women and the 20–30-year-old group tend to prefer fruits and vegetables. Additionally, men expressed a significantly higher preference for salty-/umami-/fat-tasting foods compared to women. These findings underscore the need to align dietary expectations with reality for AdDMP. Future research should focus on strategies to accommodate their preferences within a healthy eating framework. Consumers' familiarity with foods influences their expectations and experiences upon consumption. Familiarity has mostly been assessed using perceived familiarity when studying single foods. However, foods are often combined to create dishes, complex compositions eaten at various mealtimes. Hence, this paper aimed to study if and how the level of consumers' dish familiarity shapes their motives and preferred contexts for home cooking and consuming three dishes: one traditional dish, one adopted ethnic dish, and one mainly unavailable and unknown ethnic dish. First, we describe the operationalization of familiarity into the qualitative "consumer's dish familiarity index" (CDFI) used to determine participants' familiarity level to the dishes. CDFI includes four indicators (perceived availability, consumer's knowledge, preparation, and consumption). In‐depth interviews (n = 27) were conducted with Dutch and Chilean women, as the countries have contrasting levels of immigration and globalization, which are expected to shape their inhabitants' familiarity level with ethnic dishes. Most experienced consumers (high familiarity) mentioned more dishes and individual‐related motives to prepare and consume a traditional or an adopted ethnic dish. Social‐ and individual‐related motives were salient when a dish was unknown and/or not previously consumed. Consumers' familiarity level also guided their preferred social context and location when consuming the dishes. A dish barely available will likely be first consumed in a restaurant to try a new dish that is perceived as appetizing to eat. Results showed that convenience, wanting to eat comfort foods, and showing affection to others are important motivators to facilitate the adoption of dishes to be home cooked. Practical Application: This paper provides a novel approach to assess consumer familiarity to dishes. The qualitative consumer's dish familiarity index (CDFI) can be used in future investigations to assess and classify consumers into different dish familiarity levels by using four indicators. The outcomes of this study suggest consumers' familiarity level could serve as a reference for designing and/or improving (ethnic) foods and creating marketing campaigns to introduce them into (foreign) countries. During the pandemic, digital platforms had a boom in revenue or subscriptions. Despite their increasing relevance, few studies explore how different social strata experience such access. Based on 31 in-depth interviews in Rio de Janeiro, Brazil, this article discusses the meanings and practices of digital consumption among the 'new middle class.' By focusing on three platforms—ride-sharing apps, food delivery apps, and audio-visual streaming—we interrogate how digital consumption has shaped experiences of well-being and hardship during pandemic times and how it relates to social mobility. We argue that digital platforms brought comfort amidst precarity as mechanisms for accessing relaxing and fun moments while responding to structural issues of Brazilian megacities. Our data also suggest these digital platforms enhance middle-class symbolic status related to individualised and private practices, though collectiveness is still present in participants' liminal class experience. HISTORY of food , *TELEVISION cooking programs , *TELEVISION , *TOURS , *COMFORT food - Abstract
Food tour television has long allowed Americans to virtually visit domestic and global locations, vicariously tasting "authentic" and "exotic" foods from the comfort of their couches and under the guidance of intrepid hosts. Analyzing the history and evolution of the food tour genre offers a gauge of popular discourse surrounding the construction of taste and the formation of national cuisines. Two recent shows within this genre, Taste the Nation with Padma Lakshmi and No Passport Required with Marcus Samuelsson, are of particular interest given their thematic focus on migration – a focus missing within earlier food tour shows. In this paper, we ask how migrant narratives are portrayed within this new programming and how the shows and their hosts redefine American eating. We examined the aesthetic decisions, content choices, and actor involvement within the available episodes of each show. We find that Taste the Nation and No Passport Required successfully use their platform to bring attention to the hardships of the migratory journey and migrants' contributions as tastemakers. However, within their redirection of the genre, these shows still frequently resort to problematic tropes of migrant deservingness, melting pot assimilation, and rugged neoliberal individualism characteristic of earlier programming. Abstract The Generation Z cohort, born between 1995 and 2010, represents a substantial portion of the global population, experiencing their formative years in an era characterized by pervasive globalization. Comfort foods serve as tangible expressions of both individual and national dietary cultures. This study reveals that the comfort foods of Generation Z also reflect the locality and globalization of dietary habits. Exploring the comfort foods of Generation Z in Taiwan, this research categorizes them into four classifications: main meals, desserts and snacks, beverages, and fruits and vegetables. Among Taiwan’s Generation Z, approximately one-third of their comfort food choices hold specific cultural significance, reflecting the dietary transformations and historical trajectory of Taiwan over the past century. The study also identifies key experiences and recollections associated with Generation Z’s comfort foods, including enhanced mood, ritualistic engagement, and emotional solace; while leisure, hunger, and cravings are contextual factors influencing the consumption of comfort foods.

According to the article "Milking in Mexico" from Dairy Mail, Mexico has approximately 1.1 million cattle farms managed by over 800,000 dairy farmers. These farmers produce an average of 900,000 to 1 million liters of milk per month. Milk is the third most important livestock product in Mexico, with Jalisco being the leading state for milk production. The demand for milk is strong, particularly in the processing sector, and the average Mexican household spends around R270 per month on milk. Domestic milk production has historically satisfied about 75% of domestic demand, but both milk imports and exports are expected to increase by about 8%. Cheese production is also growing due to increased domestic and export market demand, with the United States being Mexico's top market for cheese exports. Butter production is forecasted to increase by 2% in 2024, and skimmed milk powder production is expected to increase by 2% as well. Mexico's dairy sector is closely monitoring potential policy changes that could impact their operations. [Extracted from the article]
