Berries include a large number of species that are known for their nutritional and health benefits. Several studies have found that red currant has different biological properties, such as antiproliferative, anticancer, antimicrobial, anti-inflammatory, antidiabetic, and antioxidant. The aim of this study was to investigate the antimicrobial activity of lyophilized fruit juice (RPJL) and waste extract (RPWL) obtained from red currant (Ribes rubrum L.) variety Redpoll on different Gram-positive (Bacillus cereus, Listeria monocytogenes, Staphylococcus aureus, Enterococcus faecalis) and Gramnegative bacteria (Escherichia coli, Pseudomonas aeruginosa, Salmonella enteritidis, Proteus mirabilis, Enterobacter aerogenes) and one yeast (Candida albicans). The activity of dominant active compounds (ascorbic acid, quercetin and kaempferol) contained in red currants under the same conditions were also examined to determine their responsibility in the antimicrobial effect. Tested RPJL and RPWL showed moderate antimicrobial activity. The minimum inhibitory (MIC) and microbicidal concentrations (MBC/MFC) of RPJL and RPWL were 100 mg/ml and more than 100 mg/ml. RPJL and RPWL have the same effect on Gram (+) bacteria and the same MIC and MBC value. RPWL showed stronger antimicrobial effects on Gram (-) bacteria while the juice did not inhibit the growth of the Gram (-) bacteria at all. Standard solutions of ascorbic acid and quercetin showed strong inhibitory and microbicidal activity at lower concentrations than tested samples with the MIC/MBC (MFC) =2.5-10 mg/ml. Results showed that red currants could have potential applications as natural antimicrobial agents. [ABSTRACT FROM AUTHOR]

ARONIA , *ETHANOL , *PHENOLIC acids , *FERMENTATION , *YEAST , *HONEY , *FRUIT juices , *NUTRITIONAL value - Abstract
Honey is a product of high nutritional value, used as a raw material for obtaining mead. However, adding fruit juices, including chokeberry juice, can improve mead quality. This paper aims to assess the effects that adding different quantities of chokeberry juice, with the variation of 3 amounts of inoculated yeast, has on the fermentation and physicochemical, antioxidant, and antimicrobial properties of mead. The parameters analyzed are the dry matter content, pH value, and content of volatile acids, ethanol and methanol, total phenols and flavonoids, FRAP, DPPH, and ABTS tests, and antimicrobial properties. The results obtained in this paper show that adding chokeberry juice improves the antioxidant properties of the final product and positively affects the course of mead fermentation, i.e., it has led to an increase in the maximum concentration of ethanol. Regarding the chemical composition of mead, there is no significant difference, except in the obtained ethanol content, which is the highest in samples with 10% of added chokeberry juice. Furthermore, the control sample showed the best antimicrobial activity, while the sample with 5% added chokeberry juice showed the weakest effect. Finally, the strongest effect was seen in the sample with 20% of added chokeberry juice. [ABSTRACT FROM AUTHOR]

Infections caused by strains of bacteria that show resistance to a large number of antibiotics represent one of the leading problems today. The aim of this work is to examine new, natural resources with potential antimicrobial effects. The antibacterial activity of lichen resinoids (Evernia prunastri) was tested against reference strains Staphylococcus aureus ATCC 25923, Staphylococcus epidermidis ATCC 12228, Pseudomonas aeruginosa ATCC 27853, Escherichia coli ATCC 25922 and clinical isolates of bacteria S. aureus, S. epidermidis, P. aeruginosa and E. coli, by the disc-diffusion method. Each 10 µl of resinoid, of different concentrations, was applied to sterile discs with a diameter of 6 mm. The tested resinoid exhibited the most significant antibac- terial activity against Pseudomonas aeruginosa ATCC 27853, while it was the weakest against the clinical isolate of Escherichia coli. The results indi- cate that the tested oakmoss resinoid shows moderate antimicrobial activity against the tested strains. [ABSTRACT FROM AUTHOR]

Enrichment of food is a strategy to reduce the incidence of deficiencies in micronutrients in a population. Couscous is widely consumed in Algeria, thus the objective of this study was to obtain an enriched couscous with enhanced therapeutic potencies and with good physicochemical, technological, and microbiological characteristics. Three mass ratios of the traditional preparation Issoufer (10, 20, and 30 %) were added to wheat couscous, and then compared with a control couscous made 100 % of semolina. A significant (p < 0.05) increase was noticed in the ash, proteins, lipids, carbohydrates, phenolic compounds, flavonoids, and anti-radical activity values, for all the mass ratios of Issoufer powder. In contrast, the moisture and pH-value revealed a significant (p < 0.05) decrease in Issoufer powder. The acute toxicity study revealed no lethal effects and behavioural signs of toxicity at the tested doses (100, 250, 500, and 750 mg kg−1) of the extract of Issoufer during the 5 days of observation. The results of antibacterial activity showed diameters of inhibition zones had achieved 29.90±0.60 mm. Based on obtained results, Issoufer powder can be considered a good ingredient to develop functional couscous naturally enriched of secondary metabolites, and can be used in the prevention of several diseases, as well as used in the food industry. The applications of organosulfur compounds, especially thioketones are varied which concerns both synthetic and biological chemistry. In this context, from the essential oil of Artemisia judaica L., extracted by hydrodistillation, and consisting mainly of piperitone (91.77 %), thione, and thiol derivatives were hemi-synthesized via a thionylation reaction byphosphorus pentasulphide (P2S5). The possible thione-thiol tautomerism in solution followed spectrophotometrically revealed the predominance of thiol form in solution. The antimicrobial activity of essential oils showed that the thionylation of essential oil caused a considerable increase in antimicrobial activity in particular against Escherichia coli. The willow gentian (Gentiana asclepiadea L.) is a valuable source of secoiridoids, Cglycosylated flavones and xanthones used empirically in the treatment of liver and gastrointestinal disorders. Guided by ethnopharmacological data on the use of G. asclepiadea underground parts in the treatment of diarrhea, antimicrobial activity against selected pathogens of gastrointestinal significance was examined. Presented study was aimed to evaluate antimicrobial activity of the aqueous-ethanolic extract of G. asclepiadea underground parts and its petroleum ether, ethyl acetate, butanol and water fractions. A molecular docking analysis was performed as well. The antimicrobial activity against pathogens related to gastrointestinal disorders was tested by a microdilution method. The ethyl acetate fraction showed the greatest antimicrobial activity. The lowest MIC of 0.78 mg/ml was observed against Bacillus cereus and Staphylococcus aureus, achieved by the petroleum ether and ethyl acetate fractions, respectively. The greatest bactericidal activity (MBC of 0.78 mg/ml), achieved by the ethyl acetate fractions, was recorded against Enterococcus faecalis. The yeast Candida albicans was the most resistant against the fractions and the extract. C-glycosylated flavones isoorientin and isovitexin showed the best binding affinity on Enterococcus faecalis lipoate-protein ligase A as determined by a molecular docking analysis. Considering the results of our study, underground parts of G. asclepiadea could be used as a valuable natural source of secondary metabolites with promising antimicrobial activity.

The subject of this study was the synthesis, characterization and testing of titanium (IV) oxide nanoparticles (TiO2-NPs) and their lanthanum (La3+), iron (Fe3+) and vanadium (V3+) dopants for the photocatalytic and microbiological activity, as well as their comparison with the catalytic activity of the tested commercial TiO2 (Degussa P-25® and anatase nanoparticles, 99.9 %, Alfa Aesar Lancaster). The TiO2-NPs photocatalysts were synthetized and doped with different metal dopants concentrations for different calcination durations, such as: TiO2-NPs (anatase-NPs, calcination duration of 5 and 7 h), La3+ (0.65, 1, 2, 3, 4, 5 and 6 wt. %, calcination duration of 7 h), Fe3+ (1, 2.5, 3.0 and 5 wt. %, calcination duration of 7 and 24 h), and V3+ (10 wt. %, calcination duration of 7 and 24 h). The Pseudomonas aeruginosa strains DV 2739 and ATCC 9023 were used as model microorganisms in the microbiological experiments performed in a microbiological cabinet. The photocatalytic and coupled photocatalytic-microbiological processes were performed in a slurry-catalyst bath circulation photoreactor in the presence of direct UV radiation simulated with a sodium lamp SONT UV400 in lab conditions. The study has demonstrated that the catalyst sample S28, an La-dopant with a concentration of 1wt. %, displays the best photocatalytic properties among all La-dopants, while the best photocatalytic activity among all catalysts was achieved in S111 sample, an Fe-dopant of titania (5 wt. %, calcination duration of 7 h). Our results also show different degradation rates for TiO2 doped with V3+ of 10.0 wt. %, samples S93 and S96, synthetized with different duration times (7h and 24h, respectively) and calcination heating rates (66.7 and 135 ᵒC/h, respectively), which can be explained by anomalies in their behavior. Finally, the best antimicrobial activity is obtained in S24 sample, an Fe-dopant for which it was shown that 0.25 mg/L could be toxic for microorganisms. In accordance with our results of superior Fe-dopant characteristics and theoretical knowledge for TiO2 nanoparticles doped with Ag, Au and Fe, we get directions for further studies of their photocatalytic and antimicrobial activities, as well as for the development of TiO2-nanoparticles and nanotubes for enhancing antibiotics and their use in cancer treatment.

- Abstract
Cilj ovog rada je utvrđivanje postojanja biološki aktivnih jedinjenja u ekstraktima morskih sunđera primenom HPTLC-a, bioautografije i enzimskog eseja inhibicije tirozinazom.

- Abstract
Generisanje otpada u prehrambenoj inudstriji predstavlja globalni problem. Karakterizacija ekstrakata vršena je pomoću spektrofotometrijskih testova – merenjem antioksidativne aktivnosti (DPPH esej), sadržaja ukupnih polifenola (TPC) i sadržaja ukupnih flavonoida (TFC).

- Abstract
Ovaj pregledni rad ima za cilj da predstavi najnovija istraživanja o hemijskom sastavu i biološkimaktivnostima ekstrakata briofita sa posebnim osvrtom na mahovine Hypnum cupressiforme i Hedwigia ciliata i njihovoj potencijalnoj upotrebi kao imunomodulatora u prevenciji i/ili terapiji različitih bolesti čoveka., Bryophytes (mosses, liverworts, and hornworts) are the second largest group of land plants after flowering plants, with more than 20,000 species distributed worldwide. Although they have been used in traditional medicine since ancient times, their chemical composition and potential biological activities have only recently begun to be studied more intensively. Among the numerous bioactive constituents of moss plants, polyphenols and triterpenes represent the most important groups of compounds, which are also carriers of their biological activity. The antioxidant, anti-inflammatory, antitumor, antineurodegenerative, antimicrobial, antidiabetic, and proregenerative potential of various moss extracts have been confirmed in a large number of studies. This review presents the latest research on the chemical composition and biological activity of bryophyte extracts with special reference to the mosses Hypnum cupressiforme and Hedwigia ciliata and their potential use as immunomodulators in the prevention and/or therapy of various human diseases.

- Abstract

- Abstract
Promena antioksidativnog kapaciteta praćena je primenom šest antioksidativnih testova: Folin-Ciocalteu test redukcionog kapaciteta (FCR), test ukupnog antioksidativnog kapaciteta (ABTS), test antioksidativne aktivnosti (DPPH), test redukujuće moći (FRP), elektrohemijski test primenom ciklične voltametrije (CV) i elektrohemijski test primenom diferencijalne pulsne voltametrije (DPV). Dobijeni rezultati svih korišćenih testova ukazuju da nakon in vitro digestije dolazi do smanjenja antioksidativne aktivnosti. Takođe, dobijeni rezultati DPPH testa ukazuju da tokom in vitro digestije ne dolazi do oslobađanja nepolarnih jedinjenja koja poseduju antioksidativnu aktivnost. Testirana je i antimikrobna aktivnost nedigestovanog ekstrakta šipurka i digestovanih frakcija na rast E. coli. Utvrđeno je da ne postoji antimikrobna aktivnost.

- Abstract
Natural extracts made from fresh plant material and biologically active compounds isolated from different plant species that have been used in folk medicine for centuries, may present valuable sources for production of novel natural preservatives and medicinal preparations. White lily-Lilium candidum is also used, for a long period of time, in folk medicine for healing of burns and frostbites, otitis and rhinitis as well as balm for washing wounds and cuts. Roots, leaves and flowers have medical properties. Nevertheless, there is little information in literature related to antibacterial effect of white lily extract on certain pathogens and there is a need to determine the justification for its use in traditional medicine. Antibacterial activity of White lily extract on five reference cultures (Escherichia coli WDCM 00090, Listeria monocytogenes WDCM 00020, Salmonella enterica WDCM 00030, Pseudomonas aeruginosa WDCM 00024) and seven bacterial cultures (Escherichia coli, Providencia stuartii, Pseudomonas spp. ß-hemolytic Escherichia coli, coagulase positive staphylococcus, Staphylococcus aureus, group D Sreptococcus) from Laboratory for Microbiology, Public Veterinary Institute of Republic of Srpska "Dr. Vaso Butozan", Banja Luka, were examined in this study. Results confirmed that white lily extract show certain antibacterial activity against examined pathogens used in this study. Antibacterial activity of White lily extract was in the range from 5.33 mm to 18.88 mm depending of bacterial strain and concentration of white lily extract. [ABSTRACT FROM AUTHOR]

In order to achieve the goals of sustainable development, the development of new green solvents is currently in the focus of research. Due to the easy preparation process, low price, potential biodegradability and negligible toxicity, Deep Eutentic Solvents (DES) are recognized as a good substitute for organic solvents. Thanks to the increasing interest and development of deep eutentic solvents, it is increasingly used as a medium for extraction, chromatography and for biomedical purposes in the past few years. The aim of this work was to determine which deep eutentic solvent is most suitable for the extraction of piperine from white and green pepper. The peppercorns were crushed and sieved, and three size fractions were obtained. Piperine is a non-polar molecule, which is why four hydrophobic solvents are prepared for extraction, two of them are thymol-based and two are menthol-based. The solubility of piperine in the prepared solvents was predicted by the COSMO-RS model, and extraction was performed with all size fractions of pepper. The concentration of piperine in the obtained samples was determined by UV/Vis spectroscopy, without prior processing of the extracts. Also, the antimicrobial activity of the extracts was tested with the disk diffusion test, and the toxicity test of pure solvents was performed using the bioluminescent bacterium Vibrio fischeri.

Food spoilage is phenomenon associated with occurence of the microorganisms in agricultural products. Due to the ability of several microorganisms to colonize plant material, agrochemicals were proposed to suppress bacterial growth. However, overuse of agrochemicals has detrimental impact on environmental quality. Therefore, the objective of this research was to evaluate the potential of aqueous extracts of garlic (Allium sativum L.), wild garlic (Allium ursinum L.), and chives (Allium schoenoprasum L.) to suppress the growth of Enterococcus faecalis and Escherichia coli. The antimicrobial activity of these plant extracts was determined using the disc diffusion method. Mueller-Hinton agar was inoculated with bacterial inoculum; six filter paper disks, impregnated with 15 μl aqueous extract (1, 2 and 4%), were placed on each agar surface. The Petri dishes were incubated at 37 °C for 24 hours. The diameter of the zone of inhibition was measured and expressed in millimeters (mm). Almost all aqueous extracts showed a negligible effect on the growth of E. coli and E. faecalis. Significant suppression of bacterial growth compared with other treatments was observed with the aqueous extract of wild garlic at a concentration of 4%. This research confirms the potential of wild garlic extract in suppression of potential pathogens., Kvarenje hrane je pojava povezana sa prisustvom mikroorganizama u poljoprivrednim proizvodima.

Delphinidin is a dominant anthocyanidin in bilberry. Antimicrobial activity of methanol extracts of the genus Morus showed that M. nigra L. extract was more active than extracts of other two species (M. alba L. and M. rubra L.). Minimal inhibitory and bactericidal concentration of V. myrtillus methanol extract was in the range of MIC/MBC = 15.75-252.00 mg/mL. Antimicrobial effect of the tested extracts was less potent against strains from wounds compared to ATCC strains as well Gram (-) bacteria compared to Gram (+) bacteria. The most sensitive strains were S. epidermidis, S. pyogenes. P. mirabilis and S. aureus. [ABSTRACT FROM AUTHOR]

Minimum inhibitory concentracion, MIC) i metodom odreĊivanja minimalne baktericidne koncentracije (engl. Minimum bactericidal concentration, MBC). Interakcijski antimikrobni uĉinak izmeĊu ekstrakta i spoja u smjesi odreĊen je izraĉunavanjem frakcijskog inhibitornog koncentracijskog indeksa (eng. Fractional Inhibitory Concentration Index, FICI). Due to the increasing number of diseases caused by pathogenic microorganisms, consumers are becoming increasingly concerned about food safety. Numerous scientific studies point to the possibility of using by-products to fortify foods or their use as substitutes for synthetic antimicrobials. The antioxidant and antimicrobial effects of berries have been already confirmed and are primarily related to their phenolic content, mainly compounds such as flavonoids and anthocyanins, blackberry leaves have interesting chemical profile and strong biological activity. In this work, the antimicrobial activity of blackberry leaf extract in combination with selected phenolic compounds (vanillic acid, catechin, rutin, apigenin and oleuropein) against foodborne pathogens: Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes, Escherichia coli, Enterococcus faecalis and Salmonella enteitidis was studied. Analysis was performed using two different methods: minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC). The interaction between extract and compoundsin terms of antibacterial activity was determined by calculating the fractional inhibitory concentration index (FICI). The low MIC (0.63 mg/mL) and good bactericidal activity (MBC 1.25 mg/mL) were confirmed for the blackberry leaf extract against S. aureus, while the MIC values for the other tested bacteria were 5 mg/mL. All binary mixtures of blackberry leaf extract and selected phenolic compounds showed very good antimicrobial activity and mostly indicated additive activity. Only mixture of blackberry leaf extract and oleuropein had a synergistic effect against L. monocytogenes (MIC=1.25+0.31 mg/L, and FICI 0.5).

- Abstract

Modern medicine is facing a very serious problem namely the excessive and improper use of antibiotics, which leads to the emergence of bacterial strains with developed defense mechanisms and thus to the emergence of antimicrobial resistance. To address this problem, scientists are developing new antimicrobial agents that could replace antibiotics and prevent further development of antimicrobial resistance. Potential antimicrobial agents are ferrocene peptides, and their biological evaluation is examined in this work. The antimicrobial activity of ferrocene peptides 1 - 12 was investigated by the disk diffusion method, the broth dilution method, and the colony counting method, while FRAP and the DPPH method were used to determine the antioxidant activity. Only the compounds Ac−D-Val−NH−Fn−COOMe (4), Ac−D-Leu−NH−Fn−COOMe (8) and Ac−D-Phe−NH−Fn−COOMe (12) showed antimicrobial activity against the test microorganisms: S. aureus, B. subtilis, and P. aeruginosa. Further studies showed that compound 8 at the highest concentration of 2 mM inhibited microbial growth by one decimal dilution.

There is increasing evidence in the literature of antimicrobial resistance, often resistance to multiple drugs used in the therapy against gram-positive and gram-negative bacteria. As multidrug-resistant bacterial strains become more widespread and numerous, it is important to provide new, effective antimicrobial agents tp protect health. Potential antimicrobial agents are ferrocene peptides, and their biological evaluation is investigated in this work. Biological evaluation of eighteen synthesized ferrocene peptides was performed by determining their potential antimicrobial and antioxidant activities. The antimicrobial activity was studied by the disk diffusion method, broth dilution method and colony counting method, while the antioxidant activity was determined by the FRAP and DPPH. The bioconjugates Ac-L-Ala-D-Pro-NH-Fn-NH-D-Pro-Boc (4) and Ac-D-Ala-D-Pro-NH-Fn-NH-L-Pro-Boc (5) from the group of ferrocene peptides IIIc, showed antimicrobial activity by the disk diffusion method according to test microorganisms: S. aureus, E. faecium, P. aeruginosa and E. coli. The minimum inhibitory concentration was determined according to these bacterial species and is > 2 mM.

The acute toxicity study revealed no lethal effects and behavioural signs of toxicity at the tested doses (100, 250, 500, and 750 mg kg–1) of the extract of Issoufer during the 5 days of observation. The results of antibacterial activity showed diameters of inhibition zones had achieved 29.90±0.60 mm. Based on obtained results, Issoufer powder can be considered a good ingredient to develop functional couscous naturally enriched of secondary metabolites, and can be used in the prevention of several diseases, as well as used in the food industry., Obogaćivanje hrane je način da se smanji učestalost nedostataka mikronutrijenata u populaciji. Studija akutne toksičnosti nije pokazala smrtonosne učinke i znakove toksičnosti pri ispitanim dozama ekstrakta Issoufera (100, 250, 500 i 750 mg kg–1) tijekom pet dana promatranja.

Ajuga plants have had a long history of ethnopharmacological use worldwide. Based on the papers published so far, it seems that there has been a great interest in isolation, structural elucidation and testing of non-volatile Ajuga phytochemicals. The composition of hydrodistilled aerial part volatiles obtained from six populations of wild-growing A. laxmannii was investigated by means of GC and GC-MS analysis. The oils were screened for in vitro antibacterial and antifungal activity against a panel of laboratory control strains using the broth microdilution assay. The analyses resulted in the identification of one hundred fourteen constituents, accounting for 79.6-97.3% of the total composition of the oils. The main components of the analyzed samples were (E)-phytol (5.3-26.1%), nonacosane (2.3-25.6%), coumarin (tr-22.7%), 1-octen-3-ol (0-21.2%), (Z)-3-hexen-l-ol (0-20.5%), linalool (0-13.7%) and heptacosane (0.6-10.5%), which all together contributing more than two thirds to the compounds detected. Among the microorganisms tested the most susceptible strain was Pseudomonas aeruginosa (minimal inhibitory/bactericidal concentration = 1.25/2.5 mg mL-1) [ABSTRACT FROM AUTHOR]
