BackgroundObesity and consumption of high-fat diets (HFD) are associated with intestinal permeabilization and increased paracellular transport of endotoxins, which can promote neuroinflammation. Inflammation can affect the hypothalamic pituitary adrenal (HPA) axis, which controls responses to stress and downregulates the brain-derived neurotrophic factor (BDNF), which can promote anxiety and depression, conditions frequently found in obesity. We previously showed that consumption of anthocyanins (AC) mitigate HFD-induced insulin resistance, intestinal permeability, and inflammation.ObjectivesThis study investigated if a dietary supplementation with a cyanidin- and delphinidin-rich extract (CDRE) could counteract HFD/obesity-induced hippocampal inflammation in mice.MethodsC57BL/6J male mice were fed for 14 wk on one of the following diets: 1) a control diet containing 10% total calories from fat (C), 2) a control diet supplemented with 40 mg AC/kg body weight (BW) (CAC), 3) a HFD containing 60% total calories from fat (lard) (HF), or 4) the HFD supplemented with 2, 20, or 40 mg AC/kg BW (HFA2, HFA20, and HFA40, respectively). In plasma and in the hippocampus, parameters of neuroinflammation and the underlying cause (endotoxemia) and consequences (alterations to the HPA and BDNF downregulation) were measured.ResultsConsumption of the HFD caused endotoxemia. Accordingly, hippocampal Tlr4 mRNA levels were 110% higher in the HF group, which were both prevented by CDRE supplementation. Consumption of the HFD also caused: 1) microgliosis and increased expression of genes involved in neuroinflammation, that is, Iba-1, Nox4, Tnfα, and Il-1β, 2) alterations of HPA axis regulation, that is, with low expression of mineralocorticoid (MR) and glucocorticoid (GR) receptors; and 3) decreased Bdnf expression. Supplementation of HFD-fed mice with CDRE mitigated neuroinflammation, microgliosis, and MR and BDNF decreases.ConclusionsCDRE supplementation mitigates the negative effects associated with HFD consumption and obesity in mouse hippocampus, in part by decreasing inflammation, improving glucocorticoid metabolism, and upregulating BDNF.

Gladiolus (Gladiolus grandiflora Hort.) is one of the important horticultural crops belonging to Iridaceae family. It grows in flowerbeds, borders, and containers and has immense potential as cut flowers. In this study, we have optimized the anthocyanin extraction from gladiolus Pusa Suahagin (PS) flower using one-variable-at-a-time (OVAT) and response surface methodology (RSM) methods. The optimum conditions for maximum anthocyanin content of 40.45 g−1 DW was obtained considering the water:hydrochloride (1.8:0.6) ratio, temperature: 52.72 °C, time: 2 h and solid loading: 7% (w/v). MS studies confirmed the presence of pelargonidin, cyanidin, delphinidin, peonidin, petunidin, and malvidin compounds in PS flower extract. Free radical scavenging capability determined by DPPH assay of PS flower extract showed 84.63%, which implies that the PS flower extract can be used as colorant or nutraceutical in food industry and potential agent for enhancement of vase life pertinent to cut flowers in flower industry. Anthocyanins, as a type of polyphenolic compound, have been discovered to offer multiple health benefits to humans, including anti-aging and anti-inflammatory properties. This prospective cohort study aims to examine the relationship of dietary intake of anthocyanin with all-cause mortality and cardiovascular diseases mortality in the US. The aim of this research was to explore the possible correlation between anthocyanin consumption and the mortality rate from all causes as well as from cardiovascular disease. Based on the Public Access NHANES-linked National Death Index files up to December 31, 2019, we identified mortality status and heart disease-specific causes of death. A multivariate Cox regression analysis was employed to evaluate the effects of anthocyanin intake on mortality outcomes, generating hazard ratios and 95% confidence intervals, adjusting for various demographic characteristics, lifestyle factors, and comorbid conditions. Additionally, we utilized Kaplan-Meier survival curves, subgroup analyses. In different scenarios, dietary anthocyanin intake was assessed using restricted cubic spline models. A total of 11,959 participants completed the final cohort, averaging 47.12 years of age (SD ± 0.35). Following adjustments for multiple variables, an inverse relationship was identified between anthocyanin intake in the highest quartile and all causes mortality, yielding a hazard ratio (HR) of 0.68 (95% CI: 0.52–0.89). Similarly, elevated anthocyanin consumption was linked to a reduction in heart disease mortality, with HR of 0.61 (95% CI: 0.38–0.97). Additionally, dose–response curve revealed a consistent decrease in both all-cause and cardiovascular mortality with increasing anthocyanin intake. Further subgroup analyses revealed that elevated intake of anthocyanins was linked to decreased all-cause mortality in White individuals and males. Moreover, high anthocyanin intake was significantly correlated with reduced all-cause mortality irrespective of hypertension or hyperlipidemia status. Our research indicates that an appropriate dietary intake of anthocyanins is associated with a reduction in overall mortality rates. Furthermore, the findings reveal a substantial association between anthocyanin intake and decreased mortality from cardiovascular diseases, suggesting that anthocyanins may effectively lower the risk of cardiovascular-related deaths. Green extraction primarily emphasizes developing new extraction techniques that consume less energy. It involves using safe, non‐toxic alternative solvents and sustainable natural resources to ensure the production of safe and high‐quality extracts. Red onion skin is an important source of anthocyanins, a subgroup of phenolic compounds. Anthocyanins are an important group of natural pigments that have attracted a lot of attention due to their health benefits. However, the instability and high sensitivity of these pigments have limited their use in food and cosmetics. Therefore, in this study, various modern green extraction methods were used, including solvent extraction, ultrasound‐assisted extraction, subcritical water extraction, microwave‐assisted extraction (MAE), pulsed electric field extraction, supercritical fluid extraction (SFE), and high hydrostatic pressure‐assisted (HHPAE) extraction, to specifically extract and purify anthocyanins. The extraction efficiency, specifically targeting anthocyanins, showed the highest efficiency with HHPAE (81.84%) and the lowest with MAE (40.01%). Measurement of total anthocyanin content revealed that HHPAE and SFE methods yielded the highest anthocyanin concentrations, with 248.49 and 244.98 mg/L, respectively. Identification of anthocyanin by LC–MS revealed that the main anthocyanidins in red onion peel are pelargonidin, cyanidin, delphinidin, and petunidin. These results indicate that innovative green extraction methods, particularly HHPAE and SFE, can effectively replace conventional techniques due to their superior efficiency and enhanced preservation of anthocyanin compounds. Cyanidin‐3‐O‐glucoside (C3G), as a typical anthocyanin, exhibits excellent antioxidant effects. This study aimed to demonstrate the role and mechanism of C3G in regulating 3‐hydroxy‐3‐methylglutaryl‐coenzyme A reductase (HMGCR)‐mediated cholesterol anabolism on H2O2‐induced oxidative stress in HEK‐293T cells. Firstly, the inhibitory effect of C3G on oxidative stress was confirmed by CCK‐8, ROS, and mitochondrial membrane potential (MMP) experiments. Then, proteomics was used to investigate and screen differentially expressed proteins in inhibiting cellular oxidative stress by C3G. HMGCR was screened as a key differentially expressed protein by proteomic analysis. The results verified that C3G could reduce cholesterol levels by inhibiting sterol regulatory element‐binding protein (SREBP2)/HMGCR pathway, increasing ATP, and reducing acetyl‐CoA. Finally, HMGCR had been shown to positively increase ROS accumulation and decrease MMP, which were reversed by intervention of C3G through a series of knockdown and overexpression experiments. In conclusion, the results demonstrated that C3G could inhibit the disorder of cholesterol synthesis in oxidative stress cells by regulating the ROS/SREBP2/HMGCR pathway. [ABSTRACT FROM AUTHOR]

Blueberry fruits are rich in anthocyanins. There are 25 known anthocyanidins found in blueberries (Vaccinium spp.) until now. Anthocyanins found in blueberries have attracted considerable interest for their outstanding abilities as antioxidants, anti-inflammatory agents, anti-diabetic, anti-obesity, and neuroprotection compounds, as well as their potential for preventing cardiovascular diseases, protecting vision, and inhibiting cancer development. However, their application is constrained by issues related to instability and relatively low bioavailability. Thus, this review provides a detailed overview of categories, functions, stability, and bioavailability of blueberry anthocyanins and their practical applications. Malvidin-3-O-glucoside (mv-3-O-glc), malvidin-3,5-O-diglucoside (mv-3,5-O-diglc), and malvidin-3-O-(6-O-coumaroyl) -glucoside-5-O-glucoside (mv-3,5-O-diglcCoum) extracted from Yan 73 (Vitis vinifera L.) and spine grape (Vitis davidii Foex) were used to investigate the effect on maltase and sucrase in the gut microbiota and Caco-2 cells. The results showed that three anthocyanins exhibited the inhibition of both maltase and sucrase in Caco-2 cells, and mv-3,5-O-diglc was the most effective one with an IC50 of 258.96 μM for maltase and 189 μM for sucrase, respectively, through a mixed-type inhibitory mechanism. The strong inhibition was also supported by the significant decrease in sucrase mRNA and protein levels in Caco-2 cells after treatment with mv-3,5-O-diglc for 4 h. Moreover, the inhibition effect of anthocyanins was observed only on maltase, which originated from the gut microbiota. The inhibition potential of mv-3-O-glc against maltase was higher than that of the other two anthocyanins in a mixed-type inhibition manner (IC50 = 9.66 ± 0.33 μM). Molecular docking revealed that mv-3-O-glc and mv-3,5-O-diglc formed hydrogen bonds with the aspartic acid (ASP) 443 catalytic residue of maltase, respectively, and then inhibited the enzyme activity by occupying the catalytic center. In particular, mv-3,5-O-diglc could easily fit into the active center of sucrase and form hydrogen bonds with the ASP1394 residue, which could be another reason for the inhibition of sucrase. Thus, anthocyanins, especially the diglucoside anthocyanins derived from grapes, are good potential α-glucosidase inhibitors for regulating postprandial blood glucose levels as dietary supplements. Supramolecular solvent-based extraction (SUPRAS) stands out as a promising approach, particularly due to its environmentally friendly and efficient characteristics. This research explores the optimization of SUPRAS extraction for sango radish and kale microgreens, focusing on enhancing the extraction efficiency. The Taguchi experimental design and artificial neural network (ANN) modeling were utilized to systematically optimize extraction parameters (ethanol content, SUPRAS: equilibrium ratio, centrifugation rate, centrifugation time, and solid-liquid ratio). The extraction efficiency was evaluated by measuring the antioxidant activity (DPPH assay) and contents of chlorophylls, carotenoids, phenolics, and anthocyanidins. The obtained results demonstrated variability in phytochemical contents and antioxidant activities across microgreen samples, with the possibility of achieving high extraction yields using the prediction of optimized parameters. The optimal result for sango radish can be achieved at an ethanol content of 35.7%; SUPRAS: equilibrium ratio of 1 v/v, centrifugation rate of 4020 rpm, centrifugation time of 19.84 min, and solid-liquid ratio of 30.2 mg/mL. The following parameters are predicted for maximal extraction efficiency for kale: ethanol content of 35.64%; SUPRAS: equilibrium ratio of 1 v/v; centrifugation rate of 3927 rpm; centrifugation time of 19.83 min; and solid-liquid ratio of 30.4 mg/mL. Additionally, laboratory verification of predicted SUPRAS parameters showed very low divergency degrees for both microgreens (–3.09 to 2.36% for sango radish, and −2.57 to 3.58% for kale). This potential of SUPRAS extraction, coupled with statistical and computational optimization techniques, can enhance the recovery of valuable bioactive compounds from microgreens and contribute to green extraction applications. Chalcone synthase (CHS) and chalcone isomerase (CHI) catalyze the first two committed steps of the flavonoid pathway that plays a pivotal role in the growth and reproduction of land plants, including UV protection, pigmentation, symbiotic nitrogen fixation, and pathogen resistance. Based on the obtained X-ray crystal structures of CHS, CHI, and chalcone isomerase-like protein (CHIL) from the same monocotyledon, Panicum virgatum, along with the results of the steady-state kinetics, spectroscopic/thermodynamic analyses, intermolecular interactions, and their effect on each catalytic step are proposed. In addition, PvCHI's unique activity for both naringenin chalcone and isoliquiritigenin was analyzed, and the observed hierarchical activity for those type-I and -II substrates was explained with the intrinsic characteristics of the enzyme and two substrates. The structure of PvCHS complexed with naringenin supports uncompetitive inhibition. PvCHS displays intrinsic catalytic promiscuity, evident from the formation of p-coumaroyltriacetic acid lactone (CTAL) in addition to naringenin chalcone. In the presence of PvCHIL, conversion of p-coumaroyl-CoA to naringenin through PvCHS and PvCHI displayed ~400-fold increased Vmax with reduced formation of CTAL by 70%. Supporting this model, molecular docking, ITC (Isothermal Titration Calorimetry), and FRET (Fluorescence Resonance Energy Transfer) indicated that both PvCHI and PvCHIL interact with PvCHS in a non-competitive manner, indicating the plausible allosteric effect of naringenin on CHS. Significantly, the presence of naringenin increased the affinity between PvCHS and PvCHIL, whereas naringenin chalcone decreased the affinity, indicating a plausible feedback mechanism to minimize spontaneous incorrect stereoisomers. These are the first findings from a three-body system from the same species, indicating the importance of the macromolecular assembly of CHS-CHI-CHIL in determining the amount and type of flavonoids produced in plant cells. In recent years, the incidence of food-borne bacterial enteric diseases has increased worldwide causing significant health care and socioeconomic burdens. According to the World Health Organization, there are an estimated 600 million cases of foodborne illnesses worldwide each year, resulting in 420,000 deaths. Despite intensive efforts to tackle this problem, foodborne pathogenic microorganisms continue to be spread further. Therefore, there is an urgent need to find novel anti-microbial non-toxic compounds for food preservation. One way to tackle this issue may be the usage of polyphenols, which have received increasing attention in the recent years given their pleotropic health-promoting properties. This prompted us to perform a literature search summarizing studies from the past 10 years regarding the potential anti-microbial and disease-alleviating effects of plant-derived phenolic compounds against foodborne bacterial pathogens. The included 16 studies provide evidence that polyphenols show pronounced anti-bacterial and anti-oxidant effects against both Gram-positive and Gram-negative bacterial species. In addition, synergistic anti-microbial effects in combination with synthetic antibiotics were observed. In conclusion, phenolic compounds may be useful as natural anti-microbial agents in the food, agricultural, and pharmaceutical industries in the combat of foodborne infections. This study analyzed the anthocyanin content and antioxidant properties of five mulberry (Morus spp.) varieties, including black (M. nigra), red (M. rubra) and white (M. alba) types. Anthocyanins were extracted and analyzed using HPLC–MS, which revealed four major pigments: cyanidin-3-glucoside, cyanidin-3-rutinoside, cyanidin-3,5-diglucoside and pelargonidin-3-glucoside. Total anthocyanins were significantly higher in black mulberries Bom irangi (185 mg/100 g) and Kalmi (158 mg/100 g) compared to 28–60 mg/100 g in other varieties, consistent with their dark fruit color. Electrochemical analysis by cyclic voltammetry showed oxidation peak potentials (Epa) of key anthocyanins: + 368 mV for cyanidin; + 830 mV for cyanidin-3-glucoside; and + 912 mV for pelargonidin-3-glucoside. Lower Epa indicates easier oxidation and greater antioxidant activity. DPPH radical scavenging assays revealed strongest potency for Bom irangi (EC50 42 μg/mL) and Kalmi (EC50 58 μg/mL), again due to high anthocyanin levels. Further, a negative correlation (R2 = 0.923) was demonstrated between Epa values and EC50, proving excellent predictive ability of electrochemical data for estimating antioxidant capacity. Cyanidin with lowest Epa (+ 368 mV) and highest hydroxylation exhibited strongest activity (EC50 35 μg/mL). Grapes are a rich source of phenolic compounds with high antioxidant, antibacterial, and nutritional properties among fruits. The aim of this study was to investigate different classes of phenolic compounds in the berry skin of eleven Vitis vinifera cultivars. The phenolic compounds were flavonols, flavanols, flavone, anthocyanins, stilbenes, and phenolic acids. The highest amounts of catechin, epicatechin, ferulic acid, and chlorogenic acid were observed in 'Yaghooti' grape cultivar (P≤0.05). However, the amounts of catechin gallat, kaempferol, myricetin, and pcoumaric acid in 'Bidaneh Ghermez' berries were higher (P≤0.05) compared to other cultivars. Quercetin was the main flavonol and was highest (9.48 μg g-1; P≤0.05) in 'Yaghooti' berries. Luteolin content, as a flavone, ranged from 0.49 μmol g-1 in 'Rishbaba' berry skin to 0.88 μmol g-1 in 'Bidaneh Ghermez'. Delphinidin-3-glucoside and malvidin-3-glucoside were highest in 'Yaghooti'. Cyanidin-3-glucoside and peonidin -3-glucoside were highest in 'Angoor Siah.' Petunidin 3-glucoside was highest in 'Bidaneh Ghermez' (P≤0.05). Berry skin resveratrol varied from 22.7 μg g-1 in 'Monaqa and Fakhri' cultivars to 54.8 μg g-1 FW in 'Bidaneh Ghermez,' with an overall average of 36.9 μg g-1 FW. Among different cultivars, the antioxidant capacity of 'Angoor Siah' was highest (71.3%; P≤0.05) and 'Monaqa' was lowest. The 'Angoor Siah' cultivar had more antibacterial activity compared to other cultivars. In sum, the berry skin of 'Yaghooti,' 'Angoor Siah,' and 'Bidaneh Ghermez' showed the highest health-promoting bioactive compounds, potentially important for future studies. [ABSTRACT FROM AUTHOR]

FLH 13-11 is an F1 interspecific hybrid muscadine grape genotype that was developed to produce new anthocyanins for pigment color stability. This hybrid resulted from a cross between 'Marsh' (Vitis munsoniana) and 'Magoon' (V. rotundifolia) and has been cultivated for the wine and juice industry. This report characterizes anthocyanins produced in fully ripe berries and reveals a significant difference in total anthocyanin contents from two continuous cropping seasons. High-performance liquid chromatography with a diode array detector (HPLC-DAD) and HPLC–quadrupole time-of-flight tandem mass spectrometry (HPLC-qTOF-MS/MS) were used to profile anthocyanins in berries. The resulting data showed that fourteen anthocyanins were detected, six from 2011 and nine from 2012, with only one produced in both seasons. However, the anthocyanidin profiles of the berries were the same. Five anthocyanins were annotated as diglucosides of anthocyanidins based on MS/MS features, including delphinidin 3,5-diglucoside produced in both seasons, cyanidin 3,5-diglucoside mainly formed in 2011, petunidin 3,5-diglucoside, malvidin 3,5-diglucoside, and peonidin 3,5-glucoside only detected in 2012. Also, three anthocyanidin-diglucoside-like anthocyanins and three monoglucosides, including peonidin 3-glucoside, delphinidin 3-glucoside like, and pelargonidin 3-glucoside-like anthocyanins, were detected in 2011 and 2012, respectively. These results indicate that FLH 13-11 can produce both anthocyanidin-diglucosides and -monoglucosides, and their biosynthesis is closely dependent on cropping years. [ABSTRACT FROM AUTHOR]

Objectives: We investigated the association between dietary flavonoids intake and periodontitis. Materials and methods: This cross-sectional study analyzed data from the US National Health and Nutrition Examination Survey 2009–2010 on 3025 participants aged between 30 and 80 years who had full-mouth periodontal examination and dietary flavonoids intake data. This study used periodontal pocket depth (PPD) and clinical attachment loss (CAL) as periodontitis markers. Data were analyzed using multivariate linear regression. Results: After adjusting confounders, the middle tertile of total dietary flavonoids was associated with decreased mean PPD (0.06 mm, P = 0.016) and mean CAL (0.13 mm, P = 0.001) and the top tertile of total dietary flavonoids was significantly associated with decreases in mean PPD (0.05 mm, P = 0.029) and mean CAL (0.11 mm, P = 0.010). Both the middle and top tertiles of total flavonoids intake were significantly related with decreased mean CAL in females, those flossing 0 days/week, overweight and non-diabetic population but not in males, smokers, those flossing 1–6 days/week and diabetic population. Higher anthocyanidins, flavones and flavonols intake was significantly associated with decreased mean PPD and mean CAL while higher flavanones intake was only significantly associated with decreased mean CAL. Higher anthocyanidins intake was particularly related with greatest decreases in mean CAL (top tertile: 0.22 mm, middle tertile: 0.17 mm, both P < 0.010). However, no significant associations were found between isoflavones and flavan_3_ols intake and mean CAL. Conclusions: Higher dietary flavonoids intake may be beneficial for periodontal health. The present review summarizes the information on the botany, breeding, genetic features, cultivation, and nutraceutical values of red-fleshed apples. Malus sieversii var. niedzwetzkyana or Niedzwetzky’s apple became widely known after the publication of Georg Dieck in the last XIX century. It is characterized by anthocyanin coloration of all organs. Another source of red flesh is the ancient variety ‘Surprise’, which differs from the Niedzwetzky’s apple by a mutation in another gene. These two mutated genes, MYB10 and MYB110a, are located on chromosomes 9 and 17, respectively. Their expression correlated with the anthocyanin accumulation. In type 1 red-fleshed apples, which belong to the Niedzwetzky’s apple progeny, the transcription factor MYB10 confers extensive anthocyanin accumulation in fruit flesh and skin, flowers, leaves, and stems. In type 2 red-fleshed apples, the ‘Surprise’ progeny, only the flesh is red, determined by the transcription factor MYB110а. A new combination Malus domestica f. niedzwetzkyana comb. nov. has been proposed for orchard apples, originated from Niedzwetzky’s apple. The apple cultivars which are progeny of Niedzwetzky’s apple and ‘Surprise’ apple can be placed to Malus Niedzwetzkyana Group and Malus Surprise Group, respectively. All red-fleshed cultivars of orchard apple can be grouped together into Malus domestica Red Flesh Group. Many dozens of new ornamental apple trees have been developed for of European and North American conditions, including the most famous red-flowered centennial apple varieties such ‘Aldenhamensis’, ‘Lemoinei’, ‘Makamik’, and ‘Oekonomierat Echtermeyer’. Rootstocks ‘MB’, ‘PB9’, ‘54-118’, ‘62-396’ and others have become popular in nurseries for the propagation of dwarf and semi-dwarf apple trees thanks to their red leaves, which are useful when removing scion shoots from budded plants. In the F3-F4 and next generation, the new high-quality red-fleshed cultivars have been developed by crossing both Niedzwetzky’s apple and ‘Surprise’ apple with the best orchard apple varieties. Marker-assisted breeding shows great promise for accelerating the development of new red-fleshed cultivars with outstanding traits. The use of the Redlove®, Red Moon®, Kissabel®, and Lucy™ apples brands will ensure the red-fleshed apples’ best path to the consumer as well as the fruit quality and production volume of these novelties. Increasing the consumption of red-fleshed apples is essential for a healthy diet.

Abstract Background and aims Flavonoids are a class of secondary plant metabolites that have been shown to have multiple health benefits, including antioxidant and anti-inflammatory. This study was to explore the association between dietary flavonoid consumption and the prevalence of chronic respiratory diseases (CRDs) in adults. Methods and results The six main types of flavonoids, including isoflavones, anthocyanidins, flavan-3-ols, flavanones, flavones, and flavonols, were obtained from the National Health and Nutrition Examination Survey (NHANES) 2007–2010 and 2017–2018 by the two 24-h recall interviews. The fruit of these species is the richest source of biophenols in the plant kingdom and suitable raw material for the production of functional foods with high nutraceutical value. The work aimed to examine the basic and polyphenolic composition of fruit chokeberry and rowan-chokeberry hybrids of different taxonomic groups. Experimental plants were grown at the orchard of the National University of Life and Environmental Sciences of Ukraine in the Kyiv region. Fruit of 10 cultivars developed in Belorussia, the Czech Republic, Finland, Russia, Ukraine, and the USA were collected during 2020 and 2021. The fruit was analyzed for dry matter, soluble solids, sugars, pectin substances, organic titratable acidity, ascorbic acid, and biophenols. Chokeberry fruit contains on average 24.4–29.2% dry matter, 16.0–21.1% soluble solids, 6.5–8.9% sugars, 0.40–0.80% pectin, and 0.95–2.15% organic acids on raw material. Bioactive components of chokeberry fruit are ascorbic acid (24.7–45.9 mg/100 g), total polyphenols (998–4840 mg/100 g), including anthocyanidins (9–217 mg/100 g), flavonoids (23–1422 mg/100 g), and chalcones (9–59 mg/100 g). Anthocyanidin compounds include proanthocyanidins, anthocyanidins, anthocyanins, etc. Among them, proanthocyanidin is a kind of polyphenol compound, then anthocyanidin and anthocyanin belong to flavonoid compounds. When heated in an acidic medium, proanthocyanidins can produce anthocyanidins, which combine with sugars via glycosidic bonds to produce anthocyanins. Proanthocyanidins, anthocyanidins and anthocyanins are widely distributed in dark grains, berries and vegetables, all of them have various functional effects. Starch is low in price, rich in sources, and has a variety of functional properties. The sensory quality and nutritional value of starch-based foods are mainly determined by the changes of starch gelatinization properties, thermodynamic properties, rheological properties, aging properties and digestive properties. There have been many studies about the co-existence of starch and other compounds that can improve the original properties of starch. However, there is limited overview on the effects of anthocyanidin compounds on starch properties. Therefore, this paper reviews the latest research progress of anthocyanidin compounds and their effects on the gelatinization properties, thermodynamic properties, rheological properties, aging properties and digestive properties of starch through increasing the gelatinization temperature of starch and reducing its gelatinization enthalpy can affect its thermodynamic properties, as well as reduce its aging enthalpy and aging rate, additionally and the digestion rate of starch etc. These can provide guidance for the use of anthocyandin compounds to improve the processing properties, sensory and nutritional quality of starch-based foods.

This article explores the chemical composition and antioxidant properties of Myrtus communis L. from Turkey. The essential oil extracted from the plant's leaves was analyzed using GC and GC-MS, revealing that monoterpenes were the main compounds present. The polyphenolic compounds in the leaves and berries were identified using HPLC, and the antioxidant activity was assessed using various methods. Background: Bud sport is a kind of somatic mutation that usually occurred in apple. 'Red Delicious' is considered to be a special plant material of bud sport, whereas the genetic basis of plant mutants is still unknown. In this study, we used whole-genome resequencing and transcriptome sequencing to identify genes related to spur-type and skin-color in the 'Red Delicious' (G0) and its four generation mutants including 'Starking Red' (G1), 'Starkrimson' (G2), 'Campbell Redchief' (G3) and 'Vallee Spur' (G4). Results: The number of single nucleotide polymorphisms (SNPs), insertions and deletions (InDels) and structural variations (SVs) were decreased in four generation mutants compared to G0, and the number of unique SNPs and InDels were over 9-fold and 4-fold higher in G1 versus (vs.) G2 and G2 vs. G3, respectively. Chromosomes 2, 5, 11 and 15 carried the most SNPs, InDels and SVs, while chromosomes 1 and 6 carried the least. Meanwhile, we identified 4,356 variation genes by whole-genome resequencing and transcriptome, and obtained 13 and 16 differentially expressed genes (DEGs) related to spur-type and skin-color by gene expression levels. Among them, DELLA and 4CL7 were the potential genes that regulate the difference of spur-type and skin-color characters, respectively. Conclusions: Our study identified potential genes associated with spur-type and skin-color differences in 'Red Delicious' and its four generation mutants, which provides a theoretical foundation for the mechanism of the apple bud sport. Abstract Background The association between exposure to environmental metals and chronic obstructive pulmonary disease (COPD) is preventing chronic lung diseases. However, little is currently known about the interaction between heavy metals and flavonoids in relation to the risk of COPD. This study aims to bridge this knowledge gap by leveraging The National Health and Nutrition Examination Survey (NHANES) database to evaluate thecorrelation between blood levels of heavy metals (cadmium, lead, mercury) and the intake of various flavonoid compounds (isoflavones, anthocyanidins, flavan-3-ols, flavanones, flavones, flavonols, total flavonoids). Additionally, appropriate dietary recommendations are provided based on the study findings. Materials and methods Cross-sectional analysis was conducted using the 2007–2010 and 2017–2018 NHANES data. Specialized weighted complex survey design analysis software was used for data analysis. Multivariate logistic regression models and restricted cubic splines (RCS) were used to evaluate the relationship between blood heavy metal levels, flavonoids intake, and COPD incidence in all participants, and to explore the effect of different levels of flavonoids intake on COPD caused by heavy metal exposure. Results A total of 7,265 adults aged ≥ 40 years were analyzed. Higher levels of blood cadmium (Cd), blood lead and Anthocyanidin (AC) intake were independently associated with an increased risk of COPD (Cd highest quantile vs. lowest: OR = 1.73, 95% CI, 1.25–2.3; Lead highest quantile vs. lowest quantile: OR = 1.44, 95% CI, 1.11–1.86; AC highest quantile vs. lowest: OR = 0.73, 95% CI, 0.54–0.99). When AC intake exceeded 11.56 mg/d, the effect of Cd exposure on COPD incidence decreased by 27%, and this finding was more significant in smokers. Conclusion Higher levels of Cd (≥ 0.45ug/L) and lead (≥ 0.172 ug/L) were positively correlated with the risk of COPD among participants aged 40 years and above, while AC intake (≥ 11.56 mg/d) could reduce the risk related to blood Cd.

Abstract Background Anthocyanidins encompass a diverse array of compounds that possess notable anti-inflammatory and antioxidant properties with pharmacological activity. However, the correlation between the consumption of anthocyanidins through diet and its impact on depression has yet to be investigated. Methods This study utilized the Food and Nutrient Database for Dietary Studies (FNDDS) expanded flavonoid intake database, as well as data from the National Health and Nutrition Examination Survey (NHANES) from the years 2007 to 2010 and 2017 to 2018. The analysis of the collected data was conducted in R, following the guidelines outlined in the official NHANES user guide “Stratified Multi-stage Probability Sampling”. Three different models were developed using logistic regression to assess the protective effects of T3 (representing the highest intake of anthocyanidins) against depression. Additionally, the study aimed to investigate whether there existed a non-linear relationship between the dietary intake of anthocyanidins and the prevalence of depression by employing restricted cubic spline (RCS) analysis. Results A total of 6,845 eligible participants were included in this cross-sectional study, with their data appropriately weighted to represent a population of 89.8 million people in the United States of America. The aim of the study is to investigate the differences in the interaction of three structurally diverse anthocyanidins, namely peonidin, petunidin, and delphinidin, as well as their glucosides with model biological membranes, human albumin, and plasmid DNA in order to look into their structure–activity relationships. Fluorimetric studies, as well as ATR-FTIR analyses, were jointly used in order to determine the changes observed in both the hydrophilic and hydrophobic layers of cell-mimic membranes (MM) which reflected the membrane lipid composition of tumour cells and red blood cell membranes (RBCM). Our results showed that anthocyanins and anthocyanidins can cause an increase in the packing order of the polar heads of lipids, as well as interact with their deeper layers by reducing the fluidity of lipid chains. The results presented here indicate that all compounds tested here possessed the ability to bind to human serum albumin (HSA) and the presence of a glucose molecule within the structures formed by anthocyanidin reduces their ability to bind to proteins. Using fluorescence correlation spectroscopy, it was demonstrated that the compounds tested here were capable of forming stable complexes with plasmid DNA and, particularly, strong DNA conformational changes were observed in the presence of petunidin and corresponding glucoside, as well as delphinidin. The results we obtained can be useful in comprehending the anthocyanins therapeutic action as molecular antioxidants and provide a valuable insight into their mechanism of action. The objective of this study is the characterization of the phenolic profile and antioxidant activity of elderberries (Sambucus nigra L.) from a collection of 79 wild specimens in northern Spain to assess variations in the species at the local level and evaluate its interest as a source of biocompounds. Also, a first study was carried out on the microflora present in this fruit, providing information relevant to its commercial exploitation. Moreover, the phenolic composition, antioxidant capacity and microbial composition in overripe fruits were determined, seeking a better use for this currently wasted resource. A wide variability in levels of phenolics was detected. Elderberries showed high antioxidant activity related to a high cyanidin derivative content, making them of interest to industry. Microflorae were present in very variable concentration ranges, so their levels should be monitored in those applications that require strict control. Overripe fruits are of interest as a source of anthocyanidins, since their concentration and antioxidant capacity remain after the optimal ripening period, promoting sustainability and a better use of natural resources. Flavonoids are potent antioxidants that play a role in defense against pathogens, UV-radiation, and the detoxification of reactive oxygen species. Dihydroflavonol 4-reductase (DFR) and flavanone 4-reductase (FNR) reduce dihydroflavonols and flavanones, respectively, using NAD(P)H to produce flavan-(3)-4-(di)ols in flavonoid biosynthesis. Anthocyanidin reductase (ANR) reduces anthocyanidins to flavan-3-ols. In addition to their sequences, the 3D structures of recombinant DFR, FNR and ANR from sorghum and switchgrass showed a high level of similarity. The catalytic mechanism, substrate-specificity and key residues of three reductases were deduced from crystal structures, site-directed mutagenesis, molecular docking, kinetics, and thermodynamic ana-lyses. Although DFR displayed its highest activity against dihydroflavonols, it also showed activity against flavanones and anthocyanidins. It was inhibited by the flavonol quercetin and high concentrations of dihydroflavonols/flavonones. SbFNR1 and SbFNR2 did not show any activity against dihydroflavonols. However, SbFNR1 displayed activity against flavanones and ANR activity against two anthocyanidins, cyanidin and pelargonidin. Therefore, SbFNR1 and SbFNR2 could be specific ANR isozymes without delphinidin activity. Sorghum has high concentrations of 3-deoxyanthocyanidins in vivo, supporting the observed high activity of SbDFR against flavonols. Mining of expression data indicated substantial induction of these three reductase genes in both switchgrass and sorghum in response to biotic stress. This study aimed to comparatively analyze the flavonoid contents of the purple-colored cultivar Xianghongtai No. 1 (XHT1H, R) and the green-colored cultivar Yinong 50 tian Caixin (YN50T, G). The flavonoid compounds were separated and identified by ultra-performance liquid chromatography-tandem mass spectrometry. Principal component analysis (PCA), hierarchical cluster analysis, and orthogonal partial least partial-least squares discrimination analysis (OPLS-DA) were used to analyze metabolomics data and screen for differential metabolites in Hong Caitai and Caixin. PCA revealed significant differences in the flavonoid compound contents between the two varieties. OPLS-DA identified 170 different flavonoid metabolites, including 56 flavonols, 38 anthocyanidins, and 32 flavones. The anthocyanins included 25 cyanidin glycosides, six delphinidin glycosides, three peonidin glycosides, and three petunidin glycosides. Additionally, six of the top ten metabolites with higher content in Hong Caitai than in Caixin were cyanidins. Based on the differential flavonoids profiles of the two varieties, cyanidin, delphinidin, peonidin, and petunidin were associated with the pigmentation in Hong Caitai. To improve the control and detection methods of thiabendazole (TBZ), a fungicide and parasiticide often used in food products, we investigated the performance of the SERS technique applied to frozen blueberry fruits available on the market. TBZ-treated fruit extracts provided a multiplexed SERS feature, where the SERS bands of TBZ could be distinctly recorded among the characteristic anthocyanidins from blueberries. Quantitative SERS of TBZ in a concentration range from 20 µM to 0.2 µM has been achieved in solutions. However, quantitative multiplexed SERS is challenging due to the gradually increasing spectral background of polyphenols from extracts, which covers the TBZ signal with increasing concentration. The strategy proposed here was to employ food bentonite to filter a substantial amount of flavonoids to allow a higher SERS signal-to-background recording and TBZ recognition. Using bentonite, the LOD for SERS analysis of blueberry extracts provided a detection limit of 0.09 µM. From the relative intensity of the specific SERS bands as a function of concentration, we estimated the detection capability of TBZ to be 0.0001 mg/kg in blueberry extracts, which is two orders of magnitude lower than the maximum allowed by current regulations. The contents of colouring substances in different cultivated varieties of barley (Hordeum vulgare L.) were recorded qualitatively and quantitatively to identify which substances contribute to their colour. HPLC was used to quantify the 3-O-glucosides of the anthocyanidins malvidin, peonidin, pelargonidin, cyanidin and delphinidin. Of the varieties examined, only the ancient spring barley variety 'Weihenstephaner Schwarze Nackte' contained anthocyanins, with delphinidin-3-glucoside accounting for the largest proportion. In addition, another substance was detected, which is most likely also an anthocyanin. The total anthocyanin content was at the upper end of the values previously known from black varieties. MALDI-TOF mass spectrometry was used to try to shed more light on the structure of the dark pigments in the outer layers of the black barley grains. The results suggest that the dark substance is a heterooligomer of different, partly phenolic substances. Specifically, the repeated occurrence of a 180 Da monomer could be detected. Since plant melanins are usually synthesised from the phenolic acids found in the plant, this substance could be caffeic acid and would thus be similar to allomelanin from oats (Avena sativa L.), which is a homooligomer of p-coumaric acid. The development of anthocyanins during malting were recorded photometrically. Numerous studies have provided evidence that diets rich in anthocyanins show a broad spectrum of health benefits. Anthocyanins in nature are usually found in the form of glycosides. Their aglycone forms are called anthocyanidins. The chemical structure of anthocyanins is based on the flavylium cation, but they differ in the position and number of substituents. However, the bioactives and foods that contain them are frequently treated as a uniform group of compounds exhibiting the same biological activity, without paying attention to the structural differences between individual anthocyanidins. The aim of this study was to find out how structural differences impact the biological activity of the six most common dietary anthocyanidins, i.e., delphinidin (Dp), petunidin (Pt), cyanidin (Cd), malvidin (Mv), pelargonidin (Pg) and peonidin (Po). The study concentrated on redox-related phenomena and compared the following parameters: antioxidant activity (measured using various methods: spectrophotometric tests (ABTS, DPPH), ORAC assay and CAA test (cellular antioxidant activity)), the ability to inhibit growth of human colon cancer cells (HT29; determined using MTT assay), and the ability of studied compounds to protect DNA from oxidative damage (comet assay). Based on the obtained results, the relationship between the structure of studied anthocyanidins and their biological activity was assessed. The obtained results revealed that the number and position of the hydroxyl and methoxy groups in the anthocyanidin structure strongly influenced not only the color of anthocyanidins but most of all their antioxidant and biological activities. A complete conformational analysis on the isolated and PCM modeled aqueous solution cationic, neutral, and anionic forms of aurantinidin, comprising the diverse tautomers of the latter forms, was carried out at the B3LYP/6–31 + + G(d,p) level. The most stable conformers of isolated cationic and neutral forms of aurantinidin are completely planar, whereas ring B and 3OH are significantly twisted with regard to the AC system in the anion. In contrast, PCM calculations show that the plane of the B ring is slightly rotated with regard to the AC bicycle even in the most stable conformers of the cation and quinonoidal form. The most stable conformers of the cation, in both gas phase and aqueous solution, display anti and syn orientations for hydroxyls at 3 and 5 positions, whereas syn and anti orientation of hydroxyls at 7 and 4' positions are nearly isoenergetic. The most stable tautomer of neutral aurantinidin is obtained by deprotonating hydroxyl at C5 in gas phase, but at C7 in water solution, according to PCM. Also, the most stable tautomer of the anion is different in gas phase (hydrogens are abstracted from hydroxyls at C5 and C4') and PCM calculations for water solution (C3 and C5). Tautomeric equilibria affect substantially the geometries of the AC-B backbone providing bond length variations that basically agree with the predictions of the resonance model. Intramolecular hydrogen bond between O3 and H6' is not present in the most stable anions. Anthocyanin, a kind of flavonoid, plays a crucial role in plant resistance to abiotic stress. Salt stress is a kind of abiotic stress that can damage the growth and development of plant seedlings. However, limited research has been conducted on the involvement of maize seedlings in salt stress resistance via anthocyanin accumulation, and its potential molecular mechanism is still unclear. Therefore, it is of great significance for the normal growth and development of maize seedlings to explore the potential molecular mechanism of anthocyanin improving salt tolerance of seedlings via transcriptome analysis. In this study, we identified two W22 inbred lines (tolerant line pur–W22 and sensitive line bro–W22) exhibiting differential tolerance to salt stress during seedling growth and development but showing no significant differences in seedling characteristics under non–treatment conditions. In order to identify the specific genes involved in seedlings' salt stress response, we generated two recombinant inbred lines (RILpur–W22 and RILbro–W22) by crossing pur–W22 and bro–W22, and then performed transcriptome analysis on seedlings grown under both non–treatment and salt treatment conditions. A total of 6100 and 5710 differentially expressed genes (DEGs) were identified in RILpur–W22 and RILbro–W22 seedlings, respectively, under salt–stressed conditions when compared to the non–treated groups. Among these DEGs, 3160 were identified as being present in both RILpur–W22 and RILbro–W22, and these served as commonly stressed EDGs that were mainly enriched in the redox process, the monomer metabolic process, catalytic activity, the plasma membrane, and metabolic process regulation. Furthermore, we detected 1728 specific DEGs in the salt–tolerant RILpur–W22 line that were not detected in the salt–sensitive RILbro–W22 line, of which 887 were upregulated and 841 were downregulated. These DEGs are primarily associated with redox processes, biological regulation, and the plasma membrane. Notably, the anthocyanin synthesis related genes in RILpur–W22 were strongly induced under salt treatment conditions, which was consistented with the salt tolerance phenotype of its seedlings. In summary, the results of the transcriptome analysis not only expanded our understanding of the complex molecular mechanism of anthocyanin in improving the salt tolerance of maize seedlings, but also, the DEGs specifically expressed in the salt–tolerant line (RILpur–W22) provided candidate genes for further genetic analysis. Background: Anthocyanidins encompass a diverse array of compounds that possess notable anti-inflammatory and antioxidant properties with pharmacological activity. However, the correlation between the consumption of anthocyanidins through diet and its impact on depression has yet to be investigated. Methods: This study utilized the Food and Nutrient Database for Dietary Studies (FNDDS) expanded flavonoid intake database, as well as data from the National Health and Nutrition Examination Survey (NHANES) from the years 2007 to 2010 and 2017 to 2018. The analysis of the collected data was conducted in R, following the guidelines outlined in the official NHANES user guide "Stratified Multi-stage Probability Sampling". Three different models were developed using logistic regression to assess the protective effects of T3 (representing the highest intake of anthocyanidins) against depression. Additionally, the study aimed to investigate whether there existed a non-linear relationship between the dietary intake of anthocyanidins and the prevalence of depression by employing restricted cubic spline (RCS) analysis. Results: A total of 6,845 eligible participants were included in this cross-sectional study, with their data appropriately weighted to represent a population of 89.8 million people in the United States of America. The results demonstrated that individuals diagnosed with depression had a significantly lower dietary intake of anthocyanidins compared to those without depression (P < 0.0001). Moreover, significant differences were observed among different participant groups regarding socioeconomic status and the presence of chronic physical illnesses (such as hypertension, glucose status, and chronic kidney disease risk, etc.) (P < 0.05). After adjustment for covariates, participants with the highest intake of anthocyanins (T3) demonstrated a significantly reduced risk of depression [ORT3 = 0.67, 95%CI: (0.48–0.95), (Ptrend= 0.02]. Furthermore, the RCS analysis revealed a significant linear relationship between dietary anthocyanidin intake and depression (P for non-linear = 0.5876). Computational methods were used to investigate six anthocyanidins exhibiting antidiabetic activity by inhibiting glucokinase regulatory protein (GKRP) activity. Density functional theory was used to optimise the geometry of anthocyanidins and calculate their quantum chemical properties. A blind docking method was employed to conduct a molecular docking study, which revealed that delphinidin (Del), cyanidin (Cya), and pelargonidin (Pel) as potential GKRP inhibitors with the lowest binding free energy of -8.7, -8.6, and -8.6 kcal/mol, corresponding to high binding affinity. The molecular dynamics study further verified the blind docking results by showing high GKRP-F1P complex stability and high binding affinity calculated through the MM/GBSA method, upon the binding of pelargonidin. The lower RMSF values of pivotal GK-interacting residues for GKRP-F1P-Pel compared to GKRP-F1P, as a positive control, indicating pelargonidin ability to maintain the inactive conformation of GKRP through the inhibition of GK binding. The key residues that control the binding of the F1P to GKRP and anthocyanidin to GKRP-F1P were also identified in this study. Altogether, pelargonidin is anthocyanidins-derived natural products that have the most potential to act as inhibitors of GKRP and as antidiabetic nutraceuticals. [ABSTRACT FROM AUTHOR]

This study aims to provide an overview of the compounds found in sweet potato (Ipomoea batatas) that contribute to its anti-diabetic activity and the mechanisms by which they act. A comprehensive literature search was conducted using electronic databases, such as PubMed, Scopus, and Science Direct, with specific search terms and Boolean operators. A total of 269 articles were initially retrieved, but after applying inclusion and exclusion criteria only 28 articles were selected for further review. Among the findings, four varieties of sweet potato were identified as having potential anti-diabetic properties. Phenolic acids, flavonols, flavanones, and anthocyanidins are responsible for the anti-diabetic activity of sweet potatoes. The anti-diabetic mechanism of sweet potatoes was determined using a combination of components with multi-target actions. Using naturally colored cotton (NCC) can eliminate dyeing, printing and industrial processing, and reduce sewage discharge and energy consumption. Proanthocyanidins (PAs), the primary coloration components in brown fibers, are polyphenols formed by oligomers or polymers of flavan-3-ol units derived from anthocyanidins. Three essential structural genes for flavanone and flavonoid hydroxylation encoding flavanone-3-hydroxylase (F3H), flavonoid 30 -hydroxylase (F30 H) and flavonoid 30 50 -hydroxylase (F30 50 H) are initially committed in the flavonoid biosynthesis pathway to produce common precursors. The three genes were all expressed predominantly in developing fibers of NCCs, and their expression patterns varied temporally and spatially among NCC varieties. In GhF3Hi, GhF30 Hi and GhF30 50 Hi silenced lines of NCC varieties XC20 and ZX1, the expression level of the three genes decreased in developing cotton fiber, negatively correlated with anthocyanidin content and fiber color depth. Fiber color depth and type in RNAi lines changed with endogenous gene silencing efficiency and expression pattern,the three hydroxylase genes functioned in fiber color formation. GhF3H showed functional differentiation among NCC varieties and GhF30 H acted in the accumulation of anthocyanin in fiber. Compared with GhF30 H, GhF30 50 H was expressed more highly in brown fiber with a longer duration of expression and caused lighter color of fibers in GhF30 50 H silenced lines. Proanthocyanidins (PA) are polyphenol compounds that are widely distributed in the bark, fruit core, skin, or seeds of various plants. Anthocyanidins are water‐soluble natural pigments widely found in plants. They are all flavonoids, a major coloring substance in plants and fruits. In recent years, research into PA and anthocyanins has become increasingly popular because of their excellent anti‐oxidation, scavenging of reactive oxygen free radicals and other physical and chemical activities, and their anti‐cancer, vision protection, aging prevention, skin beauty pharmacological, and nutraceutical effects. Especially, recent systematic reviews and meta‐analyses indicate their value, safety, and efficacy in the prevention, adjuvant therapy, and management of cardiometabolic disease. Here, we summarize their research progress from the aspects of chemical structure, biosynthetic pathways, distribution, extraction and separation, coloration, efficacy, and potential. The comparison between them might provide a reference for their development and efficient utilization. Background: Flavanone 3-hydroxylase (F3H), a key enzyme in the flavonoid biosynthetic pathway, plays an important role in the regulation of flavonols and anthocyanidins accumulation. Citrus fruit is a rich source of flavonoids with varied flavonoid compositions among different varieties. To date, the study on F3H is limited in citrus, and its roles in regulating flavonoid accumulation in citrus fruit are still unclear. Results: In this study, we isolated a CitF3H from three different citrus varieties, Satsuma mandarin (Citrus unshiu Marc.), Ponkan mandarin (C. reticulata Blanco) and blood orange 'Moro' (C. sinensis Osbeck). Functional analysis showed that CitF3H encoded a functional flavanone 3-hydroxylase. It catalyzed the hydroxylation of naringenin to yield dihydrokaempferol, which was a precursor of anthocyanins in flavonoid biosynthetic pathway. In the juice sacs, CitF3H was differentially expressed among the three citrus varieties, and its expression level was positively correlated with the accumulation of anthocyanins during the ripening process. In the juice sacs of Satsuma mandarin and Ponkan mandarin the expression of CitF3H kept constant at an extremely low level, and no anthocyanin was accumulated during the ripening process. In contrast, the expression of CitF3H increased rapidly along with the accumulation of anthocyanin in the juice sacs of blood orange 'Moro' during the ripening process. In addition, we found that blue light irradiation was effective to up-regulate the expression of CitF3H and improve anthocyanin accumulation in the juice sacs of blood orange 'Moro' in vitro. Conclusion: CitF3H was a key gene regulating anthocyanin accumulation in the juice sacs of citrus fruit. The results presented in this study will contribute to elucidating anthocyanin biosynthesis in citrus fruit, and provide new strategies to improve the nutritional and commercial values of citrus fruit. Anthocyanins are a major group of plant pigments that have antioxidant activities. Pigments play a major role in human health and have attracted a lot of attention globally. Many factors affect anthocyanin yields, such as solvent type, incubation time, solvent-to-sample ratio, sample type, and temperature. The first parameter was tested, and the rest were considered constant in this experiment. A total of nine organic and water-based solvents (methanol and chloroform: methanol, acetone, ethanol, water) and their combinations were compared to extract anthocyanins from freshly-pureed strawberries. Solvents changed anthocyanin yield, color parameters, and profile. The color parameters of a* values lower than 30, L* values higher than 85, hue angle more than 40, and chroma less than 30 indicated some color degradation in strawberry anthocyanins. Therefore, the best solvents for anthocyanin assessment were methanol and methanol: water. The second-best solvent was the pH differential buffers. Other solvents such as ethanol, chloroform: methanol, water, and water-based solvents extracted considerable amounts of anthocyanins; however, they showed some degree of color degradation, evidenced by the color parameters. Acetone did not yield a stable extract which degraded over 48 h of storage at 4 °C. The extraction solvent determined the main anthocyanin of the anthocyanins profile.
