Abstract

The differences in spinal cord and ground beef lipids and other components are used to detect and quantify spinal cord content in ground beef with near-infrared (NIR) spectroscopy/Partial Least Squares (PLS) models. The results show that the NIR/PLS model has the potential to determine spinal cord adulteration in ground beef as low as 21 ppm.
