Carcass characteristics and chemical composition of Longissimus muscle of 32 young bulls from four genetic groups slaughtered at 14 months old were evaluated. Experimental design was completely randomized and distributed into four genetics groups: 1. Caracu (CAR); 2. Canchin (CAN); 3. Charolais vs. Caracu (CHC) and 4. Aberdeen Angus vs. Canchin (AAC). Carcass dressing and carcass conformation were lower for CAR than CAN, CHC and AAC genetic groups. No difference has been reported with regard to moisture, ash, crude protein, total lipids and total cholesterol among four genetics groups. The genetic groups influence fatty acid profile on Longissimus muscle in bulls. Cattle with zebu genes had the highest rates in unsaturated fatty acids, saturated fatty acids represented approximately 50% of total fatty acid composition on Longissimus muscle. The genetic groups presented differences in PUFA, SFA, n-6 and n-3 percentages and n-6 and n-3 ratios.Este trabalho foi realizado para avaliar as características de carcaça e composição química do músculo Longissimus de 32 bovinos não castrados de quatro grupos genéticos abatidos aos 14 meses de idade. Foi usado um modelo experimental inteiramente casualizado e distribuídos em quatro grupos genéticos: 1. Caracu (CAR); 2. Canchin (CAN); 3. Charolês vs. Caracu (CHC) e 4. Aberdeen Angus vs. Canchin (AAC). O rendimento e a conformação de carcaça foram menores para os animais do grupo genético CAR em comparação ao grupo genético CAN, CHC e AAC. Não houve diferença para umidade, cinzas, proteína bruta e colesterol total entre os quatros grupos genéticos. O grupo genético teve influência sobre o perfil de ácidos graxos do músculo Longissimus dos bovinos. Os bovinos com genes zebu tiveram maiores níveis de ácidos graxos saturados. Os ácidos graxos saturados representaram aproximadamente 50% da composição dos ácidos graxos do músculo Longissimus. O grupo genético teve efeito nas percentagens de ácidos graxos saturados e poliinsaturados, n-3 e n-6 e sobre a razão entre n-6 e n-3.

This experiment was carried out to evaluate the carcass characteristics, chemical composition and fatty acid profile of the longissimus muscle of 32 young bulls from four genetic groups: Caracu; Canchin; Aberdeen Angus × Canchin; and Charolais × Caracu, finished in feedlot and slaughtered at 22 months old. Each group was composed of eight animals. There was no difference for moisture, ash, crude protein or total cholesterol between bulls from different genetic groups. However, total lipids percentage was higher for bulls from Caracu and Aberdeen Angus × Canchin and lower for Canchin and Charolais genetic groups. Polyunsaturated fattty acids and n-6 percentage was higher for Canchin and lower for Caracu, Aberdeen Angus × Canchin and Charolais genetic groups. Canchin and Charolais × Caracu genetic groups presented higher n-3 percentage than Caracu and Aberdeen Angus × Canchin. There was no difference for the n-6/n-3 ratio among the bulls from the four genetic groups.

The experimental design was completely randomized. The bulls weredistributed into two systems: 1) Finished in feedlot 13 to 18 months old (T18), or 2) Finished in feedlot from 21 to 24 months old (T24). The diet, roughage:concentrate ratio of 52:48 (dry matter basis), contained 12% crude protein and 72% total digestible nutrients. The T18 system showed lower (p < 0.05) conformation (12.46 vs. 13.41 points), higher (p < 0.05) subcutaneous fat thickness (3.82 vs. 3.11 mm), lower (p < 0.05) Longissimus area (66.17 vs. 70.87 cm2), lower(p < 0.05) muscle percentage (60.64 vs. 64.26%) and higher (p < 0.05) fat percentage (23.56 vs. 20.00%). Moisture (73.27%), ash (1.05%), crude protein percentages (22.56%) and total cholesterol content (36.47 mg/100 g of muscle) were similar (p < 0.05) between both slaughter ages. The total lipid percentage was higher (p < 0.05) for the T18 system (1.61 vs. 1.33%). Longissimus muscle fatty acid composition was not influenced (p < 0.05), with exception of C18:1 n-9 and C18:3 n-3, which were lower (p < 0.05) for the T18 system. Saturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids, n-6, n-3 percentage and PUFA/SFA and n-6/n-3 ratio did not change (p < 0.05) according to slaughter age.Este trabalho teve como objetivo avaliar as características da carcaça e composição química do músculo Longissimus de 78 bovinos Purunã (39/tratamento) abatidos no sistema super precoce (SUP) e precoce (PRE). Os bovinos foram distribuídos em dois sistemas: 1. Terminação em confinamento dos 13 aos 18 meses de idade (SUP) ou 2. Terminação em confinamento dos 21 aos 24 meses de idade (PRE). Os animais receberam uma dieta com 12% de proteína bruta e 72% de NDT comproporção volumoso:concentrado de 52:48. Animais do sistema SUP apresentaram menor (p < 0,05) conformação (12,46 vs. 13,41 pontos), maior (p < 0,05) espessura de gordura de cobertura (3,82 vs. 3,11 mm), menor (p < 0,05) área do Longissimus (66,17 vs. 70,87 cm2), menor(p < 0,05) percentagem de músculo (60,64 vs. 64,26%) e maior (p < 0,05) percentagem de gordura (23,56 vs. 20,00%). A percentagem de umidade (73,27%), cinzas (1,05%), proteína bruta (22,56%) e teor de colesterol total (36,47 mg 100 g-1 de músculo) foi similar (p < 0,05) entre o peso de abate. A maior (p < 0,05) percentagem de lipídeos totais foi para o SUP (1,61 vs. 1,33%). A composição de ácidos graxos não foi influenciada (p < 0,05) pelo sistema de terminação, comexceção da percentagem dos ácidos graxos C18:1 n-9 e C18:3 n-3 que foram menores (p < 0.05) para o PRE. As percentagens de ácidos graxos monoinsaturados, poliinsaturados, n-6, n-3 e as razões de AGPI/AGS e n-6/n-3 não foram alteradas (p < 0,05) pela idade de abate.

This experiment was carried out to study soybean oil and linseed as feeding alternatives to improve the animal performance and the carcass characteristics of crossbred bulls finished in feedlot for 105 days. There were used 21 bulls with 18 months old randomized in three treatments (n=7): control (CON) which offered concentrate based on corn; soybean oil + linseed grains (LS1); soybean oil + linseed grains (LS2) that had an experimental time divided in two periods: 60 days with soybean oil and the remaining 45 days with soybean oil + linseed grains. No differences (P > 0.05) were observed among treatments on the initial body weight (343 kg), final body weight (501 kg), average daily gain (1.50 kg), hot carcass weight (262 kg), carcass dressing (52.4%), fat thickness (5.40 mm), Longissimus area (88.0 cm2), Longissimus area/100 kg (33.7 cm2) dry matter conversion (8.00 kg DM/1 kg of body weight), dry matter intake (11.8 kg), dry matter intake/live body weight (2.80%), crude protein intake (1.20 kg), gross energy intake (52.9 Mcal/day), acid detergent fiber intake (2.30 kg), acid detergent fiber intake/100 kg of live body weight (0.50%), neutral detergent fiber intake (2.38 kg) and neutral detergent fiber intake/100 kg of live body weight (0.90%). Therefore, soybean oil and linseed can be used to replace corn in beef cattle diets without reducing the animal performance and the carcass characteristics.Este experimento foi realizado para estudar o óleo de soja e grãos de linhaça como alimentos alternativos na alimentação animal para melhorar o desempenho e as características de carcaça de animais inteiros cruzados e terminados em confinamento por 105 dias. Foram utilizados 21 animais inteiros com 18 meses de idade distribuídos em três tratamentos (n=7): controle (CON), onde foi oferecido concentrado a base de milho; óleo de soja + grãos de linhaça (LS1) e óleo de soja + grãos de linhaça (LS2), onde o período experimental foi dividido em duas etapas: 60 dias com óleo de soja e 45 dias com óleo de soja e grãos de linhaça. Não houve diferença (P > 0,05) entre os tratamentos para peso inicial (343 kg), peso final (501 kg), ganho médio diário (1,50 kg), peso da carcaça quente (262 kg), rendimento de carcaça (52,4%), gordura de cobertura (5,40 mm), área de olho de lombo do Longissimus (88,0 cm2), área de olho de lombo do Longissimus/100 kg (33,7cm2), conversão de matéria seca (MS) (8,00 kg MS/1 kg peso vivo), ingestão de matéria seca (11,8 kg), ingestão de matéria seca/peso vivo (2,80%), ingestão de proteína bruta (1,20 kg), ingestão de energia (52,9 Mcal/dia), ingestão de fibra em detergente ácido/100 kg de peso vivo (0,50%), ingestão de fibra em detergente neutro (2,38 kg) e ingestão de fibra em detergente neutro/100 kg de peso vivo (0,90%). Dessa forma, óleo de soja e grãos de linhaça podem ser utilizados para substituir o milho em dietas para bovinos inteiros sem que haja alteração no desempenho animal e nas características de carcaça.

The vast majority of livestock are fed ad libitum, with free access to feed during most of the time. In order to achieve efficient production, it is necessary to raise levels of voluntary feed intake – in general, the more the animal eats, the more it produces and the more efficient it becomes. Intake amounts are guided by nutritional requirements, and an approximate estimate of how much an animal will ingest can be calculated from levels of protein, energy and other nutrients required for maintenance and production. However, there are several factors that can interfere with the concordance between requirements and actual intake, such as feed volume, which can be a determinant factor for achieved intake, especially in ruminants.A maioria dos animais de produção é alimentada à vontade, ou seja, tem livre acesso ao alimentona maior parte do tempo. Para que a produção seja eficiente é necessário elevar o nível de consumovoluntário, pois em geral, quanto mais o animal come, mais ele produz e se torna mais eficiente. A amplitude da ingestão é direcionada pela exigência nutricional e uma estimativa aproximada de quantidade de alimento que um animal vai ingerir pode ser calculada pela exigência de proteína, energia e outros nutrientes para a mantença e produção. No entanto, há vários fatores que podem interferir com a concordância entre exigência e ingestão, como o volume do alimento, que pode ser um fator determinante no nível de ingestão alcançada, especialmente nos ruminantes.
