La Nueva Ola Feminista ha generado dos reacciones que no son nuevas, pero se ven actualizadas por el carácter masivo y global del movimiento: una instrumentalización del feminismo, configurando lo que Laura Martínez-Jiménez denomina “posfeminismo neoliberal”; y una avanzada de un populismo conservador, que redobla su militancia anti-derechos como parte de su programa ante la crisis neoliberal (como puede observarse en el fallo Dobbs vs. Jackson en Estados Unidos). Objetivos. En este artículo analizaremos ambas reacciones (que en algunas ocasiones son leídas como opuestas) como dos caras distintas pero complementarias de la configuración de lo que denomino el corrimiento del histórico género vs. clase a un actualizado género vs. pueblo. Metodología. Dividiremos el artículo en tres apartados: (a) inscribiremos la Nueva Ola Feminista dentro de los movimientos sociales de reacción a la crisis del capitalismo neoliberal; (b) señalaremos los principales clivajes de la construcción de la oposición género vs. pueblo; (c) criticaremos la interpretación individualista de los derechos de las mujeres desde una apropiación de la Teoría de la Reproducción Social. Resultados y conclusiones. La construcción de la oposición género vs. pueblo se basa en una des-inscripción del feminismo del conjunto de movimientos surgidos al calor de la crisis neoliberal, y en construcción de los derechos de las mujeres como derechos (neo)liberal-individuales. Ante esta operación, es necesario profundizar las perspectivas teóricas (y políticas) que conciben a las demandas de género como parte fundamental de los derechos de la-clase-que-vive-del-trabajo para establecer las condiciones de su reproducción social.

A more plant-based diet will contribute to food sustainability. Achieving this change requires collaboration across disciplines which is not easy to achieve. This article illustrates how interdisciplinary collaboration in a large research project can be facilitated through a design-led innovation process juxtaposing approaches from design and science. Consumer insights were used in creative workshops to ideate and develop packaging and product concepts for plant-based food focusing on ‘environment’, ‘health’ and ‘Norwegian’ design imperatives. Learning loops of alignment – creation – feedback were applied to design and test six packaging prototypes of two product categories (Pea Porridge, Faba Bean Drink). Qualitative feedback was collected from 147 consumers and a quantitative survey with 1102 Norwegian consumers tested product expected liking and product-concept match. Younger consumers and users of plant-based products exhibited a higher expected liking vs. non-users and older respondents. Packaging design adopted for specific consumer segments can positively contribute to a shift to more plant-based diets. We show how a dynamic interdisciplinary innovation approach can be powerful to creating new product ideas, getting consumers’ input and fostering collaboration and learning among disciplines. We offer other researchers and the food industry actionable opportunity areas and design imperatives for their innovation activities around plant-based food.

El artículo propone una reflexión sobre la reproducción de la vida bajo el neoliberalismo desde la perspectiva de la Teoría de la Reproducción Social. Está dividido en tres partes. La primera, presenta una definición de la Teoría de la Reproducción Social como teoría crítica del capitalismo que coloca en el centro del análisis (teórico, empírico y político) las contradicciones inscriptas en el proceso de reproducción de la fuerza de trabajo (y de las vidas que la portan) en tanto proceso diferenciado pero indisociable de la producción de valor. La segunda parte ofrece una definición de a qué nos referimos con “luchas por la reproducción social”, estableciendo tres tipos de luchas que permiten identificar diversos protagonistas, territorios y alcances, y permiten remarcar la posición estratégica que ocupan las trabajadoras que garantizan la vida. La tercera parte propone una reflexión sobre el feminismo como expresión y combate a la crisis de reproducción de la vida y, por ende, como movimiento que excede la lucha por los derechos de las mujeres y se sumerge en la disputa (estratégica) por el derecho a establecer las condiciones de nuestra reproducción como clase-que-vive-del-trabajo.

En este artículo analizo la contradicción capital-vida en términos teóricos, para pensarla también en términos políticos. Para ello, en la primera parte despliego la perspectiva de la teoría de la reproducción social como mirada específica sobre esta contradicción; luego, describo brevemente ciertas características de las luchas por la reproducción de la vida desde abajo, como desafíos a los regímenes de reproducción social que imponen los Estados en el capitalismo; y, finalmente, propongo pensar la posición socio-reproductiva de las y los trabajadores de las instituciones de reproducción social —salud, educación, cuidados—, como fuente de poder de clase que permite poner sobre la mesa el derecho a establecer las condiciones de la reproducción de la vida.

Background: The ageing processes occur slowly over time and are often not detectable by the individual. Thus, preparing for dietary needs in later years should start at an earlier age than most people realise. Objective: This study aims at better understanding what characterises food-related practices in active, home-living older adults, in order to identify food-related factors that act as barriers and those that promote healthy ageing. Design: Three experiments were conducted: First, a web-based quantitative survey to collect information about home-living older adults’ food-related behaviours (67+ years, N = 1,005). Second, two focus groups with respondents 67–74 years (N = 7) and 75–84 years (N = 6) to elicit aspects not adequately covered in the survey. Third, 10 individual interviews to provide in-depth insights. Results: Two distinct groups were identified in the survey; 67–79 years and 80+ years. The older age group experienced more barriers and restrictions in food intake and food-related behaviours compared to the younger group. Good taste, routines and social settings were important for appetite and food intake. Discussion: Using a mixed-methods approach proved valuable for extracting information and a better understanding of what impacts on food-related aspects amongst older adults. Strategies for upholding a healthy food intake involve establishing daily routines and meeting arenas where older adults can socialise and eat food together. Conclusion: This study confirmed that knowledge of older adults’ physical needs, barriers and abilities must be a part in preparation for a healthy diet.

Texturized vegetable protein (TVP) from a blend of faba bean protein concentrate and an oat beta-glucan rich fraction was produced by low-moisture extrusion to combine nutritional benefits of both ingredients. The effect of extrusion conditions (temperature in zone 6 (HZ6), feed rate (FR) and moisture content (MC)) on physicochemical, nutritional, textural, and sensory attributes was studied. Overall, effect of the FR and MC of the blend showed greater impact on TVP properties rather than the temperature. TVPs produced at 28.5%, 5 Kg/h and 150⁰C and at 30.8%, 4 Kg/h and 160⁰C for MC, FR and HZ6, respectively, presented improved properties to be further formulated into a meat analogue product. The beta-glucan content of TVP (5.6g/100g dm) was high enough to reach >1 g beta-glucan per serving in a final food product (e.g., vegan burger), which qualifies for the health claim “reduces low-density lipoprotein (LDL)-cholesterol” approved by the European Food Safety Authority. The combination of these ingredients resulted simultaneously in an improved composition of essential amino acids and increased the protein quality of the blend as the calculated digestible indispensable amino acid score (DIAAS) improved from 72.2 (beta-glucan rich fraction alone) or 76.1 (faba bean protein concentrate alone) to 90.2 (blend).

Introduction In 2012, the estimated global prevalence of pre-diabetes was 280 million, and the prevalence is expected to rise to 400 million by 2030. Oat-based foods are a good source of beta-glucans, which have been shown to lower postprandial blood glucose. Studies to evaluate the effectiveness of the long-term intake of beta-glucan-enriched bread as part of a habitual diet among individuals with pre-diabetes are needed. Therefore, we designed a multicentre intervention study in adults with pre-diabetes to investigate the effects of consumption of an oat-derived beta-glucan-enriched bread as part of a normal diet on glycated haemoglobin (HbA1c) in comparison to consumption of whole-grain wheat bread.Methods and analysis The CarbHealth trial is a multicentre double-blind randomised controlled 16-week dietary intervention trial in participants 40–70 years of age with a body mass index of ≥27 kg/m2 and HbA1c of 35–50 mmol/mol. The study is conducted at four universities located in Norway, Sweden and Germany and uses intervention breads specifically designed for the trial by Nofima AS. The aim is to recruit 250 participants. The primary outcome is the difference in HbA1c between the intervention and the control groups. The main analysis will include intervention group, study centre and baseline HbA1c as independent variables in an analysis of covariance model.Ethics and dissemination The study protocol was approved by respective ethical authorities in participating countries. The results of the study will be communicated through publication in international scientific journals and presentations at (inter)national conferences.Trial registration number NCT04994327.

Este texto aborda el debate, teórico-político, entre la visión autonomista y la visión marxista de la reproducción social. Para hacerlo, nos basamos en el reciente dossier publicado por la revista Radical Philosophy “Social Reproduction Theory”, cuya presentación está escrita por Silvia Federici y su artículo teórico por Alessandra Mezzadri. El núcleo duro del dossier está dirigido a polemizar con las posiciones sostenidas en el libro de Tithi Bhattacharya Social Reproduction Theory: Remapping Class, Recentering Opression. Presentamos aquí una “crítica de la crítica” para proponer una lectura de la Teoría de la Reproducción Social en tanto teoría de la relación entre producción y reproducción en la sociedad capitalista.

The main objective of this study was to investigate the feasibility of production of meat analogues from a faba bean protein concentrate (obtained from dry fractionation) using high-moisture extrusion (HME). The impact of the temperature, ratio between water and product feed rate and product feed rate on the physicochemical properties of the meat analogues during high-moisture extrusion (HME) was studied. The functional, textural, and sensory properties were also assessed. The impact of the moisture content was generally higher than the impact of the temperature and the feed rate within the responses evaluated. The different extrusion conditions tested did not influence the relative distribution of the oligosaccharides. Meat analogues produced with temperatures ranging between 130 and 140 °C, ratio between water and product feed rate of 4 and feed rate of 11 rpm (1.10 Kg/h) had the most positive sensory and textural properties judged by a good bite-feel (firmness) and elasticity in line with attributes associated with this product category. Of oligosaccharides analysed the content of verbascose was the highest α-galacto-oligossacharide and the content of the oligosaccharides is significant higher in the extracts of the heat-treated material compared to the starting material.

Michael Burawoy’s Manufacturing Consent is a must-have book for all those, who, like me, study the so-called “Labour World,” particularly what happens within factories. However, Michael Burawoy is much more than the author of that enlightening book. Born in Manchester in a Jewish family of Russian origin, he has been trying to understand how consent is organized among the dominated for the last 40 years. That was the issue he dealt with in Zambia in 1968, during the post-colonial process, when he got a job in the copper industry and discovered the articulations between the factory regime and racial segregation. From that experience emerged The Color of Class on the Copper Mines: From African Advancement to Zambianization (1972). In 1974, it prevailed again as a concern when, already having become a sociologist, he was employed as a metalworker worker on the outskirts of Chicago and conducted the ethnography that is the basis of Manufacturing Consent: Changes in the Labor Process in the Monopolist Capitalism (1982). This work allowed him to consolidate the idea that it is impossible to understand what happens in the work place without establishing the relationship between that space and the political-economic context in which it is placed, giving rise to the concept of “Political Regime of Production” that would be deepened in the books The Politics of Production: Factory Regimes Under Capitalism and Socialism (1985) and The Radiant Past. Ideology and Reality in Hungary’s Road to Capitalism (1994), based on a comparison between his experience as a worker in Chicago and his experience in Hungary in the 1980s, while this country was under the Soviet orbit. And it was to explore that idea that he decided to do field work in a factory in Russia in the early 1990’s, when the capitalist restoration began. But that same concern was what led him to adopt Marxism as his theoretical point of view and ethnography as his research method, developing a series of theoretical- methodological discussions that can be found in books such as The Extended Case Method: Four Countries, Four Decades, Four Great Transformations, and One Theoretical Tradition (1997), or Sociological Marxism (2000), written with Eric Olin Wright. In short, Michael Burawoy is a rara avis of the American academy: a teacher who walks through classrooms openly calling for a rebuilding of Marxism, a researcher who holds a methodological battle to the death against inductivism and a sociologist who proposes to rethink the idea of the organic intellectual relating the sociology with anti-capitalist movements. In March 2018, Burawoy was invited by Indiana University, Bloomington campus, to give a lecture entitled “Marxism engages Bourdieu.” I was there carrying out a research stay at the History Department. Chance caused that, for the first time, I had the possibility of personally listening to someone who had been inspiring for my own ethnographic work. From that first meeting, other subsequent meetings emerged, the result of which is this interview I conducted in his office at the Berkeley University.

Michael Burawoy es conocido en Argentina como el autor de El consentimiento en la producción, libro de cabecera para todos los que estudiamos el mal llamado “mundo del trabajo”, particularmente lo que sucede en las fábricas. Sin embargo, es bastante más que eso. Nacido en Manchester en una familia judía de origen ruso, Burawoy viene persiguiendo desde hace 40 años la pregunta por la construcción de consentimiento entre los explotados. Con esa pregunta se topó en Zambia en 1968, en pleno proceso poscolonial, cuando hizo un trabajo en la industria del cobre y descubrió las articulaciones entre el régimen fabril y la segregación racial. De allí surgió The Colour of Class on the Copper Mines: From African Advancement to Zambianization.

Un perfil de Cyril Lionel Robert James para el público lector en castellano tiene la obvia dificultad de que la mayor parte de sus obras no están traducidas. El reconocimiento de Los jacobinos negros (todas las referencias a esta obra remiten a James, 2003) como libro pionero de los estudios de la revolución en el subcontinente, contrasta con lo poco conocido que son el resto de sus textos en nuestro medio. Paradójicamente, a pesar de sus aportes para pensar más allá del eurocentrismo, James continúa siendo una figura circunscripta al medio anglófono. Es allí donde pueden encontrarse testimonios elogiosos, como el de Edward Said que postuló que James ejemplifica cabalmente la figura del artista como revolucionario (Said, 1989); o críticos, como el de Robin Blackburn, que lo calificó como exponente de un desarticulado “anarcobolchevismo” (Richardson, 1993).

The aim of the present study was to determine how variation in the biscuit matrix affects both the degree of in vitro fragmentation and the starch hydrolysis that occurs during the oral phase of digestion. Using three different oat ingredient types (oat flour, small flakes, and big flakes) and baking powder (or none), six biscuits with different matrices were obtained. The instrumental texture (force and sound measurements) of the biscuits was analyzed. The samples were then subjected to in vitro fragmentation. The particle size distribution and in vitro oral starch hydrolysis over time of the fragmented samples were evaluated. The results showed that the samples presented different fragmentation patterns, mainly depending on the oat ingredient type, which could be related to their differences in texture. The biscuits made with oat flour were harder, had a more compact matrix and showed more irregular fragmentation and a higher percentage area of small particles than those made with big oat flakes, which were more fragile and crumbly. The highest degree of starch hydrolysis corresponded to the biscuits made with flour. Conclusions: Differences in the mechanical properties of the biscuit matrix, in this case due to differences in the oat ingredient, play a role in the in vitro fragmentation pattern of biscuits and in the oral phase of starch hydrolysis.

El fortalecimiento de los sindicatos durante el kirchnerismo ha sido objeto de múltiples estudios e interpretaciones centrados, mayoritariamente, en el análisis de los cambios en la negociación colectiva, la conflictividad laboral, la organización en el lugar de trabajo o el denominado “modelo sindical”. Fue entre estos temas que se entremezcló el problema de la burocracia sindical como un objeto incómodo cuya forma de ser pensado resulta indisociable de las particularidades del “retorno” del movimiento obrero a la escena política nacional: con la fuerza suficiente como para echar por tierra las teorías del fin del trabajo (y sus colaterales), pero con la debilidad suficiente como para no poder imponer la pregunta sobre la clase obrera como sujeto político. En este artículo presentamos críticamente tres perspectivas desde las que ha sido abordado el problema de la burocracia sindical durante el kirchnerismo no sólo porque ellas implican miradas teóricas distintas, sino también porque permiten comprender algunas particularidades del período.

Como planteáramos en el primer número de Archivos, la puesta en pie de una revista que aborda la historia del movimiento obrero y la izquierda implica asumir el reto del debate acerca de diferentes conceptualizaciones que hacen a la definición misma del objeto de estudio y al modo en que nos posicionamos ante él, en el trabajo historiográfico y también en el presente. En este número presentamos un debate entre Paula Varela y Nicolás Iñigo Carrera que surgió de una serie de comentarios y posterior diálogo1 en ocasión de la tercera edición (corregida y aumentada) de La estrategia de la clase obrera 1936.2 En dicha oportunidad, el intercambio se centró no en una crítica general al libro sino en una reflexión particular sobre el uso que Iñigo Carrera realiza del concepto de estrategia y las consecuencias que éste tiene en el propio desarrollo de su investigación sobre la huelga general de 1936. Para la publicación del debate Archivos propuso como metodología que la crítica de Paula Varela fuera enviada por escrito con antelación, documento a partir del cual Iñigo Carrera elaboró su respuesta con posterioridad.

Reseña de Owen Jones, Chavs. La demonización de la clase obrera, Capitan Swing, España, 2013, 360 pgs

El nuevo protagonismo sindical en Argentina es un hecho ineludible. Eso ha abierto una serie de interpretaciones entre las que predomina la mirada “estatalista”, que atribuye dicho protagonismo a la política gubernamental de implantación de un “nuevo modelo de relaciones laborales” que revertiría el modelo neoliberal. En este trabajo presentaremos tres hipótesis que debaten con estas interpretaciones. La primera, que el fortalecimiento estatal de los sindicatos se enfrenta, desde el origen, a una contradicción constituyente del denominado “modelo kirchnerista”: la recomposición social de la clase obrera sobre la reproducción de las condiciones de explotación de los 90. La segunda, que esta contradicción es la base objetiva sobre la que se desarrolla el fenómeno del sindicalismo de base, motivo por el cual su análisis es parte central del análisis de los sindicatos post-convertibilidad. La tercera, que la presencia de una nueva generación de trabajadores (“generación 2001”) en combinación con la presencia de la izquierda radical (básicamente de tradición trotskista) en el movimiento obrero otorga a dicho sindicalismo de base características diferenciales respecto de otros períodos de la historia del movimiento obrero en nuestro país.

The phrase « from the factory to the neighborhood » was the expression that became popular in Argentina the process of loss of centrality of the union struggle and the simultaneous emergence of the unemployed movement in the 90. Today, the social scenario in the country seems to refute that statement. The union revitalization is undeniable and, within it, the factory has become visible as a locus of organization, struggle and politicizing. This article presents an analysis of the union revitalization at the factory level, divided into two parts. A periodization of conflicts featuring shop stewards at workplace, and an analysis of the characteristics of this grassroots unionism , through Kraft Foods factory struggle in 2009. These are: the tension between strengthening unions « above » (as a state policy of kirchnerism) and strengthening « from below » (at the workplace); the existence of a new generation of workers, the « 2001 generation »; the combination of re-politicization process and the presence of the radical left in Argentina, particularly political parties in the Trotskyist tradition.
