The efficacy of low gaseous ozone concentrations—300 and 400 ppb (0.642 mg/m3 and 0.856 mg/m3, respectively)—in controlling spoilage microflora and preserving the quality of the aged Toma Piemontese Protected Designation of Origin (PDO) cheese was explored. The research integrates consumer tests, GC–MS with solid phase microextraction fiber and electronic nose (e-nose) analysis to conduct a detailed assessment of the cheese's aromatic composition. Results indicate that low ozone concentrations significantly affected spoilage microflora, preserving the overall quality. Through GC–flame ionization detection analysis, 22 of all identified compounds by GC–MS were quantified, including ethyl acetate (sweet), diacetyl, and acetoin (buttery). Compared with the untreated sample, ozone treatments maintained the distinctive characteristics of Toma Piemontese PDO cheese, reducing the formation of off-flavors-related compounds (i.e., ethanol). Moreover, ozone-treated samples correlated with positive aroma scores given by consumers. However, sensory perception involves complex interactions among aroma compounds, highlighting the importance of advanced approaches. The utilization of a 12-sensor quartz microbalance e-nose played a crucial role in identifying subtle differences in aroma, contributing to a more nuanced understanding of ozone treatments on the cheese's sensory profile. In conclusion, this research demonstrates the potential of ozone technology as a viable and effective method for improving the quality of aged Toma Piemontese PDO cheese. Ozone has been used over the years in medicine, but it is pretty new to be used in dentistry. It has been used for over a century as a disinfectant to purify the blood, and during World War I, used to treat gangrene, burn wounds, osteomyelitis, fistulas, and many other infections. The principal action of Ozone is its antimicrobial effect on bacteria, viruses, and fungi, besides its immunomodulatory, anti-hypoxic, biosynthetic, and anti-inflammatory properties. It can be used in various fields of dentistry, including caries and restorative, endodontic management of tooth, adjunct to dental surgery and wound healing. The benefits of Ozone in dentistry are relatively untouched in literature. So, the present article will update the recent clinical oral applications and summarize the various research findings regarding the use of Ozone in dentistry. [ABSTRACT FROM AUTHOR]

The purpose of this clinical study was to investigate the types of microorganisms in deep proximal caries lesions and the efficacy of elimination of microorganisms after a 24 s ozone application to proximal cavity lesions prepared for restoration. Sixteen caries-active volunteers (female: 8, male: 8; age range: 35–55), with proximally situated deep caries lesions on premolars or molars, were included in the study. Each patient underwent two microbiological investigations. First, the caries decay before treatment was assessed. Second, the dentine tissue was assessed after the removal of necrotic tooth decay and 24 s ozone application. The prevalence of oral streptococci was determined. In addition, we isolated Candida albicans, Enterococcus faecalis and Peptostreptococcus spp. from deep proximal caries lesion in caries-active patients. All microorganisms found in the deep proximal caries lesions were destroyed following 24 s ozone application. Our findings suggest that S. anginosus group, C. albicans and E. faecalis should be considered as an index for caries activity in caries-active patients, but additional studies are necessary to confirm this suggestion. This study demonstrated that 24 s of gaseous ozone application to the deep proximal caries lesions effectively eliminated microbial species.

This research introduces and shares insights about ozone and its physical and chemical properties. There are different ways that ozone can be generated, including the use of ultraviolet, electrolysis, and a high voltage discharge, and the principles of these three kinds of generators are analyzed. Moreover, their advantages and disadvantages are compared. Additionally, ozone's applications in medicine, the household, soil treatment in agriculture, and silicon film processing are described in detail, based on its physical and chemical properties. Abstract: Atmospheric air is made up of nitrogen (71%), oxygen (28%) and other gasses (1%) including ozone, which could be altered by various processes related to altitude, temperature and air pollution. Recently many researchers have indicated that ozone can be utilized for therapeutic purposes & it has long been used in complementary and alternative medicine (CAM) & probably one of the most miraculous healing therapies available on our planet at this time. Its use is based on the known anti-microbial, antihypoxic, analgesic, immunostimulating properties of ozone (O3) on biological systems. These mechanisms of action supported with a lot of case reports and scientific studies allow using it in different fields of medicine. Claims have been made that the oxidizing properties of ozone may in fact be therapeutic for a variety of ailments; including many chronic infections for which few other treatments are available and efficacious. This review is another attempt to summarize different modalities of ozone applications in dentistry. Abstract: Ozone is strong oxidant and potent disinfecting agent. There are numerous application areas of ozone in food industry such as sanitation of food plant equipments, surface hygiene and reuse of waste water. While the application of ozone for dried fruits disinfection and for fresh fruits and vegetables microflora destruction has been studied extensively, relatively little information is available on the potential of ozone to reduce microbial populations in date fruits. In this study, ozone was applied in gas form at three concentrations (1, 3, and 5ppm) for four different periods (15, 30, 45 and 60min) on Iranian date fruits and the reduction in the total bacterial count, Coliform, Staphylococcus aureus as well as yeast/mold counts were examined. The promising results indicated the efficacy of ozone to reduce the microbial populations in date fruits. Escherichia coli and S. aureus were not found on cultured plates inoculated with the treated samples after treatment with 5ppm (p <0.05) in 60min. The method of ozone generation, type of application, as well as the optimal exposure time and concentration of ozone as an antimicrobial agent in date fruit is mentioned in detail.
