The larvae, pupae and adult of the world’s largest hornet Vespa mandarinia are a nutritious food popular among the different ethnic communities of Nagaland. The traditional method of collecting, rearing and consuming V. mandarinia still persists among the tribal people. Semi-domestication of V. mandarinia practiced in the region has been found to facilitate the production of hornets for socio-economic purposes; thereby contributing to conservation and a sustainable utilisation of the hornets. Eight to nine combs measuring 30-45 cm in diameter are usually harvested, each of which fetching an amount of Rs. 10,000-50,000. The present investigation provides data on the crude protein content of the larvae and pupae which amounts to 52.82 and 60.99%, respectively, suggesting that hornet grubs represent an important source of nutrition. While V. mandarinia are considered as pest in western countries and most of East Asia, the present study suggests hornets as a promising alternative food item rich in protein and that hornet rearing can improve the state of health and economic situation of Nagaland’s poorer section of the society.

Knowledge about food nutrition for toddlers and the ability to buy nutritious food are important factors in toddlers parenting. Kelurahan Rawa Badak Selatan (KRBS) is one of area in Koja Subdistrict, North Jakarta which dominated by toddlers whose nutritional status needs to be improved. CSR PT. Pertamina Integrated Terminal Jakarta carried out the Serba Unsur Lele (SULE) program as a community empowerment strategy by create various product innovations from catfish and catfish bone by-product. The aim of this activities is Bunda Koja community, including mothers of toddlers, are able to improve the knowledge and skills of catfish products processing and build a growing business, some products that routinely given to toddlers are expected to give a positive impact for toddler nutrition. This program consisted of training and the application of mentoring. The series of programs include training on catfish products innovation training, management of catfish production, and product marketing. The innovations been developed for production is nuggets, abon, and catfish stick. Catfish bones by- product are processed into crackers, tempe chips, and fish bone biscuits. Abon, nuggets, crackers and tempeh chips have been through the production and marketing stages. This activity succeeded in having a positive impact especially for mothers of toddlers, could receive the additional income from the catfish product business. The more catfish products innovation which will be developed is expected to become a business so that it can have a positive impact on the economy of the Bunda Koja community, mothers of toddlers, and the surrounding community.

Trilogi University with the community ‘Kampung Ramah Lingkungan’ (KRL) Seroja Kahuripan have conducted underweight prevention services in Cibitung Wetan Village, Pamijahan, Bogor. This service activity aims to educate importance of nutritious food, train in creating greenhouses and hydroponic installations, cultivate vegetable crops and their processing to increase the food value as prevention of underweight. The method was carried out in several stages: 1) The preparation and coordination; 2) Implementation; and 3) monitoring and evaluation. Based on the data, it was known that 13,69% of children aged 0–23 months are observed with underweight with body weight far below the standard and 34,44% of children are approaching as underweight. Efforts to prevent underweight were carried out by strengthening the identity of partners, the construction of greenhouse and hydroponic installation as well as training in vegetable cultivation carried out by the team so that partners can be independent in providing nutritious food. The yields of vegetables and their processed products in form of nuggets and jerky have provided food value added increasement to partners. As a result, increasement in the number of partner members from 15 to 54 people, the formation of a group logo as identity reinforcement, the construction of greenhouse facilities and hydroponic installations series, increasement of partner’s knowledges and skills in hydroponic cultivation and crops processing, and increasement partner’s awareness of underweight issue. The results of partner’s satisfaction questionnaire showed that 85% were very satisfied with the program and they hoped for sustainable and further fostering.

Among mothers in Bihar, India, we launched a marketing campaign of a fortified food product for children. All mothers were offered the product at varying prices, while half of the mothers were randomly assigned to receive a low-cost nudge which reframes information from a nutrition behavioral change program. Among mothers who received the program, the nudge increased demand, reducing price elasticity by 18%. We find no effect of the nudge among mothers who had not completed the program. The impact of the nudge on demand was larger at higher prices and was as high as the impact of a 26% price reduction. We do not find differential impacts of the nudge by female empowerment, child health, or quality of child diets.

This community service aims to determine the increase in mother's knowledge in shaping the preferences of children under five to nutritious food and fish-based food processing. This community service was carried out in the Muara Gembong area, Bekasi Regency from March to November 2022. This community service began with providing training in the form of materials on nutritious food education for mothers and then continued with fish-based food management materials. This training was attended by 20 participants for general mothers and mothers who have children under five, by conducting pre-test and post-test. Based on the increase from the pre-test and post-test to mother's knowledge with a difference of 16. The results of the training with stunting material which were attended by participants at the time of delivering the material were 100%, the community response to the material was 90%, the relationship of the material presented to the needs of the community was 90 %, the relationship between the material and the application received by the community is 85%, the suitability of the material with needs is 90%, the presenters and presentation techniques state very well as much as 90%, the time used in giving the material is 95%, the clarity of the material is 95%, interest community towards activities as much as 85%, and satisfaction with activities as much as 95%. Abstrak Pengabdian masyarakat ini bertujuan untuk mengetahui peningkatan pengetahuan ibu dalam membentuk prefensi anak balita terhadap makanan bergizi serta pengolahan makanan berbasis ikan. Pengabdian masyarakat ini dilakukan di wilayah Muara Gembong, Kabupaten Bekasi pada bulan Maret sampai November 2022. Pengabdian masyarakat ini diawali dengan memberikan pelatihan berupa materi tentang edukasi makanan bergizi bagi ibu lalu dilanjutkan dengan materi pengelohan makanan berbasis ikan. Pelatihan ini diikuti sebanyak 20 orang peserta kepada ibu umum dan ibu yang mempunyai anak balita, dengan melakukan pre test dan post test. Berdasarkan peningkatan dari pre test dan post test terhadap pengetahuan ibu dengan selisih 16. Hasil pelatihan dengan materi stunting yang diikuti oleh peserta pada saat menyampaian materi sebanyak 100%, pada respon masyarakat terhadap materi sebanyak 90%, hubungan materi yang disajikan dengan kebutuhan masyarakat sebanyak 90%, keterkaitan antara materi dengan aplikasi yang diterima masyarakat sebanyak 85%, kesesuaian materi dengan kebutuhan sebanyak 90%, pemateri dan teknik penyajian menyatakan baik sekali sebanyak 90%, waktu yang dipergunakan dalam pemberian materi sebanyak 95%, kejelasan materi sebanyak 95%, minat masyarakat terhadap kegiatan sebanyak 85%, dan kepuasan kegiatan sebanyak 95%.

Grocery store intervention trials, including trials testing behavioral economics “nudges,” may change food-purchasing behaviors and improve diet quality. This study aimed to design and evaluate a grocery store healthy checkout lane “nudge” intervention on sales of a targeted healthy item. We conducted a randomized controlled trial based on the behavioral economic concept of cognitive fatigue and the marketing concept of impulse buying. Six grocery stores from one North Carolina-based chain were randomized to the intervention (n = 3) or control (n = 3) condition. Researchers tested a 4-week healthy checkout lane intervention, in which intervention stores moved 6-ounce cans of peanuts to the cash registers. Cashiers were instructed to upsell the peanuts to all shoppers at checkout. While not a component of the intervention, the retailer decreased the price of the peanuts from $1.99 to $1.50 during the first 2 weeks of the intervention. Fidelity to the checkout display was high. Fidelity to the upsell was low. The main outcome measure was aggregated store-level sales of the promoted peanuts for 4 weeks before the intervention and during the 4-week intervention period. On average, sales increased by 10 units/week in intervention stores (5.83 vs. 15.83 units, p = .04) with no significant change in control stores (1.42 vs. 1.17 units, p = .64). The difference (10 vs. −0.25 units, p = .02) was likely due to displaying the peanuts at checkout combined with the price promotion. Larger randomized controlled trials should examine whether healthy checkout lane interventions are effective “nudges” for promoting purchases of healthier foods in grocery stores.

Nuestra propuesta es la visita al mercado del barrio con la finalidad de que conozcan su comunidad y de que se sientan orgullosos de su cultura y costumbres; destacar la diferencia entre la comida nutritiva y alimentos chatarra; reconocer la labor que realizan los vendedores en el mercado; resaltar valores como la honestidad y el respeto; conocer las reglas del aseo para la conservación de los alimentos y cuidado del medio ambiente. Aplicar esta estrategia activa permite utilizar de manera apropiada recursos de nuestro entorno, crear el sentido de pertenencia, mejorar el desempeño escolar, la participación creativa de los estudiantes en cada uno de los ambientes de aprendizajes y aumentar su capacidad lingüística. Knowing the relevance of the education of children in the life of human beings, a stage in which their intelligence, personality, social behavior and other potential develops, we consider that it is important to make changes in our educational work and to apply active teaching methods - learning, promoting the participation of students in classroom projects, collaborative work and based on the experience, to create their own knowledge with the guidance of teachers. Our proposal is the visit to the market of the neighborhood in order that they know their community and that they are proud of their culture and customs; to recognize the difference between nutritious food and junk foods; Recognize the work of marketers in the market; to exalt values ​​such as honesty and respect; to know the rules of cleanliness for food preservation and care of the environment. Applying this active strategy allows us to appropriately use resources from our environment, create a sense of belonging, improve school performance in students, creative participation of students in every learning environment and increase their language ability.

The research purpose is to increase the introduction of balanced nutritions food. The research method used was Classroom Action Research (CAR). The researcher subjects were 22 children of 3-4-year-old children at PPT Pelangi, Pakal, Surabaya. Data collection techniques included: planning, implementation, observation, and reflection. This research consisted of pre-cycle, cycle I and cycle II with 2 meetings/ cycle. The research result showed that in the pre-cycle, it obtained 46,6 %, there was An increase in the first cycle of 61,4 %, it showed an increase in the number of children who developed well, although it was not maximally yet, in the second cycle, It increased as 83 % it showed an increase in the percentage of development with very good growth.

Today, it has been a big challenge to provide a safe, healthy and nutritious source of food for people, especially for poor income groups and undernourished populations of the developing world. Finding cheap and alternative sources of healthy and nutritious food has become a critical issue due to the food scarcity, high cost and unreliable supply of healthy food in developing and undeveloped countries. Tapping in to the world of Underutilized Wild Edible Plants (UWEP) will allow us to provide a substantial solution for food insecurity. UWEP have been identified as a reliable and long term solution due to the availability of micronutrients, bioactive compounds and their pharmacological importance. UWEP based diet should be expanded around the world, after conducting researches to fill the missing information such as micronutrient bioaccessibility, anti-nutrients, elimination of anti-nutrients and novel trends. The purpose of this paper is to explain the potentials of UWEP to cope up with malnutrition and food insecurity, which are burning issues that needs immediate attention.

A spatial concentration of basic services can be observed in many European regions. This concentration is a result of the interaction between socio-economic and demographic processes. Rural regions in Germany are particularly affected by concentration processes and the thinning-out of services. Even though this topic is covered and debated in media, among policy makers and regional scientists, few reliable data exist on the dimensions and consequences of these processes. Food retailing is one subject area wherein a spatial concentration can be observed and its consequences have a direct impact. Different aspects of the spatial concentration processes in food retailing are the core of this article, which aims to address the following questions: Can spatial food deserts (regions with limited access to affordable and nutritious food) be identified in rural Germany, and, if yes, which part of the population seems to be particularly affected by insufficient access to food? Food deserts are approached at the macro level utilising a distance-based concept building on a GIS accessibility model. Thus, the focus is on the analysis of the potential general spatial existence of food deserts, not on individual consumer perspectives, behaviours, capabilities, or consequences. The results of the analysis reveal that in Germany, transportation availability is a decisive factor determining if one lives in a food desert or not. Furthermore, living in a food desert is more of an individual experience that depends on individual living conditions and capabilities than a spatial distinct phenomenon. However, as the accessibility to food retail stores is comparatively worse in connected parts of Mecklenburg-West Pomerania, Brandenburg, Rhineland-Palatinate and the north of Saxony-Anhalt, less mobile people living in these areas are more likely to experience food desert.

Pigeons are showing remarkable progress with more profit. This sector has many potential markets in the country. After visiting some pigeon houses, many limitations have been come out. Many rearers collect pigeons based on only physical appearance, and in the long run, they cannot get pure offspring. King pigeon is considered a table breed in the world but in Bangladesh rearers keep them as a common fancy item. Pigeons do not get their nutritious food from the owners. Result suggests that many rare pigeons are caught by predators and due to unwanted dirt in those lofts birds are affected by many diseases. Some remarkable farms are showing quality environment in their lofts and getting desirable profit.

The inability to consistently access adequate amounts of nutritious food to sustain a healthy, active life both directly and indirectly leads to depressive symptoms and diagnoses. Primary care providers should screen all patients for depression and food insecurity and are poised within the community to make a significant impact on health disparities such as food insecurity, depression, and chronic disease that decrease the quality of life for millions of Americans.

Moringa oleifera is the one of familiar plants in Harjomulyo Village. The problem of Harjomulyo Village is a lack of knowledge related to nutritional value and high economic value related to moringa plants which are widely available in Harjomulyo Village. The aim of this service is to educate the Moringa plant into processed nutritious food that has high economic value for the people of Harjomulyo Village. In solving the problem, it is carried out by extension methods and discussions about the benefits of moringa plants for health and fulfillment nutrition for family, technical counseling on the process of moringa sticks, packaging of moringa sticks, and business and marketing analysis of moringa sticks.

Food deserts, areas in which it is difficult to obtain affordable, nutritious food, are especially problematic in low-income neighbourhoods. One model for addressing food hardship and unemployment issues within low-income food deserts is a cooperative grocery store. Through the cooperative model, the grocery store can serve as a cornerstone to address socio-economic marginalisation of low-income neighbourhoods and improve the health and well-being of its residents. It is important for communities and policymakers to be able to assess the effectiveness of these types of endeavours beyond traditional economic factors such as profitability. This article uses a systems engineering approach to develop a framework for measuring the holistic impact of a cooperative grocery store on community health and well-being. This framework encompasses values that characterise the relationship between food retail, economic viability and social equality. We develop a dashboard to display the key metrics for measuring the economic, social and environmental indicators that reflect a grocery store’s social impact. We demonstrate the usefulness of the framework through a case study of a full-service cooperative grocery store that is planned within the city of Dayton, OH.

Pasta is a ready to eat extruded product having higher nutritional properties. It is really suited for daily balance diet because of the higher concentration of unsaturated fatty acid. Mixing, extrusion, drying, cooling and packaging are the major steps used in the production of pasta. Pasta can be produced from different cereals like sorghum, maize, wheat, rice, oats and the addition of these cereals can change the textural, functional, physiochemical properties and microstructure of pasta. The yellow colour is the most acceptable range of pasta by customers. Pasta helps to Lower glycaemic index and type 2 diabetics and reduce abdominal obesity. Pasta is a nutritious food helps to reduce the risk of developing Alzheimer’s disease.This review paper provides an updated information about the different cereals used, fortification of pasta with different plant and animal sources, production technologies, effect of thermal treatments, extrusion conditions, microstructure, and colorimetry of pasta.

This study covers only SDG target 2.1 (2.1.1-Prevalance of Undernourishment and 2.1.2-Food Insecurity Experience Scale). Though FAO is the custodian organization for estimating these targets across the globe, however, it is the first ever attempt for estimating these targets by PARC-MNFS&R. HIES data for the year 2018-19 has been used for estimation of these targets and compared with the results of HIES-2015-16 estimated by FAO. According to the results 18.38 percent households are undernourished in Pakistan and this situation is worse in urban areas (23.43%) compared with rural areas (16.61%). Punjab has highest proportion of undernourished individuals/households with 21.48 percent followed by Sindh province with 17.40 percent households. Khyber Pakhtunkhwa has the lowest proportion of 12.67 percent and Baluchistan with 16.95 percent households. National level results of FIES supports the results of PoU except urban/rural order. According to FIES results, about 16 percent of the households (individuals) are moderate and/or severe food insecure with more than 02 percent as severe food insecure in Pakistan. Sindh province shows highest proportion with more than 19 percent followed by KP province with nearly 17 percent households as moderate and severe food insecure. However, highest proportions of more than 03 percent households were found as severe food insecure in Punjab province. In conclusion Pakistan has shown tremendous achievements towards the Zero Hunger Targets by 2030, however, more efforts are needed for sustainable agriculture and food system in order to address the food insecurity level through better access and availability of food. Awareness campaign about healthy and nutritious food intake, and measures for adoption of dietary guidelines are recommended for preventing undernourishment.

Food is intricate, and food quality and safety are indispensable elements. With the rising public demands for safe and nutritious food products, a range of innovative, interdisciplinary, and multidimensional concepts have emerged in the last few decades. Nanozymes, apart from their therapeutic efficacies, are gaining increasing interest in safety and quality monitoring in the agri-food sector. These enzyme-mimetic nanomaterials are proven to detect and monitor food safety in real-time with high selectivity, stability, reliability, and recyclability. Nanozymes sourced from various nanomaterials like carbon, metal, and their oxides, metal–organic frameworks, and others offer several advantages over natural enzymes in food-based applications. Apart from real-time monitoring, these are also known for their robustness to harsh food processing environments, ease of production, and smooth and facile surface modifications. Nanozymes undergo single and multiple enzyme pathways during food analysis applications, facilitating the on-demand tailorable activity. In this context, this review briefly summarizes the working strategies and factors affecting the catalytic activity of nanozymes; the emphasis is placed on the detection of targeted analytes in the food matrix using nanozymes. Interdisciplinary tools, combined with nanozymes that aid in developing rapid on-spot identification, including spectroscopies, smartphones, electrochemiluminescence, and ELISA, are elucidated systematically. Evidenced by the rising number of nanozyme-based publications, many of the practical gaps in food analysis are narrowed. Simultaneously, some challenges like variations in recognition-to-signal patterns, optimization of nanozymes, and reproducibility of methodology need to be addressed in the future.
