Background: This study was conducted to identify the impacts of the healthy plate model workshop on 4th-graders nutrition knowledge, behaviors, and habits. Methods: The study was conducted from March to June 2023 in the Uskudar district of Istanbul, involving 102 children (50% girls) with a mean age of 10.2 ± 0.45 years. A pretest-intervention-posttest design was used for the research. Before and after the training, a questionnaire was administered to measure students' demographic characteristics, physical activity status, adherence to the Mediterranean Diet, frequencies of food group consumption, and nutritional knowledge. Results: The number of students consuming eggs, legumes, vegetables, fruits, and oilseeds daily increased after the training (p > 0.05). Increases were observed in daily consumption of meat group and water (p < 0.05). While the proportion of students who consumed whole fruit with skin was 35.3% before the training, this rate increased to 47.1% after the training (p < 0.05). The mean nutritional knowledge score (before: 71.37 ± 11.8; after: 80.45 ± 1.6, p < 0.05) and the Mediterranean Diet Quality Index (KIDMED) score (before: 4.77 ± 2.41; after: 5.50 ± 2.45, p < 0.05) increased significantly after the training. A weak positive correlation was identified between pre-training nutritional knowledge scores and KIDMED index scores (r = 0.19; p = 0.045). Furthermore, a negative weak relationship was observed between post-training nutritional knowledge scores and meal-skipping status (r=-0.231; p = 0.019). Conclusions: Structured nutrition education for school-age children can positively impact their nutritional knowledge and dietary habits. [ABSTRACT FROM AUTHOR]

Introduction: Obesity is commonly seen in patients attending the emergency department (ED). Opportunities to provide nutritional advice to patients with obesity are often overlooked in ED settings. Numerous barriers and perceptions exist among healthcare professionals. This study aimed to explore the ED physicians' attitudes, practices, nutritional knowledge and barriers towards nutrition advice in weight management for obese patients in the ED. Methods: This was a cross‐sectional survey conducted from February to April 2024. The self‐designed questionnaire consisted of questions regarding respondents' characteristics, attitudes, practices and barriers towards providing nutrition advice for obese patients in the ED and assessing the knowledge of nutrition among ED doctors. Non‐parametric tests and Pearson correlation were performed for statistical analysis. The responses between doctors with normal body mass index (BMI) and extreme BMI groups ("BMI < 18.5" and "BMI > 25.0") were compared. Results: This study included 120 responses with a response rate of 16.9%. The mean nutritional knowledge score for doctors with normal BMI was 54.4 ± 14.5, and it was significantly higher than that of doctors who self‐reported as underweight (46.3 ± 5.6 and p = 0.049) or overweight (48.9 ± 16.1 and p = 0.029). The top barrier to nutrition support for obese patients in ED settings was "too busy to give nutrition advice" (77.5%). Conclusions: Our study highlighted the common barriers to offering nutritional advice and insufficient nutrition training among ED physicians. Integrating comprehensive nutrition education into our undergraduate medical training and providing regular evidence‐based nutritional courses may improve patients' and physicians' health. Background: Disordered eating among athletes and physical activity practitioners is a growing concern that can negatively impact health and performance. Understanding the prevalence and predictors of disordered eating in these populations is essential for developing effective interventions. Objective: To investigate disordered eating tendencies among athletes and physical activity practitioners in Riyadh, Saudi Arabia. Methods: Participants from five athletic clubs and six fitness centers were surveyed. Data were collected using an interviewer-administered questionnaire that included the Eating Attitudes Test (EAT-26), the Abridged Nutrition for Sport Knowledge Questionnaire (ANSKQ), and the Global Physical Activity Questionnaire (GPAQ). Anthropometric data were also collected. The study comprised a sample of 263 individuals, who were divided into two groups: athletes (n = 121) and physical activity practitioners (n = 142). Results: The average age of the participants was 26.41 years with a standard deviation of 8.1 years. Females comprised nearly two thirds of the sample, representing 60.8% of the participants. Physical activity practitioners exhibited higher disordered eating scores compared to athletes. The total EAT-26 scores were significantly higher in practitioners (15.63 ± 4.12) than in athletes (13.21 ± 3.89; p < 0.001). Subscale scores for Dieting (8.95 ± 2.73 vs. 7.49 ± 2.58; p = 0.001) and Bulimia (3.32 ± 1.15 vs. 2.20 ± 1.03; p < 0.001) were also higher in practitioners. BMI was a significant predictor of higher total EAT-26 scores and its subsets, indicating a greater risk of disordered eating behaviors in individuals with higher BMI. Participants with lower levels of sports nutritional knowledge and those engaging in low-intensity physical activities were more likely to exhibit disordered eating tendencies. Conclusions: The findings highlight that physical activity practitioners are at a higher risk of disordered eating compared to athletes. Addressing BMI and improving nutritional knowledge are key strategies for preventing and managing disordered eating behaviors in physically active populations. Background: The occurrence of COVID-19 pandemic has affected various aspects of life. Several studies have shown that the ability to recover and avoid COVID-19 infection depends on the level of immunity, which is influenced by the intake of immunonutrients. However, healthy eating habits, such as the consumption of these immononutrients, are influenced by a good nutrition understanding. Objectives: This study aimed to determine the association between nutritional knowledge and immunonutrients intake with immunity status post-pandemic COVID-19 in college students. Methods: The study procedures were carried out using an observational analytical method with a cross-sectional design. The sample population comprised 104 first-year students from Medical Education Study Program at Medical Faculty of Lampung University. Students were determined using the unpaired categorical comparative analytics sample size formula and selected with a straightforward simple random sampling method. Data were collected using a questionnaire, including nutritional knowledge, immunonutrients intake, and immune status. Analysis was carried out using Chi-Square test and logistic regression. Results: The result showed that 51.9% of respondents had decreased immunity status. The bivariate test revealed that protein intake (p-value<0.001), zinc (p-value=0.006), iron (p-value<0.001), vitamin A (p-value<0.001), and vitamin C (p-value=0.002) had a relationship with immunity status, while nutritional knowledge (p-value=0.708) had no association. In addition, the factors most related to immunity status were protein, iron, and vitamin C intake. Conclusions: Immunonutrients intake is a factor that directly influenced immunity status, while nutritional knowledge is an indirect factor. [ABSTRACT FROM AUTHOR]

6. Dietary Habits, Nutritional Knowledge, and Their Impact on Thyroid Health in Women: A Cross-Sectional Study.

Background: The thyroid gland plays a crucial role in regulating metabolism and various bodily functions through hormone production. Women are particularly susceptible to thyroid disorders such as hypothyroidism and Hashimoto's disease, with associated symptoms affecting overall well-being. Prior research has inadequately addressed the influence of dietary habits and nutritional knowledge on thyroid health, especially in women. Objective: This study aimed to evaluate the dietary habits and nutritional awareness of women aged 18–45 with diagnosed thyroid disorders, emphasizing the effects of education level on knowledge and dietary practices. Material and Methods: A cross-sectional survey was conducted with 297 women diagnosed with thyroid conditions. The survey assessed demographics, comorbidities, hydration habits, and knowledge about nutrient intake critical for thyroid health. Chi-square tests, ANOVA, and correlation analyses were performed to evaluate associations. Results: Hypothyroidism and Hashimoto's disease were most prevalent among younger women (18–25 years). A significant association was observed between higher education and knowledge of protein and carbohydrate roles in managing thyroid health (p < 0.01). Women with higher educational backgrounds more frequently used healthier cooking methods and were more informed about beneficial nutrients, including vitamin D and omega-3. A chi-square test indicated that low water intake was significantly associated with comorbid conditions, including insulin resistance and cardiovascular disease (p < 0.01). Conclusions: Significant gaps remain in dietary knowledge, particularly concerning protein intake and nutrient–drug interactions, indicating a need for targeted dietary education. Women with higher education demonstrated greater dietary awareness, emphasizing the importance of tailored educational interventions to enhance thyroid disorder management. [ABSTRACT FROM AUTHOR]

7. Influence of Socioeconomic Factors and Nutritional Advice on Diet Quality in Women of Reproductive Age: A FIGO-DQS Assessment.

Background/Objectives: Nutritional knowledge, attitudes, and practice are important ways of assuring a healthy pregnancy start, which can be shaped during the pre-pregnancy period by the intervention of healthcare providers. In this cross-sectional study, the main objective was to explore contextual determinants of diet quality in women of fertile age, including socioeconomic factors and sources of information. Methods: Data on socioeconomic background, sources of nutritional advice, and determinants of food choices were collected through an anonymous web-based questionnaire completed by 465 women. Diet quality was assessed with the International Federation of Gynaecology and Obstetrics diet quality score (FIGO-DQS). Results: Better food choices (OR = 1.73; 95% CI: 1.16–2.51), higher knowledge level (OR = 1.66; 95% CI: 1.119–2.466), and healthcare advice (OR = 1.70, 95% CI: 1.119–2.466) increased the chances of having a better diet. Both healthcare providers (β = 0.503, p = 0.018) and determinants of food choices (β = 0.520, p = 0.011) had a significant influence on the FIGO score, although the advice provided by the healthcare professionals did not yield a significant influence on the determinants of food choices (β = 0.310, p = 0.125); Conclusions: Knowledge had a mediator effect on the impact of healthcare guidance on nutrition practices, but it does not fully explain the adherence to healthy lifestyle choices. Objectives: Arterial hypertension (AH) is one of the most common disorders affecting the human population. The diet of patients with AH can influence the course of the disease and prognosis. The aim of this study was to investigate the differences in nutrition in hospitalised and non-hospitalised hypertensive patients, compared to control groups of non-hypertensive patients from the same medical centres. Methods: Patients from nine centres—six hospitals and three ambulatory care centres—were surveyed. The Questionnaire for the Assessment of Dietary Habits, Lifestyle, and Nutrition Knowledge (KomPAN) was administered by interviewers. Results: Complete results were obtained from 172 hospitalised and 63 non-hospitalised patients. A significantly higher mean body mass index was found for the hypertensive patients (p < 0.001), and a higher unhealthy diet index score was also shown for the hypertensive patients (p = 0.003). Over and above this, a lower mean health-promoting diet index score was found in the hospitalised group (who were on a hospital diet) for the hypertensive patients (p = 0.018). Summary: The study highlights a strong positive correlation between body mass index (BMI) and arterial hypertension (AH), with patients exhibiting higher BMI levels compared to a control group. A BMI of over 25 significantly increases the likelihood of developing AH, and obesity is associated with a higher risk in both men and women. Conclusions: The study indicates that a hospital diet may not be suitable for people with AH. Further research should be conducted to obtain reliable results. Clinical implications: The study showed which factors should be considered when composing a diet for people with hypertension, the relevance of which was demonstrated in the discussion. Background. Proper nutrition is essential for maximizing athletic performance. Athletes with a high level of nutritional knowledge are more likely to adopt healthy dietary habits, positively impacting their performance. Understanding where athletes obtain nutritional information is crucial, as these sources influence dietary practices and performance. Objectives. The study aimed to inform a culturally tailored nutritional strategy for Ethiopian athletes. Materials and methods. A descriptive study was conducted with 301 randomly selected athletes from 10 sports clubs. Data on nutritional knowledge and information sources were gathered through validated questionnaires (Cronbach’s alpha: 0.844 and 0.802, respectively). SPSS version 26 was used to analyze data via descriptive and inferential statistics, including correlation, regression, and ANOVA at a significance level of 0.05. Results. The average scores for nutritional information sources and knowledge were 3.17 (SD = 1.19) and 3.09 (SD = 1.33), indicating moderate adherence. A strong correlation was found between information sources and performance (R = 0.723, p < 0.001), as well as a moderate correlation between nutritional knowledge and performance (R = 0.629, p = 0.000), explaining 79.2% of performance variance. Regression analysis showed that both factors had a significant effect on performance. Conclusions. Nutritional knowledge and credible information sources are critical in enhancing athletes’ performance. The study highlights the need for improved nutrition education among Ethiopian track athletes to promote better dietary practices and performance.

Background: Nutrition labeling is a health promotion strategy to improve nutrition information and help consumers make healthier food choices at the point of purchase. This study aimed to assess the association between knowledge of Nutritional Traffic Light Labels (NTLL) and food choicesin Shiraz, Iran.Methods: In this cross-sectional study, 418 individuals were randomly selected from chain stores. Nutrition knowledge including general nutrition awareness and NTLL knowledge were assessed by a validated questionnaire. The participants’ purchase patterns were determined based on the color code of NTLL.Results: Almost half of the participants (48.8%) had high levels of NTLL knowledge. Age of participants (p=0.012) and their level of education (p=0.003) were related to the NTLL knowledge. The findings revealed that males (p=0.037) and participants with a previous disease (p=0.029) had higher food basket score. However, no significant association wasobserved between the NTLL knowledge and food basket score.Conclusion: Despite the relatively good knowledge of participants on NTLL, the efficiency of using the labels was paradoxically low. In addition, having knowledge did not necessarily led to a successful performance in healthy food choices.

Background The Environmental Nutrition Program (ENP) as an environmental intervention offers voluntary involvement with students, but persists in exposure. This study aimed to investigate the effect of ENP on students’ dietary intake and nutritional knowledge. Methods A quasi-experimental study was conducted with a control school. ENP comprises four activities: the use of uniform food serving tools, nutrition fact displays, food and nutrition information displays, and body weighing awareness. The ENP emphasized voluntary involvement with students but persisted in exposure for over 8-weeks. Multiple passes of 24-hour food recall and validated questionnaires were used in the assessments by a nutritionist. Multiple linear regressions were performed to analyze the effectiveness of ENP. Results A total of 113 female high school students, with a median age of 16 years, were recruited. At baseline, all students had a lower dietary intake than the national recommendation. Except for the stipend, no differences in the characteristics were found among the students. The students’ carbohydrate intake and nutritional knowledge significantly increased after the ENP in the intervention school ( p < 0.001). Total energy, protein, and fat intake also improved after ENP. Conclusion ENP activities effectively increased students’ daily carbohydrate intake and nutritional knowledge. Thus, ENP may be appropriate for enhancing nutrition literacy among female students. Future studies with a longer time frame are encouraged to yield sustained, favorable dietary practices.

Background: Adequate nutritional knowledge and healthy dietary behaviours are essential for promoting rational nutrition for children. However, lack of nutritional knowledge and unhealthy dietary behaviours are common among Chinese children. Therefore, we developed a school‐based nutrition education (NE) program to assess its impacts on nutritional knowledge and dietary behaviours in pupils. Methods: In this trial, one school was assigned as an intervention group (n = 199) and the other two schools were designated as a control group (n = 140). Children in the intervention group received the NE program in addition to their regular health curriculum, whereas the control group continued with their usual health curriculum without any NE program materials. Results: Concerning nutritional knowledge, the mean difference (follow‐up minus baseline) of average knowledge scores in the intervention group was significantly higher than that in the control group (1.99 ± 3.22 vs. 0.66 ± 3.60, p = 0.001). However, subgroup analysis revealed that this difference disappeared among boys and students with malnutrition status. Regarding dietary behaviours, the NE program significantly increased the proportion of children exhibiting high frequencies of meat and nuts consumption in the intervention group, along with diverse food choice at breakfast. Additionally, it markedly reduced the proportion of children exhibiting high frequencies of sugar‐sweetened beverages and fast food consumption. Structural equation modelling analyses indicated a significant direct effect of NE intervention on nutritional knowledge and an indirect effect on dietary behaviours. Conclusions: The NE program effectively enhanced nutritional knowledge scores and further improved dietary behaviours among Chinese primary school students. Future NE programs should pay more attention to boys and children with malnutrition. - Abstract
Nutrition is vital for athletic performance, especially in ultra-endurance sports, which pose unique nutritional challenges. Despite its importance, there exist gaps in the nutrition knowledge among athletes, and emerging digital tools could potentially bridge this gap. The ULTRA-Q, a sports nutrition questionnaire adapted for ultra-endurance athletes, was used to assess the nutritional knowledge of ChatGPT-3.5, ChatGPT-4, Google Bard, and Microsoft Copilot. Their performance was compared with experienced ultra-endurance athletes, registered sports nutritionists and dietitians, and the general population. ChatGPT-4 demonstrated the highest accuracy (93%), followed by Microsoft Copilot (92%), Bard (84%), and ChatGPT-3.5 (83%). The averaged AI model achieved an overall score of 88%, with the highest score in Body Composition (94%) and the lowest in Nutrients (84%). The averaged AI model outperformed the general population by 31% points and ultra-endurance athletes by 20% points in overall knowledge. The AI model exhibited superior knowledge in Fluids, outperforming registered dietitians by 49% points, the general population by 42% points, and ultra-endurance athletes by 32% points. In Body Composition, the AI model surpassed the general population by 31% points and ultraendurance athletes by 24% points. In Supplements, it outperformed registered dietitians by 58% points and the general population by 55% points. Finally, in Nutrients and in Recovery, it outperformed the general population only, by 24% and 29% points, respectively. AI models show high proficiency in sports nutrition knowledge, potentially serving as valuable tools for nutritional education and advice. A good diet during pregnancy is associated with improvements to maternal and fetal health. Nevertheless, excessive weight gain during pregnancy has been reported in several studies. The aim of this review is to determine the dietary habits of pregnant women (measured according to their degree of adherence to the Mediterranean diet, a reference in dietary quality), their knowledge of food and nutrition, and their perceptions of the nutritional education received during their pregnancy, in order to detect intervention needs within that group. The bibliographic search was conducted on three databases (Medline, PubMed central, and Web of Science), using the keywords "pregnancy", "Mediterranean diet", "nutrition knowledge", "nutritional education", and some synonyms. The final selection included 68 original articles. The available evidence indicated that, although pregnant women were aware of the importance of nutrition during pregnancy, their habits showed some room for improvement in terms of diet and physical exercise. Lack of adequate advice was the main barrier to the practice of healthy habits that pregnant women encountered; they considered that the information they received during pregnancy follow-up visits was inadequate. However, the success of interventions within different countries is a source of hope for well-structured nutrition education throughout pregnancy. The lack of nutrition-related knowledge among pregnant women could be originally related to poorly planned nutrition education from healthcare providers. Research focused on the consultations with these healthcare providers could be of help when proposing strategies to improve the content, the depth, and the duration of nutrition education sessions. It should, in any case, be noted that the available evidence in this field is limited to certain geographical origins. Therefore, research that uncovers evidence in different countries will be useful for learning about the factors that condition the habits of pregnant women and, in that way, guide strategies for the improvement of the health of expectant mothers during that stage in their lives. The aim of this study was to assess basic nutritional knowledge and food preparation practices of Volunteer Food Handlers (VFHs) in the National School Nutrition Programme (NSNP)The study used a qualitative approach. Individual interviews were conducted with 29 VFHs using semi-structured interviews and participatory observations. The survey was conducted in four school districts of Gauteng; six mainstream primary schools, one secondary school and four special schools participated in the study. Qualitative data were analysed thematically using an inductive approach of coding and characterisation for analysis on Microsoft excel. Findings show that many of the VFHs, as well as their coordinators, lacked good nutritional knowledge. The survey also revealed that nutritional knowledge, food preparation and handling skills were all influenced by educational level and socio-economic status. Most VFHs reported not strictly following the NSNP menus and recipes. In order to improve the nutritional quality of the school meals, the NSNP, needs to re-visit its VFH policies and practical manuals. More training needs to be organised to teach the VFHs about child nutrition and good kitchen practices that enhance food quality. Probiotics and prebiotics offer a range of advantageous effects on human health. The knowledge, attitudes, and practices (KAP) of individuals can impact their inclination to consume probiotics and prebiotics. The main objective of this study was to examine the KAP of the people in the United Arab Emirates (UAE) about probiotics and prebiotics consumption. Additionally, the study aimed to assess the impact of KAP and sociodemographic factors on the use of probiotics and prebiotics. In order to accomplish this objective, a verified online questionnaire was used with a five-point Likert scale and distributed using an online platform (Google Forms). A cross-sectional research, non-probability sampling was implemented, and G*Power statistical power analysis was used to estimate a sample size of 385 participants. A total of 408 replies were gathered. The population under study consisted of residents in the UAE between the ages of 18 to 64 years old, excluding populations under the age of 18 and those living outside the UAE. A total of 392 participants met the criteria for inclusion in this study. The research ethics committees of UAE University granted the study approval (ERSC_2024_4359), and the validity of the findings was confirmed through face-to-face interviews with around 50 individuals and a Cronbach's alpha test with result of 0.84. The statistical software SPSS version 29.0 for Mac OS was utilized to examine the relationships between KAP variables, including Chi-square tests and Pearson's correlation coefficients. The tests were selected based on their capacity to handle categorical and continuous data, respectively. The female population was 85.2% of the total, while the male population accounts for 14.8%. The age distribution of participants shows that the largest proportion, 68.4%, falls within the 18–24 age range. Out of the participants, 61.5% held a bachelor's degree. Most of the participants, 56.4%, were students, while 29.1% were employees. The average results indicate a significant inclination towards probiotics and prebiotics, as demonstrated by the scores above the midpoint for the six knowledge questions (M = 2.70), six attitude questions (M = 3.10), and six practice questions (M = 3.04). Several studies have examined this phenomenon; however, additional research comparing individuals in the UAE is necessary to fully comprehend the influence of KAP on the consumption of probiotics and prebiotics in the UAE. - Abstract
This study aimed to translate, culturally adapt, and validate "The Nutrition for Sport Knowledge Questionnaire (NSKQ)" for Brazilian athletes. The NSKQ is an Australian instrument composed of 87 questions divided into six subsections (weight control, macronutrients, micronutrients, sports nutrition, supplementation, and alcohol) designed to assess the nutritional knowledge (NK) of athletes. The translation process followed the recommendations of the World Health Organization for translating and adapting instruments. Semantic validation involved a panel of specialists (n = 21), followed by an assessment performed by a group of adult Brazilian athletes from various sports (n = 17). The reproducibility and internal consistency of the questionnaire were evaluated via a test–retest approach in a sample of adult Brazilian athletes (n = 29) from diverse sports, who completed the Brazilian version of the NSKQ (NSKQ-BR). Overall, the NSKQ-BR presented good internal consistency (α = 0.95) and reproducibility (intraclass correlation coefficient (ICC) = 0.85). The factors "sports nutrition" and "alcohol" showed moderate reproducibility (ICC = 0.74 (0.46–0.88) and ICC = 0.68 (0.33–0.85), respectively). Most athletes (n = 17; 58.6%) presented a medium NK score (50–65%). The NSKQ-BR is available to evaluate the NK levels of Brazilian athletes. BackgroundCardiovascular disease is a leading cause of death worldwide. The increase in patients with obesity and diabetes raises the risk of cardiovascular diseases. Proper eating habits and adequate nutritional knowledge play a key role in preventing and treating these conditions. This study aimed to evaluate the dietary habits, nutritional knowledge, and nutritional status of patients hospitalized in a cardiology department in Poland, including those with obesity or diabetes.MethodsThe study was conducted at St. Barbara Regional Specialized Hospital No. 5 in Sosnowiec from January to June 2021, involving 301 patients, 154 women (51.2%) and 147 men (48.8%), aged 29 to 87. Participants were assessed for BMI, NRS 2002 scale, morphology, biochemistry results, blood pressure, and examined for nutritional knowledge and habits using proprietary questionnaires. A proprietary scale was used to assess eating habits.ResultsMost cardiology patients were overweight or obese, with 80% exceeding the normal weight range. No significant gender differences were noted in malnutrition risk on the NRS 2002 scale. The study found patients rarely consumed recommended amounts of vegetables, fruits, legumes, whole grains, fish, and dairy products. Only 26.2% regularly ate a second breakfast, and just 9.3% chose water with meals. However, consumption of salty snacks, energy drinks, and alcohol was low. Biochemical and blood test analysis did not show significant differences between patients with diabetes, obesity, and others.ConclusionMost cardiology patients were overweight or obese, which poses a significant risk for further health complications, including cardiovascular diseases. Although patients with diabetes and/or obesity had better nutritional knowledge in some areas, this did not lead to healthier eating habits. The absence of significant differences in biochemical tests suggests that overall lifestyle and diet are crucial to cardiovascular health.

Background. Functional food is a key element in the prevention and treatment of many diseases. The ingredients it contains, such as phytosterols that lower cholesterol, also have a preventive effect on type 2 diabetes, atherosclerosis and heart attack. Phenolic compounds have antioxidant, anti-inflammatory and antiviral properties. Xylo-oligosaccharides control insulin levels, and fibre lowers blood pressure, potentially reducing insulin resistance. These beneficial properties mean that there is an increasing interest in this kind of food. Objective. The aim of the study was to assess the state of knowledge and behaviour regarding functional food among adults and to answer the question whether there are differences between the state of knowledge and behaviour of women and men. Material and methods. The survey was conducted among 301 people, including 181 women and 120 men. The research tool was an original survey questionnaire. Results. The definition of functional food is known to 42.5% of people (47.5% of women and 35% of men), while the definition of prebiotic is known to 41.9% of people (43.1% of women and 40.0% of men). For 56.2% of respondents, the factor encouraging the consumption of functional food was a healthy lifestyle, and for 54.7% of them, the product composition was the main purchase criterion. Among functional products, cereals or muesli were most often consumed for breakfast by 35% of men and 55.8% of women, 42.5% of men and 33.7% of women were eaten oils for lunch. For dinner they most often consumed fruit teas, herbal teas, herbal mixtures, this answer was given by 25.8% of men and 29.8% of women. Conclusions. Knowledge of functional foods is unsatisfactory, and no differences in the knowledge of women and men have been observed. Consumption of functional food is generally low, and no differences in consumption have been observed between women and men.

However, nutrition education interventions can empower individuals to make appropriate dietary changes.Objective: To evaluate the impact of a nutritional education intervention on nutrition knowledge (NK), healthy eating index (HEI), and biochemical profile in families in the community in Peru.Methods: A pre-experimental study was conducted in the community of Sinchicuy, located on the banks of the Amazon River, Iquitos, Peru. Nutrition education was provided over a 16-week period to a total of 61 heads of household (23 children under 5 years of age and 23 older adults). Fasting glucose and hemoglobin (Hb) concentration analyses were also carried out before and after the intervention.Results: After the intervention, a significant improvement in the NK score was observed, increasing by 90% (p < 0.001). Additionally, the average HEI scores experienced a significant increase, rising by approximately 11.4% (p < 0.001). In children under 5 years of age, the Hb level showed a significant increase of 5.1% (p = 0.017). However, no statistically significant difference in glucose concentration was observed in older adults after the intervention.Conclusion: The findings of this study indicated a positive impact on NK, HEI, and Hb in heads of households, older adults, and children under five in a rural community where there is limited access to basic services.Keywords: nutrition education, nutritional knowledge, hemoglobin, glucose, children, rural communities

Abstract When pregnancy occur among teenagers; there is a competition for nutrients between the still-growing adolescent mother and her fetus. Pregnant adolescents’ nutrition issues are not addressed well and changes are too slow in Ethiopia. This study aimed to study, nutrition knowledge, nutritional status and associated factors among pregnant adolescents in West Arsi , central Ethiopia. We conducted a cross-sectional study of 426 pregnant adolescents between January 1 and January 25, 2023. Data were collected using kobo collect and analyzed using SPSS version 25. We performed linear regression to identify independent predictors of nutritional status and multivariable logistic regression analyses to identify nutritional knowledge. Odds ratios (ORs) with 95% confidence intervals were estimated to show the strength of the association. Magnitude of good nutrition knowledge was 23.7%, 95% CI (21.4–25.3%), and the odds of having good nutrition knowledge was 7.5 times higher among participants whose education level was above college compared with illiterate participants [(AOR = 7.5, 95% CI = (5.27–9.38)],the odds of having good nutrition knowledge was 8 times higher among adolescent who had ANC visits, [(AOR = 8, 95% CI = (3.63–13.85)], and the odds of having good nutrition knowledge was 5 times higher among adolescents who received nutrition education [(AOR = 5, 95% CI = (3.67- 13.53)]. As it is known, appropriate nutrition improves the physical performance of the sportsmen. On the other hand, inadequate intake of nutrients leads to nutrient deficiencies therefore leading to poor performance and health problems. Many studies have provided strong evidence that optimal nutrition supports physical activity, recovery and athlete performance. However Apart from less nutritional knowledge, there are several factors such as restrictive dietary intake or excessive exercise which influence healthy eating. In addition, lack of knowledge, zeal to follow a nutritious diet, lack of money and lack of time, can be a potential reason not to follow a healthy diet. Athletes generally rely on their coaches for nutrition-related guidance. So, when coaches have less knowledge about nutrition it can be a potential problem for athletes to follow a healthy diet. In some Cross-sectional studies, it is found that Coaches Play a key role in providing nutritional-related information. However, they were not aware of the importance of nutrition on performance therefore not giving the necessary importance to their diets. Coaches have inadequate knowledge about sports nutrition and their role is critical as they are prime contact for the athletes to know about their diet to enhance their performance. When pregnancy occur among teenagers; there is a competition for nutrients between the still-growing adolescent mother and her fetus. Pregnant adolescents' nutrition issues are not addressed well and changes are too slow in Ethiopia. This study aimed to study, nutrition knowledge, nutritional status and associated factors among pregnant adolescents in West Arsi , central Ethiopia. We conducted a cross-sectional study of 426 pregnant adolescents between January 1 and January 25, 2023. Data were collected using kobo collect and analyzed using SPSS version 25. We performed linear regression to identify independent predictors of nutritional status and multivariable logistic regression analyses to identify nutritional knowledge. Odds ratios (ORs) with 95% confidence intervals were estimated to show the strength of the association. Magnitude of good nutrition knowledge was 23.7%, 95% CI (21.4–25.3%), and the odds of having good nutrition knowledge was 7.5 times higher among participants whose education level was above college compared with illiterate participants [(AOR = 7.5, 95% CI = (5.27–9.38)],the odds of having good nutrition knowledge was 8 times higher among adolescent who had ANC visits, [(AOR = 8, 95% CI = (3.63–13.85)], and the odds of having good nutrition knowledge was 5 times higher among adolescents who received nutrition education [(AOR = 5, 95% CI = (3.67- 13.53)]. Receiving nutrition education (β = 0.25, P = 0.002) and good nutrition knowledge (β = 0.08, P < 0.001) were positively associated with nutritional status; however, food insecurity (β = − 0.93, P < 0.001) was negatively associated with nutritional status. The nutrition knowledge of pregnant adolescents was suboptimal; educational status, ANC visits and nutrition education were associated with good nutrition knowledge, whereas food insecurity, low nutrition knowledge, and not receiving nutrition education were predictors of poor nutritional status. Nutritional education interventions, increasing utilization of ANC, and interventions for improving food security are strongly recommended. [ABSTRACT FROM AUTHOR]

Endometriosis is a chronic gynecological disease characterized by ectopic endometrial tissue outside the uterus that can cause chronic pain, dysmenorrhea, fatigue, and infertility. The aim of this study was to assess diet quality and nutritional knowledge of women with endometriosis. A questionnaire was used to collect data on lifestyle, dietary habits and nutritional knowledge from 90 women. More than 80% of women with endometriosis (82.2%) confirmed that diet and lifestyle are related to the progression of endometriosis. After being diagnosed with endometriosis, 77.3% of respondents reported a change in their dietary habits and made various changes to their diet by increasing or eliminating the consumption of certain foods. The majority declared reducing pro-inflammatory products, increasing anti-inflammatory foods, including the consumption of vegetables and fruits, avoiding white/or red/or processed meat, and avoiding sweets. Nevertheless, diet quality as assessed by the pro-healthy diet index (pHDI-10) and the Mediterranean Diet Score (MDS) showed a low intensity of consumption of pro-healthy food (average pHDI-10 value 31.4%; MDS 7.55/14 points, p = 0.0001). Women with endometriosis reported lower than recommended consumption of fruits, vegetables, dairy products and whole grains. A higher percentage of healthy controls had a "good" level of nutritional knowledge than women with endometriosis. The results of our study highlight the need to improve diet quality and nutritional knowledge among women with endometriosis as well as developing targeted dietary recommendations to help improve well-being and reduce the pain symptoms of endometriosis. Maternal nutrition is impacted by personal and environmental factors including dietary intake, knowledge, food availability, and affordability. This cross-sectional analysis aimed to evaluate nutrition-related knowledge, attitudes, practices, and associations with hemoglobin concentration among lactating mothers in the Bukavu region, Democratic Republic of the Congo. In 444 lactating mothers, nutrition-related knowledge and practice were assessed by questionnaires and translated into knowledge and practice scores ranging from 0 to 1, attitudes and drivers of food choice were assessed, the Dietary Diversity Score (DDS) was assessed with 24 h dietary recalls in a potential range from 0 to 10, and hemoglobin (Hb) was measured in mothers and their infants. Anemia prevalence was 28.2% among mothers and 74.3% among infants aged 3–8 months. Nutritional knowledge and practice were limited (the median total knowledge score was 0.39, median DDS was 3.0). While there were slight positive correlations between knowledge and maternal Hb, DDS did not significantly correlate with either knowledge or Hb. Although half of the mothers stated a perception about their own susceptibility to anemia or vitamin A deficiency (56.4%, 47.4%), less than half of those could justify their estimation (40.9%, 44.2%). Taste (68.1%), appearance (42.5%), availability (29.0%), and health effects (25.6%) were important drivers of food choice. 33. Determinants of Fish Intake and Complying with Fish Consumption Recommendations—A Nationwide Cross-Sectional Study among Secondary School Students in Poland.

Fish intake in youth is commonly inadequate with several potential determinants. This cross-sectional study aimed to assess the influence of potential fish intake determinants in a nationwide sample of Polish youth. Associations between the participants' fish intake and their gender, age, body mass index, place of residence (region and size of locality), school type, nutritional knowledge about fish, and their parents'/legal guardians' fish intake were assessed. A total sample of 1317 adolescents (870 female, 447 male) aged 14–22 from 32 secondary schools from all regions of Poland participated in the study. Median fish intake among the youth was 34.9 g/week. The recommendation to consume at least 300 g of fish/week was followed by 6% of participants. Fish intake was determined by gender and the type of school, with males and comprehensive high school students consuming more fish, but it was not determined by the region or size of the locality of residence and age group, nor did the body mass index determine fish intake. Participants' fish intake was positively associated with their nutritional knowledge about fish, as well as with their parents'/legal guardians' fish intake. Most youths do not follow the recommendation to consume at least 300 g of fish weekly; hence, nutritional education on the recommendations and the benefits of fish consumption is necessary. Background. Adequate nutrition knowledge is crucial for developing proper eating habits, especially among athletes, as it has a significant impact on sports performance. This underscores the consensus in sports nutrition education among professionals working with athletes. Study purpose. The study aimed to assess the nutritional knowledge, attitudes, and dietary practices of under-17 football club players in Ethiopia. Materials and methods. A descriptive survey research method was used, and standardized questionnaires were randomly distributed to 26 footballers to assess participants' knowledge, attitudes, and dietary practices regarding nutrition. Data were analyzed using the t-test, Pearson coefficient, and one-way ANOVA (p < 0.05). Reliability analysis showed a Cronbach's alpha value of 0.83 for the scales measuring attitudes towards eating habits and nutrition knowledge (0.79 and 0.78, respectively). Results. No statistically significant differences (p > 0.5) were observed in the data related to eating habits, age, or nutritional understanding. Significant variations in educational backgrounds were noted (p < 0.05). Although gender and source were not recognized as correlates of nutritional knowledge, but age and education were. Conclusions. In summary, the study revealed no significant differences (p > 0.05) in nutrition knowledge scores for age, education, and source of information. However, a significant difference (p < 0.05) was found between male and female athletes. Gender correlated with dietary habits, while age, education, and source of information did not. The key factor is to encourage ongoing future vision within sports organizations, nutritionists, and educational institutions to continuously refine and enhance nutrition knowledge, attitudes, and practice programs for U-17 players. IntroductionNutrition is the necessary basis for life, health, and human development over the entire lifespan. Poor nutritional knowledge, poor nutritional practices, and malnutrition among HIV-positive adults can contribute to accelerating the progression of Human Immunodeficiency Virus (HIV)/Acquired Immunodeficiency Syndrome (AIDS) and related diseases. Therefore, this study aimed to assess the dietary knowledge, practices and associated factors of HIV-positive adults participating in antiretroviral therapy (ART) at Bule Hora Hospital, West Guji Zone, South Oromia, Ethiopia.MethodsA cross-sectional institutional study was conducted among 418 HIV-positive adults by systematic sampling technique. Semi-structured questionnaires were used for data collection and analyzed with SPSS version 21.0. Logistic regression analyses were used to identify factors associated with dependent variables using adjusted odds ratio (AOR), with 95% CI (confidence interval) at p < 0.05.ResultsThe result of this study showed that the prevalence of poor nutritional knowledge and poor nutritional practices among (HIV) positive adults was 74.9 and 69.1%, respectively. In the multivariate analysis, adult age (AOR = 2.37, 95% CI: 1.30, 4.32), marital status (AOR = 2.46, 95% CI: 1.29, 4, 69), educational level (AOR = 1.83, 95% CI: 1.01, 3.30) and occupational status (AOR = 0.55, 95% CI: 0.25, 0.94) were significantly associated with the nutritional knowledge. Educational level (AOR = 2.58, 95% CI: 1.48, 4.50), monthly income (AOR = 2.80, 95% CI: 1.68, 4.69), and adult occupational status (AOR = 0.48, 95% CI: 0.26, 0.89) were also significantly associated with the level of dietary practice.ConclusionIt was concluded that the respondents’ nutritional knowledge and practices in the city of Bule Hora were poor compared to other national findings. The identified factors related to nutritional knowledge and practices were educational level, monthly income, adult occupation, and marital status of respondents in the study area. Therefore, each concerned agency should address the above gaps in nutritional knowledge and practices of HIV-positive adults in the study area.

Abstract Background Proper nutrition is vital in promoting community health, yet insufficient knowledge and improper dietary practices can lead to deficiencies and diseases. Professional athletes depend on optimal nutrition for their performance and recovery, but a lack of understanding can impede their potential. The nutritional status of athletes impacts their overall health and sports performance. Inadequate sports nutrition knowledge may result in suboptimal practices, reducing strength, power, endurance, and immunity. Additionally, disordered attitudes can lead to dietary imbalances and an increased risk of injury. This study, conducted in Qazvin, Iran, examined athletes’ nutritional knowledge, attitudes, and practices. By addressing these factors, there is potential to enhance dietary behaviors and ultimately improve athletes’ performance. Methods The study employed a descriptive-analytical, cross-sectional design to investigate the nutritional knowledge, attitude, and practice (KAP) of professional athletes in Qazvin, Iran. A total of 320 purposefully selected professional athletes (68.13% male, 31.87% female) from various sports fields participated in the research. The data collection tool consisted of demographic questions and a KAP questionnaire, including 27 nutritional knowledge questions, 16 nutritional attitude questions, and 14 nutritional performance questions. The quota sampling method was used to estimate sample sizes. Data analysis was carried out by SPSS v.26 using one sample t-test, one-way ANOVA, and Pearson’s correlation coefficient test. Results The results showed that nutritional knowledge (the mean value was 79.594 ± 7.015 - the optimal knowledge level = 84) and attitude (the mean value was 23.347 ± 5.300 - the optimal attitude level = 26) for athletes are low, but their nutritional practice (the mean value was 21.788 ± 3.450 - the optimal performance level = 24) was moderate. Also, professional athletes’ nutritional knowledge, attitude, and practice were lower than normal (p 0.05). Conclusion This study showed that the nutritional knowledge, attitude, and practice of professional Iranian athletes in Qazvin province were low; therefore, the implementation of more theoretical and applied nutrition education, such as using knowledge assessment tools and interventions, irrespective of their age, sport’s field, and gender, is compelling.

The paper assessed the nutritional knowledge and cultural food beliefs on dietary practices of pregnant women in Epe Local Government Area, Lagos State, Nigeria. A descriptive research design was adopted for this study. The population of the study consisted of all registered pregnant women in seven (7) antenatal clinics in Epe Local Government Area of Lagos State. A sample size of 270 was drawn using proportionate sampling technique. The collected data were analyzed using frequency, percentage, and the Chi-square test of association. The significance level was set at p < 0.05. The results showed a statistically significant relationship between knowledge of nutrition and dietary practices, χ2 (2) = 78.201, p0.05. The finding also showed that cultural food beliefs do not influence the dietary practices of pregnant women. The study recommends that the government and health agencies should continuously train health workers on nutritional issues, particularly on how to enhance the nutritional knowledge of expectant pregnant women prior to conception. This will help potential mothers improve their dietary practices.

A good diet during pregnancy is associated with improvements to maternal and fetal health. Nevertheless, excessive weight gain during pregnancy has been reported in several studies. The aim of this review is to determine the dietary habits of pregnant women (measured according to their degree of adherence to the Mediterranean diet, a reference in dietary quality), their knowledge of food and nutrition, and their perceptions of the nutritional education received during their pregnancy, in order to detect intervention needs within that group. The bibliographic search was conducted on three databases (Medline, PubMed central, and Web of Science), using the keywords “pregnancy”, “Mediterranean diet”, “nutrition knowledge”, “nutritional education”, and some synonyms. The final selection included 68 original articles. The available evidence indicated that, although pregnant women were aware of the importance of nutrition during pregnancy, their habits showed some room for improvement in terms of diet and physical exercise. Lack of adequate advice was the main barrier to the practice of healthy habits that pregnant women encountered; they considered that the information they received during pregnancy follow-up visits was inadequate. However, the success of interventions within different countries is a source of hope for well-structured nutrition education throughout pregnancy. The lack of nutrition-related knowledge among pregnant women could be originally related to poorly planned nutrition education from healthcare providers. Research focused on the consultations with these healthcare providers could be of help when proposing strategies to improve the content, the depth, and the duration of nutrition education sessions. It should, in any case, be noted that the available evidence in this field is limited to certain geographical origins. Therefore, research that uncovers evidence in different countries will be useful for learning about the factors that condition the habits of pregnant women and, in that way, guide strategies for the improvement of the health of expectant mothers during that stage in their lives.

39. Attitudes toward the integration of nutritional assessment and counseling in the framework of physical therapy: a cross-sectional survey

Abstract Background As the field of physical therapy increasingly acknowledges the integral role of nutritional assessment and counseling, revisiting this subject is essential due to limited updated information regarding this topic. Furthermore, it is crucial to investigate the factors that may influence physical therapists’ attitudes toward integrating nutritional assessment and counseling into their physical therapy practice. The study’s primary aim was to explore the attitudes of registered physical therapists in Israel toward incorporating nutritional assessment and counseling into their clinical practice. We also explored the relation between personal and professional characteristics of physical therapists and their attitudes. Methods An anonymous nationwide online self-report survey was conducted. It included three sections: personal and professional background characteristics, self-reported level of nutritional knowledge and sources of nutritional knowledge, and attitudes toward incorporating nutritional assessment and counseling into practice. Descriptive statistics were calculated for all outcome measures. The total score of the attitude statements was compared between different groups of participants. Multiple linear regression analysis was used to predict positive attitudes. Results The study included 409 physical therapists. The attitude score was 19.78 (2.53) of 25, indicating a positive attitude. A majority (67%) reported that they did not acquire knowledge regarding nutrition during their entry-level studies or in other formal settings (63%). The three primary sources of nutritional information for the participants reported were the Internet (87.0%), registered dietitian (70.0%), and professional, scientific journals (36.0%). Prior knowledge acquired during entry-level physical therapist studies and clinical experience of ≥ 13 years significantly predicted positive attitudes (β = 0.17, β = −0.13, respectively). Conclusion Registered physical therapists held a positive attitude toward incorporating nutritional assessment and counseling into their clinical practice. Two background professional characteristics were predictors of positive attitudes. Accordingly, there is need to appropriate formal education regarding nutritional issues. Further studies are required to explore the actual integration of nutrition into the physical therapy framework.

40. Nutritional Knowledge about Maternal and Newborn Health among Physiotherapists during the COVID-19 Pandemic in Minas Gerais, Brazil.

Adequate nutrition before and during pregnancy, as well as postpartum, is among the major contributors to maternal and newborn health. Physiotherapists' knowledge of this area is still scarce, although their clinical practice has been linked to newborns' neuropsychomotor development, which, in turn, is influenced by maternal health and nutritional status. Therefore, this study aimed to evaluate the nutritional knowledge of physiotherapists regarding maternal and newborn health. A total of 70 Brazilian physiotherapists (32.2 ± 6.0 years; 72.9% females) were evaluated between November 2019 and February 2020 for their sociodemographic characteristics, professional experience, and nutritional knowledge about maternal and newborn health through a validated questionnaire personally administered by the same trained researcher. Most of the physiotherapists had graduated but had no specialization in maternal and child physiotherapy (96.1% of the females and all the males). The nutritional knowledge about maternal and newborn health was significantly different between the female and male health professionals, as well as between the less and more experienced participants, i.e., female physiotherapists and the more experienced ones had more correct answers on the nutritional questionnaire than the male and less experienced physiotherapists, respectively (p < 0.05). 44. The Connection between Knowledge and the Nutritional Behaviour of Parents and the Occurrence of Overweight and Obesity among Preschool Children—A Pilot Study.

- Abstract
The phenomenon of overweight and obesity constitutes a threat for health and children's lives at preschool age. Eating habits formed during this period seriously affect not only future dietary preferences but also the development of diet-related diseases. The purpose of the present study was the assessment of the relationship between the state of knowledge of children's nutrition and parents' eating behaviour and the prevalence of overweight and obesity in children aged 4–6 years. The study was conducted using 200 parent–child pairs. The behaviour and nutritional knowledge of parents was assessed using a questionnaire method. In contrast, anthropometric measurements were taken among the children. Nutritional disorders were noted in 46.5% of children of whom 39.0% struggled with overweight and 7.5% with obesity. The study showed that the children of parents with higher levels of nutritional knowledge were more likely to develop overweight and obesity. It also proved that irregularity of parental food intake predisposed the development of excessive body weight in children (p = 0.0049). Therefore, it is reasonable to undertake further investigation into factors implying the development of nutritional disorders among those youngest. Early recognition of dietary mistakes can contribute to their elimination at an early age. [ABSTRACT FROM AUTHOR]

- Abstract
Nutrition education is a long-term process that should cover various population groups. A special focus should be placed on children, adolescents and their parents. The aim of this research was to find out the opinions of parents of primary school pupils aged 7–12 on their expectations towards school education in the areas of food and nutrition, addressed to both pupils and their parents. The research was conducted among 101 parents of primary school pupils with the use of the Focus Group Interview (FGI) method. It demonstrated that what is most needed are hands-on activities relating to basic theoretical issues. While parents see the need for nutrition education for their children, educating pupils in this area is of interest to only some of the respondents for whom nutrition aspects are quite important. All parents would like formal nutrition education at school, but at the same time, they do not want classes to take up too much of their children's time, due to the already excessive number of school subjects. It seems appropriate to include everyone in regard to nutrition education, regardless of their declared interest in this issue. The need for consistent presentation of educational content addressed to teachers and parents is very important, so that they can, in a uniform way, shape the attitudes towards food and nutrition of children and adolescents. Background: Proper nutrition is vital in promoting community health, yet insufficient knowledge and improper dietary practices can lead to deficiencies and diseases. Professional athletes depend on optimal nutrition for their performance and recovery, but a lack of understanding can impede their potential. The nutritional status of athletes impacts their overall health and sports performance. Inadequate sports nutrition knowledge may result in suboptimal practices, reducing strength, power, endurance, and immunity. Additionally, disordered attitudes can lead to dietary imbalances and an increased risk of injury. This study, conducted in Qazvin, Iran, examined athletes' nutritional knowledge, attitudes, and practices. By addressing these factors, there is potential to enhance dietary behaviors and ultimately improve athletes' performance. Methods: The study employed a descriptive-analytical, cross-sectional design to investigate the nutritional knowledge, attitude, and practice (KAP) of professional athletes in Qazvin, Iran. A total of 320 purposefully selected professional athletes (68.13% male, 31.87% female) from various sports fields participated in the research. The data collection tool consisted of demographic questions and a KAP questionnaire, including 27 nutritional knowledge questions, 16 nutritional attitude questions, and 14 nutritional performance questions. The quota sampling method was used to estimate sample sizes. Data analysis was carried out by SPSS v.26 using one sample t-test, one-way ANOVA, and Pearson's correlation coefficient test. Results: The results showed that nutritional knowledge (the mean value was 79.594 ± 7.015 - the optimal knowledge level = 84) and attitude (the mean value was 23.347 ± 5.300 - the optimal attitude level = 26) for athletes are low, but their nutritional practice (the mean value was 21.788 ± 3.450 - the optimal performance level = 24) was moderate. Also, professional athletes' nutritional knowledge, attitude, and practice were lower than normal (p < 0.05). Significant positive correlations were among knowledge, attitude, and practice (p < 0.05). However, there were no significant differences in nutritional knowledge, attitude, and practice among the subjects of different age groups, genders, and sports types (p > 0.05). Conclusion: This study showed that the nutritional knowledge, attitude, and practice of professional Iranian athletes in Qazvin province were low; therefore, the implementation of more theoretical and applied nutrition education, such as using knowledge assessment tools and interventions, irrespective of their age, sport's field, and gender, is compelling. Healthy diet is an important tool to lower the risk and severity of COVID-19 infection. Low diet quality is usually caused by perceived barriers that stop people to do certain behavior. Perceived barriers can be overcome by implementing proper method such as conducting nutrition education. This study aimed to analyze the impact of nutrition education on perceived barrier to healthy diet among adults with and without covid-19 history in Padang, Indonesia. This study was a pre-experimental study using pre and post-design. This study was conducted on 70 adults with or without COVID-19 infection history, residing in Padang, Indonesia. The intervention was given in the form of nutrition education. Difference test was conducted to assess the impact of nutrition education on respondents' nutrition knowledge and perceived barriers. The majority of the respondents both with and without COVID-19 history (71.4 and 80%) had medium level of nutritional knowledge before the intervention. After the intervention, there was a significant (P<0.05) improvement on respondents' nutritional knowledge for both groups (100%). The result also showed 40% of the respondents with COVID-19 history had medium level of perceived barriers, while 28.6% respondents without COVID-19 history (65.7%) had medium level of perceived barriers before the intervention. A significant improvement (P<0.05) also showed on respondents' perceived barriers after the intervention. On both groups more 90% of the respondents only had low level of perceived barriers. The result shows that nutrition education has significant impact both on respondents' nutritional knowledge and perceived barriers. [ABSTRACT FROM AUTHOR]

48. Development of a plant-based culinary nutrition model for sports science students.

- Abstract
Introduction: Food and fitness levels are key factors required to maintain functional life. Hence, nutrition education is crucial in spreading awareness among Sports Science students. There is a paucity of plant-based nutrition knowledge and plant-based culinary skills for fitness locally. Therefore, this study aimed to develop a valid Plant-Based Culinary Nutrition Model (PBCNM) with nutrition knowledge and basic culinary skills to improve fitness among Sports Science students. Methods: This exploratory sequential mixed method study consisted of 2 phases. In Phase 1, a three-round modified Delphi method was conducted with 13 experts to generate a questionnaire that was validated. Lawshe worksheet determined the content validity ratio (CVR) for an item. Content validity index (CVI) for each section and the overall instrument was calculated. In Phase 2, quantitative data collection and analysis addressed the research questions and research gaps leading to model development. A total of 271 undergraduate Sports Science students at higher learning institutions were recruited as respondents. Results: In Phase 1, CVR of the overall survey was 1.0 and CVI was 0.834. Subsequently, the questionnaire was pilot tested for reliability and a Cronbach's alpha score of 0.836 was obtained for the overall questionnaire. In Phase 2, the respondents' mean and standard deviation score for the model's components and needs was 4.21±0.73 for items 1-15. The integration of experts' perspectives on the need of PBCNM for fitness and feedback from respondents resulted in the development of PBCNM.
