The beef cow-calf sector accounts for 70% of feed consumed and greenhouse gases emitted for the beef industry, but there is no straightforward method to measure biological efficiency in grazing conditions. The objective of this study was to evaluate a mathematical nutrition model to estimate the feed intake and biological efficiency of mature beef cows. Data from dams (N = 160) and their second and third progeny (312 pairs) were collected from 1953 through 1980. Individual feed intake was measured at 28-d intervals year-round for dams and during 240-d lactation for progeny. Body weights of progeny were measured at 28-d intervals from birth to weaning, and of dams at parturition and weaning each production cycle. The milk yield of dams was measured at 14-d intervals. Dam metabolizable energy intake (DMEI) and milk energy yield (MEL) of each cow were predicted using the Cattle Value Discovery System beef cow (CVDSbc) model for each parity. Biological efficiency (Mcal/kg) was computed as the ratio of observed or predicted DMEI to observed calf weaning weight (PWW). Pearson correlation coefficients were computed using corr.test function and model evaluation was performed using the epiR function in R software. Average (SD) dam weight, PWW, DMEI, and observed MEL were 527 (86) kg, 291 (47) kg, 9584 (2701) Mcal/production cycle, and 1029 (529) Mcal, respectively. Observed and predicted DMEI (r = 0.93 and 0.91), and observed and predicted MEL (r = 0.58 and 0.59) were positively correlated for progeny 2 and 3, respectively. The CVDSbc model under-predicted DMEI (mean bias [MB] = 1,120 ± 76 Mcal, 11.7% of observed value) and MEL (MB = 30 ± 25 Mcal, 2.9% of observed value). Observed and predicted progeny feed intake were not correlated (r = 0.01, P-value = 0.79). Observed and predicted biological efficiency were positively correlated (r = 0.80 and 0.80, P-value ≤ 0.05) for parity 2 and 3, respectively, and the CVDSbc model under-predicted biological efficiency by 11% (MB = 3.59 ± 0.25 Mcal/kg). The CVDSbc provides reasonable predictions of feed intake and biological efficiency of mature beef cows, but further refinement of the relationship between calf feed intake and milk yield is recommended to improve predictions. Mathematical nutrition models can assist in the discovery of the biological efficiency of mature beef cows.

Understanding the relationships between feed efficiency traits measured in different stages of production is necessary to improve feed efficiency across the beef value chain. The objective of this study was to evaluate relationships among feed efficiency traits measured as growing heifers and breeding females and in their progeny in three full production cycles, and relationships of dam residual feed intake (RFI) with lifetime and lifecycle cow efficiency traits. Data were collected on 160 mixed-breed heifers from 240 d of age to weaning of their third progeny, and postweaning performance of progeny until harvest in experiments initiated in 1953, 1954, 1959, 1964, 1969, and 1974. Individual feed offered was recorded daily, and feed refusals measured every 28 d. Milk yield was measured at 14-d intervals throughout lactation by machine or hand milking. Females and progeny were weighed at 28-d intervals and progeny were harvested at a constant endpoint of live grade or age depending upon the experiment. Feed efficiency traits of RFI and residual BW gain (RG) were computed as the residual from linear regression for developing heifers, dams (RFI and residual energy-corrected milk [RECM]), and postweaning progeny. Feed:gain ratio (FCR) was computed for developing heifers and postweaning progeny, and feed:milk energy ratio (FME) was computed for dams. Various measures of cow efficiency were calculated on either a life cycle or lifetime basis using ratios of progeny and dam weight outputs to progeny and dam feed inputs. Pearson correlations were computed among traits adjusted for a random year-breed-diet group effect. Heifer RFI (0.74) and RG (−0.32) were correlated (P ≤ 0.05) with dam RFI in parity 1 only, but were not correlated (P > 0.05) with dam RECM in any parity. Heifer RFI was correlated (P ≤ 0.05) with progeny RFI (0.17) in parity 3 only. Heifer FCR was not correlated with dam FME or progeny FCR in any parity. Dam RFI was weakly correlated (r = 0.25 to 0.36; P ≤ 0.05) among parities, whereas dam FME and RECM were strongly correlated (r = 0.49 to 0.72; P ≤ 0.05) among parities. Dam RFI in parity 1 and 2 was weakly correlated (r = −0.20 to −0.33; P ≤ 0.05) with cow efficiency ratios that included dam weight as an output, whereas dam RFI in parity 3 was not correlated with any cow efficiency ratio. In conclusion, feed efficiency traits were poorly correlated across production segments, but moderately repeatable across production cycles.

There is no clear method to measure biological efficiency in grazing beef cows. The objective of this study was to evaluate a nutrition model to estimate biological efficiency in mature cows. Data from dams (n = 160) and their 2nd and 3rd progeny were collected from 1953 through 1980. Individual feed intake was measured at 28-d intervals for lifetime of dams and during 240-d lactation for progeny. Body weight of progeny were measured at birth and weaning, and dams at parturition and weaning each production cycle. Milk yield of dams was measured at 14-d intervals by hand milking. Metabolizable energy required (MER) and predicted milk energy yield (MEY) of each cow was computed using the CVDS beef cow model for each parity. Biological efficiency was computed as the ratio of cow ME intake (MEI) to calf weaning weight (WW) based on observed (MEI/WW) and predicted (MER/WW) values. Pearson correlation coefficients were computed using corr.test function in R software. Average (SD) cow weight, calf weaning weight, cow MEI, and observed MEY were 507 (81) and 548 (88) kg, 287 (49) and 294 (44) kg, 9406 (2695) and 9721 (2686) Mcal, and 1009 (538) and 1051 (521) Mcal, for progeny 2 and 3, respectively. Cow MEI and MER (0.87 and 0.85), and observed and predicted MEY (0.51 and 0.51) were positively correlated for progeny 2 and 3, respectively. The CVDS model under predicted cow MEI [mean bias = 1685 (1718) and 1658 (1702) Mcal] and MEY [mean bias = 82 (465) and 129 (450) Mcal] for progeny 2 and 3, respectively. Observed and predicted progeny feed intake were not correlated. Observed and predicted biological efficiency were positively correlated (0.63 and 0.61) for progeny 2 and 3, respectively. In conclusion, nutrition models can reasonably predict biological efficiency, but further refinement of the relationship between calf feed intake and milk yield could improve prediction.

Data were collected from 1953 through 1980 from identical and fraternal twin beef and dairy females born in 1953, 1954, 1959, 1964, and 1969, from crossbred females born as singles in 1974, and their progeny. Numbers of dams that weaned at least one calf and were included in the first analysis were 37, 45, and 56 in the 1964, 1969, and 1974 data sets, respectively. Respective numbers of dams that weaned three calves and were included in a second analysis were 6, 8, 8, 22, 33, and 33 in the 1953, 1954, 1959, 1964, 1969, and 1974 experiments. Individual feed consumption was measured at 28-d intervals from the time females were placed on the experiment at 240 d of age until three calves were weaned or the dams had reached 5 yr of age. Residual feed intake (RFI) and residual BW gain (RG) of heifers that subsequently became dams were determined based on ADG and DMI from 240 d of age to first calving. Various measures of cow efficiency were calculated on either a life cycle or actual lifetime basis using ratios of progeny and dam weight outputs to progeny and dam feed inputs. The correlation between RFI and DMI was large and positive (r = 0.67; P < 0.0001), and RG was highly correlated with ADG (r = 0.75; P < 0.0001). Correlations of RFI with cow efficiency ratios that included harvest weight, carcass weight, or weight of trimmed wholesale cuts as measures of output ranged from –0.05 (P > 0.10) to −0.17 (P < 0.10), indicating that heifers with better (i.e., more negative) RFI values tended to become slightly more efficient cows. Correlations of RG with life cycle and actual lifetime cow efficiency ratios ranged from 0.08 (P > 0.10) to 0.23 (P < 0.05), demonstrating that heifers with better (i.e., more positive) values for RG were somewhat more efficient as cows. The correlations were stronger when cow salvage value was included in the measures of cow efficiency. Correlations of DMI and mid-test metabolic BW (MMW) with life cycle cow efficiency ratios that did not include cow salvage value as output ranged from −0.15 (P < 0.10) to −0.22 (P < 0.01). Correlations of DMI and MMW with actual lifetime cow efficiency ratios varied from −0.20 (P < 0.05) to −0.36 (P < 0.001). Therefore, smaller heifers that consumed less feed had superior cow efficiency ratios. Correlations of RFI with carcass grade, backfat thickness, marbling score, and kidney fat of progeny indicated that heifers with superior RFI would tend to produce leaner offspring.

Residual feed intake was phenotypically independent of ADG and metabolic midweight (MMW), whereas the correlation between RFI and DMI was positive and highly significant ( = 0.67; < 0.0001). Residual gain was highly correlated with ADG ( = 0.75; < 0.0001) and had near 0 correlations with DMI and MMW. Correlations indicated that heifers that ate less and had smaller metabolic midweights from 240 d of age to first calving had superior efficiency ratios as cows. Residual feed intake was not significantly correlated with age at puberty, age at calving, or milk production. Results of this study do not indicate any serious antagonisms of postweaning heifer RFI with subsequent cow and progeny performance traits or with life cycle or actual lifetime cow efficiency. In addition, selection for increased RG would result in earlier ages at calving, but would also tend to result in taller and heavier cows.

The objective of this study was to evaluate sire breed effect on mineral concentration in beef longissimus thoracis (LT) and investigate the correlations between beef mineral concentrations and carcass and palatability traits. Steer progeny (N=246) from the Germplasm Evaluation project-Cycle VIII were used in this study. In addition to carcass traits, LT was evaluated for mineral concentrations, Warner-Bratzler shear force, and palatability traits. A mixed linear model estimated breed effects on mineral concentrations. No significant sire breed (P≥0.43) or dam breed (P≥0.20) effects were identified for mineral concentrations. Pearson correlation coefficients were calculated among mineral concentrations, carcass, and sensory traits. Zinc concentration was positively correlated (P≤0.05) with total iron (r=0.14), heme iron (r=0.13), and magnesium (r=0.19). Significant (P0.05) correlations were identified between non-heme or heme iron and most traits in this study. Magnesium concentration was correlated with all carcass and palatability traits.

The objective of this study was to characterize breeds representing diverse biological types for birth and weaning traits in crossbred cattle (Bos taurus). Gestation length, calving difficulty, percentage of unassisted calving, percentage of perinatal survival, percentage of survival from birth to weaning, birth weight, weaning weight, BW at 205 d, and ADG was measured in 1,370 calves born and 1,285 calves weaned. Calves were obtained by mating Hereford, Angus, and MARC III (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) mature cows to Hereford or Angus (British breeds), Norwegian Red, Swedish Red and White, Wagyu, and Friesian sires. Calves were born during the spring of 1997 and 1998. Sire breed was significant for gestation length, birth weight, BW at 205 d, and ADG (P < 0.001). Offspring from Swedish Red and White and Friesian had the shortest gestation length (282 d), whereas offspring from Wagyu sires had the longest gestation length (286 d). Progeny from British breeds were the heaviest at birth (40.5 kg) and at 205 d (237 kg), and grew faster (0.97 kg/d) than offspring from other breeds. Offspring from Wagyu sires were the lightest at birth (36.3 kg) and at 205 d (214 kg), and had the slowest growth (0.91 kg/d). Dam breed was significant for gestation length (P < 0.001), birth weight (P = 0.009), BW at 205 d, and ADG (P < 0.001). Offspring from Hereford cows had the longest gestation length (284 d), whereas offspring from Angus cows had the shortest (282 d). Offspring from MARC III cows were the heaviest at birth (39.4 kg) when compared with offspring from Hereford (38.2 kg) and Angus (38.6 kg) cows. Progeny from Angus cows were the heaviest at 205 d (235 kg) and grew faster (0.96 kg/d), whereas offspring from Hereford cows were the lightest at 205 d (219 kg) and were the slowest in growth (0.88 kg/d). Sex was significant for gestation length (P = 0.026), birth weight, BW at 205 d, and ADG (P < 0.001). Male calves had a longer gestation length (284 d) when compared with female calves (283 d). Males were heavier than females at birth and at 205 d, and grew faster. Sire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

The objective of this study was to eval- uate the growth curves of females to determine if ma- ture size and relative rates of maturation among breeds differed. Body weight and hip height data were fitted to the nonlinear function BW = f(age) = A − Be k×age , where A is an estimate of mature BW and k determines the rate that BW or height moves from B to A. Cows represented progeny from 28 Hereford, 38 Angus, 25 Belgian Blue, 34 Brahman, 8 Boran, and 9 Tuli sires. Bulls from these breeds were mated by AI to Angus, Hereford, and MARC III composite (1/4 Angus, 1/4 Hereford, 1/4 Red Poll, and 1/4 Pinzgauer) cows to produce calves in 1992, 1993, and 1994. These matings resulted in 516 mature cows whose growth curves were subsequently evaluated. Hereford-sired cows tended to have heavier mature BW, as estimated by parameter A, than Angus- (P = 0.09) and Brahman-sired cows (P = 0.06), and were heavier than the other breeds (P < 0.001). Angus-sired cows were heavier than Bo- ran- (P < 0.001) and Tuli-sired cows (P < 0.001), and tended to be heavier than Belgian Blue-sired cows (P = 0.097). Angus-sired cows did not differ from Brah- man-sired cows (P = 0.94). Brahman-sired cows had a heavier mature BW than Boran- (P < 0.001), Tuli- (P < 0.001), and Belgian Blue-sired cows (P < 0.04). Angus-sired cows matured faster (k) than cows sired by Hereford (P = 0.03), Brahman (P < 0.001), Boran (P = 0.03), and Tuli (P < 0.001) sires, but did not differ from Belgian Blue-sired (P = 0.13) cows. Brahman- sired cows took longer to mature than Boran- (P = 0.03) or Belgian Blue-sired cows (P = 0.003). Belgian Blue-sired cows were faster maturing than Tuli-sired cows (P = 0.02). Brahman-sired cows had reached a greater proportion of their mature BW at puberty than had Hereford- (P < 0.001), Tuli- (P = 0.003), and Bel- gian Blue-sired cows (P = 0.001). Boran-sired cows tended to have reached a greater proportion of their mature BW at puberty than had Angus-sired cows (P = 0.09), and had reached a greater proportion of their mature BW at puberty than had Hereford- (P < 0.001), Tuli- (P < 0.001), and Belgian Blue-sired cows (P < 0.001). Within species of cattle, the relative range in proportion of mature BW at puberty (Bos taurus 0.56 through 0.58, and Bos indicus 0.60) was highly conserved, suggesting that proportion of mature BW is a more robust predictor of age at puberty across breeds than is absolute weight or age.

The objective of this study was to characterize breeds representing diverse biological types for birth and weaning traits in crossbred cattle. Gestation length, calving difficulty, percentage of unassisted calving, percentage of perinatal survival, percentage of survival from birth to weaning, birth weight, BW at 200 d, and ADG were measured in 2,500 calves born and 2,395 calves weaned. Calves were obtained by mating Hereford, Angus, and MARC III (one-fourth Hereford, one-fourth Angus, one-fourth Pinzgauer, and one-fourth Red Poll) mature cows to Hereford or Angus (British breed), Brahman, Tuli, Boran, and Belgian Blue sires. Calves were born during the spring seasons of 1992, 1993, and 1994. Sire breed was significant for all traits (P < 0.002). Offspring from British breeds and the Belgian Blue breed had the shortest gestation length (285 d) when compared with progeny from other sire breeds (average of 291 d). Calving difficulty was greater in offspring from Brahman sires (1.24), whereas the offspring of Tuli sires had the least amount of calving difficulty (1.00). Offspring from all sire breeds had similar perinatal survival and survival from birth to weaning (average of 97.2 and 96.2%, respectively), with the exception of offspring from Brahman sires, which had less (92.8 and 90.4%, respectively). Progeny of Brahman sires were heaviest at birth (45.7 kg), followed by offspring from British breed, Boran, and Belgian Blue sires (average of 42.4 kg). The lightest offspring at birth were from Tuli sires (38.6 kg). Progeny derived from Brahman sires were the heaviest at 200 d (246 kg), and they grew faster (1.00 kg/d) than offspring from any other group. The progeny of British breeds and the Belgian Blue breed had an intermediate BW at 200 d (238 kg) and an intermediate ADG (average of 0.98 kg/d). The progeny of Boran and Tuli sires were the lightest at 200 d (227 kg) and had the least ADG (0.93 kg/d). Male calves had a longer gestation length, had a greater incidence of calving difficulty, had greater mortality to weaning, were heavier, and grew faster than female calves. Sire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

This review, which represents a summarization of research results generated during an approximately 22-yr period, involves preweaning, postweaning, and carcass trait comparisons of progeny sired by Bos indicus (Brahman, Boran, Nellore, Indu-Brazil, Gir, Sahiwal), B. indicus-derivative (Brangus, Beefmaster, Santa Gertrudis, Gelbray, Simbrah), non-B. indicus (Tuli, Romosinuano, Bonsmara, Senepol) subtropically adapted, and traditional Bos taurus (Angus, Hereford, Charolais, Gelbvieh, Red Poll) sire breeds. Relative to Brahman-sired progeny, preweaning (weaning weight) and postweaning (postweaning ADG, feedlot ADG, final feedlot BW) performance is expected to be less for progeny sired by non-B. indicus subtropically adapted sire breeds. The non-B. indicus subtropically adapted sire breeds do contribute to less dystocia and appear to improve carcass merit, especially carcass tenderness, over the Brahman breed. Other B. indicus sire breeds, such as the Gir and Sahiwal, but not the Indu-Brazil, contribute to less dystocia compared with the Brahman breed. Relative to B. indicus and non-B. indicus subtropically adapted sire breeds, B. taurus sire breeds, especially Angus and Hereford, express superior carcass merit in regard to marbling score, QG, and tenderness.

Carcass (n = 568) and longissimus thoracis palatability (n = 460) traits from F1 steers obtained from mating Hereford (H), Angus (A), and U.S. Meat Animal Research Center (MARC) III cows to H, A, Norwegian Red (NR), Swedish Red and White (RW), Friesian (F), or Wagyu (W) sires were compared. Data were adjusted to constant age (471 d), carcass weight (356 kg), fat thickness (1.0 cm), percentage of fat trim (24%), and marbling (Small35) end points. For Warner-Bratzler shear force and trained sensory panel traits, data were obtained on longissimus thoracis steaks stored at 2 degrees C for 14 d postmortem. The following comparisons were from the age-constant end point. Carcasses from H- and A-sired steers (377 and 374 kg, respectively) were the heaviest (P 0.05) among sire breeds (mean = 80.6 cm2). Carcass yield of boneless, totally trimmed retail product was least (P 0.05) for all other sire breeds (62.5 to 62.8%). Longissimus thoracis steaks from carcasses of A- (3.7 kg) and W-sired (3.7 kg) steers had lower (P 0.05) among the sire breeds. Sire breed comparisons were affected by adjusting data to other end points. Heritability estimates for various carcass, yield, and palatability traits ranged from very low (h2 = 0.06 for percentage of kidney, pelvic, and heart fat) to relatively high (h2 = 0.71 for percentage of retail product yield). Relative to the other sire breeds, W-sired steers had the highest percentage of USDA Choice, Yield grade 1 and 2 carcasses, but their carcasses were the lightest.

Records of individual feed intake (FI) and BW gain (GN) were obtained from the Germ Plasm Evaluation (GPE) program at US Meat Animal Research Center (USMARC). Animals were randomly assigned to pens. Only pens with 6 to 9 steers (n = 289) were used for this study (data set 1). Variance components and genetic parameters were estimated us- ing data set 1. Estimated genetic values (EGV) for FI were calculated by 5 methods using single and 2-trait analyses: 1) individual FI and individual GN, 2) in- dividual FI alone, 3) 2-trait with individual GN but with FI missing, 4) individual GN and pen total FI, and 5) pen total FI alone. Analyses were repeated but with some of the same records assigned artificially to 36 pens of 5 and 4 paternal half sibs per pen (data sets 2 and 3). Models included year as a fixed factor and birth and weaning weights, age on test, and days fed as covariates. Estimates of heritability were 0.42 ± 0.16 and 0.34 ± 0.17 for FI and GN. The estimate of the ge- netic correlation was 0.57 ± 0.23. Empirical responses to selection were calculated as the average EGV for the top and bottom 10% based on rank for each method but with EGV from method 1 substituted for the EGV on which ranking was based. With data set 1, rank cor- relations between EGV from method 1 and EGV from methods 2, 3, 4, and 5 were 0.99, 0.53, 0.32, and 0.15, respectively. Empirical responses relative to method 1 agreed with the rank correlations. Accuracy of EGV for method 4 (0.44) was greater than for method 3 (0.35) and for method 5 (0.29). Accuracies for methods 4 and 5 were greater than indicated by empirical responses and correlations with EGV from method 1. Compari- sons of the 5 methods were similar for data sets 2 and 3. With data set 2, rank correlations between EGV from method 1 and EGV from methods 3, 4, and 5 were 0.47, 0.64, and 0.62. Average accuracies of 56, 75, and 75% relative to method 1 (0.67) generally agreed with the empirical responses to selection. As expected, accuracy using pen total FI and GN to obtain EGV for FI was greater than using GN alone. With data set 1, empiri- cal response to selection with method 4 was one-third of that for method 1, although average accuracy was 65% of that for method 1. With assignment of 5 pater- nal half sibs to artificial pens, using pen total FI and individual GN was about 81% as effective for selection as using individual FI and GN to obtain EGV for FI and was substantially more effective than use of GN alone.

The objective of this study was to characterize breeds representing diverse biological types for postweaning growth and carcass composition traits in terminal crossbred cattle. Postweaning growth and carcass traits were analyzed on 464 steers and 439 heifers obtained by mating F(1) cows to Charolais and MARC III (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) sires. The F(1) cows were obtained from mating Angus and MARC III dams to Hereford, Angus, Beefmaster, Brangus, Bonsmara, and Romosinuano sires. Traits evaluated were postweaning ADG, slaughter weight, HCW, dressing percentage, percentage of carcasses classified as USDA Choice, LM area, marbling score, USDA yield grade, fat thickness, retail product yield (percentage), and retail product weight. Maternal grandsire breed was significant (P < 0.05) for all traits. Animals with Angus grandsires grew faster and had the heaviest carcasses, with the greatest percentage of carcasses classified as USDA Choice and the greatest marbling scores when compared with other grandsire breeds. Animals with Romosinuano and Bonsmara inheritance grew slower, had the lightest weights at slaughter, the lightest carcass weights, the least percentage of carcasses classified as USDA Choice, and the least amount of marbling and fat thickness. Animals with inheritance from these 2 breeds had a more desirable yield grade with the greatest retail product yield. Maternal granddam breed was significant (P < 0.05) for marbling score, USDA yield grade, fat thickness, and retail product yield. Sex class was significant (P < 0.05) for all traits except for retail product yield. Steers grew faster, were heavier, had heavier carcasses, and were leaner than heifers. Heifers had a greater dressing percentage, a greater percentage of carcasses classified as USDA Choice, a greater LM area, and a decreased yield grade when compared with steers. Sire and grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

Genetic improvement in reproductive efficiency through selection is difficult because many reproductive traits are binomial and have low heritabilities. Before genetic markers can be generated for fertility in cows, greater characterization of reproductive phenotypes is needed to understand the components of the trait. The current study tested the hypotheses that: 1) breeds vary in postpartum interval to estrus (PPIE) and estrous cycle length, 2) a longer estrous cycle immediately before breeding increased pregnancy rates, and 3) a greater number of cycles before breeding increased conception rates. The postpartum interval to estrus, estrous cycle length, and number of cycles before breeding were examined in F1 cows (n = 519) obtained from mating Hereford, Angus, and MARC III cows to Hereford, Angus, Simmental, Limousin, Charolais, Gelbvieh, and Red Angus sires. Bovine respiratory disease (BRD) is the most costly feedlot disease in the United States. Selec- tion for disease resistance is one of several possible interventions to prevent or reduce the economic loss associated with animal disease and to improve animal welfare. Undesirable genetic relationships, however, may exist between production and disease resistance traits. The objectives of this study were to estimate the phenotypic, environmental, and genetic correlations of BRD with growth, carcass, and LM palatability traits. Health records on 18,112 feedlot cattle over a 15-yr period and slaughter data on 1,627 steers over a 4-yr period were analyzed with bivariate animal models. Traits included ADG, adjusted carcass fat thickness at the 12th rib, marbling score, LM area, weight of retail cuts, weight of fat trim, bone weight, Warner-Bratzler shear force, tenderness score, and juiciness score. This study examined competition effects on ADG in the feedlot of 1,882 Hereford bulls representing 8 birth years from a selection experiment. Each year, 8 feedlot pens were used to feed bulls in groups, with 2 pens nested within each of the 4 selection lines. Gains were recorded for up to 8 periods of 28 d. Models for analyses included pen effects (fixed or random), fixed effects such as year and line, and random direct genetic, competition genetic (and in some analyses competition environmental), and environmental effects. Each pen mate as a competitor affected the records of all others in the pen. All lines traced to common foundation animals, so the numerator relationships among and within pens were the bases for separating direct and competition genetic effects and pen effects. For this population and pen conditions (average of 30 bulls per pen), the major results were 1) competition genetic effects seemed present for the first 28-d period but not for the following 7 periods; 2) models with pens considered as fixed effects could not separate variances and covariance due to direct and competition genetic effects; 3) models without competition effects had large estimates of the variance component due to pen effects for gain through 8 periods; and 4) models with genetic and environmental competition effects accounted for nearly all of the variance traditionally attributed to pen effects (even though estimates of the competition variance component were small, the estimates of pen variance were near zero).

Adjustment factors to allow comparison of EPD from several breed associations for birth, weaning, and yearling weights have been available for more than 10 yr. This paper describes steps to calculate adjustment factors for EPD for 4 carcass traits: marbling score, fat thickness, ribeye area, and retail product percentage. The required information is the same as for the weight traits: 1) breed of sire solutions based on measurements on progeny at the US Meat Animal Research Center (USMARC) that have sires with breed association EPD, 2) mean EPD of sires weighted by number of progeny at USMARC (USMARC progeny not included in breed association EPD), and 3) mean EPD of nonparents from breed associations (defined as animals born 2 yr prior to calculation of EPD). Records at USM-ARC are adjusted to 100% heterozygosity because the purpose of the adjustment factors is to allow prediction of performance of progeny of sires mated to other breeds of dam. A critical step is to adjust breed of sire solutions, which are based on an earlier sample of sires, to the equivalent of a sample from a more recent nonparent group using the difference between mean EPD from information sources 2) and 3). The difference is multiplied by the coefficient of regression of USMARC progeny on EPD of their sires. With weight traits, these coefficients are not greatly different from unity. With the carcass traits, 2 sets of coefficients can be used depending on whether the EPD are based on carcass or ultrasound measurements. The regression coefficients also reflect differences in conditions for USMARC progeny (all steers) and factors associated with breed association EPD. Only for marbling score and ribeye area were any estimates of the regression coefficients near unity. For other traits, the coefficients ranged from 1.65 to 2.82. The solutions for breed of sire, differences in mean EPD, and regression coefficients are then used to calculate adjustment factors for EPD of 11 breeds including the arbitrary base breed, Angus.

The objective of this study was to characterize breeds representing diverse biological types for postweaning growth and carcass composition traits in terminal crossbred cattle. Postweaning growth and carcass traits were analyzed on 434 steers and 373 heifers obtained by mating F1 cows to Charolais sires. Maternal grandsires represented Hereford, Angus, and MARC III (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford or Angus (British Breeds), Norwegian Red, Swedish Red and White, Wagyu, or Friesian breeds. Breed groups were slaughtered serially in each of 2 yr (2002 and 2003). Postweaning ADG, slaughter weight, hot carcass weight, dressing percentage, percentage Choice, LM area, marbling score, USDA yield grade, fat thickness, retail product yield (percentage), retail product weight, fat yield (percentage), fat weight, bone yield (percentage), and bone weight were analyzed. Maternal grandsire breed was significant (P < 0.05) for all traits except dressing percentage, percentage Choice, and LM area. Marbling score for animals with Norwegian Red, Wagyu, Swedish Red and White, British Breeds, and Friesian inheritance was 550, 544, 532, 530, and 515, respectively (SEM = 8). Retail product weight for these animals was 224, 211, 227, 223, and 223 kg, respectively (SEM = 2 kg). Maternal granddam breed was not significant for any of the traits analyzed. Grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

Genetic parameters for stayability to six ages (ST1, . . ., ST6), for five measures of stayability to calving (SC2, . . ., SC6), and for five measures of stayability to weaning (SW2, . . ., SW6), were estimated using records of 2,019 Hereford cows collected from 1964 to 1979 from a selection experiment with a control line and three lines selected for weaning weight, yearling weight, and an index of yearling weight and muscle score. The model included birth year of the cow as a fixed effect and the cow's sire as a random effect. Analyses were performed with 1) a generalized linear mixed model for binary data using a probit link with a penalized quasi-likelihood function, and 2) with a linear mixed model using REML. Genetic trends were estimated by regressing weighted means of estimated transmitting abilities (ETA) of sires by birth year of their daughters on birth year. Environmental trends were estimated by regressing solutions for year of birth on birth year. Estimates of heritability (SE) for ST were between 0.09 (0.08) and 0.30 (0.14) for threshold model and between 0.05 (0.04) and 0.19 (0.09) for linear model. Estimates of heritability from linear model analyses transformed to an underlying normal scale were between 0.09 and 0.35. Estimates of heritability (SE) for SC were between 0.29 (0.10) and 0.39 (0.11) and between 0.18 (0.09) and 0.25 (0.08) with threshold and linear models. Estimates of heritability transformed to an underlying normal scale were between 0.30 and 0.40. Estimates of heritability (SE) for SW were between 0.21 (0.14) and 0.47 (0.19) and between 0.12 (0.08) and 0.26 (0.12) with threshold and linear models, respectively. Estimates of heritability transformed to an underlying normal scale were between 0.21 and 0.50. Estimates of genetic and environmental trends for all lines were nearly zero for all traits. Correlations between ETA of sires for stayability to specific ages, for stayability to calving, and for stayability to weaning with threshold and linear models ranged from 0.09 to 0.82, from 0.68 to 0.90, and from 0.67 to 0.87, respectively. Selection for stayability would be possible in a breeding program and could be relatively effective as a result of the moderate estimates of heritability, which would allow selection of sires whose daughters are more likely to remain longer in the herd. Selection for weaning and yearling weights resulted in little correlated response for any of the measures of stayability.

Reproductive traits were measured for 234 bulls and 1184 heifers from matings of three dam breeds (Angus, Hereford, and MARC III) with six sire breeds (Angus, Hereford, Brahman, Boran, Tuli, and Belgian Blue) from the Germ Plasm Evaluation (GPE) Program at Roman L. Infectious bovine keratoconjunctivitis (IBK) is one of the most economically important diseases in preweaned calves. This study examined the health records of 45,497 calves over a 20-yr period to determine environmental and genetic factors influencing the incidence of IBK. Three data sets were analyzed with an animal model. The first data set (n = 41,986) evaluated environmental factors and genetic differences among nine purebred (Angus, Braunvieh, Charolais, Gelbvieh, Hereford, Limousin, Pinzgauer, Red Poll, and Simmental) and three composite breeds (MARC I, MARC II, and MARC III). Weaning weights of calves diagnosed with IBK were 8.9 kg lighter (P < 0.05) than weights of healthy calves. Incidence of IBK was related to age of the calf and the seasonal life cycle of the face fly (Musca autumnalis). Incidence of IBK increased in the spring (June), peaked during the summer months (July to September), and then decreased in the fall. Herefords were the most susceptible breed (P < 0.05) compared with all other purebreds and composites. Estimates of direct heritability for the incidence of IBK were generally low and ranged from 0.00 to 0.28 by breed. The maternal permanent environmental and genetic effects of the dam on the incidence of IBK were not significant for most breeds. The second data set (n = 9,606) was used to estimate heterosis for the incidence of IBK from a Hereford and Angus diallel design. The heterosis effect for the incidence of IBK in reciprocal Hereford/Angus crossbred calves was slightly negative (P = 0.12) but not large. The higher incidence of IBK in Angus x Hereford calves compared with Hereford x Angus calves (13.3 vs. 8.9%) suggests a maternal effect related to the incidence of IBK. Incidence of IBK in crossbred calves sired by tropically adapted breeds (Brahma, Boran, Tuli) compared with purebred and crossbred Bos taurus types was investigated in the third data set (n = 2,622). Crossbred calves sired by tropically adapted breeds had a lower incidence of IBK than most Bos taurus types (P < 0.05), but they were not different than either reciprocal crosses of Hereford and Angus or purebred Angus calves. Response to selection for decreasing the incidence of IBK is likely to be slow because of low heritability and low incidence in most breeds. Significant breed differences for incidence of IBK may be important to some producers and management systems.

The objective of this study was to investigate a potential association of an inactive myostatin allele with early calf mortality, and evaluate its effect on growth and carcass traits in a crossbred population. Animals were obtained by mating F1 cows to F1 (Belgian Blue x British Breed) or Charolais sires. Cows were obtained from mating Hereford, Angus, and MARC III (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford, Angus, Tuli, Boran, Brahman, or Belgian Blue sires. Belgian Blue was the source of the inactive myostatin allele. Myostatin genotypes were determined for all animals including those that died before weaning. Early calf mortality was examined in the F2 subpopulation (n = 154), derived from the F1 sires mated to F1 cows from Belgian Blue sires, to evaluate animals with zero, one, or two copies of inactive myostatin allele. An overall 1:2:1 ratio (homozygous active myostatin allele:heterozygous:homozygous inactive myostatin allele) was observed in the population; however, a comparison between calves dying before weaning and those alive at slaughter showed an unequal distribution across genotypes (P < 0.01). Calves with two copies of the inactive allele were more likely (P < 0.01) to die before weaning. Postweaning growth traits were evaluated in the surviving animals (n = 1,370), including birth, weaning, and live weight at slaughter, and postweaning ADG. Carcass composition traits analyzed were hot carcass weight, fat thickness, LM area, marbling score, USDA yield grade, estimated kidney, pelvic, and heart fat, retail product yield and weight, fat yield and weight, bone yield and weight, and percentage of carcasses classified as Choice. Charolais lack the inactive myostatin allele segregating in Belgian Blue; thus, in the population sired by Charolais (n = 645), only animals with zero or one copy of the inactive myostatin allele were evaluated. Animals carrying one copy were heavier at birth and at weaning, and their carcasses were leaner and more muscled. In the population sired by Belgian Blue x British Breed (n = 725), animals with two copies of inactive myostatin allele were heavier at birth, leaner, and had a higher proportion of muscle mass than animals with zero or one copies. Heterozygous animals were heaviest at weaning and had the highest live weight, whereas animals with zero copies had the highest fat content. The use of the inactive myostatin allele is an option to increase retail product yield, but considerations of conditions at calving are important to prevent mortality.

Calving difficulty, survival from birth to weaning, birth weight, and weaning weight of 167 calves and carcass traits of 88 cattle (63 for adjusted fat thickness) were compared for progeny of Red Poll and Longhorn bulls mated to crossbred cows that calved at 2 or 3 yr of age. Results indicated that Longhornsired calves required 28% less assistance at calving than Red Poll-sired calves when dams calved at 2 yr of age (P≤0.05), but there was no difference between Red Poll- and Longhorn-sired calves for calving difficulty with 3-yr-old cows. Red Poll-sired calves had significantly greater birth and weaning BW than did Longhorn-sired calves for 2-yr-old dams. Significant differences attributable to sire breed were found only for bone percentage of progeny of 3-yr-old dams, but not for carcass weight, fat thickness, longissimus area, USDA quality grades, and percentages retail product, fat trim, or bone. There was a significant interaction between sire breed and age of dam only for calving difficulty. Within sire breed, calving difficulty of 2-yr-old dams was greater than that for 3-yr-old dams, and calves from 2-yr-old dams also were significantly lighter at weaning than were calves from 3-yr-old dams (P

Genetic parameters for lifetime production for cows with the opportunity to produce from 2 through 7 yr of age, as measured by the number of calves born (NB2, ..., NB7), the number of calves weaned (NW2, ..., NW7), and cumulative weaning weight (CW2, ..., CW7), were estimated using data from 3,064 Hereford cows from a selection experiment with a control line (CTL) and three lines selected for weaning weight (WWL), yearling weight (YWL), and an index of yearling weight and muscle score (IXL). Weaning weights were adjusted to 200 d of age and for sex and age of dam. Estimates of heritability and genetic and environmental correlations were obtained by restricted maximum likelihood with bivariate animal models, with year of birth of the cow as a fixed effect and direct genetic and residual as random effects. Genetic trends were estimated by regressing means of estimated breeding values by year of birth and line on birth year. Estimates of heritability (SE) for opportunity groups of 2 to 7 yr of age ranged from 0.08 (0.03) to 0.16 (0.05) for NB; from 0.05 (0.02) to 0.16 (0.05) for NW; and from 0.06 (0.02) to 0.16 (0.05) for CW. Estimates of genetic correlations (SE) among NB traits ranged from 0.60 (0.14) to 1.00 (0.00), and estimates of environmental correlations (SE) ranged from 0.67 (0.02) to 0.99 (0.00). For NW, estimates of genetic and environmental correlations ranged from 0.98 (0.11) to 1.00 (0.00) and from 0.65 (0.02) to 0.99 (0.00), respectively. Estimates of genetic correlations (SE) among CW traits ranged from 0.94 (0.08) to 1.00 (0.00). Estimates of environmental correlations (SE) ranged from 0.66 (0.02) to 0.99 (0.00). Estimates of genetic correlations for NB2 with all definitions of NW ranged from 0.47 (0.18) to 0.71 (0.12), and with all definitions of CW ranged from 0.55 (0.16) to 0.80 (0.11). Estimates of genetic correlations between NW2 and all definitions for CW ranged from 0.95 (0.02) to 0.99 (0.06). Estimates of annual genetic (SE) change were negligible for NB2, NB6, NW2, and NW6 for all lines. Estimates of annual genetic (SE) change for CW2 were 0.85 (0.11), 0.79 (0.14), 0.51 (0.10), and 0.52 (0.18) kg/yr, and for CW6 were 5.01 (1.25), 2.64 (1.75), 3.67 (1.16), and 3.33 (2.37) kg/yr for WWL, YWL, IXL, and CTL, respectively. Selection for lifetime production as measured by NB, NW, or CW could be effective but would be relatively slow due to low estimates of heritability and to increased generation intervals.

Genetic parameters for length of productive life given the opportunity (LPL/O), measured as days between first calving and disposal conditioned on one of six opportunity groups, L1 through L6 (e.g., L2 is length of productive life in days given the opportunity to live 2 yr after first calving), and lifetime production (LP), measured as the number of calves born (NB), number of calves weaned (NW), and cumulative weaning weight (CW) by 6 yr after first calving, were estimated using records of 1,886 Hereford cows from a selection experiment with three selected lines and a control line. Weaning weights were adjusted to 200 d of age and for sex and age of dam. Estimates of heritability and genetic and environmental correlations were obtained by restricted maximum likelihood with bivariate animal models, with year of birth of cow as a fixed effect and direct genetic and residual as random effects. Genetic trends were estimated by regressing means of estimated breeding values by year of birth and line on birth year. Estimates of heritability (SE) for LPL/O ranged from 0.05 (0.01) to 0.15 (0.03). Estimates of genetic correlations (SE) among LPL/O ranged from 0.74 (0.14) to 1.00 (0.00), and estimates of environmental correlations ranged from 0.67 (0.05) to 0.98 (0.01). Estimates of heritability (SE) for NB, NW, and CW were 0.17 (0.05), 0.21 (0.06), and 0.18 (0.01). Estimates of genetic correlations (SE) among NB, NW, and CW ranged from 0.96 (0.02) to 0.99 (0.01). Estimates of environmental correlations (SE) ranged from 0.93 (0.01) to 0.99 (0.01). Estimates of genetic correlations for L6 with NB, NW, and CW were near 1.00 (0.09). Estimates of environmental correlations (SE) ranged from 0.57 (0.03) to 0.60 (0.03). Estimates of genetic change per year (SE) for L6 were low for all lines and ranged from -3.53 (2.09) to 4.63 (2.11) d/yr. Genetic trends for NB and NW were negligible for all lines. Genetic trends for CW were low and ranged from -2.81 (1.67) to 3.29 (1.76) kg/yr. Differences in genetic trends between selected lines and control were not significant (P > 0.05). Estimates of environmental trends (SE) over all lines were -104.00 (25.48) d/yr, -0.26 (0.02) calves/yr, -0.25 (0.02) calves/yr, and -55.10 (15.63) kg/yr, for L6, NB, NW, and CW, respectively. Selection for LPLIO or LP could be successful in a breeding program, but may be relatively slow due to the low magnitude of heritability and extended generation interval.

Data from the first four cycles of the Germplasm Evaluation Program at the U.S. Meat Animal Research Center (USMARC) were used to investigate genetic relationships between mature weight (MW, n = 37,710), mature weight adjusted for body condition score (AMW, n = 37,676), mature height (HT, n = 37,123), and BCS (n = 37,676) from 4- to 8-yr old cows (n = 1,800) and carcass traits (n = 4,027) measured on their crossbred paternal half-sib steers. Covariance components among traits were estimated using REML. Carcass traits were adjusted for age at slaughter. Estimates of heritability for hot carcass weight (HCWT); percentage of retail product; percentage of fat; percentage of bone; longissimus muscle area; fat thickness adjusted visually; estimated kidney, pelvic, and heart fat percentage; marbling score; Warner-Bratzler shear force; and taste panel tenderness measured on steers were moderate to high (0.26 to 0.65), suggesting that selection for carcass and meat traits could be effective. Estimates of heritability for taste panel flavor and taste panel juiciness were low and negligible (0.05 and 0.01, respectively). Estimates of heritability from cow data over all ages and seasons were high for MW, AMW, and HT (0.52, 0.57, 0.71; respectively) and relatively low for BCS (0.16). Pairwise analyses for each female mature trait with each carcass trait were done with bivariate animal models. Estimates of genetic correlations between cow mature size and carcass composition or meat quality traits, with the exception of HCWT, were relatively low. Selection for cow mature size (weight and/or height) could be effective and would not be expected to result in much, if any, correlated changes in carcass and meat composition traits. However, genetic correlations of cow traits, with the possible exception of BCS, with HCWT may be too large to ignore. Selection for steers with greater HCWT would lead to larger cows.

An experiment involving crosses among selection and control lines was conducted to partition direct and maternal additive genetic response to 20 yr of selection for 1) weaning weight, 2) yearling weight, and 3) index of yearling weight and muscle score. Selection response was evaluated for efficiency of gain, growth from birth through market weight, and carcass characteristics. Heritability and genetic correlations among traits were estimated using animal model analyses. Over a time-constant interval, selected lines were heavier, gained more weight, consumed more ME, and had more gain/ME than the control. Over a weight-constant interval, selected lines required fewer days, consumed less ME, had more efficient gains, and required less energy for maintenance than control. Direct and maternal responses were estimated from reciprocal crosses among unselected sires and dams of control and selection lines. Most of the genetic response to selection in all three lines was associated with direct genetic effects, and the highest proportion was from postweaning gain. Indirect responses of carcass characteristics to selection over the 20 yr were increased weight of carcasses that had more lean meat, produced with less feed per unit of gain. At a constant carcass weight, selected lines had 1.32 to 1.85% more retail product and 1.62 to 2.24% less fat trim and 10/100 to 25/100 degrees less marbling than control. At a constant age, heritability of direct and maternal effects and correlations between them were as follows: market weight, 0.36, 0.14, and 0.10; carcass weight, 0.26, 0.15, and 0.03; longissimus muscle area, 0.33, 0.00, and 0.00; marbling, 0.36, 0.07, and -0.35; fat thickness, 0.41, 0.05, and -0.18; percentage of kidney, pelvic, and heart fat, 0.12, 0.08, and -0.76; percentage of retail product, 0.46, 0.05, and -0.29; retail product weight, 0.44, 0.08, -0.14; and muscle score, 0.37, 0.14, and -0.54. Selection criteria in all lines improved efficiency of postweaning gain and increased the amount of salable lean meat on an age- or weight-constant basis, but carcasses had slightly lower marbling scores.

Breeds were compared for differences in BW (n = 56,731), heights (n = 51,407) and body condition scores (BCS, n = 56,371) of 2- to 8-yr-old cows from four cycles of the Germplasm Evaluation (GPE) Program at the U. S. Meat Animal Research Center (MARC). Angus, Hereford, and topcross cows from 22 breeds of sires were produced. The mixed model for repeated measures of BW, height, and BCS included random additive genetic and permanent environmental effects of the cow. Differences among crosses were significant for all traits. In general, BW, within cycle, was greater for cows sired by breeds of large size and low milk production (Chianina and Charolais) than for those of large size and moderate milk production (Maine Anjou, Salers, and Shorthorn), moderate size and moderate milk production (Angus and South Devon), moderate size and low milk production (Hereford), and small size and low milk production (Galloway and Longhorn). Breeds of moderate size and moderately high milk production (Pinzgauer, Red Poll, and Tarentaise) were even lighter. Cows with Jersey sires were separated from all other breed groups because of light BW. Cows with sires of British origin tended to be lighter than those of continental European origin. Cows with Bos indicus sires (Brahman and Nellore) ranked between other breeds of large and moderate size for BW or for BW adjusted for BCS. In general, adjustment for BCS did not alter rankings of breed groups for differences in cow BW. Differences among breed groups for height closely followed differences for BW.

Data from the first four cycles of the Germplasm Evaluation program at the U.S. Meat Animal Research Center were used to evaluate weights of Angus, Hereford, and F 1 cows produced by crosses of 22 sire and 2 dam (Angus and Hereford) breeds. Four weights per year were available for cows from 2 through 8 yr of age (AY) with age in months (AM). Weights (n = 61,798) were analyzed with REML using covariance function-random regression models (CF-RRM), with regression on orthogonal (Legendre) polynomials of AM. Models included fixed regression on AM and effects of cow line, age in years, season of measurement, and their interactions; year of birth; and pregnancy-lactation codes. Random parts of the models fitted RRM coefficients for additive (a) and permanent environmental (c) effects. Estimates of CF were used to estimate covariances among all ages. Temporary environmental effects were modeled to account for heterogeneity of variance by AY. Quadratic fixed regression was sufficient to model population trajectory and was fitted in all analyses. Other models varied order of fit and rank of coefficients for a and c. A parsimonious model included linear and quartic regression coefficients for a and c, respectively. A reduced cubic order sufficed for c. Estimates of all variances increased with age. Estimates for older ages disagreed with estimates using traditional bivariate models. Plots of covariances for c were smooth for intermediate, but erratic for extreme ages. Heritability estimates ranged from 0.38 (36 mo) to 0.78 (94 mo), with fluctuations especially for extreme ages. Estimates of genetic correlations were high for most pairs of ages, with the lowest estimate (0.70) between extreme ages (19 and 103 mo). Results suggest that although cow weights do not fit a repeatability model with constant variances as well as CF-RRM, a repeatability model might be an acceptable approximation for prediction of additive genetic effects.

Breed differences for weight (CW), height (CH), and condition score (CS) were estimated from records (n = 12,188) of 2- to 6-yr-old cows (n = 744) from Cycle IV of the U.S. Meat Animal Research Center's Germplasm Evaluation (GPE) Program. Cows were produced from mating Angus and Hereford dams to Angus, Hereford, Charolais, Shorthorn, Galloway, Longhorn, Nellore, Piedmontese, and Salers sires. Samples of Angus and Hereford sires were 1) reference sires born from 1962 through 1970 and 2) 1980s sires born in 1980 through 1987. The mixed model included cow age, season of measurement and their interactions, year of birth, pregnancy-lactation code (PL), and breed-group as fixed effects for CW and CS. Analyses of weight adjusted for condition score included CS as a linear covariate. The model for CH excluded PL. Random effects were additive genetic and permanent environmental effects associated with the cow. Differences among breed groups were significant (P < 0.05) for all traits and were maintained through maturity with few interchanges in ranking. The order of F 1 cows for weight was as follows: Charolais (506 to 635 kg for different ages), Shorthorn and Salers, reciprocal Hereford-Angus (HA) with 1980s sires, Nellore, HA with reference sires, Galloway, Piedmontese, and Longhorn (412 to 525 kg for different ages). Order for height was as follows: Nellore (136 to 140 cm), Charolais, Shorthorn, Salers, HA with 1980s sires, Piedmontese, Longhorn, Galloway and HA with reference sires (126 to 128 cm). Hereford and Angus cows with reference sires were generally lighter than those with 1980s sires. In general, breed differences for height followed those for weight except that F 1 Nellore cows were tallest, which may in part be due to Bos taurus-Bos indicus heterosis for size.

Postweaning growth, feed efficiency, and carcass traits were analyzed on 1,422 animals obtained by mating F1 cows to F1 (Belgian Blue x British breeds) or Charolais sires. Cows were obtained from mating Hereford, Angus, and MARC IIIHereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford or Angus (British breeds), Tuli, Boran, Brahman, or Belgian Blue sires. Breed groups were fed in replicated pens and slaughtered serially in each of 2 yr. Postweaning average daily gain; live weight; hot carcass weight; fat depth; longissimus area; estimated kidney, pelvic, and heart fat (percentage); percentage Choice; marbling score; USDA yield grade; retail product yield (percentage); retail product weight; fat yield (percentage); fat weight; bone yield (percentage); and bone weight were analyzed in this population. Quadratic regressions of pen mean weight on days fed and of cumulative ME consumption on days fed were used to estimate gain, ME consumption and efficiency (Mcal of ME/kg of gain) over time (0 to 200 d on feed), and weight (300 to 550 kg) intervals. Maternal grandsire breed was significant (P < 0.01) for all traits. Maternal granddam breed (Hereford, Angus, or MARC III)was significant (P < 0.05) only for fat depth, USDA yield grade, retail product yield, fat yield, fat weight, and bone yield. Sire breed was significant (P < 0.05) for live weight, hot carcass weight, longissimus area, and bone weight. Sex class was a significant (P < 0.001) source of variation for all traits except for percentage Choice, marbling score, retail product yield, and fat yield. Interactions between maternal grandsire and sire breed were nonexistent. Sire and grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

Five hundred thirty-four steers were evaluated over a 2-yr period to determine the accuracy of ultrasonic estimates of carcass 12th-rib fat thickness (CFAT) and longissimus muscle area (CLMA). Within 5 d before slaughter, steers were ultrasonically measured for 12th-rib fat thickness (UFAT) and longissimus muscle area (ULMA) using an Aloka 500V real-time ultrasound machine equipped with a 17.2-cm, 3.5-MHz linear transducer. Overall, correlation coefficients between ultrasound and carcass fat and longissimus muscle area were 0.89 and 0.86, respectively. Correlations for UFAT with CFAT were similar between years (0.86 and 0.90), whereas the relationship between ULMA and CLMA was stronger in yr 1 (r = 0.91; n = 282) than in yr 2 (r = 0.79; n = 252). Differences between ultrasonic and carcass measurements were expressed on both an actual (FDIFF and RDIFF) and absolute (FDEV and RDEV) basis. Mean FDIFF and RDIFF indicated that ultrasound underestimated CFAT by 0.06 cm and overestimated CLMA by 0.71 cm2 across both years. Overall mean FDEV and RDEV, which are indications of the average error rate, were 0.16 cm and 3.39 cm2, respectively. Analysis of year effects revealed that FDIFF, FDEV, and RDEV were greater (P0.01) in magnitude in yr 1. Further analysis of FDEV indicated that leaner (CFAT0.51 cm) cattle were overestimated and that fatter (CFAT1.02 cm) cattle were underestimated with ultrasound. Similarly, steers with small CLMA (71.0 cm2) were overestimated, and steers with large CLMA (90.3 cm2) were underestimated. The thickness of CFAT had an effect (P0.05) on the error of UFAT and ULMA measurements, with leaner animals being more accurately evaluated for both traits. Standard errors of prediction (SEP) adjusted for bias of ultrasound measurements were 0.20 cm and 4.49 cm2 for UFAT and ULMA, respectively. Differences in SEP were observed for ULMA, but not UFAT, by year. These results indicate that ultrasound can be an accurate estimator of carcass traits in live cattle when measurements are taken by an experienced, well-trained technician, with only small differences in accuracy between years.

Data from topcross cows (n = 468) from six breeds of sire (Angus, Brahman, Hereford, Pinzgauer, Sahiwal, Tarentaise) and two breeds of dam (Angus and Hereford) of Cycle III of the Germplasm Evaluation (GPE) program at the U.S. Meat Animal Research Center (MARC) comprising cow weight (CW, n = 9,012), height (CH, n = 9,010), and condition score (CS, n = 8,991) recorded in four seasons per year from 2 to 6 yr of age were used to estimate breed-group differences. The mixed models included cow age, season of measurement and their interactions, year of birth, pregnancy-lactation code (PL), and breed group as fixed effects for CW and CS. Differences among breed-groups were significant for all traits for different ages and were maintained across ages, with few interchanges in ranking through maturity. Cows with Sahiwal sires were lightest (392 to 479 kg), whereas Hereford-Angus (HA) reciprocal-cross cows were shortest (119 to 123 cm) at each age. Cows with Brahman sires were heaviest and tallest among breed groups at all ages, exceeding HA cows by 19 to 24 kg and 9 to 10 cm, respectively. Cows with Pinzgauer and Tarentaise sires were intermediate for weight and height and interchanged ranking across ages. Differences in weight due to differences in condition seemed to be of small magnitude because adjustment for condition score did not affect rankings of breed groups across ages. Important changes for mature size of cows can be achieved by breed substitution with the breeds of sires used in this study.

Weight (CW, n = 61,798), weight ad- justed for condition score (WA), hip height (CH, n = 56,494), and condition score (CS, n = 61,434) of cows (2 through 8 yr of age) produced by crosses of 22 sire breeds with Angus and Hereford dams in the first four cycles of the Germplasm Evaluation (GPE) Program at the U.S. Meat Animal Research Center were used to estimate genetic parameters with REML. The model included sire breed, dam breed, age in years, season of measurement (1 to 4) and their interactions, and year of birth and pregnancy-lactation code (PL) as fixed ef- fects for CW and CS. The model for CH excluded PL. Random effects were additive genetic and permanent environmental effects. Univariate analyses of all data, by season and by year of age, bivariate analyses be- tween pairs of seasons and ages (2 to 6), and between traits were done. Estimates of heritability and repeat- ability over all ages were 0.49, 0.54, 0.68, and 0.16, and 0.65, 0.67, 0.75, and 0.30 for CW, WA, CH, and CS, respectively. Corresponding estimates for each age and season were similar for all traits and cycles. Estimates of genetic and permanent environmental correlations were close to unity for all pairs of seasons and traits. Genetic correlations were greater than 0.92 for all pairs of ages for CW, WA, and CH, and greater than 0.67 for CS. Genetic correlations were 0.80, 0.86, 0.43, and −0.04 for CW-CH, WA-CH, CW-CS, and CH-CS, respectively. Results suggest that repeatability models can be used to model weights and heights in this population.

In general, cows sired by breeds of British origin were lighter and shorter than those of continental origin. Differences in weight due to differences in condition seemed to be of small magnitude because making an adjustment for condition score did not affect rankings of breed groups across ages. Differences among breed groups for height were consistent with differences for weight. Cows from Chianina sires were taller than Hereford-Angus cows by 14 to 15 cm across ages. In this study, breed of sire effects were significantly different for the mature size of their daughters.

Genetic parameters of mature weight are needed for effective selection and genetic evalua- tion. Data for estimating these parameters were col- lected from 1963 to 1985 and consisted of 32,018 mature weight records of 4,175 Hereford cows that were in one control and three selection lines that had been selected for weaning weight, for yearling weight, or for an index combining yearling weight and muscle score for 22 yr. Several models and subsets of the data were considered. The mature weight records consisted of a maximum of three seasonal weights taken each year, at brand clipping (February and March), before breeding (May and June), and at palpation (August and September). Heritability estimates were high (0.49 to 0.86) for all models considered, which suggests that selection to change mature weight could be effective. The model that best fit the data included maternal genetic and maternal permanent environmental effects in addition to direct genetic and direct permanent environmental effects. Estimates of direct heritability with this model ranged from 0.53 to 0.79, estimates of maternal herita- bility ranged from 0.09 to 0.21, and estimates of the genetic correlation between direct and maternal effects ranged from −0.16 to −0.67 for subsets of the data based on time of year that mature weight was measured. For the same subsets, estimates of the proportions of vari- ance due to direct permanent environment and mater- nal permanent environment ranged from 0.00 to 0.09 and 0.00 to 0.06, respectively. Using a similar model that combined all records and included an added fixed effect of season of measurement of mature weight, di- rect heritability, maternal heritability, genetic correla- tion between direct and maternal effects, proportion of variance due to direct permanent environmental ef- fects, and proportion of variance due to maternal per- manent environmental effects were estimated to be 0.69, 0.13, −0.65, 0.00, and 0.04, respectively. Mature weight is a highly heritable trait that could be included in selection programs and maternal effects should not be ignored when analyzing mature weight data.

Serial ultrasonic measures of fat thickness (FTU) and longissimus muscle area (LMU) were taken on 180 feedlot steers representing 11 sire-breed groups at two 60-d intervals. Cattle then were slaughtered in four groups of 45 at 21-d intervals with ultrasonic measures taken at each interval. Analyses of variance indicated weight (WT ) effects ( P < .001) for all FTU measures and many of the LMU measures. Age was a source of variation ( P < .05) for FTU and LMU over the first five measurement dates. Sire-breed (SBD) effects (P < .001) were prevalent for all FTU estimates and early LMU predictions. Some dam line and SBD x dam line interactions were detected (P < .1) for the FTU and LMU estimates. Age effects were described quadratically (P < .001) when FTU and LMU were regressed on age (R 2 = 47 and 68%, respectively). When FTU and LMU were regressed on WT, effects were described quadratically ( P < .001) with R 2 values of 46 and 72%, respectively. Animals then were assigned to one of four biological types ( BT ) based on percentage of retail product (0-mm fat trim) using discriminant cluster analysis. Within BT, ultrasonic variables were regressed on age. Quadratic effects (P < .01) were detected for both FTU and LMU. Weight also contributed to variation observed in both ultrasonically measured variables for all BT ( P < .001). These data indicate that changes in fat and muscle size as affected by age and weight are detectable using serially collected ultrasound measures. Furthermore, the age and weight relationships of predicted FTA and LMA varied across the four biological types. This suggests a need for derivation of biological type-specific age and (or) weight adjustment equations for cattle evaluation purposes.

Longissimus lumborum between the 13th rib and the 4th lumbar vertebra from 57 steers was obtained at 48 h postmortem, stored at 2 degrees C, and frozen after 7 d postmortem. Consecutive 2.54-cm-thick, paired steaks were used to make the following comparisons: Protocol A) steaks were broiled to 70 degrees C, chilled 24 h at 3 degrees C, cored parallel to fiber orientation, and sheared with a Warner-Bratzler attachment to the Instron and Protocol B) steaks were modified-oven-broiled to 65 degrees C, cooled 30 min at 23 degrees C, cored perpendicular to the steak surface, and sheared with a Warner-Bratzler shear machine. Each of the four differences in protocol was subsequently compared one at a time with paired steaks. Protocol A resulted in higher (P .05) in shear values. However, parallel vs perpendicular core orientation (6.31 vs 4.51 kg, respectively) and broil to 70 degrees C vs modified-oven broil to 65 degrees C cooking method (6.37 vs 5.31 kg, respectively) increased (P < .05) shear force values. Total variance (6.2 vs 1.2 kg2) and the proportion of variance in shear value attributed among animals was greater (P < .05) for Protocol A than for Protocol B (70.0 vs 44.5%). Records from 12 breed groups col- lected from 1983 to 1991, included in the Germ Plasm Utilization project at the U.S. Meat Animal Research Center, were analyzed separately by breed group and combined to estimate heritabilities and genetic corre- lations for 320-d male and female pelvic width, height, and area, and for 320-d male pelvic and female 2-yr-old calving ease. Calving ease was analyzed as a trait of the dam using 1) actual and 2) binary scale calving ease scores with a covariate of calf birth weight. A bivariate animal model and derivative-free REML incorporating sparse matrix techniques were used. When breed groups were analyzed separately, heritability estimates of male and female 320-d pelvic traits varied by breed group and sex. Average genetic correlations between male and female 320-d pelvic width, pelvic height, and pelvic area were large and positive. When breed groups were combined (n = 26,071), heritability estimates for 320-d pelvic traits were moderate in size. Genetic correlations of .68, .48, and .61, between male and female 320-d pelvic width, height, and area, respectively, suggest male and female pelvic traits are largely under the same genetic control but are correlated traits rather than the same trait. Heritability estimates for actual calving ease in 2-yr-olds ranged from .OO to .49 in separate breed group analyses, and from .OO to .37 for binary measures. When breed groups were combined, herita- bility was .ll for actual calving ease and was .09 on the binary scale. Genetic correlations by breed groups between 320-d male pelvic traits and calving ease of 2-yr-old females were variable. When breed groups were combined, genetic correlation estimates between 320-d male pelvic traits and actual calving ease of 2-yr-old females (on a 6-point scale) were negative and moderate as were genetic correlations between male 320-d pelvic traits and binary calving ease of 2-yr-old females. A bull one phenotypic SD above the mean in pelvic area would be expected to increase his daughters' average pelvic area by 1.30 cm2 and improve its calving ease score by .03 of a score compared with an average breed bull.

A table for adjusting expected progeny differences (EPD) to a base year and breed basis depends on analyses of records of progeny of bulls of different breeds in a common environment and requires that those reference bulls also have other progeny to provide within-breed EPD. Currently, the germ plasm evaluation project at the Meat Animal Research Center (MARC) provides such a common environment for reference bulls of several breeds for estimation of breed differences for the reference sires. Reference sire estimates of breed differences are adjusted by the difference between average EPD of reference bulls and average EPD for the base year for that breed. Two related questions are as follows: 1) What are confidence ranges for the adjustments and 2) What are accuracies of interbreed EPD? Application of statistical principles and algebra shows that 1) apparent confidence ranges for breed adjustments are small, 2) apparent confidence ranges are substantially underestimated when random sire effects within breed are ignored, 3) correct confidence ranges also are small, 4) usual measures of accuracy cannot be applied to interbreed comparisons, and 5) standard errors of prediction used in calculating confidence ranges for interbreed comparisons are much less affected by variance of the adjustment factors than by within-breed accuracies for two bulls being compared except for bulls with accuracies of near unity. Alternatives of predicting differences between bulls of the same or different breeds or between a bull of any breed and an average bull of a base breed are discussed in terms of confidence ranges.(ABSTRACT TRUNCATED AT 250 WORDS)

Retained heterosis for meat traits was estimated in F3 generation castrate males in three composite populations of beef cattle finished on two levels of dietary energy density (2.82 Mcal of ME and 3.07 Mcal of ME and 11.50% CP) and serially slaughtered at four end points at intervals of 20 to 22 d. Breed effects were evaluated in nine parental breeds (Red Poll [R], Hereford [H], Angus [A], Limousin [L], Braunvieh [B], Pinzgauer [P], Gelbvieh [G], Simmental [S], and Charolais [C]) that contributed to the three composite populations (MARC I = 1/4 B, 1/4 C, 1/4 L, 1/8 H, 1/8 A; MARC II = 1/4 G, 1/4 S, 1/4 H, 1/4 A; and MARC III = 1/4 R, 1/4 P, 1/4 H, and 1/4 A). Breed effects were important (P < .01) for all carcass and meat traits evaluated. Dietary energy density and slaughter group affected (P < .05) most traits evaluated. The effects of retained heterosis were not consistent among composites. For the mean of the three composites, retained heterosis was significant only for percentage of 9-10-11th rib fat and for percentage of retail product. Phenotypic correlations indicated that marbling score was a poor predictor of palatability attributes of individual carcasses. Estimates of heritability were intermediate to high for measures of fatness but were generally low for palatability attributes. The high negative genetic correlation (-.56) between percentage of retail product and marbling score and the relatively low genetic correlations between percentage of retail product and palatability attributes suggests the need for simultaneous attention to percentage of retail product and palatability attributes rather than to marbling score. Correlations among breed group means were generally high for measures of fatness with palatability attributes and were high and negative for percentage of retail product with marbling score and with other measures of fatness. Limited opportunity exists for selecting among breeds to achieve high levels of marbling in the longissimus muscle simultaneously with a high percentage of retail product. These results suggest that the most logical approach to resolution of the genetic antagonism between favorable carcass composition and less favorable palatability attributes is to form composite breeds with breed contributions organized to achieve an optimum balance between favorable carcass composition and desirable palatability attributes at optimum slaughter weights.
