PurposeBaru is a fruit of the Brazilian Cerrado, important to the local economy and social culture. The use in food formulation is due to it being highly available and its nutritional profile; however, the changes in the texture of products are still unclear. In this study, an experimental design was conducted to develop cakes by replacing different levels of wheat flour with baru nut flour, and comparing them.Design/methodology/approachCakes were developed with 20, 40, 60, and 80 replacement of wheat flour by baru nut flour and compared with standard formulation (100% wheat flour). The physical-chemistry composition of the flour, nutritional composition of the cakes and texture profile analysis were evaluated.FindingsBaru nut flour showed greater protein, lipids, and ash than wheat flour, and this result was also observed in the cakes developed. The cake with 80% of almond baru flour showed an increase of 60.3% in protein. The texture profile analysis showed that the addition of baru nut flour affected the texture of products. The cakes showed more hardness and chewiness; however, the springiness and cohesiveness were decreased.Originality/valueThe findings of this study demonstrate that baru nut flour is a great option as a new ingredient for bakery products, due the increase of protein. This is the first study analyzing the effect of baru nut flour addition on the texture profile of bakery products. These results can orientate future studies, especially sensory assays.

O traumatismo crânio encefálico (TCE) é uma lesão que ocorre a partir de um trauma externo, podendo causar alterações anatômicas no crânio da vítima. Entre as causas mais comuns, pode-se citar acidentes automobilísticos, atropelamentos, acidentes com motos e bicicletas, agressões físicas, quedas, lesões por armas de fogo. Este estudo objetiva-se identificar o perfil sociodemográfico de vítimas de TCE no estado de Rondônia entre os anos de 2018 a 2021. Trata-se de um estudo retrospectivo, descritivo e observacional, com abordagem qualiquantitativa. A coleta dos dados secundários ocorreu através do Departamento de Informática do Sistema Único de Saúde – DATASUS, disponibilizado no TABNET. Fizeram parte deste estudo, 798 vítimas de acidentes ou causas externas notificados no estado de Rondônia. Os resultados encontrados neste estudo evidenciaram as causas externas relacionadas aos óbitos, sendo as mais comuns: exposição a acidentes e outros fatores/causas não específicas, quedas, motociclistas traumatizados e agressões, correspondendo a um total de 79,82% das causas associadas aos óbitos. Os resultados deste estudo possibilitaram caracterizar o perfil clínico-epidemiológico das mortes notificadas no estado de Rondônia em decorrência às causas ou fatores externos que levaram indivíduos a evoluírem para TCE.

Os primeiros relatos existentes sobre o início da prática cirúrgica podem ser chocantes para as normas atuais. A falta de higiene e o excesso de contaminação faziam com que a mortalidade fosse expressiva em relação ao que é visto hoje. Graças ao avanço da medicina, esse quadro não é mais realidade, fazendo importante o seguimento de tais técnicas. O estudo presente reuniu as informações de livros e das principais bases de dados com o objetivo de elucidar a definição de assepsia e antissepsia, como também as zonas do centro cirúrgico. Após o estudo de revisão, observou-se a divisão em três zonas principais: a de proteção, a limpa e a estéril.

Obesity and metabolic disorders represent a significant global health problem and the gut microbiota plays an important role in modulating systemic homeostasis. Recent evidence shows that microbiota and its signaling pathways may affect the whole metabolism and the Renin-Angiotensin System (RAS), which in turn seems to modify microbiota. The present review aimed to investigate nutritional implications in the mechanistic link between the intestinal microbiome, renin-angiotensin system, and the development of obesity and metabolic syndrome components. A description of metabolic changes was obtained based on relevant scientific literature. The molecular and physiological mechanisms that impact the human microbiome were addressed, including the gut microbiota associated with obesity, diabetes, and hepatic steatosis. The RAS interaction signaling and modulation were analyzed. Strategies including the use of prebiotics, symbiotics, probiotics, and biotechnology may affect the gut microbiota and its impact on human health.

Cakes are the most popular bakery items around the world because they are easy to consume and affordable. Their baking characteristics and consumers' healthy habits have driven the adoption of new ingredients and technologies to improve their functionality. This study aimed to develop cakes in which wheat flour was replaced by different amounts of defatted rice bran and to evaluate their physicochemical composition, nutritional and technological properties, and sensory profile. The use of defatted rice bran in cakes promoted an increase in fiber content, phenolic compounds and antioxidant capacity, besides decreasing their energy value. The formulation with 30% defatted rice bran exhibited high acceptance and 35% of the judges declared that they would consume the product at least once a week, if it could be found on the market. Results showed that defatted rice bran is a potential raw material that could be used in bakery products, as a cheap way to improve their nutritional quality without affecting consumer acceptability.

Não recebi financiamento In the current model of social organization, there is the dominant phenomenon called cisheteronormativity, that is, cisgenderness and heterosexuality are conceived as natural, correct, healthy and expected. In short, as the only ways to live and experience gender identity and sexual orientation. Thus, the standards of gender and sexuality that deviate from this norm are referred to processes of exclusion, discrimination and various other oppressions, in the case of the LGBTI community (lesbians, gays, bisexuals, transvestites, transsexuals and/or transgender and intersex). This occurs, above all, with people who are most at odds with gender norms, transvestites and trans women, on whom the worst rates of unemployment and violence fall. Generally, this group suffers frequent and early expulsion from the family, they are expelled directly or indirectly from school and are constantly excluded from formal job opportunities, factors that contribute to the social vulnerability they experience. The work here is understood not only as a means of material survival, but also as an activity loaded with symbolic value that is fundamental to the identity, subjective and social construction of the subjects. The main objective of this research is to understand the representations of transvestites and trans women about transphobia, especially in relation to work and the search for survival. For this, with the qualitative method, semi-structured interviews were carried out with transvestites and trans women who had professional experiences and a bibliographic survey on this topic. Through the interviews, it was possible to perceive that all of them have experiences with transphobia since childhood and their professional trajectories were often related to informality, prostitution and specific areas of the beauty market. Only one interviewee had significant experiences with formal employability. As much as brazilian society has advanced in guaranteeing some rights for the LGBTI+ community, transvestites and trans women are still the most vulnerable in this group, since they face prejudice on a daily basis and are targets of violence in different areas of social life. No modelo de organização social atual, o fenômeno chamado cisheteronormatividade é dominante, isto é, a cisgeneridade e a heterossexualidade são concebidas como naturais, corretas, saudáveis, esperadas, enfim, como os únicos modos de se viver e experienciar a identidade de gênero e a orientação sexual. Assim, os padrões de gênero e sexualidade desviantes desta norma são encaminhados para processos de exclusão, discriminação e diversas outras opressões, caso da comunidade LGBTI+ (lésbicas, gays, bissexuais, travestis, transexuais e/ou transgêneros e intersexos). Isto ocorre, sobretudo, com as pessoas que mais destoam das normas de gênero, as travestis e mulheres trans, sobre as quais recaem os piores índices de desemprego e violência. Geralmente, este grupo sofre a frequente e precoce expulsão da família de origem, são expulsas direta ou indiretamente da escola e, constantemente, são alijadas de oportunidades de trabalhos formais, fatores que contribuem para aumentar a vulnerabilidade social vivenciada. O trabalho aqui é entendido não apenas como meio de sobrevivência material, mas também como atividade carregada de valor simbólico, fundamental à construção identitária, subjetiva e social dos sujeitos. O objetivo principal desta pesquisa é compreender as experiências de travestis e mulheres trans sobre a transfobia, especialmente em relação ao trabalho e à busca pela sobrevivência. Para isso, por meio do método qualitativo, realizei um levantamento bibliográfico a respeito deste tema, além de entrevistas semiestruturadas com travestis e mulheres trans que apresentavam experiências profissionais. Por meio das entrevistas, foi possível perceber que todas apresentavam experiências com a transfobia desde a infância e suas trajetórias profissionais, frequentemente, estiveram relacionadas à informalidade, à prostituição e/ou a áreas específicas do mercado da beleza. Apenas uma entrevistada apresentou experiências com a empregabilidade formal. Por mais que a sociedade brasileira tenha avançado na garantia de alguns direitos para a comunidade LGBTI+, as travestis e as mulheres trans ainda configuram o grupo mais vulnerável neste universo, posto que enfrentam, cotidianamente, a transfobia que decorre do cissexismo, da misoginia, do ódio ao feminino e às diferenças humanas. Com base nas considerações finais construídas nesta pesquisa, é possível dizer que estas mulheres são constantes alvos da violência em diferentes âmbitos da vida social e sofrem intensos processos de marginalização, desumanização e discriminação a ponto de terem suas expectativas de vida estimadas em 35 anos. Com isso, esforços políticos, sociais, governamentais, culturais, educacionais, científicos e jurídicos tornam-se necessários para, ao menos, tentarmos mitigar os cruéis efeitos da transfobia estrutural tão presente na sociedade brasileira.

This review considers alternative protein sources through the analysis of food science literature and patents. Data collection was performed from scientific literature and patent documents using the Scopus and National Institute of Industrial Property databases, with a term combination "alternative protein source" and "source* AND protein* AND alternative*". A total of 945 documents were analyzed. The scientific prospection showed that agricultural and biological science was the main application area. The food industry area had the highest number of filed patents. The annual evaluation of published documents demonstrated that this area had been investigated since the 1970s, and the number of articles was twice than that of filled patents. Although protein products are available for sale, animal and vegetable sources replace conventional protein products. Presently, alternative protein sources are already a worldwide trend in the food industry, enabling the development of new products to facilitate their insertion into the consumer market.

O cão é a espécie mais popular no Brasil como animal de companhia e serve como hospedeiro definitivo para diversos parasitos, sendo muitos destes passíveis de transmissão aos humanos. Neste documento foram reunidas informações presentes na literatura sobre a ocorrência de endoparasitoses de caninos; fontes de infecção; manifestação das doenças nos animais e principais métodos de diagnóstico no Brasil, publicados no período de 2013 a 2019, com foco nos helmintos intestinais de maior prevalência no país. As prevalências se mostraram variáveis de acordo com as regiões estudadas, assim como quando comparados cães domiciliados e de rua, evidenciando a importância da compreensão da situação epidemiológica dos parasitos para eficaz abordagem clínica. The dog is the most popular species in Brazil as a companion animal and serves as the definitive host for several parasites, many of which can be transmitted to humans. This document gathered information from the literature on the occurrence of canine endoparasites; sources of infection; manifestation of animal diseases and main diagnostic methods in Brazil, published from 2013 to 2019, focusing on the most prevalent intestinal helminths in the country. The prevalences were variable according to the regions studied, as well as when comparing domiciled and stray dogs, showing the importance of understanding the epidemiological situation of parasites for an effective clinical approach.

Purpose The purpose of this paper is to evaluate perceived sensory differences of organic and conventional leafy green vegetables through three sensory tests – blind, informed and inverted and the willingness to buy (WTB) them, and associated factors of organic food consumption by these students. Design/methodology/approach The research had a cross-sectional design with university students. First, a questionnaire with 16 statements was presented to 233 consumers with a five-point Likert scale response. The assertions were categorized into five domains: trust in organic production; trust in conventional production; positive attitude to organic; affordable price; and perceived quality. Afterwards, a hedonic scaling was conducted with 150 consumers, 50 in each type of test with conventional and organic leafy green vegetables: lettuce (Lactuca sativa L.); kale (Brassica oleracea L.); common chicory (Cichorium intybus); and endive (Cichorium endivia). Visual aspect, taste, texture, bitterness and overall liking for all samples were evaluated on a nine-point hedonic scale. Findings In general, the participants did not perceive sensory differences during the blind test, but when the information about the vegetables was provided, higher scores were obtained by those products labelled as organic in the informed test and in the inverted test (conventional labelled as organic). This effect was higher for students with stronger attitudes towards organic food. These results indicated that the perceived differences between organic and conventional leafy green by university students tended to be attitudinal and, therefore, can be greatly influenced by the information provided with the product. Originality/value This research showed that university students were influenced by the organic label, revealing their sensory perception about vegetables. This study had multiple methodological approaches, including hedonic scaling and consumers’ WTB. This combination allowed identifying the students’ attitudinal tendency in relation to their sensory perceptions of organic green leafy green vegetables.

Orientador: Leda Maria Caira Gitahy Tese (doutorado) - Universidade Estadual de Campinas, Instituto de Geociências Resumo: O objetivo desta tese é entender o processo de transformação na cadeia produtiva da laranja no estado de São Paulo a partir da análise das mudanças tecnológicas introduzidas no setor produtor de laranja ao longo dos anos 2000. O estudo foca as mudanças tecnológicas relativas ao combate de doenças na lavoura citrícola, buscando analisar as controvérsias e as relações de poder presentes no processo de apropriação dessas tecnologias. As negociações em torno das formas de combate à doença da laranja conhecida como Huanglongbing (HLB ou greening) constituem o estudo de caso central na tese. O trabalho combinou a utilização de duas abordagens teóricas distintas: a cadeia global de mercadorias (global commodity chains) e a teoria ator-rede (actor network theory). A investigação também compreendeu a análise de dados empíricos a partir da realização de pesquisa de campo com diferentes estratos de produtores rurais de laranja e representantes institucionais da cadeia. Foi possível verificar que as políticas fitossanitárias de combate ao greening divulgadas pelos órgãos públicos e entidades representantes do setor não conseguiram conter o avanço da doença. Estes falharam em traduzir os interesses dos atores envolvidos na produção da laranja ao reduzir o controle a uma questão técnica desconsiderando o quadro de crise e de ampliação de assimetrias de poder na cadeia produtiva. Apesar da base técnica de controle de doenças adotada no setor apresentar sinais de esgotamento, medidas alternativas de controle esbarram nas exigências competitivas ditadas pelo modelo agrícola do setor e pela estrutura de governança da cadeia produtiva de laranja. Com o avanço do greening pelo estado de São Paulo desencadeia-se um processo de transformação sócio-técnica na cadeia produtiva da laranja cujas características principais são a crescente tecnificação do processo de produção e a ampliação das barreiras à permanência de produtores no setor Abstract: The aim of this thesis is to understand the current transformation process in the orange production chain in Sao Paulo state on the basis of an analysis of technological changes in the sector over the years 2000. The study focuses on the technologies designed to combat diseases in citrus crops, trying to analyze the controversies and power relations present in the process of adoption of these technologies. Negotiations over the ways to combat the citrus disease known as Huanglongbing (HLB or greening) are the central case study in the thesis. The study combined the use of two distinct theoretical approaches: global commodity chains and actor network theory. The investigation also included the analysis of empirical data gathered through field research conducted with different strata of orange producers and institutional representatives of the productive chain. It was verified that the phytosanitary policies conducted by public entities and institutional representatives to combat the greening failed to contain the spread of the disease. These policies failed to translate the interests of the actors involved in orange production because they limited the combat of the disease to a technical issue ignoring the context of the crisis and the expansion of power asymmetries in the orange production chain. Despite the technical basis of disease control have shown signs of exhaustion, the adoption of alternative methods of control were restricted by the competitive requirements dictated by the "modern" agriculture pattern and the governance structure of the productive chain.
