Abstract Bivalve mollusc meat—that from mussels, clams, and oysters—offers a highly sustainable and nutritious alternative to meat from other shellfish, fish, or livestock. However, bivalves are an unpopular mass market food relative to these other meat items, limiting our ability to reap potential environmental and health benefits. Hence, this study aimed to assess current barriers to and drivers for bivalve consumption and investigated whether offering bivalves in a highly transformed (i.e., more processed) product format might help to drive consumption. The United Kingdom was used as a case study, and the study was performed via an online survey. Nutrition and quality of ingredients were key drivers, and price and convenience key barriers to bivalve consumption, with views on taste/smell/texture mixed. The more regularly individuals consumed meat, the more willing they were to try bivalves, and those who thought bivalves were healthier or more environmentally friendly than livestock were more likely to substitute bivalves for meat. Importantly, individuals were more willing to substitute highly transformed than minimally transformed (i.e., unprocessed) meats for bivalves. They were also willing to pay more for highly transformed bivalves than any other highly transformed meat product. We suggest that greater publicity regarding the health and environmental benefits of bivalve meat, and industry engagement to develop and pilot a greater range of appealing, affordable, and convenient bivalve products, are key actions that can help drive growth in the bivalve sector for planetary benefit.

Abstract Numerous policy and international frameworks consider that “destructive fishing” hampers efforts to reach sustainability goals. Though ubiquitous, “destructive fishing” is undefined and therefore currently immeasurable. Here we propose a definition developed through expert consultation: “Destructive fishing is any fishing practice that causes irrecoverable habitat degradation, or which causes significant adverse environmental impacts, results in long‐term declines in target or nontarget species beyond biologically safe limits and has negative livelihood impacts.” We show strong stakeholder support for a definition, consensus on many biological and ecological dimensions, and no clustering of respondents from different sectors. Our consensus definition is a significant step toward defining sustainable fisheries goals and will help interpret and implement global political commitments which utilize the term “destructive fishing.” Our definition and results will help reinforce the Food and Agricultural Organization's Code of Conduct and meaningfully support member countries to prohibit destructive fishing practices.

Abstract Non-technical Summary In decision-making, especially for sustainability, choosing the right assessment tools is crucial but challenging due to the abundance of options. A new method is introduced to streamline this process, aiding policymakers and managers. This method involves four phases: scoping, cataloging, selection, and validation, combining data analysis with stakeholder engagement. Using the food system as an example, the approach demonstrates how practitioners can select tools effectively based on input variables and desired outcomes to address sustainability risks. This method can be applied across various sectors, offering a systematic way to enhance decision-making and manage sustainability effectively. Technical Summary Decision making frequently entails the selection and application of assessment tools. For sustainability decisions there are a plethora of tools available for environmental assessment, yet no established and clear approach to determine which tools are appropriate and resource efficient for application. Here we present an extensive inventory of tools and a novel taxonomic method which enables efficient, effective tool selection to improve decision making for policymakers and managers. The tool selection methodology follows four main phases based on the divergence-convergence logic; a scoping phase, cataloging phase, selection phase and validation phase. This approach combines elements of data-driven analysis with participatory techniques for stakeholder engagement to achieve buy-in and to ensure efficient management of progress and agile course correction when needed. It builds on the current limited range and scope of approaches to tool selection, and is flexible and Artificial Intelligence-ready in order to facilitate more rapid integration and uptake. Using the food system as a case study, we demonstrate how practitioners can use available input variables and desired output metrics to select the most appropriate tools to manage sustainability risks, with the approach having wide applicability to other sectors. Abstract Non-technical summary Global conflicts and the pandemic reveal the risks of food import reliance. In the UK, pandemic, Brexit, and Ukraine war caused food price spikes. To bolster food security, the UK needs to produce and consume more domestically, including nutrient-rich bivalve mollusks. Current mollusk exports hinder domestic food sources. Promoting domestic consumption through convenient, attractive products and taxing unhealthy processed foods can help. Reducing reliance on food trade is crucial amid global instability and climate change. The UK's mollusk export issues illustrate food security risks of excessive reliance on international trade. Technical summary Here we examine the critical issue of food security in the context of international volatility, emphasizing the risks associated with an excessive reliance on food trade. The UK's experience with disruptions caused by the pandemic, Brexit, and the Ukraine war, resulting in a significant surge in food prices, serves as a pertinent case study. The research underscores the potential benefits of increasing domestic food production and consumption to enhance resilience against global events. The UK's current production, export, and import statistics are analyzed, with a particular focus on the fish and seafood sector. The study highlights the bivalve mollusk industry, such as blue mussels, as an example of an underutilized domestic resource. Bivalve mollusks are rich in essential micronutrients, yet their consumption in the UK is low compared to other countries. We propose strategies to boost domestic demand, including incorporating bivalve meat into processed food products, utilizing advanced technologies to improve taste and texture, and government intervention through taxes on unhealthy processed foods to promote better nutritional profiles. In summary, the study emphasizes the need for greater self-sufficiency in food production to mitigate vulnerabilities resulting from an overreliance on food trade in the context of international conflicts and climate change. We face a food crisis. Suboptimal diet is the biggest cause of death worldwide, food production the biggest greenhouse gas emitting sector, and by 2050 an extra 2.5 billion people need affordable nutrition. Current farming systems will fail to tackle this crisis, and there is an urgent need to diversify global food production and find effective solutions in currently underexploited food sectors. Shipworms, or shell-less Teredo clams, could prove a highly valuable component of such solutions. Historically viewed as a marine pest, they have unique physiological characteristics which make them an ideal food source, including exceptionally fast growth rates, the ability to feed on waste wood or sustainable microalgae, and a high protein and omega 3 content. Today only a select few traditional cultures in the Philippines consume shipworms, but there is considerable opportunity to develop mechanisms to farm shipworms and provide a sustainable, nutrient rich, affordable food source. This will require significant challenges to be overcome, ranging from fundamental research to industry development to food processing and marketing. Leveraging new innovations in breeding, aquaculture feeds, growth systems, food processing methodologies and consumer engagement can however offer powerful solutions, and could help turn what was once a maritime villain into a nutritional savior.

Over two billion people worldwide are micronutrient deficient, with regionally specific deficiencies. Fortification of food with micronutrients has become an industry standard for enhancing public health. Bivalve shellfish (e.g., oysters, clams, and mussels) provide the most sustainable source of animal protein on the planet, and the market is rapidly growing—with production in China increasing 1,000-fold since 1980 to an annual 36 kg capita−1 consumption level. Bivalves are also unique in that micronutrients consumed at their end-life stage will be digested by humans, as humans consume the entire organism including the gut. We have developed a novel microencapsulated vehicle for delivering micronutrients to bivalves, tailored for optimal size, shape, buoyancy, and palatability, demonstrating the potential of fortified bivalves to tackle human nutrient deficiencies. Oysters fed vitamin A and D microcapsules at a 3% initial dosage for just 8 h had elevated tissue vitamin content. A serving of just two such bivalves provides enough vitamin A and D to meet human dietary RDAs. Scale-up of this technology and application to other bivalve species including clams and mussels could provide a low-cost and highly sustainable mechanism to contribute toward tackling nutrient deficiencies globally.

Species extinctions are occurring at an unprecedented rate and there is a global need to understand whether conservation effort is appropriately allocated to protect those species at risk. In this study three major measures of global conservation effort across IUCN Red List Threats and Habitats were assessed; staff time spent by the largest cluster of conservation organizations in the world—Cambridge Conservation Initiative, efforts by international NGOs through social media, and global conservation research publications since the year 2000. We find global conservation effort is generally aligned with global conservation priorities, but there are important outliers. Shrublands and rocky areas receive disproportionately little investment across all effort measures relative to the number of high extinction risk species, threats from residential and commercial development receive relatively low research and time investment despite social media attention, while marine areas and climate change receive more attention than expected. Governments and society must make critical conservation decisions in the context of rapid global change, and there is potential for key Threats or Habitats to receive less attention than required. The global conservation community would be wise to carefully consider and improve its understanding of effort-priority mismatches if the greatest number of high extinction risk species are to be protected.

Abstract Amidst a global food crisis, securing sustainable food sources is vital. Bivalves such as Naked Clams, historically known as shipworms, offer a promising solution due to their low environmental impact, high nutritional value, and rapid growth rates. Contrary to their image as pests, Naked Clams are the fastest growing bivalves and have various health benefits. Believed to be the world's first aquaculture species, cultivated by Aboriginal Australians 8000 years ago, they are a delicacy in Southeast Asia. Public perception of Naked Clams remains largely unexplored, hindered by their association as pests and worm‐like appearance. This study assesses the perception of Naked Clams through social media, analyzing 40 posts across Facebook, Instagram, TikTok, and YouTube, with millions of views and likes. Analysis of nearly 8000 comments revealed that public perception was split, though generally more positive than negative. Concerns included appearance, potential religious dietary conflicts, and the risk of parasites, which can be addressed with educational campaigns. Importantly, 84% of commenters who tried Naked Clams reported liking them. Naked Clams are noted for their high protein content, nutrient density, and health benefits, and are enjoyed in diverse culinary forms, from traditional raw dishes, to battered calamari‐style street foods, to innovative recipes like Naked Clam ice cream. This study highlights the untapped potential of Naked Clams in global diets and calls for further exploration into moving Naked Clams from “gross to gourmet.”
