During weaning, piglets experience concurrent social, physical, and nutritional stressors. Consequently, piglets often have poor feed intake and display increased oral manipulative behaviours post-weaning, indicative of compromised welfare. Black soldier fly larvae (BSFL) possess many attractive properties for pigs and could therefore function as effective edible enrichment, potentially alleviating weaning stress by facilitating exploration and promoting feed intake. In this study, pairs of piglets received a small amount of either live BSFL or wood shavings (8 pens/treatment) scattered throughout the pen twice a day for 11 days after weaning. Home-pen behaviour was scored by instantaneous scan sampling on day 2, 5 and 8, and behavioural responses to a novel environment and novel object were scored on day 10/11. Performance-related parameters were observed regularly. Larvae provisioning increased floor-directed exploration and decreased object-directed exploration, pig-directed oral manipulation, fighting and eating of pellets, and reduced neophobia towards a novel object. Pellet intake was significantly decreased by BSFL provisioning during day 4–11 post-weaning, although feed and net energy intake including BSFL never differed between treatments. BSFL provisioning did not influence piglet growth, feed efficiency, energy efficiency, and faecal consistency. To conclude, live BSFL provisioning positively affected post-weaning piglet behaviour while maintaining performance.

In the last two decades, poultry and animal industries became increasingly interested in using plant-based feed supplements, herbs and their derivatives to retain or enhance their health and productivity. These health benefits for the host mainly attributed to the secondary plant metabolites, namely polyphenols. Polyphenols are renowned for their antioxidant, immunomodulatory, anti-mutagenic and anti-inflammatory properties. However, despite these advantages of polyphenols, they have been characterized by poor absorption in the gut and low concentration in target cells that compromise their role as effective antioxidants. The low bioavailability of polyphenols necessitates the need for further investigations to harness their full potential in poultry farms. This review is existing evidence about the bioavailability of polyphenols and their antioxidant, immunomodulatory, antimicrobial, detoxification properties and their impacts on poultry performance.

The apparent total tract digestibility (ATTD) of nutrients can be assessed by total collection of faeces (TC), which is the reference method, or by the indicator method (IM). Little information is available on proper faecal sampling methodologies for IM in canines to obtain results comparable to TC. The objective of this study was to determine the minimum number of sub-samples required for the IM to make it comparable with TC. A total of 11 adult male dogs were individually housed in metabolism cages. Dogs had access to a grass yard to facilitate defaecation. Faecal sub-samples (1/day) were taken from the daily faecal output to prepare the pooled samples for IM, obtaining cumulative sample combinations of 3 (IM3), 4 (IM4), 5 (IM5), 6 (IM6) and 7 d (IM7). Digestibility of dry matter, gross energy, crude protein and crude fibre was similar between TC and IM5, IM6 and IM7 (p > 0.05). The IM7 presented the greatest statistical similarity with TC. Nevertheless, IM was not a good predictor of crude fibre digestibility. In conclusion, IM can replace the TC method in dogs to evaluate ATTD of several nutritional fractions as long as the composite sample is collected during seven consecutive days. For estimation of fibre digestibility by IM, longer collection periods are probably required.

This research was conducted to determine the effects of phosphorus (P), calcium (Ca), and magnesium (Mg) content in pasture with body weight and body condition scores in cattle depending entirely on natural grazing. The work was done in 2006 in Mogosane Village of North-West Province, South Africa, and it was conducted from March 2006 to March 2007, with the annual rainfall of 384.38 mm maximum. A total of 25 growing mixed breed cattle aged between 6 months and 2 years old were selected randomly from a herd feeding exclusively on communal grazing. Animals were depending on natural pasture, with no supplements given. Records of body mass (BM) and body condition score (BCS) were recorded from a diverse range of animals in order to include as many different body masses and body condition scores as possible. Mean BM and BCS values are reported but there were no significant (P > 0.05) differences between months. Possible reasons are given in the “Results and Discussion” section. The focus of the research reported here was on the changes in the P, Ca, and Mg concentrations of pasture. The process of designing and implementing individualized health-promoting interventions, nutritional or otherwise, is fraught with great difficulty owing to the heterogeneity inherent in factors that influence healthy longevity. This article proposes that careful attention to three principles—life course perspective, U-shaped thinking, and whole organism thinking—creates an attitudinal framework that can be used to reframe biological heterogeneity into the clinically relevant question: Who will benefit? The search for tools to cope with the complexity of this heterogeneity has been dominated by technological advances, including state-of-the-art “-omics” approaches and machine-based handling of “big data.” Here, it is proposed that language precision and nuanced category usage could provide critical tools for coping with heterogeneity, thereby enabling interventionalists to design and implement strategies to promote healthy longevity with greater precision. The lack of a clear understanding of “Who will benefit?” stands as a major obstacle to the design and implementation of nutritional strategies to optimize healthy longevity. This article opens a new dialogue situating the principles of life course perspective, U-shaped thinking, and whole organism thinking, along with cultivating an attitude of language precision at the very core of accelerating creative discovery and refining practical advance in the field of nutrition science.

Both genetic selection and increasing nutrient density for improving growth performance had inadvertently increased leg problems of meat ducks, which adversely affects animal welfare. We hypothesised that slowing weight gain with improving tibia quality probably enhanced tibial mechanical properties and alleviated leg deformities. Therefore, the present study aimed to evaluate the effect of graded Ca supplementation in a low-nutrient density (LND) diet on tibia composition and bone turnover in meat ducks. A total of 720 15-d-old male meat ducks were randomly assigned and fed a standard nutrient density positive control (PC) diet containing 0·9 % Ca, and four LND diets with 0·5, 0·7, 0·9 and 1·1 % Ca, respectively. Ducks fed the 0·5 % Ca LND diet and the PC diet had higher incidence of tibial dyschondroplasia (TD). When compared with the 0·5 % Ca LND diet, LND diets with ≥0·7 % Ca significantly improved tibia composition, microarchitecture and mechanical properties, and consequently decreased the incidence of TD. Furthermore, LND diets with ≥0·7 % Ca increased osteocyte-specific gene mRNA expression, blocked the expression of osteoblast differentiation marker genes including osteocalcin, collagenase-1 and alkaline phosphatase (ALP), and also decreased the expression of osteoclast differentiation genes, such as vacuolar-type H+-ATPase, cathepsin K and receptor activator of NF-κB. Meanwhile bone markers such as serum ALP, osteocalcin (both osteoblast markers) and tartrate-resistant acid phosphatase (an osteoclast marker) were significantly decreased in at least 0·7 % Ca treated groups. These findings indicated that LND diets with ≥0·7 % Ca decreased bone turnover, which subsequently increased tibia quality for 35-d-old meat ducks.

To investigate the effects of environmental temperature and dietary Zn on egg production performance, egg quality and antioxidant status, as well as expression of heat-shock proteins (HSP) in tissues, of laying broiler breeders, we used a completely randomised design with a 2×3 factorial arrangement of treatments. The two environmental temperatures were normal (21±1°C, NT) and high (32±1°C, HT). The three dietary Zn sources were a Zn-unsupplemented basal diet (CON), and the basal diet supplemented with 110 mg Zn/kg as either the inorganic Zn sulphate (iZn) or the organic Zn proteinate with a moderate chelation strength (oZn). HT decreased (PP≤0·05) rectal temperature, broken egg rate, misshapen egg rate, feed:egg ratio, Cu Zn superoxide dismutase activities in liver and pancreas, as well as metallothionein (MT) level in pancreas, andHSP70mRNA levels in liver and pancreas of laying broiler breeders. Broiler breeders fed the oZn diet had higher (PPHSPhomoeostasis, whereas the oZn is more available than the iZn for pancreatic Zn of heat-stressed laying broiler breeders.

Over the last 27 years (1990-2017), based on the revolutionary progresses of basic nutrition research, novel methods and techniques have been developed which bring a profound technological revolution to pig production from free-range system to intensive farming all over the world. Basic theoretical innovations and feed production studies have provided vital advancements in pig nutrition by developing formula feed, utilizing balanced diets, determining feed energy value, dividing pig physiological stages, enhancing gut health, and improving feed processing technique. Formula feed is the primary contributor of the rise of the mechanized farming industry, and meets comprehensive nutritional needs of the pig. The focuses of the development of a balanced diet by optimizing nutrient levels are the amino acids balance, the balance between amino acids and energy, the balance between calcium and phosphorus. Multiple-site-production and targeted feeding program have been applied extensively. Early weaning of piglets improves production efficiency, but piglets that have not yet fully developed their intestine are prone to diarrhea. Therefore, intestinal health has received special attention in recent years. Feed processing technologies, such as granulation, puffing, fermentation and enzymatic hydrolysis, can improve the utilization of feed nutrients and reduce production cost. However, increasing a sow's potential for production, seeking alternatives to antibiotics, reducing drug treatment in piglets, developing functional additives and improving meat quality remain future challenges. Herein, we outline the important progresses of pig nutrition in the past 27 years, which will shed light on the basic nutrition rules of pig production, and help to push forward its future development. © 2018 Society of Chemical Industry.

What is a good (useful) mathematical model in animal science? For models constructed for prediction purposes, the question of model adequacy (usefulness) has been traditionally tackled by statistical analysis applied to observed experimental data relative to model-predicted variables. However, little attention has been paid to analytic tools that exploit the mathematical properties of the model equations. For example, in the context of model calibration, before attempting a numerical estimation of the model parameters, we might want to know if we have any chance of success in estimating a unique best value of the model parameters from available measurements. This question of uniqueness is referred to as structural identifiability; a mathematical property that is defined on the sole basis of the model structure within a hypothetical ideal experiment determined by a setting of model inputs (stimuli) and observable variables (measurements). Structural identifiability analysis applied to dynamic models described by ordinary differential equations (ODEs) is a common practice in control engineering and system identification. This analysis demands mathematical technicalities that are beyond the academic background of animal science, which might explain the lack of pervasiveness of identifiability analysis in animal science modelling. To fill this gap, in this paper we address the analysis of structural identifiability from a practitioner perspective by capitalizing on the use of dedicated software tools. Our objectives are (i) to provide a comprehensive explanation of the structural identifiability notion for the community of animal science modelling, (ii) to assess the relevance of identifiability analysis in animal science modelling and (iii) to motivate the community to use identifiability analysis in the modelling practice (when the identifiability question is relevant). We focus our study on ODE models. By using illustrative examples that include published mathematical models describing lactation in cattle, we show how structural identifiability analysis can contribute to advancing mathematical modelling in animal science towards the production of useful models and, moreover, highly informative experiments via optimal experiment design. Rather than attempting to impose a systematic identifiability analysis to the modelling community during model developments, we wish to open a window towards the discovery of a powerful tool for model construction and experiment design.

Fish skeletal muscles are composed of two distinct types, slow and fast muscles, and they play important roles in maintaining the body's movement and energy metabolism. The two types of muscle are easy to separate, so they are often used as the model system for studies on their physiological and functional characteristics. In this study, we revealed that the carbohydrate and lipid metabolic KEGG pathways are different between slow and fast muscles of Chinese perch with transcriptome analysis. In fast muscle, glucose metabolism was catabolic with higher glycolysis capacity, while in slow muscle, glucose metabolism was anabolic with more glycogen synthesis. In addition, oxidative metabolism in slow muscle was stronger than that in fast muscle. By analyzing the expression levels of 40 miRNAs involved in metabolism in the muscles of Chinese perch, 18 miRNAs were significantly upregulated and 7 were significantly downregulated in slow muscle compared with fast muscle. Based on functional enrichment analysis of their target genes, the differential expression levels of 17 miRNAs in slow and fast muscles were reflected in their carbohydrate and lipid metabolism. Among these, 15 miRNAs were associated with carbohydrate metabolism, and 6 miRNAs were associated with lipid metabolism. After 3 days of starvation, the expression levels of 15 miRNAs involved in glucose metabolism in fast and slow muscles increased. However, after 7 days of starvation, the mRNA levels of miR-22a, miR-23a, miR-133a-3p, miR-139, miR-143, miR-144, miR-181a and miR-206 decreased to basal levels. Our data suggest that the possible reason for the difference in glucose and lipid metabolism is that more miRNAs inhibit the expression of target genes in slow muscle.

Edible insects such as black soldier fly larvae (BSFL) are alternative protein sources for animal feeds due to their high-protein content and potential low environmental footprint. However, protein quality and AA content may vary across insect species and age. Our objective was to determine the effects of age on nutrient and AA digestibility of BSFL intended for use in pet foods using the precision-fed cecectomized rooster assay. All animal procedures were approved by the University of Illinois Institutional Animal Care and Use Committee prior to experimentation. Twenty-four cecectomized roosters (four roosters per substrate) were randomly assigned to test substrates [BSFL0 = day 0 (day of hatch); BSFL11 = day 11; BSFL14 = day 14; BSFL18 = day 18; BSFL23 = day 23; BSFL29 = day 29]. After 24 h of feed withdrawal, roosters were tube-fed 20 g of test substrates. Following crop intubation, excreta were collected for 48 h. Endogenous corrections for AA were made using five additional cecectomized roosters. All data were analyzed using a completely randomized design and the GLM procedure of SAS 9.4. DM and OM digestibilities were not different among substrates, but acid-hydrolyzed fat digestibility tended to be greater (P < 0.10) for BSFL23 and BSFL29 than BSFL14 and BSFL18. Although all substrates had a high digestibility, BSFL0 and BSFL11 had the lowest (P < 0.05) digestibilities for most indispensable and dispensable AA. Digestible indispensable AA score (DIAAS)-like values were calculated to determine protein quality according to AAFCO nutrient profiles and NRC recommended allowances for dogs and cats. In general, BSFL18 had the highest, and BSFL11 had the lowest DIAAS-like values for most indispensable AA. Threonine, methionine, and tryptophan were often the first-limiting AA. Our results suggest that BSFL are a high-quality protein and AA source, but that age can affect the AA digestibility and protein quality of this alternative protein source.

To meet the challenges in the 21st century in pig and poultry nutrition, it is necessary to involve into the innovation activities besides classical animal nutrition knowledge, newer areas of natural and technical sciences (e.g. molecular biology, molecular nutrition, molecular genetics, nutrigenomics, information technology, etc.). The importance of these disciplines will continue to grow in the near future, in the following 5-10 years. Animal nutrition will need to increasingly focus on the production of safe and nutritious foods in a traceable manner produced within systems that care for the environment and animal welfare using ingredients not suitable for human consumption. The use of precision animal nutrition in practice greatly contributes to the changes required for the successful production of animal derived foods in the 21st century, as well as for the success of innovation activities. In order for the animal agricultural sector to be able to provide proper quantities of safe animal origin food materials to the food industry, there is a rapidly increasing need for better cooperation between medical and agricultural sciences on the basis of professional logic, as well as cooperation in R&DI programs and education. It is highly probable that new areas of science will revolutionise animal nutrition sciences such as bioinformatics, molecular biology, molecular nutrition, as well as quantum biology. These areas of science will greatly contribute to the development of animal nutrition science and, as a result, to a more efficient animal nutrition, as well as to a better quality and safe food base material production of animal origin.

The ability to maintain metabolic homeostasis is a key capability critical for the survival and well-being of animals living in constantly changing environments. Metabolic homeostasis depends on neuromodulators, such as biogenic amines, neuropeptides, and hormones, to signal changes in animals’ internal metabolic status and to orchestrate their behaviors accordingly. An important example is the regulation of feeding behavior by conserved molecular and cellular mechanisms across the animal kingdom. Its relatively simple brain coupled with well-characterized genetics and behavioral paradigms makes the fruit fly Drosophila melanogaster an excellent model for investigating the neuromodulatory regulation of feeding behavior. In this review we discuss the neuromodulators and neural circuits that integrate the internal physiological status with external sensory cues and modulate feeding behavior in adult fruit flies. Studies show that various specific aspects of feeding behavior are subjected to unique neuromodulatory regulation, which permits fruit flies to maintain metabolic homeostasis effectively.

Background Beliefs of pet owners strongly influence their decision-making surrounding their pets’ diet. Thus, nutritional guidance is an essential component of veterinary practice and integral to managing rising rates of pet obesity. This study examined pet owners’ trust of, perceived effectiveness of, and intentions to follow nutritional guidance received from their veterinarian in managing their pets’ diet. Methods A cross-sectional study of 1402 dog and cat owners in the USA and Canada was conducted using an online questionnaire tool. Data were analysed using descriptive statistics and logistic regression modelling. Results Clients are concerned about the effectiveness of veterinary nutrition recommendations. Cat owners were more likely than dog owners to consider the nutritional guidance they receive from veterinarians effective for their pets’ diet (1.75, P=0.04). Length of pet ownership, feeding dry diets and frequency of veterinary visits were all positively associated with owners considering veterinary nutritional guidance to be effective in managing pets’ diet. Conclusion Identifying these perspectives can aid in developing strategies to provide nutrition support to pet owners to improve their perceptions of, self-efficacy with, and compliance with veterinary nutrition recommendations.

This article reviews opportunities for enriching the lipids of meat with n-3 fatty acids and conjugated linoleic acids (CLAs), both considered beneficial to human health. Special focus is put on feeds available and research carried out in Thailand. A differentiated consideration concerning the value of different n-3 fatty acids and isomers of CLAs is necessary. In ruminants, it is difficult to enrich the meat with n-3 fatty acids due to the extensive ruminal biohydrogenation of unsaturated fatty acids, but several possibilities to enhance the proportion of the most desired CLA isomer, rumenic acid, exist. By contrast, pork and poultry meat can be easily enriched with n-3 fatty acids. With purified CLA sources, CLAs also can be enhanced, but it is difficult to achieve this exclusively for rumenic acid. An interesting approach might consist in supplementing the CLA precursor vaccenic acid instead. Possible constraints for meat quality and in the fatty acid levels achieved are outlined.

Increased global regulation and restrictions on the non-therapeutic use of antibiotics in the poultry industry means that there is a need to identify alternatives that prevent infection while still conveying the growth and performance benefits afforded by their use. Biochars are produced by the incomplete pyrolysis of organic materials, with reports of use as a feed supplement and activity against pathogenic bacteria. In the current study the dose-dependent effects of biochar dietary inclusion in layer diets at 1%, 2% and 4% w/w were investigated to determine a) the efficacy of biochar as an anti-pathogenic additive on the intestinal microbiota and b) the optimal inclusion level. Biochar inclusion for anti-pathogenic effects was found to be most beneficial at 2% w/w. Poultry pathogens such as Gallibacterium anatis and campylobacters, including Campylobacter hepaticus, were found to be significantly lower in biochar fed birds. A shift in microbiota was also associated with the incorporation of 2% w/w biochar in the feed in two large scale trials on two commercial layer farms. Biochar inclusion for anti-pathogenic effects was found to be most beneficial at 2% w/w. Differential effects of the timing of biochar administration (supplementation beginning at hatch or at point of lay) were also evident, with greater impact on community microbial structure at 48 weeks of age when birds were fed from hatch rather than supplemented at point of lay.

Nitrogen is a component of essential nutrients critical for the productivity of ruminants. If excreted in excess, N is also an important environmental pollutant contributing to acid deposition, eutrophication, human respiratory problems, and climate change. The complex microbial metabolic activity in the rumen and the effect on subsequent processes in the intestines and body tissues make the study of N metabolism in ruminants challenging compared with nonruminants. Therefore, using accurate and precise measurement techniques is imperative for obtaining reliable experimental results on N utilization by ruminants and evaluating the environmental impacts of N emission mitigation techniques. Changeover design experiments are as suitable as continuous ones for studying protein metabolism in ruminant animals, except when changes in body weight or carryover effects due to treatment are expected. Adaptation following a dietary change should be allowed for at least 2 (preferably 3) wk, and extended adaptation periods may be required if body pools can temporarily supply the nutrients studied. Dietary protein degradability in the rumen and intestines are feed characteristics determining the primary AA available to the host animal. They can be estimated using in situ, in vitro, or in vivo techniques with each having inherent advantages and disadvantages. Accurate, precise, and inexpensive laboratory assays for feed protein availability are still needed. Techniques used for direct determination of rumen microbial protein synthesis are laborious and expensive, and data variability can be unacceptably large; indirect approaches have not shown the level of accuracy required for widespread adoption. Techniques for studying postruminal digestion and absorption of nitrogenous compounds, urea recycling, and mammary AA metabolism are also laborious, expensive (especially the methods that use isotopes), and results can be variable, especially the methods based on measurements of digesta or blood flow. Volatile loss of N from feces and particularly urine can be substantial during collection, processing, and analysis of excreta, compromising the accuracy of measurements of total-tract N digestion and body N balance. In studying ruminant N metabolism, nutritionists should consider the longer term fate of manure N as well. Various techniques used to determine the effects of animal nutrition on total N, ammonia- or nitrous oxide-emitting potentials, as well as plant fertilizer value, of manure are available. Overall, methods to study ruminant N metabolism have been developed over 150 yr of animal nutrition research, but many of them are laborious and impractical for application on a large number of animals. An 8-week growth trial was conducted to evaluate the effects of dietary arginine (Arg) levels on growth, gut morphology, oxidation resistance and immunity of hybrid grouper (Epinephelus fuscoguttatus♀×Epinephelus lanceolatus♂) juveniles. Seven isoenergetic (1465 kJ (350 kcal)/100-g DM), isoproteic (53·5 % of DM) and isolipidic (7 % of DM) experimental diets were formulated to contain graded Arg levels ranging from 1·9 to 4·7 % (dry weight) at approximately 0·5 % increments. Each diet was randomly assigned to triplicate groups of 16 juvenile fish (average initial body weight: 11·7 (sd0·1) g) and was administered twice daily (08.00 and 16.00 hours). After the growth trial, all remaining fish were fed their prescribed diets for 2 d and then exposed to 4·5 mg Cu2+/l water for 36 h. Results showed that growth performance and feed utilisation of experimental fish were significantly affected by different dietary Arg levels. Weight gain % (WG%) of fish was increased as dietary Arg increased, reaching a peak value at 3·8 % dietary Arg level, and when dietary Arg level increased to 4·7 % WG% was reduced. Fish fed 1·9 and 2·2 % dietary Arg levels had higher daily feed intake compared with fish fed other dietary Arg levels. Feed conversion ratios in fish fed 1·9, 2·2, 2·7 and 4·7 % dietary Arg levels were higher than those in fish fed 3·1, 3·8 and 4·1 % dietary Arg levels. Protein efficiency ratio and protein productive value (PPV) increased with an increase in dietary Arg, up to a peak value at 3·8 % dietary Arg level, above which these parameters declined. On the basis of quadratic regression analysis of weight gain % (WG%) or PPV against dietary Arg levels, the optimal dietary Arg requirement for hybrid grouper was estimated to be 3·65 %. Fish fed 3·8 % dietary Arg had higher whole-body and muscle protein contents compared with fish fed other dietary Arg levels. Fish fed 3·8 and 4·1 % dietary Arg levels had higher levels of mRNA for insulin-like growth factor-I and target of rapamycin in the liver compared with fish fed other dietary Arg levels. Hepatic S6 kinase 1 mRNA expression in fish fed 3·8 % dietary Arg level was higher than that in fish fed any of the other dietary Arg levels. Gut morphology, hepatic antioxidant indices and immune indices in serum and head kidney were significantly influenced by dietary Arg levels. In conclusion, the optimal dietary Arg requirement for hybrid grouper was estimated to be 3·65 %, and suitable dietary Arg supplementations improved gut morphology and oxidation resistance of hybrid grouper.

This experiment was conducted to investigate the effects of guanidinoacetic acid (GAA) on productive performance, intestinal morphometric features, blood parameters and energy utilisation in broiler chickens. A total of 390 male broiler chicks (Ross 308) were assigned to six dietary treatments based on a factorial arrangement (2×3) across 1–15 and 15–35-d periods. Experimental treatments consisted of two basal diets with standard (STD; starter: 12·56 MJ/kg and grower: 12·97 MJ/kg) and reduction (LME; starter: 11·93 MJ/kg and grower: 12·33 MJ/kg) of apparent metabolisable energy (AME) requirement of broiler chickens each supplemented with 0, 0·6 and 1·2 g/kg GAA. Supplemental 1·2 g/kg GAA decreased the negative effects of feed energy reduction on weight gain across starter, growing and the entire production phases (PPp) and total heat production increased in birds fed LME diets containing 1·2 g/kg GAA (Pp and weight gain of broilers (r 0·493; P=0·0055), whereas this relationship was not seen with AME. Jejunal villus height and crypt depth were lower in birds fed LME diets (PPp. The NEp could be preferred over the AME to assess response of broiler chickens to dietary GAA supplementation.

Recently available downscaled ocean climate models for the Bering Sea and Aleutian Arc offer the opportunity to assess climate vulnerability for upper trophic level consumers such as marine birds. We analyzed seasonal and annual spatial projections from three climate models for two physical climate variables (seawater temperature and sea ice) and three forage variables (large copepods, euphausiids, and benthic infauna), comparing projected conditions from a recent time period (2003–2012) to a future time period (2030–2039). We focused the analyses on core areas within globally significant Important Bird Areas, and developed indices of the magnitude of projected change and vulnerability agreement among models. All three climate models indicated a high degree of change for seawater temperature warming (highest in the central and eastern Aleutian Islands) and ice loss (most significant in the eastern Bering Sea) across scales, and we found those changes to be significant for every species and virtually every core area assessed. There was low model agreement for the forage variables; while the majority of core areas were identified as climate vulnerable by one or more models (72% for large copepods, 73% for euphausiids, and 94% for benthic infauna), very few were agreed upon by all three models (only 6% of euphausiid-forager core areas). Based on the magnitude-agreement score, euphausiid biomass decline affected core areas for fulmars, gulls, and auklets, especially along the outer shelf and Aleutian Islands. Benthic biomass decline affected eiders along the inner shelf, and large copepod decline was significant for storm-petrels and auklets in the western Aleutians. Overall, 12% of core areas indicated climate vulnerability for all variables assessed. Modeling and interpreting biological parameters to project future dynamics remains complex; the strong signal for projected physical changes raised concerns about lagged responses such as distribution shifts, breeding failures, mortality events, and population declines.

Advanced synchrotron radiation-based infrared microspectroscopy is able to reveal feed and food structure feature at cellular and molecular levels and simultaneously provides composition, structure, environment, and chemistry within intact tissue. However, to date, this advanced synchrotron-based technique is still seldom known to food and feed scientists. This article aims to provide detailed background for flaxseed (oil seed) protein research and then review recent progress and development in flaxseed research in ruminant nutrition in the areas of (1) dietary inclusion of flaxseed in rations; (2) heat processing effect; (3) assessing dietary protein; (4) synchrotron-based Fourier transform infrared microspectroscopy as a tool of nutritive evaluation within cellular and subcellular dimensions; (5) recent synchrotron applications in flaxseed research on a molecular basis. The information described in this paper gives better insight in flaxseed research progress and update.

The Drosophila lymph gland is the hematopoietic organ in which stem-like progenitors proliferate and give rise to myeloid-type blood cells. Mechanisms involved in Drosophila hematopoiesis are well established and known to be conserved in the vertebrate system. Recent studies in Drosophila lymph gland have provided novel insights into how external and internal stresses integrate into blood progenitor maintenance mechanisms and the control of blood cell fate decision. In this review, I will introduce a developmental overview of the Drosophila hematopoietic system, and recent understandings of how the system uses developmental signals not only for hematopoiesis but also as sensors for stress and environmental changes to elicit necessary blood responses. 16 páginas, 3 tablas, 2 figuras., The objective of this study was to compare the automated ribosomal intergenic spacer analysis (ARISA) and the denaturing gradient gel electrophoresis (DGGE) techniques for analysing the effects of diet on diversity in bacterial pellets isolated from the liquid (liquid-associated bacteria (LAB)) and solid (solid-associated bacteria (SAB)) phase of the rumen. The four experimental diets contained forage to concentrate ratios of 70:30 or 30:70 and had either alfalfa hay or grass hay as forage. Four rumen-fistulated animals (two sheep and two goats) received the diets in a Latin square design. Bacterial pellets (LAB and SAB) were isolated at 2 h post-feeding for DNA extraction and analysed by ARISA and DGGE. The number of peaks in individual samples ranged from 48 to 99 for LAB and from 41 to 95 for SAB with ARISA, and values of DGGE-bands ranged from 27 to 50 for LAB and from 18 to 45 for SAB. The implementation of precision feeding in growing–finishing facilities requires accurate estimates of the animals’ nutrient requirements. The objectives of the current study was to validate a method for estimating the real-time individual standardized ileal digestible (SID) lysine (Lys) requirements of growing–finishing pigs and the ability of this method to estimate the Lys requirements of pigs with different feed intake and growth patterns. Seventy-five pigs from a terminal cross and 72 pigs from a maternal cross were used in two 28-day experimental phases beginning at 25.8 (±2.5) and 73.3 (±5.2) kg BW, respectively. Treatments were randomly assigned to pigs within each experimental phase according to a 2×4 factorial design in which the two genetic lines and four dietary SID Lys levels (70%, 85%, 100% and 115% of the requirements estimated by the factorial method developed for precision feeding) were the main factors. Individual pigs’ Lys requirements were estimated daily using a factorial approach based on their feed intake, BW and weight gain patterns. From 25 to 50 kg BW, this method slightly underestimated the pigs’ SID Lys requirements, given that maximum protein deposition and weight gain were achieved at 115% of SID Lys requirements. However, the best gain-to-feed ratio (G : F) was obtained at a level of 85% or more of the estimated Lys requirement. From 70 to 100 kg, the method adequately estimated the pigs’ individual requirements, given that maximum performance was achieved at 100% of Lys requirements. Terminal line pigs ate more (P=0.04) during the first experimental phase and tended to eat more (P=0.10) during the second phase than the maternal line pigs but both genetic lines had similar ADG and protein deposition rates during the two phases. The factorial method used in this study to estimate individual daily SID Lys requirements was able to accommodate the small genetic differences in feed intake, and it was concluded that this method can be used in precision feeding systems without adjustments. However, the method’s ability to accommodate large genetic differences in feed intake and protein deposition patterns needs to be studied further.

Because most research on rabbit husbandry, welfare, and nutrition was performed on production animals, evidence for best practices in pet rabbits is scarce, and guidelines must be based on transfer of results, deduction, and common sense. Rabbits benefit from being kept with at least one conspecific; from large enclosures and multistory hutches; from drinking water offered ad libitum in open dish drinker systems; and from receiving hay ad libitum, with restricted amounts of fresh grass, herbs, or green leafy vegetables, and a high-fiber complete diet. Offering hay ad libitum bears several advantages and should be considered a matter of course.

Our knowledge of the role of carbohydrates in dairy cattle nutrition has advanced substantially in the 100 years of the publication of the Journal of Dairy Science. In this review, we trace the history of scientific investigation and discovery from crude fiber, nitrogen-free extract, and "unidentified factors" to our present analytical schemes and understanding of ruminal and whole-animal utilization and effects of dietary carbohydrates. Historically, advances in research and new feeding standards occurred in parallel with and fostered by new methods of analysis. The 100 years of research reviewed here has bequeathed to us an impressive legacy of information, which we will continue to grow.

Considerable progress has been made in understanding the protein and amino acid (AA) nutrition of dairy cows. The chemistry of feed crude protein (CP) appears to be well understood, as is the mechanism of ruminal protein degradation by rumen bacteria and protozoa. It has been shown that ammonia released from AA degradation in the rumen is used for bacterial protein formation and that urea can be a useful N supplement when lower protein diets are fed. It is now well documented that adequate rumen ammonia levels must be maintained for maximal synthesis of microbial protein and that a deficiency of rumen-degradable protein can decrease microbial protein synthesis, fiber digestibility, and feed intake. Rumen-synthesized microbial protein accounts for most of the CP flowing to the small intestine and is considered a high-quality protein for dairy cows because of apparent high digestibility and good AA composition. Much attention has been given to evaluating different methods to quantify ruminal protein degradation and escape and for measuring ruminal outflows of microbial protein and rumen-undegraded feed protein. The methods and accompanying results are used to determine the nutritional value of protein supplements and to develop nutritional models and evaluate their predictive ability. Lysine, methionine, and histidine have been identified most often as the most-limiting amino acids, with rumen-protected forms of lysine and methionine available for ration supplementation. Guidelines for protein feeding have evolved from simple feeding standards for dietary CP to more complex nutrition models that are designed to predict supplies and requirements for rumen ammonia and peptides and intestinally absorbable AA. The industry awaits more robust and mechanistic models for predicting supplies and requirements of rumen-available N and absorbed AA. Such models will be useful in allowing for feeding lower protein diets and increased efficiency of microbial protein synthesis.

We have seen remarkable advances in animal productivity in the last 75 years, with annual milk yield per cow increasing over 4-fold and no evidence of nearing a plateau. Because of these gains in productive efficiency, there have been dramatic reductions in resource inputs and the carbon footprint per unit of milk produced. The primary source for the historic gains relates to animal variation in nutrient partitioning. The regulation of nutrient use for productive functions has the overall goal of maintaining the cow's well-being regardless of the physiological or environmental challenges. From a conceptual standpoint, it involves both acute homeostatic controls operating on a minute-by-minute basis and chronic homeorhetic controls operating on a long-term basis to provide orchestrated adaptations that coordinate tissues and body processes. This endocrine regulation is mediated by changes in circulating anabolic and catabolic hormones, hormone membrane receptors and intracellular signaling pathways. The coordination of tissues and physiological systems includes a plethora of hormones, but insulin and somatotropin are 2 key regulators of nutrient trafficking. Herein, we review the advances in our understanding of both conceptual and actual regulation of nutrient partitioning in support of milk synthesis and identify examples of the challenges and future opportunities in dairy science.

Mineral and vitamin nutrition of dairy cows was studied before the first volume of the Journal of Dairy Science was published and is still actively researched today. The initial studies on mineral nutrition of dairy cows were simple balance experiments (although the methods available at the time for measuring minerals were anything but simple). Output of Ca and P in feces, urine, and milk was subtracted from intake of Ca and P, and if values were negative it was often assumed that cows were lacking in the particular mineral. As analytical methods improved, more minerals were found to be required by dairy cows, and blood and tissue concentrations became primary response variables. Those measures often were poorly related to cow health, leading to the use of disease prevalence and immune function as a measure of mineral adequacy. As data were generated, mineral requirements became more accurate and included more sources of variation. In addition to milk yield and body weight inputs, bioavailability coefficients of minerals from different sources are used to formulate diets that can meet the needs of the cow without excessive excretion of minerals in manure, which negatively affects the environment. Milk, or more accurately the lack of milk in human diets, was central to the discovery of vitamins, but research into vitamin nutrition of cows developed slowly. For many decades bioassays were the only available method for measuring vitamin concentrations, which greatly limited research. The history of vitamin nutrition mirrors that of mineral nutrition. Among the first experiments conducted on vitamin nutrition of cows were those examining the factors affecting vitamin concentrations of milk. This was followed by determining the amount of vitamins needed to prevent deficiency diseases, which evolved into research to determine the amount of vitamins required to promote overall good health. The majority of research was conducted on vitamins A, D, and E because these vitamins have a dietary requirement, and clinical and marginal deficiencies became common as diets for cows changed from pasture and full exposure to the sun to stored forage and limited sun exposure. As researchers learned new functions of fat-soluble vitamins, requirements generally increased over time. Diets generally contain substantial amounts of B vitamins, and rumen bacteria can synthesize large quantities of many B vitamins; hence, research on water-soluble vitamins lagged behind. We now know that supplementation of specific water-soluble vitamins can enhance cow health and increase milk production in certain situations. Additional research is needed to define specific requirements for many water-soluble vitamins. Both mineral and vitamin research is hampered by the lack of sensitive biomarkers of status, but advanced molecular techniques may provide measures that respond to altered supply of minerals and vitamins and that are related to health or productive responses of the cow. The overall importance of proper mineral and vitamin nutrition is known, but as we discover new and more diverse functions, better supplementation strategies should lead to even better cow health and higher production.

Over 100 years, the Journal of Dairy Science has recorded incredible changes in the utilization of fat for dairy cattle. Fat has progressed from nothing more than a contaminant in some protein supplements to a valuable high-energy substitute for cereal grains, a valuable energy source in its own right, and a modifier of cellular metabolism that is under active investigation in the 21st century. Milestones in the use of fats for dairy cattle from 1917 to 2017 result from the combined efforts of noted scientists and industry personnel worldwide, with much of the research published in Journal of Dairy Science. We are humbled to have been asked to contribute to this historical collection of significant developments in fat research over the past 100 years. Our goal is not to detail all the work published as each development moved forward; rather, it is to point out when publication marked a significant change in thinking regarding use of fat supplements. This approach forced omission of critically important names and publications in many journals as ideas moved forward. However, we hope that a description of the major changes in fat feeding during the past 100 years will stimulate reflection on progress in fat research and encourage further perusal of details of significant events.

The house cricket, Acheta domesticus L. (Orthoptera: Gryllidae) is one of the most important species of industrialized insects in the United States. Within the past five years the market of cricket powder as a food ingredient has been growing with increasing consumer interest on more sustainable sources of food. However, high labor costs of cricket production and high prices of cricket feed formulations result in cricket powder market prices much higher than other protein-rich food ingredients, making cricket powder only competitive within the novelty food market. In this study new diets formulated using by-products were developed using dietary self-selection followed by regression analysis. Crickets selected among seven different combinations of ingredients. Consumption ratios of food ingredients and by-products were used to determine macro and micro-nutrient intake. Regression analysis was used to determine the individual nutrient intake effect on cricket biomass production. Intake of vitamin C, sterol, manganese, and vitamins B1 and B5 had the most significant impact on live biomass production. Four diets were formulated based on this information and compared with a reference (Patton's 13) and a commercial diet. Although, crickets reared on Patton's diet 13 produced the most dry-weight biomass and developed the fastest, diet 4 (consisting of 92% by-products) generated the most profit (with a cost of $0.39 USD per kg) after an economic analysis that did not include the commercial formulation. Dry-weight biomass production was not significantly different among the four new diets and the commercial diet. This study demonstrated the value of dietary self-selection studies in developing oligidic insect diets and in studies of insect nutrition. This is the first such study involving farmed edible crickets and agricultural by-products. Four new cricket diet formulations contain between 62 and 92% agricultural by-products are included.

The feathers and diet items of grey heron (Ardea cinerea) and black-crowned night-heron (Nycticorax nycticorax) chicks were collected at the Pyeongtaek colony, Korea in 2002 and 2008, and Cd, Pb, Mn and Zn concentrations were measured. Cd and Zn concentrations were higher in both species in 2008 than 2002 and were higher in grey herons than black-crowned night-herons in 2002. In 2008, Cd concentrations were higher in black-crowned night-herons than grey herons; Zn concentrations did not differ between species. Pb and Mn concentrations did not differ between species; however, there were yearly differences. Cd, Pb and Zn concentrations of feathers and diet were significantly correlated when species and years were combined. However, the predictive power of these relationships was limited because of species and yearly differences. All heron chicks had concentrations of Cd (

Marker methodologies to measure ileal and total tract digestibilities of diets varying in content and degradability of dietary fiber in broiler chickens were evaluated. Chromium sesquioxide (Cr2O3) and cobalt-ethylenediamine tetraacetic acid (Co-EDTA) were used as markers of solid and soluble fractions, respectively, and compared with digestibility values obtained with the total collection method. Groups of broilers (n = 17, 11 broilers/group) were assigned to a low-fiber diet or 1 of 2 high-fiber diets, the latter 2 containing 35% rapeseed meal (RSM). Pectolytic enzymes were added to one RSM diet to improve degradability of the fiber fraction. Excreta were quantitatively collected for 96 h, and contents from ileum and ceca were collected at slaughter at 29, 30, or 31 d of age. Chromium recovery in excreta ranged between 86 and 95%, whereas cobalt recovery was considerably lower (66 to 70%). Chromium:cobalt ratio was higher in ileal digesta than in feed. Hardly any chromium was found in the ceca, indicating that separation of the marker and specific digesta fractions occurs. Estimates of apparent total tract digestibility (ATTD) were lower when calculated using the marker method compared with the total collection method, particularly in high-fiber diets. Using Cr2O3 as a marker, differences were relatively small and effects due to enzyme addition were generally similar. Conformation, genetics, and behavioral drive are the major determinants of success in canine athletes, although controllable variables, such as training and nutrition, play an important role. The scope and breadth of canine athletic events has expanded dramatically in the past 30 years, but with limited research on performance nutrition. There are considerable data examining nutritional physiology in endurance dogs and in sprinting dogs; however, nutritional studies for agility, field trial, and detection are rare. This article highlights basic nutritional physiology and interventions for exercise, and reviews newer investigations regarding aging working and service dogs, and canine detection activities.

The α-tocopherol transfer protein (α-TTP) is a ~32kDa cytosolic protein that plays an important role in the efficient circulation of plasma α-tocopherol in the body, a factor with great relevance in reproduction. The α-TTP gene has been studied in a number of tissues; however, its expression and function in some ovine tissues remain unclear. A previous study from our laboratory has demonstrated α-TTP expression in sheep liver. In the present study we determined whether α-TTP is expressed in non-liver tissues and investigated the effects of dietary vitamin E on the α-TTP mRNA levels. Thirty-five male Tan sheep with similar body weight were randomly allocated into five groups and supplemented 0, 20, 100, 200 and 2000IUsheep(-1)day(-1) vitamin E, for four months, respectively. At the end of the study, the animals were slaughtered and tissue samples from the heart, spleen, lung, kidney, longissimus dorsi muscle and gluteus muscle were immediately collected. We found that the α-TTP gene is expressed in sheep tissues other than the liver. Moreover, dietary vitamin E levels had influenced the expression levels of α-TTP gene in these tissues in a tissue-specific way. The technique of immunohistochemistry was used to detect α-TTP in tissues of the heart, spleen, lung, and kidney and we found that α-TTP was mainly located in the cytoplasm while no α-TTP immunoreactivity was detected in the cytoplasm of longissimus dorsi and gluteus muscle samples. Importantly, our findings lay the foundation for additional experiments focusing on the absorption and metabolism of vitamin E in tissues other than the liver.

Small intestine luminal nutrient sensing may be crucial for modulating physiological functions. However, its mechanism of action is incompletely understood. We used a model of enteral nutrient deprivation, or total parenteral nutrition (TPN), resulting in intestinal mucosal atrophy and decreased epithelial barrier function (EBF). We examined how a single amino acid, glutamate (GLM), modulates intestinal epithelial cell (IEC) growth and EBF. Controls were chow-fed mice, T1 receptor-3 (T1R3)-knockout (KO) mice, and treatment with the metabotropic glutamate receptor (mGluR)-5 antagonist MTEP. TPN significantly changed the amount of T1Rs, GLM receptors, and transporters, and GLM prevented these changes. GLM significantly prevented TPN-associated intestinal atrophy (2.5-fold increase in IEC proliferation) and was dependent on up-regulation of the protein kinase pAkt, but independent of T1R3 and mGluR5 signaling. GLM led to a loss of EBF with TPN (60% increase in FITC-dextran permeability, 40% decline in transepithelial resistance); via T1R3, it protected EBF, whereas mGluR5 was associated with EBF loss. GLM led to a decline in circulating glucagon-like peptide 2 (GLP-2) during TPN. The decline was regulated by T1R3 and mGluR5, suggesting a novel negative regulator pathway for IEC proliferation not previously described. Loss of luminal nutrients with TPN administration may widely affect intestinal taste sensing. GLM has previously unrecognized actions on IEC growth and EBF. The traditional scientific system of animal nutrition has existed for over 100 years, but substantial changes are yet to take place. With the lapse of time, limitations of this traditional scientific system have been more and more evident and such a system should be dramatically revised with innovations. Beginning in the late 1980s, our group started to use system-science principles and approaches in animal nutrition research. The author published a book entitled "An Introduction to Systems-Nutrition of Animals", which marked the birth of a new scientific system in animal nutrition to stimulate further development of this discipline. System-nutrition is defined as a branch of biological sciences that concerns system-level studies of the integrative picture of flux, metabolism, utilization and regulation of nutrients (e.g., proteins and amino acids) from dietary and endogenous origin in the whole animal system at organism, organs, tissues, cells and molecules levels to achieve such goals as nutritional manipulation and prediction, as well as optimum feeding decision and optimum nutritional engineering programs for animal feeding.

The present study aimed to investigate the potential role of dietary petroselinic acid (PSA) in enhancing the n-3 long-chain polyunsaturated fatty acid (LC-PUFA) content in fish tissues. Three isolipidic casein-based diets were formulated to comprise graded levels of PSA (0, 10, or 20% of total fatty acid) with the incremented inclusion of coriander seed oil. Fish growth and nutrient digestibility were not significantly (P > 0.05) influenced by dietary PSA level. In general, dietary PSA affected the fatty acid composition of tilapia tissues and whole-body, which reflected dietary fatty acid ratios. Dietary PSA significantly (P < 0.05) increased β-oxidation, particularly on α-linolenic acid (18:3n-3) and linoleic acid (18:2n-6). This study provided evidence that PSA, a pseudoproduct mimicking the structure of 18:3n-6, did reduce Δ-6 desaturation on 18:2n-6 but, contrary to popular speculation, did not stimulate more Δ-6 desaturase activity on 18:3n-3. The overall Δ-6 desaturase enzyme activity may be suppressed at high dietary levels of PSA. Nevertheless, the n-3 and n-6 LC-PUFA biosynthesis was not significantly inhibited by dietary PSA, indicating that the bioconversion efficiency is not modulated only by Δ-6 desaturase. The deposition of n-3 LC-PUFA in liver and fillet lipids was higher in fish fed PSA-supplemented diets.

In order to improve fish health and reduce use of chemotherapeutants in aquaculture production, the immunomodulatory effect of various nutritional ingredients has been explored. In salmon, there is evidence that functional feeds can reduce the abundance of sea lice. This study aimed to determine if there were consistent changes in the skin mucus proteome that could serve as a biomarker for dietary yeast cell wall extract. The effect of dietary yeast cell wall extract on the skin mucus proteome of Atlantic salmon was examined using two-dimensional gel electrophoresis. Forty-nine spots showed a statistically significant change in their normalised volumes between the control and yeast cell wall diets. Thirteen spots were successfully identified by peptide fragment fingerprinting and LC-MS/MS and these belonged to a variety of functions and pathways. To assess the validity of the results from the proteome approach, the gene expression of a selection of these proteins was studied in skin mRNA from two different independent feeding trials using yeast cell wall extracts. A calreticulin-like protein increased in abundance at both the protein and transcript level in response to dietary yeast cell wall extract. The calreticulin-like protein was identified as a possible biomarker for yeast-derived functional feeds since it showed the most consistent change in expression in both the mucus proteome and skin transcriptome. The discovery of such a biomarker is expected to quicken the pace of research in the application of yeast cell wall extracts.

In 1946, at the end of World War II, I entered graduate school at Cornell University, where I remained for 44 years. During that time, my laboratory produced more than 300 publications in the field of reproductive biology, including studies on nutrition and reproduction, the role of the hypothalamus in pituitary gonadotropin release, corpus luteum formation and function, hormone assays, and estrous cycle synchronization. At age seventy, I retired from Cornell and accepted the Gordon Cain Endowed Professorship at Louisiana State University, where I continued my work on the bovine corpus luteum and added research on the collection, maturation, in vitro fertilization, and culture of bovine oocytes. In 1994, I moved to the Pennington Biomedical Research Center and soon thereafter started the research that led to development of the lytic peptide–gonadotropin conjugates, which target and destroy cancer cell membranes. I am continuing my work on the development of targeted cancer cell drugs and, yes, research is still fun!

Acute tryptophan depletion (ATD) is a valuable non-invasive nutritional tool in human and rodent research to study dysfunctions of the serotonergic system and related behavioral disorders. Serotonergic dysfunction is thought to be involved in the pathology of feather pecking behavior of laying hens, one of the most relevant welfare and production issues in modern intensive egg-production systems. ATD temporarily compromises the influx of tryptophan (TRP) across the blood brain barrier which reduces central availability of TRP, the substrate for serotonin (5-HT) synthesis. However, ATD has never before been developed and evaluated in birds. We hereby report that ATD in laying hens effectively depletes plasma levels of TRP to 50% of the baseline concentration, 4 hours after administration. Furthermore, ATD reduces the ratios of TRP towards aromatic amino acids (AAA) by 60% and the ratio of TRP towards large neutral amino acids (LNAA) by 70%, three hours after administration. Further studies will be needed to determine the effects of peripheral depletion on brain TRP and 5-HT levels in birds. However, our study showed for the first time in an avian species that ATD causes lowering of plasma TRP and the ratio in plasma of TRP towards other AAA or LNAA.

Knowledge of nutrition is vital for veterinarians to inform owners about care of healthy pets and management of disease. Owners wish to have information from the veterinary health care team (VHT), and graduate veterinarians should be sufficiently educated to provide evidence-based information. Many veterinary practitioners feel that their veterinary school education in small-animal nutrition was insufficient. This survey presents the information on nutrition education in 63 European veterinary schools, including attitudes about teaching of nutrition, importance of nutrition, satisfaction of graduate performance and skills in nutrition, existing and required curriculum hours in nutrition, existing and required teaching staff, and barriers to achieving adequate teaching. The questionnaire was provided online to university deans and faculty members. The majority of schools felt that nutrition was important, but lacked staff numbers or knowledge to teach adequately. Many were also restricted by a crowded curriculum. Potential solutions include hiring a nutritionist, outsourcing nutrition education, and/or using online materials.

After having written hundreds of research articles, reviews, and book chapters, I find it awkward to pen an autobiography. I still do use a pen. As stated by others in the nutrition field who have written of their own experiences in a perspective article for the Annual Review of Nutrition, my course through this field of science has been serendipitous. My interest in nutrition developed during my experiences with horses and then Angus cattle and entry into an animal science degree program. As the age of molecular biology was unfolding, I pursued a PhD in nutritional biochemistry with Hamilton Eaton at the University of Connecticut followed by postdoctoral work with Hector DeLuca at the University of Wisconsin, working on vitamins A and D, respectively. At Rutgers University, one of the two institutions where I have served on the faculty, I started my research program on trace elements with a focus on cadmium toxicity but soon thereafter began my research on zinc metabolism and function. I moved to the University of Florida in 1982 for an endowed position and have been a Florida Gator ever since. At the University of Florida, research expanded to include identification of zinc-responsive genes and physiological outcomes of zinc transport influencing health and disease, particularly as related to inflammation. I had the opportunity to contribute national science policy as president of both the Federation of American Societies for Experimental Biology and the American Society for Nutrition. As the time of this writing, I maintain an active laboratory.
