No. of bitstreams: 0 Previous issue date: 2016-07-01 Modifying the extent of fatty acid (FA) biohydrogenation (BH) in the rumen through diet formulation is an effective strategy for changing the content of unsaturated FAs (USFAs) in meat. The present study investigated the effects of different sources of forage in high-concentrate diets on intake, digestibility, rumen fermentation, ruminal BH, duodenal flow of FAs and rumen microbiota in Nellore steers. Intake of neutral detergent fibre (NDF) was higher in animals fed with maize silage (MS) than in those fed with sugar cane (SC) and sugar cane bagasse (SB). Higher digestibility of dry matter and NDF was found in animals fed with MS than in those fed with the other diets. In addition, higher crude protein digestibility was observed in animals fed with sugar cane bagasse than in those fed with SC. Non-fibre carbohydrate (NFC) digestibility was higher in animals fed with sugar cane than in those fed with the other diets. Intake of total and individual FAs such as C18 : 1 cis-9, C18 : 2, and C18 : 3 was similar between animals fed with MS and SB, but decreased in animals fed with SC. Diets containing MS and SB showed higher total digestibility of saturated FAs (SFAs) and USFAs, respectively and total FAs and ruminal BH of C18 : 1 and USFA. Intestinal digestibility of overall FAs did not differ among treatments, except for C18 : 3, which increased in animals fed with SC and SB. The profile of FAs in duodenal digesta and faecal outputs did not differ among treatments. However, the flow of NDF was higher in animals fed with SC than in those fed with MS and SB. Animals fed with SB showed higher values of pH than those fed with MS and SC. Animals fed with SC showed lower values of ammonia-nitrogen. Protozoan counts were only influenced by diet for species that belonged to the genera Dasytricha and Isotricha. Populations of fibrolytic bacteria (Ruminococus flavefaciens, Ruminococus albus and Fibrobacter succinogenes) were similar among diets. Populations of Selenomonas ruminantium increased 2·5 and 5 times in animals fed with MS when compared with those fed with SC and SB, respectively. The use of MS increased intake and digestibility of NDF, and the use of SC decreased ruminal BH of total USFA without changing the flow of FAs to the duodenum. Thus, different sources of forage in high-concentrate diets do not modify the duodenal flow of USFA or fibrolytic bacteria. This must be taken into account when formulating diets to modulate ruminal upsets without altering intake. UNESP-Univ. Thirty young Nellore bulls with an initial average body weight of 416.70 +/- 24.74 kg were randomly assigned to three treatments containing different sources of forage. The carcass traits and variables related to meat quality of the Nellore young bulls were not significantly influenced by different sources of forage in diets with crude glycerin. The yellow color index was significantly greater in the fat of animals fed corn silage. Heptadecenoic fatty acid was significantly lower in the meat of animals fed sugar cane bagasse. The sources of forage in diets with crude glycerin did not influence the profile of saturated, monounsaturated, or polyunsaturated fatty acids in the longissimus muscle. Overall, our results indicate that none of the treatments changed the carcass and meat quality traits of Nellore young bulls finished in the feedlot. Thus, sugar cane and sugar cane bagasse could be used in feedlot as a viable forage alternative to corn silage. Utilizaram-se 30 animais confinados (n = 10), com peso inicial de 416,70 ± 24,74 kg e 18 meses de idade, sendo submetidos aos três tratamentos: silagem de milho (SM), cana-de-açúcar (CA) ou bagaço de cana (BC), utilizando delineamento inteiramente casualizado. Após 85 dias, os animais foram abatidos com 554,51 ± 38,51 kg. Amostras do longissimus foram coletadas após resfriamento das carcaças e embaladas a vácuo. A dieta influenciou o pH, a coloração da carne e da gordura subcutânea (GS; p < 0,05). Animais alimentados com SM apresentaram maior valor de b* na GS (p < 0,05). A dieta não modificou o perfil de ácidos graxos (AG) da carne (p > 0,05). A maturação influenciou pH e força de cisalhamento da carne (FC; p < 0,05). Carnes maturadas aos 14 dias apresentaram maior pH (5,90) e menor FC (2,40 kgf). Dietas contendo 10% GB na MS associada à SM, CA ou BC não modificam os AG da carne. A maturação em 14 dias reduz a FC do longissimus, melhorando a qualidade da carne. This trial aimed to evaluate the inclusion of 10% of crude glycerin associated with roughage sources on the quality of meat aged for 1, 7 or 14 days postmortem of Nellore young bulls. Thirty feedlot animals (n = 10) with initial body weight of 416.70 ± 24.74 kg and 18 months of age were assigned to three treatments: corn silage (CS), sugar cane (SC) and sugar cane bagasse (CB), using a completely randomized design. After 85 days of feeding, animals were slaughtered with 554.51 ± 38.51 kg. Samples of longissimus muscle were collected, after carcass chilling, and vacuum-packed. Diets influenced pH, meat color and subcutaneous fat (SF) (p > 0.05). Animals fed CS showed higher values of b* in SF (p < 0.05). Differences were not found in the meat fatty acid profile (p > 0.05). Aging times influenced pH and shear force of beef (p < 0.05). Beef aged for 14 days showed higher pH (5.90) and lower shear force (2.40 kgf). Diets containing 10% crude glycerin in the DM associated with CS, SC or CB had no effect on the fatty acid profile in beef. The aging process for 14 days reduces shear force, improving meat quality. Intake of tropical grass forages alone is generally insufficient to avoid nutrition imbalances and reduced animal performance; therefore, supplementation is often recommended. The hypothesis of the present study is that when combined with fat, soybean hulls (SH) could replace corn as a source of energy, reducing methane production without affecting animal performance. This study evaluated the effects of starch-based supplementation level combined with oil on intake, digestibility, performance, and methane emissions of growing Nellore bulls (P = 44; initial BW = 250.69 ± 27 kg) fed cv. Xaraes during the rainy season. There were no interactions between starch level and oil supplementation with regard to intake of DM (P = 0.67), forage DM (P = 0.55), supplement DM (P = 0.14), OM (P = 0.66), CP (P = 0.74), NDF (P = 0.50), ether extract (EE; = 0.47), and GE ( P= 0.68). The intake of EE was greater for animals supplemented with oil than those fed supplements without oil (P < 0.01). There were no interactions between starch level and oil supplementation on digestibility of DM (P= 0.18), OM (P = 0.11), NDF (P= 0.42), and EE (P = 0.14). Moreover, there was interaction between starch and oil supplementation on GE (P < 0.01). Independent of starch level used, the addition of oil decreased the digestibility of OM (P = 0.04) and NDF (P = 0.03). There were no main effects of starch level, oil, or interaction between starch and oil for initial BW (P = 0.10), final BW (P = 0.94), ADG (P = 0.40), feed efficiency (P= 0.37), and carcass gain (P = 0.38). There was no interaction between starch-based supplementation level and oil on methane emissions when expressed in grams per day (P = 0.77), kilograms per year (P = 0.77), grams per kilogram DMI (P = 0.53), and grams per kilogram carcass gain (P= 0.31). There was, however, an interaction (P = 0.04) between starch level and oil on methane emissions when corrected for NDF intake. Additionally, oil decreased enteric methane emission for intake of GE (P = 0.04) and EE (P < 0.01) of animals fed with starch level. Soybean hulls have an estimated feeding value similar to that of corn. The use of oil supplementation may be effective to reduce enteric methane emission of Nellore bulls raised on pasture.

The aim of this study was to evaluate the carcass traits and meat quality of Nellore bulls (279.5 ± 16.3 initial body weight) raised on pasture supplemented with crude glycerin at 0%, 7%, 14%, 21% or 28% (DM basis). The diets were similar in energy and protein levels, and the glycerin replaced corn in the supplement. After slaughter, the carcass characteristics were measured, and the longissimus muscle was collected to determine the meat quality. The inclusion of crude glycerin in the supplement did not change (P > 0.05) any of the carcass characteristics and meat quality assessed; however, the pH decreased linearly (P = 0.03), and margaric acid (17:0) increased (P = 0.02) in the longissimus muscle with the addition of glycerin in the diet. Our conclusion is that the inclusion of crude glycerin up to the level of 28% of dry matter in the supplement does not alter the carcass characteristics or the meat quality from animals raised on pasture.

Carcass and meat quality traits of 60 Nellore young bulls fed diets without crude glycerin (CG); with CG replacing corn (CGc; 10% of dry matter — DM) in the concentrate; and with CG replacing soybean hull (CGsh; 10% of DM) in the concentrate were evaluated. Diets were evaluated at two concentrate levels (CLs). The CL did not affect cold carcass weight (CCW; P = 0.6074), cold carcass dressing (CCD; P = 0.9636), rib fat thickness (RFT; P = 0.8696) and longissimus muscle area (LMA; P = 0.7524). Animals fed diets with CGc or CGsh showed meat with greater deposition of monounsaturated fatty acid (MUFA; P = 0.0022) and CLA (18:2 cis -9, trans -11) contents ( P = 0.0001) than animals fed diets without CG. The inclusion of 10% of CG in diets CGc or CGsh does not affect the carcass and meat quality traits; however, it increases the MUFA and CLA contents in beef, although these changes are very small in nutritional terms.

Nine cannulated steers at 6 months of age with initial body weight of 232±35 kg were used in a triplicate 3 × 3 Latin square design. The results indicated that the total intake and digestibility of DM, organic matter (OM), gross energy (GE), neutral detergent fiber (NDF) and acid detergent fiber (ADF) were not affected by the lipid content of the diet. However, the lowest lipid content diet reduced the total digestibility of crude protein (CP) and total carbohydrate linearly compared with the highest lipid diet. In contrast, when steers were fed a diet containing 20 g lipids/kg of DM, the concentration of ammonia in the rumen decreased quadratically relative to the other diets. Ruminal pH was not affected by the interaction of treatment and sampling time; however, the rumen pH decreased quadratically in animals that received the highest dietary lipid content (60 g/kg) compared with animals that received 20 and 40 g lipids/kg of DM. The rumen concentrations of volatile fatty acids, propionate, and butyrate and the acetate/propionate ratio were affected by the dietary lipid content. However, the microbial population, microbial N flow, and efficiency of synthesis were not affected by dietary lipid content. Overall, an increase in the lipid content of the diet of Nellore steers resulted in similar digestive profiles and fermentation conditions. Four crossbred Holstein x Gir heifers of average initial weight of 200 kg and average age of 14 months were used. The experimental design was in a 4 x 4 latin square. The intake values of DM, organic matter (OM), neutral detergent fiber (NDF) and non-fibrous carbohydrates (NFC) were not affected by the protein contents of the diet. The apparent and ruminal digestibility of DM and OM were affected by the protein content of the diet. Greater total apparent digestibility coefficient of CP (0.749) was observed for the content of 22 g CP/100 g DM, whereas the ruminal digestibility of CP was not affected by treatments. The efficiency of microbial protein synthesis was not different between the CP contents of the diet. There was increasing linear effect of the CP content in the diet on the plasma concentration of urea. The rumen pH of the heifers was similar between treatments, with an average of 6.3. The concentration of rumen ammonia nitrogen was affected by the protein content of the diet, with the highest averages at 22 and 19 CP/100 g DM (27.5 and 31.6 mg/dL); an average of 21.1 mg/dL in the diet with 15 g CP/100 g DM; and the lowest average observed in the diet containing 13 g CP/100 g DM, 14.0 mg/dL. It is recommended to use 13 g CP/100 g DM in the diet for crossbred Holstein x Gir heifers in the post-weaning phase consuming diets based on sugarcane, because this level promotes increase in the digestibility of the diet and lower concentrations of plasma urea nitrogen and ammonia nitrogen, showing better animal metabolism, in addition to a possible decrease in the cost of the diet. Ten animals (397 +/- 34 kg and 20 +/- 2 months of age) were slaughtered to estimate the initial carcass weights, and the remaining 30 animals (417 +/- 24.7) were randomly assigned to three treatments with 10 replicates. The treatments consisted of three different sources of forage [NDF from forage (fNDF) was fixed 15% of dry matter]; corn silage, sugarcane, and sugarcane bagasse; in diets rich in concentrates with 10% dry matter crude glycerine. There were no differences in the intake of dry matter, organic matter, crude protein, neutral detergent fibre, gross energy, or metabolisable energy. No effects of the type of forage were observed on performance or enteric methane emissions. These results suggest that alternatives to corn silage that have high fibre content, such as sugarcane and sugarcane bagasse, do not significantly affect the intake, performance, or enteric methane emissions of young Nellore bulls. Marandu, Brachiaria brizantha cv. Xaraes, and hybrid Brachiaria cv. Mulato, subjected to different levels of forage allowance (4, 7, 10 and 13% of the animal body weight), under rotational grazing cycles. Cultivar Xaraes presented higher contents of neutral detergent fibre, neutral detergent fibre corrected for ash and protein, acid detergent fibre and lignin, and lower production of gases in 96 h in the component leaf blade. There was a decrease of non-fibrous carbohydrates and fraction B-2 and an increase in the fraction C of the carbohydrates in the components stem and leaf blade over the grazing cycles in all the cultivars. Cultivar Marandu presented higher digestibility values (in vitro organic matter digestibility and in vitro dry matter digestibility) in the components stem and leaf blade. Cultivar Mulato demanded a shorter time of colonisation, according to the calculations of fermentation kinetics. Regardless of the level of forage allowance and of the grazing cycles, the three Brachiaria cultivars were characterised by great fermentation quality due to the relations of the gas production potential and the gas production after 48 and 96 h. This study evaluated the effect of different protein sources (soybean meal, cottonseed meal, peanut meal and sunflower meal) on dry matter and nutrient intake, productive performance and body measurements of dairy heifers, Holstein x Zebu, recreated in confinement. The experiment consisted in a randomized complete block design made up by 6 replications and 4 treatments. The mean values of ingestion of ether extract (EEI, kg day-1) were statistically different (p < 0.05). The neutral detergent fiber intake (NDFI, %BW) also presented differences (p < 0.05), with higher values in the diet containing sunflower meal (1.01% BW) in relation to the diet with soybean meal (0.84% BW). The average daily weight gain using the diet with soybean meal was superior (0.95 kg day-1) to the diet with sunflower meal (0.82 kg day-1), and considering the final body weight, the diet with soybean meal was superior to the other treatments (p < 0.05). The heart girth presented greater association with body weight (0.93). The soybean meal promoted the best productive performance of crossbred Holstein x Zebu heifers fed diets based on sugarcane. However, cottonseed meal, peanut meal and sunflower meal can be possible alternatives to soybean meal.

Twenty-one crossbreed heifers (Nellore × Santa Gertrudis × Braunvieh) received 600 g/kg forage composed of corn silage and 400 g/kg concentrate with a 58.0 g/kg fat content in the total diet. The following lipid sources were used: soybeans, protected fat (Megalac-E®) and soybean oil. The experimental design was completely randomized, with three treatments and seven replicates, and the means were compared by the Tukey test at 5%. The protected fat diet resulted in a greater intake of dry matter (8.80 kg/d) when compared with the other diets. The animals that were fed the protected fat diet had a higher average daily weight gain and slaughter weight. Feed conversion and protein efficiency rate were not influenced by lipid sources.
