Nano-sized Zn particles are recognized for its ability to elevate fish health and well-being, enhancing antimicrobial and antioxidant capacities and reinforcing the immune system. In the present study we explored the effects of Zn-NPs supplementation on augmenting the growth performance and nutritional indicators and physiological aspects of the catfish, Clarias batrachus. Zn-NPs were prepared by heating the mixture of [Zn(CH3COO)2.2H2O], ethylene glycol and polymer surfactant (PVP) at 70°C for 45 min using an oil bath heater. The resultant solution was centrifuged at 6000 rpm on a heated plate at 70°C until the precipitation of Zn-NPs was achieved. Crystal structure, growth mechanisms and shapes of Zn-NPs were characterized by the atomic force microscopy. Produced Zn-NPs was characterized by spectrophotometer and the zeta potential and mean size was recorded as −32.5 ± 1.0 mV and 14.7 ± 2.5 nm, respectively. The experiment comprised six distinct test diets, categorized by the incorporation of Zn-NPs at levels of 0, 10, 20, 30, 40, and 50 mg/kg into the feed where the initial diet was employed as a control group, devoid of any Zn-NPs supplementation. Three glass aquariums were employed for each diet. In each aquarium, 12 fish with an initial mean weight of 5.23 ± 0.06 g were stocked. The fish underwent experimental feeding for 60 days, with the feed amount set at 3% of their body weight. After the experimental period, growth performance (weight gain, length gain, average daily gain, specific growth rate, thermal growth co-efficient, condition factor and survival rate), nutritional indices (feed conversion ratio, protein efficiency ratio, annual net protein utilization), proximate composition of muscle (protein, lipid, carbohydrate, ash and moisture), hematological parameters (RBC, WBC, hemoglobin, hematocrit, MCV, MCH, MCHC, total protein, albumin and globulin), serum lipid and enzymatic parameters (total cholesterol, HDL, LDL, triglycerides, ALP, AST, ALT, amylase, lipase and protease), and bioaccumulation of Zn in different organs of fish were estimated following standard methods. Potentially toxic elements (PTEs) in the surface sediments of the Pasur river estuary was investigated to assess its distribution, potential sources, and current dangers to ecological and public health. The Pasur River is a tidal, meandering, perennial river in south-western Bangladesh with a considerable number of fisheries and industrial activities. Sediment samples were collected from seven sampling points from January to December 2022 to assess the contamination level of six potentially toxic elements (Pb, Cr, Cd, As, Cu and Zn). Flame Atomic Absorption Spectrophotometer was utilized to detect the concentration of PTEs by following some sequential analytical procedure. Concentration of PTEs followed the reducing trend of Zn > Cr > Pb > As > Cu > Cd with the mean value of 61.04 > 49.15 > 26.58 > 10.28 > 6.28 > 1.59 mg/kg, respectively. The principle component and cluster analyses justified the anthropogenic source of the studied PTEs. The mean values of contamination factor (CF), geo-accumulation index (Igeo) and enrichment factor (EFc) showed that Pb and Cd were highly responsible for sediment (uncontaminated to moderate) contamination. Patients with celiac disease and those who are gluten intolerant have a need for gluten-free bakery items but developing them is a challenge for technologists and dietitians. Foxtail millets are naturally gluten-free and nutrient-dense grains. Herein, CMC-modified foxtail millet biscuits (CFMBs) were prepared using 0.01%, 0.05%, and 0.1% of CMC hydrocolloids with foxtail millet flour. The effects of CFMBs on the physicochemical properties, sensory, and morphology were investigated and compared with wheat (WB-100) and foxtail millet (FMB-100) products. CFMBs were thicker, had a larger specific volume, and had a lower diameter and spread ratio than FMB-100. CFMB-0.1 exhibited higher moisture content, higher water activity, and lower fat content than FMB-100 and WB-100. The hardness of CFMB-0.1 (35.08 ± 0.26 N) was close to WB-100 (37.75 ± 0.104 N) but higher than FM-100 (21.61 ± 0.064 N). The scanning electron microscope (SEM) study indicated that incorporating CMC influenced the morphology and microstructure of CFMBs. Skilled panelists gave WB-100 and CFMB-0.1 the highest sensory ratings and FMB-100 the lowest due to their color, appearance, flavor, and overall acceptability. Finally, CMC may be easily included in FMB manufacturing and supported like gluten in the food sector to suit the nutritional demands of customers.

The nutritional and phytochemical content of foxtail millet (Cetaria italica) makes it a viable food grain. In this study, we looked at foxtail millet in Bangladesh and analyzed its nutritional value, functional and physical characteristics. In addition, methanol, ethanol, and acetone: water: acetic acid (70: 29.50: 0.50) extracts of foxtail millet flour (FMF) were analyzed for their antioxidant properties (total phenolic and flavonoid content, total antioxidant capacity, ferric reducing antioxidant power (FRAP) assay, and 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging activity). According to this study, foxtail millet has favorable physiological and functional properties. FMF had protein at 11.65 ± 0.45 g/100 g, fat at 3.48 ± 0.04 g/100 g, carbohydrates at 75.33 ± 0.53 g/100 g, and crude fiber at 2.21 ± 0.03 g/100 g. Calcium was found at 47 ± 0.48 mg/100 g, iron at 4.59 ± 0.14 mg/100 g, potassium at 393 ± 15.87, sodium at 27.4 ± 1.21, magnesium at 45.40 ± 2.22, manganese at 0.71 ± 0.02, copper at 0.58 ± 0.04 and zinc at 2.30 ± 0.18 mg/100 g. The total flavonoid content (TFC) of the methanolic extract (68.26 ± 1.51 mg quercetin equivalents (QE)/100 g) was significantly (p < 0.05) higher than the extract of acetone: water: acetic acid. Total antioxidant capacity (TAC) (169.40 ± 3.45 mg ascorbic acid equivalents (AAE)/100 g) and total phenolic content (TPC) (51.35 ± 1.35 mg gallic acid equivalents (GAE)/100 g) of the methanolic extracts were significantly (p < 0.05) higher than others. The ascending order of DPPH free radical scavenging activity of FMF extract is as follows: acetone: acetic acid: water < ethanol < methanol. In the ferric reducing antioxidant power (FRAP) test, the reducing power of FMF extracts increased with the rise in sample concentration. Foxtail millet has potential as a functional food that could influence rural residents' diets and health.

Noodles are a popular snack mainly produced from wheat flour; however, the low contents of protein, minerals, and lysine are a concern. Therefore, this research developed nutri-rich instant noodles by using foxtail millet (FTM) (Setaria italic) flour to improve the contents of protein and nutrients and increase its commercial importance. FTM flour was mixed with wheat flour (Triticum aestivum) at a ratio of 0:100, 30:60, 40:50, and 50:40, and the samples were named as control, FTM30, FTM40, and FTM50 noodles, respectively. Mushroom (Pleurotus ostreatus) and rice bran (Oryza sativa L.) flour were added at a percentage of 5% to all the composite noodles (FTM30, FTM40, and FTM50 noodles). The contents of biochemicals, minerals, and amino acids, as well as the organoleptic properties of the noodles, were examined and compared with wheat flour as a control. The results revealed that the carbohydrate (CHO) content of FTM50 noodles was significantly lower (p < 0.05) than all the developed and five commercial noodles named A-1, A-2, A-3, A-4, and A-5. Moreover, the FTM noodles had significantly higher levels of protein, fiber, ash, calcium, and phosphorous than the control and commercial noodles. The percentage of lysine calculated protein efficiency ratio (PER), essential amino acid index (EAAI), biological value (BV), and chemical score (CS) of FTM50 noodles were also higher than that of the commercial noodles. The total bacterial count was nil for the FTM50 noodles, and the organoleptic properties were consistent with those of acceptable standards. The results could encourage the application of FTM flours for the development of variety and value-added noodles with enhanced level of nutrients.

Two varieties (indigenous and hybrid) of pumpkin (Cucurbita maxima) are cultivated and widely used as food sources in Bangladesh. The aim of this study is to compare nutrient contents in different parts of two varieties of pumpkin. The nutritional compositions were analyzed by standard methods. Fatty acids and amino acids were analyzed by GC/MS and amino acid analyzer. The proximate compositions analysis data indicate that a higher amount of moisture (p < 0.001) and fat (p < 0.01) were observed in the seed of indigenous but the seed of hybrid were rich in crude fiber (p < 0.01) and carbohydrate (p < 0.001). On the contrary carbohydrate content was predominant in the flesh (p < 0.05) and peel (p < 0.01) of indigenous. The energy content was high in the peel, seed and flesh of indigenous (p < 0.001, 0.001 and 0.05 respectively). A significant amount of reducing sugar was found in the peel, flesh (p < 0.05) and seed (p < 0.001) of hybrid. Vitamin C content was high in peel (p < 0.001) and seed (p < 0.01) of indigenous and only in the flesh (p < 0.001) of the hybrid. A remarkable amount of Na, K, Fe and Zn were present in peel (p < 0.001) of hybrid. The notable amount of P and Cu (p < 0.01) were present in the seed and K, Fe and Ca (p < 0.001) were in the flesh of indigenous. The seed of hybrid was enriched with saturated fatty acid (capric acid, p < 0.001; myristic acid, p < 0.01 and stearic acid, p < 0.05), whereas unsaturated fatty acids (oleic, linoleic and linolenic acid, p < 0.05) were rich in the seed of indigenous. A significant amount of threonine, serine, methionine, isoleucine and tyrosine were present in the seed of indigenous (p < 0.01) but only alanine in the seed of hybrid (p < 0.01). These results suggested that a considerable amount of nutrients were present in all three parts of the two varieties, thus both varieties could be the potential source of nutraceuticals.

The current study's goal is to isolate the starch from different varieties of banana i.e. Local Banana (LB) and BARI Banana 2 (BB2) and characterize them in order to explore their physical and chemical compositions, amylose content, resistant starch content, functional properties, granule morphology and crystalline pattern. Different techniques were used for characterization viz. X-ray diffractometery (XRD), Fourier Transform Infrared Spectroscopy (FTIR), Scanning Electron Spectroscopy (SEM) etc. The starch extracted from banana showed significant difference in the amylose content and the value was found 28.26% and 25.93% respectively for local banana starch (LBS) and bari banana 2 starch (BB2S). This study also revealed that selected banana varieties can be a potential source for the production of resistant starch. The resistant starch (RS) content of the banana was found 46.93% and 45.78% respectively for LBS and BB2S. Using de-branching and autoclaving technique in the starch, there was a significant increase in RS content. Paste clarity was decreased gradually with time for all the starch samples. Water absorption capacity (WAC) and oil absorption capacity (OAC) of LBS and BB2S were found in the ranged of 165.8-170.7% and 132.6-168.1% respectively. XRD showed both LB and BB2 starches had B-type crystal pattern. The d-spacing of banana starches were ranged from 3.86-5.88Á. SEM data revealed that banana starches possessed the regular elongated round ridges with smooth surface in the range of 4.3-12.4 µm. The information obtained from this research indicates that both banana starches can be used in different areas; especially in food, pharmaceutical and cosmetics industries as an edible coating, thickening agent, fat replacer, etc. Also, banana starch containing functional food can be recommended for diabetic patients. Objective: To evaluate the nutritional composition, including major minerals, essential trace elements and toxic heavy metals of five different wild vegetables Dhekishak (Dryopteris filix-mas), Helencha (Enhydra fluctuans), Kalmishak (Ipomoea aquatica), Patshak (Corchorus capsularis) and Shapla stem (Nymphaea stellata) and their safety aspects. Methods: Proximate parameters moisture, ash, fat, fiber, protein, carbohydrate and energy; major minerals Na, K, Ca and Mg; trace elements Fe, Zn and Cu; and toxic heavy metals Pb, Cd, Cr, Ni and Hg were evaluated in the selected wild vegetables using the standard food analysis techniques. Results: The results from nutritional analysis showed that all the wild vegetables used in this study had a low content of crude fat and high content of moisture, ash, crude protein, crude fiber, carbohydrate and energy having the recommended dietary allowances. The vegetables were also rich in major minerals Na, K, Ca and Mg, sufficient in essential trace elements Fe, Cu and Zn while the heavy metals Pb, Cr and Ni were detected higher in amount in all the vegetables except Patshak than the limits recommended by Food and Agriculture Organization/World Health Organization. The heavy metals Cd and Hg were not detected in any vegetable. Conclusions: The outcome of this study suggests that the wild vegetables have very good nutritional potential to meet the recommended dietary allowances, but special awareness should be taken for public health concern about the high level of Pb, Cr and Ni which exceed the Food and Agriculture Organization/World Health Organization recommended limits for the metals in vegetables.

The availability and use efficiency of phosphorus (P) is low in the acidic Ganges delta floodplain soils. The aim of the present study was to increase the use efficiency of P by varying the methods and forms of P application. The experiment comprised a factorial combination of two methods (broadcasting and furrow placement) and two forms (granular and powder) with three rates of P fertilizer application (36, 48 and 60 kg P ha−1). Results showed that furrow placement of P application gave 10%–20% yield benefit over broadcasting method. Agronomic P use efficiency, partial factor productivity, economic efficiency and leaf P concentration were remarkably higher in furrow placement of P fertilizer than conventional broadcasting method. Numerically the application of powder form P fertilizer demonstrated higher yield compared to granular form of P application. The furrow placement of P fertilizer exhibited the higher yield at lower rate of P application (36–48 kg P ha−1) while opposite trends were observed for broadcasting. Thus, it is concluded that furrow placement of P fertilizer application at 36–48 kg ha−1would give the best grain yield of maize in the Ganges delta floodplain soils. [ABSTRACT FROM AUTHOR]
