Oysters are a healthy and excellent source of lean protein (content up to 45%–57%). In addition, polypeptides extracted from hydrolysis of oyster protein by enzymatic hydrolysis or fermentation have diverse bioactivities, such as antioxidant, antimicrobial, antihypertensive, promoting sexual reproduction, anti‐inflammatory and anticancer. However, there are still great challenges in the preparation and characterisation of oyster polypeptides. Besides, the bioactivities and the corresponding underlying mechanisms of oyster peptides (OPs) have not yet been fully described. In order to obtain more specific peptides with potential bioactivities, optimisation of conditions employed during hydrolysis of oyster protein is therefore necessary, as well as the identification of the amino acid sequence and secondary structure of OPs. This review discusses latest research progress in preparation (including production, isolation and purification) and characterisation of OPs, with emphasis on their multiple bioactivities. Mechanisms underlying such bioactivities have also been presented. Comprehensive information about OPs could pave the way towards a functional development and more efficient utilisation of oysters. Collectively, there is growing evidence that OPs have potential health benefits. More research efforts are needed to determine their potential use in many contexts and ultimately develop more efficient and safer OP‐based products. [ABSTRACT FROM AUTHOR]

205. Highly sensitive SERS detection of residual nitrofurantoin and 1‐amino‐hydantoin in aquatic products and feeds.

- Abstract
Nitrofurantoin (NFT), a typical highly effective nitrofuran antibiotic drug, has been prohibited but still widely found in animal food products. It can be metabolized in animals to form 1‐amino‐hydantoin (AHD) that can then form stable and toxic metabolite‐protein adducts. Hence, the detection of NFT and AHD in aquatic products and feeds is very important. However, there are limited reports concerning NFT detection and none about AHD by using surface‐enhanced Raman spectroscopy (SERS) method. Herein, potassium bromide (KBr) decorated silver (Ag) nanoparticles (Ag‐BrNPs)‐based SERS approach was proposed for NFT and AHD detection. The limit of detection (LOD) for NFT was 1 μg/L. The detection of NFT residues in sea cucumber and fish feeds was also realized with the LOD of 1 and 50 ng/g, respectively. More importantly, the sensing of AHD was easily realized with the SERS approach for the first time. After the derivatization with 2‐nitrobenzaldehyde (2‐NBA), Ag‐BrNPs were also successfully utilized for AHD detection in sea cucumber with the LOD of 5 ng/g. [ABSTRACT FROM AUTHOR]

Seafood has important health benefits, and the growing demand for aquatic products has stimulated rapid trade development. Using 2000–2018 data from the UN Comtrade Database, this study first introduced the export scale, product structure, and market distribution of China's aquatic products. Then, using an extended constant market share model, we investigated the factors affecting fluctuations in China's aquatic product exports to the USA, Japan, South Korea, the Association of Southeast Asian Nations (ASEAN), and the European Union (EU). Import demand was found to be the most important factor affecting China's aquatic product exports. Moreover, China's export structure and market distribution for aquatic products have become increasingly consistent with global demand. In recent years, China's aquatic product competitiveness has declined while its market destinations have diversified. Regarding China's aquatic product types, the main focus has been on labor- and resource-intensive products with low competitiveness. More recently, however, China's competitiveness of product types 0371 and 0372 (Standard International Trade Classification) has been improving in the world market. To further develop China's aquatic product exports, policy should aim to maintain the fisheries ecosystem, encourage seafood operators to adopt good practices, increase investment in science and technology, overcome technical barriers to trade, strengthen research on the needs, preferences, and requirements of major importing countries, expand domestic demand, and strengthen international cooperation. 209. Development of a highly sensitive HPLC method for the simultaneous determination of eight biogenic amines in aquatic products.

A highly sensitive high-performance liquid chromatography (HPLC) method was developed for the simultaneous determination of eight biogenic amines in aquatic products. The biogenic amines in the sample were extracted with 5% trichloroacetic acid, derived with dansyl chloride (Dns-Cl) and quantified by a UV detector. The results showed that tryptamine (TRY), 2-phenethylamine (PHE), putrescine (PUT), cadaverine (CAD), histamine (HIS), tyramine (TPY), spermidine (SPD), and spermine (SPM) were effectively separated in 18 min in the range of 0.1–50 mg/kg with a good linear coefficient (r
2 > 0.999). The detection limits (LODs) of the eight biogenic amines were 0.007–0.021 mg/kg while the limits of quantification (LOQs) were 0.024–0.069 mg/kg with the recoveries basically between 68 and 123%. The determination of eight biogenic amines in five commercial fermented aquatic products indicating that the developed method could be applied for the simultaneous detection of biogenic amines in multiple aquatic products. 210. Determination of six fluoroquinolones in aquatic products by QuEChERS-ultra performance liquid chromatography-tandem mass spectrometry

Objective To establish a method for the determination of norfloxacin, ciprofloxacin, lomefloxacin, enrofloxacin, ofloxacin and pefloxacin in aquatic products by QuEChERS with ultra performance liquid chromatographytandem mass spectrometry (UPLC-MS/MS). Methods Six fluoroquinolones in aquatic products were extracted by 1% formic acid acetonitrile solution, purified by QuEChERS, separated by C18 column (2.1 mm×100 mm, 1.7 μm) using 0.1% formic acid and methanol-acetonitrile (4∶6, V/V) as mobile phases, then identified and quantified by UPLC-MS/MS. Results Norfloxacin, ciprofloxacin, lomefloxacin, enrofloxacin, ofloxacin and pefloxacin had good linear relationships in a certain concentration range with correlation coefficients (r) above 0.999. The limits of detection of six fluoroquinolones were 0.30-0.80 μg/kg, and limits of quantification were 1.0-2.5 μg/kg. The average recoveries of the method were between 86.6% and 120%, and the relative standard deviations were between 0.59% and 7.6%. Conclusion The method was rapid and accurate, and was suitable for rapid screening and analysis of the six fluoroquinolones in aquatic products.

211. Simultaneous determination of 9 kinds of microcystins in Taihu aquatic products based on APBA@Fe3O4/MW CNTs magnetic nanoparticlescoupled with ultra performance liquid chromatography-tandem mass spectrometry method

Objective To develop a multiwalled carbon nanotube (MSPE) method coupled with ultra performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) by preparing a magnetic multiwall carbon nanotube composite nanoparticles modified with 3-aminobenzeneboronic acid for simultaneous determination of 9 kinds of microcystins in aquatic products. Methods Magnetic multiwall carbon nanotubes (Fe3O4/MWCNTs) composite nanoparticles were prepared by hydrothermal synthesis. Then, the 3-aminobenzeneboronic acid was modified on the prepared magnetic carbon nanotubes through the chemical oxidation method. The nanoparticles have been characterized by transmission electron microscopy and infrared spectroscopy. The main factors influencing the extraction efficiency were optimized. And then a preprocessing method with acetic acid-PBS buffer solution-methanol (2:49:49, V/V) was selected as the extraction solution, and 50 mg magnetic nanomaterials were used for extraction for 15 min, 5% ammoniated methanol was used as the eluting solvent within 10 min. Results The calibration curves of microcystins showed a good linearity in the range of 5-200 ng/mL with correlation coefficients above 0.998. The detection limits (LOD) of the method were in the range of 0.15-8.71 μg/kg. The average relative recoveries of three spiked levels ranged from 91.8% to 103.2% with the relative standard deviations of 3.1%-9.5%. Conclusion The method has the characteristics of simple pretreatment, high sensitivity and high recoveries, superior to national standard method. It could simultaneously determine 9 kinds of microcystins in aquatic products and provides a powerful technical guarantee for the monitoring of microcystins in aquatic products.

212. Cadmium pollution status and assessment of potential risk to human health of commercial aquatic products

Objective To understand the cadmium pollution in aquatic products of fish, shellfish, shrimp and crab, analyze the seasonal difference of cadmium content in the above aquatic products, classify the level of cadmium pollution and assess the health risks. Methods Totally 1 554 samples of commercial aquatic products were collected and the cadmium content in aquatic products was determined by graphite furnace atomic absorption spectrometry. The difference of cadmium concentration between seasons were compared through descriptive analysis. Pollution index (Pi) methodology was employed to evaluate the pollution level of aquatic products. The provisional tolerable monthly intake (PTMI) of cadmium was taken as the reference value to assess the health risks of aquatic products. Results The average concentration of cadmium in 1 554 aquatic products was 0.116 4 mg/kg. The total detection rate was 45.56% (708/1 554), including 86.26% (496/575) of shellfish, 66.43% (93/140) of crabs, 32.48% (102/314) of shrimps and 3.24% (17/525) of fish. The total violation rate was 1.74% (27/1 554), of which crabs were 7.86% (11/140), shrimps were 2.87% (9/314), shellfish were 1.22% (7/575), fish were 0.00% (0/525). The result of pollution index indicated that crabs were lightly polluted in autumn (Pi=0.36), moderately polluted in spring and winter (Pi were 0.70 and 0.89 respectively), and the other aquatic products were clean in each season. The result of health risk assessment showed that at the general intake level, the maximum percentage of estimated monthly intake (EMI) in PTMI of various aquatic products in different seasons was 0.35%, while at the high intake level, the maximum percentage was 49.33%. Conclusion There were some differences of the violation rate of cadmium in aquatic products between seasons. The cadmium pollution was the lightest in summer. Except for crabs, which had light or moderate pollution level, the other kinds of aquatic products were clean. Either at the general level or high level of intake, the health risks of cadmium exposure caused by taking aquatic products was relatively low.

214. Prevalence, antibiotic susceptibility, and genomic analysis of Vibrio alginolyticus isolated from seafood and freshwater products in China.

Introduction: This study characterized Vibrio alginolyticus isolated from seafood and freshwater products in China (2020)., Methods and Results: In total, 122 (95.31%) V. alginolyticus isolates were resistant to at least 1 antibiotic category, and 2 (1.56%) isolates were resistant to at least 3 antibiotic categories and belong to multi-drug resistance (MDR) isolates. A high prevalence rate was observed to be blaCARB (98.04%) encoding beta-lactam resistance, followed by tet (97.06%) encoding tetracycline resistance and fos (4.90%) encoding resistance to fosfomycin. Among the 57 V. alginolyticus isolates, the commonest virulence genes were type III secretion system translocated gene vopD , vopB , and vcrH (54.4%, 31/57), type III secretion system regulated gene tyeA (54.39%), followed by vscI and vscF (50.88%) encoded type III secretion system inner rod protein and needle protein, respectively. Multilocus sequence typing (MLST) showed considerable genetic diversity, with 34 distinct sequence types (STs) identified among 55 isolates. ST421 ( n = 5), ST166 ( n = 4), ST523 ( n = 3), ST516 ( n = 3), and ST507 ( n = 3) were dominant STs among 55 V. alginolyticus isolates., Discussion: These findings highlight the widespread occurrence of V. alginolyticus in both freshwater and seafood products, underscoring the critical need for vigilant monitoring of these bacteria. The MCTS‐g‐AT was developed as a novel magnetic adsorbent with core‐shell structure. Its unique synthesis route endows MCTS‐g‐AT with green, convenient, economical and safe characteristics, and also good selective adsorption of Hg(II). The material was characterized using an appropriate set of spectroscopic and analytical techniques (SEM, EDS, XRD, VSM, FTIR, and TGA). Its adsorption kinetics fits the pseudo‐secondary model well and adsorption isotherm fits the Langmuir equation well, suggesting the mechanism of chemisorption with monolayer adsorption. The results of the thermodynamic parameters indicate spontaneous and endothermic process. Column adsorption experiments showed that the maximum adsorption capacity of Hg(II) was 207.6 mg/g (298 K). Moreover, the Hg(II) adsorbed on composite microspheres was completely eluted by 3 mol/L HNO3 or 4 mol/L HCl. Furthermore, MCTS‐g‐AT adsorption column combined with spectrophotometer can achieve more accurate detection of Hg(II) in aquatic products. [ABSTRACT FROM AUTHOR]

Ultrasound has been confirmed as the propagation process of mechanical vibrations in a medium, with a frequency significantly higher than 20 kHz. Moreover, it has an effect of sterilization on foods. In general, ultrasonic sterilization medium is manifested as a liquid. Ultrasonic treatment technology has certain advantages in aquatic product processing. It is noteworthy that this technology will have better effects of sterilization if used in combination with other treatment methods. Slightly acidic electrolyzed water (SAEW) is characterized by high-efficiency broad-spectrum sterilization operation, low cost, and environmental protection, among other properties, and has a positive effect on aquatic product sterilization and preservation. Selecting acidic electrolyzed water with a low concentration coupled with low-power ultrasonic waves for combined sterilization exerts a more potent sterilization effect, and acidic electrolyzed water combined with ultrasonic sterilization is expected to be a potentially environment-friendly alternative. In this study, the sterilization mechanisms of ultrasonic and SAEW methods used both individually and as a synergistic treatment, the effect on microbial growth, and the research progress of the application of the combined effect in the sterilization and refrigeration of aquatic products are reviewed. Furthermore, this study looks forward to the future development trend, with a view to its application in aquatic products, while providing a reference for research and application in the field of processing and safety.

A fluorescence adamantane three-dimensional porous organic framework (AdaPOF) was synthesized via a Suzuki coupling reaction. The AdaPOF showed excellent fluorescence performance with a relative high quantum yield and fluorescence stability. Due to its excellent selectivity to tetracycline (TC), a fluorescence sensor based on AdaPOF was constructed for TC determination. The selective sensing mechanism of the AdaPOF towards TC was studied by density functional theory (DFT) calculation experiments. An AdaPOF–based fluorescence method for TC determination was established, with the linear range of 0.1–9.0 μmol/L (R2 = 0.9959) and the limit of detection (S/N = 3) of 43 nmol/L. Moreover, the fluorescence method was used to the determination of TC in aquatic products and the recoveries were ranged from 94.4% to 103.8%. The results obtained by this fluorescence method were consistent with those of the high-performance liquid chromatography (HPLC) method in the TC determination.

232. Occurrence and Estimated Daily Intake of Cortisone and Cortisol in Aquatic Food from China TDS

Glucocorticoids (GCs) widely exist in animal food including aquatic food. This study aimed to survey the occurrences of cortisone and cortisol in aquatic food and the estimated daily intake (EDI) of cortisone and cortisol due to different habits of aquatic food consumption. The mean levels of cortisone and cortisol in freshwater fish purchased from market were 14.59 μg/kg and 69.15 μg/kg, respectively, which were markedly higher than the levels in marine fish. A test using Zebrafish was performed to compare the concentration of GCs by different killing methods. The results suggested that physically traumatic killing methods are one of the reasons why the levels of GCs in freshwater fish were higher than those in marine fish. The concentrations of cortisone and cortisol in composite aquatic food samples from 12 provincial districts of the fourth China Total Diet Study (TDS) were 0.72~15.75 μg/kg and 4.90~66.13 μg/kg, respectively, which were positively correlated with the distance from the coastline. Further, the correlation coefficient between the levels of cortisone and cortisol in aquatic food and the percentages of freshwater fish consumption were 0.758 (p < 0.01) and 0.908 (p < 0.01), respectively. There was a significant positive correlation between the levels of cortisone and cortisol in aquatic food in the fourth TDS and the percentages of freshwater fish consumption. The calculated average EDIs of cortisone and cortisol from aquatic food in the fourth TDS were 0.16 μg/d and 0.72 μg/d, respectively.

233. Highly Sensitive Determination of Antibiotic Residues in Aquatic Products by High-Performance Liquid Chromatography–Tandem Mass Spectrometry

Antibiotic drug residues are crucial to ensure food safety and minimize risk to human health. Herein, a sensitive high-performance liquid chromatography–tandem mass spectrometry (HPLC–MS/MS) method was developed and validated for the determination of antibiotic residues (mainly amphenicols) consisting of chloramphenicol (CAP), thiamphenicol (TAP), florfenicol (FF), and florfenicol amine (FFA) in aquatic products. Amphenicols were well separated on a Kinetex F5 (100 mm × 3.0 mm, 2.6 µm) chromatographic column with the mobile phases of 1 mM ammonium acetate aqueous solution and methanol solution and measured after positive and negative electrospray ionizations using four internal standards. To our knowledge, it was the first time to report the good performance of F5 column and four internal standards for the determination of amphenicols. The established method featured a good linear relationship between chromatographic peak area ratios and the concentrations of amphenicols (R2 > 0.992), a wide and low detection matrix-based range of 0.01–5 μg/L, a low detection limit of 0.01 μg/kg, etc. The spiked assays evidenced the accuracy and reliability of the developed method with the recoveries between 84.0 and 105%, the intraday relative standard deviations (RSDs) over the range of 0.769–13.7%, and the interday RSDs over the range of 0.582–13.3%. Finally, the proposed method was applied to investigate amphenicol residues in various aquatic products, including fish, shrimp, crab, shellfish, and other aquatic species.

Microbial growth strongly affects the quality and flavor of fish and fish products. This study aimed to explore the role and function of grass carp-borne microorganisms in the degradation of inosine monophosphate (IMP) related compounds in a fish juice system during chill storage (4 °C. Prokaryotic transcriptomic analysis was used to explore the microbial contribution to metabolic pathways and related enzymes. The degree of microbial contribution was verified by the activity of enzymes and metabolite content. Collectively, there were multiple IMP relative product degradation pathways. A. rivipollensis degraded IMP by producing 5′-nucleotidase (5′-NT) while S. putrefaciens degraded IMP mainly by alkaline phosphatase (ALP). Hypoxanthine (Hx) was degraded to uric acid (Ua) induced by P. putida and S. putrefaciens mainly with producing xanthine oxidase (XOD), while A. rivipollensis almost could not produce XOD. This work can used as a guide and provide basic knowledge for the quality and flavor control of aquatic products.

Vibrio vulnificus is an important pathogenic bacterium that is often associated with seafood-borne illnesses. Therefore, to detect this pathogen in aquatic products, a DNAzyme-based fluorescent sensor was developed for the in vitro detection of V. vulnificus. After screening and mutation, a DNAzyme that we denominated “RFD-VV-M2” exhibited the highest activity, specificity, and sensitivity. The limit of detection was 2.2 × 103 CFU/ml, and results could be obtained within 5–10 min. Our findings suggested that the target of DNAzyme RFD-VV-M2 was a protein with a molecular weight between 50 and 100 kDa. The proposed biosensor exhibited an excellent capacity to detect marine products contaminated with V. vulnificus. Therefore, our study established a rapid, simple, sensitive, and highly specific detection method for V. vulnificus in aquatic products.

239. In Silico Structural and Functional Analysis of Cold Shock Proteins in Pseudomo.

- Abstract
Pseudomonas fluorescens is a specific spoilage microorganism of refrigerated marine fish, and is highly adapted to low temperature. Cold shock proteins (CSPs) play an important role in cold adaptation of bacteria. In this study, CSP genes were identified from the genome of P. fluorescens PF08 by search of the conserved domain of CSPs with HMMER software, and the CSP physicochemical properties, structures, and functions were analyzed through bioinformatics. Five typical CSPs were identified in the P. fluorescens PF08 genome (PfCSPs). All five PfCSPs are small hydrophilic acidic proteins with a molecular mass of ca. 7.4 kDa. They are located in the cytoplasm and are nonsecretory and nontransmembrane proteins. Multiple sequence alignment analysis indicated that the CSPs are highly conserved between species, especially in DNA-binding sites and RNAbinding motifs that can bind to single-stranded DNA and RNA. The five PfCSPs clustered with CspD from Escherichia coli and Salmonella Typhimurium, which suggests a close homology and high functional similarity among the five PfCSPs and CspD. The secondary and tertiary structures of the PfCSPs are in accordance with the characteristics of the CSP family, and ligand binding sites with higher likelihood were found in PfCSPs. The five PfCSPs were predicted to interact with some of the same proteins that are involved in virulence, stress responses (including to low temperature), cell growth, ribosome assembly, and RNA degradation. 240. Cumulative Risk Assessment of Exposure to Heavy Metals through Aquatic Products in China.

This study aimed to assess the risk of cumulative exposure to Pb, Cd, Hg, and iAs through aquatic products consumed by Chinese people. Heavy metal concentration data were obtained from the national food contamination monitoring program during 2013–2017. Consumption data were derived from the China National Food Consumption Survey in 2014 and the relative potency factor (RPF) method was used to estimate cumulative exposure for neurotoxicity and nephrotoxicity. The results demonstrated that the cumulative exposure based on neurotoxicity was below the lower confidence limit on benchmark doses of lead (BMDL 01) for nephrotoxicity and the cumulative exposures were all lower than the provisional tolerable monthly intake (PTMI) of Cd. However, the margin of exposure values (MOEs) of the cumulative exposures for neurotoxicity in the 2–6 year-old group was close to 1 and the cumulative exposure level for nephrotoxicity accounted for 90.21 % of the PTMI. The cumulative exposures of the 2–6 year-old group to the four heavy metals did not reach (but came close to) the corresponding safety threshold for both neurotoxicity and nephrotoxicity. 248. Risk Analysis of Veterinary Drug Residues in Aquatic Products in the Yangtze River Delta of China.

Aquatic products are favored by people all over the world, but the potential quality and safety issues cannot be ignored. To determine the risk of veterinary drug residues in aquatic products in the Yangtze River Delta, this study used geographic information system method to analyze Chinese veterinary drugs in aquatic products in Shanghai, Jiangsu, Zhejiang, and Anhui (Yangtze River Delta Urban Agglomerations) from 2017 to 2019. A study of the spatial distribution pattern, hot spot detection and analysis, and spatiotemporal cluster analysis of the residual excess rate and detection rate showed a random spatial distribution in the overall excess rate and detection rate of veterinary drug residues in aquatic products from 2017 to 2019. The results of hot spot analysis and spatiotemporal cluster analysis showed that the rate of detection of veterinary drug residues and the rate of detection of residues in excess of regulatory standards were clustered.
