- Abstract
This project is intended to provide a methodology for the collection and storing of real-time data coming from PLCs, DCS, SCADAs or other data sources that can be found in industrial production plants. Gathering all of these data is crucial in order to accomplish a reliable and solid digital transformation for any industry. In this project, this process will be mainly focused in the chocolate process industry. However, the steps and procedures included in the study can be generally applied to any industry field, if appropriate modifications are done. There are several tools and methods in order to achieve these goal. Yet, this thesis will explain it by means of the OSIsoft PI software. The use of this tool gives the possibility to collect, enhance and deliver real-time data in any location. The system, when implemented, will provide end users, ranging from engineers to plant managers, to have easy access to data; empowering their possibilities, accelerating the work of data analysts and data scientists as well as supporting new business opportunities. This new framework can contribute to a productivity improvement, better quality assurance, more energy savings and enhancing asset health. When treating with plant process, it is always important to work with some testing environments. In those, it is possible to apply changes and do experiments without affecting the real factory production. Digital-twins play an important role in any simulation process as they are a virtual replica of the real-world system environment. It bridges the virtual cyberspace with the physical entities and, as such, is considered to be the pillar of Industry 4.0 and the innovation backbone of the future. Consequently, a simple digital-twin model for the process of chocolate conching will be reviewed as well
