Roasted coffee oil (RCO) is rich in volatile organic compounds (VOCs), but the VOCs’ volatility and the presence of unsaturated fatty acids make RCO unstable. The microencapsulation process can extend RCO properties by transforming the liquid RCO into stable powders for further application in coffee brews to better result in-cup. In this work, a central composite rotational design was used to study the effect of the emulsification process and discuss the effect of added microcapsules to instant coffees on the time-resolved release of VOCs upon reconstitutions. Capsules were produced by complex coacervation loaded with RCO, and ultrasound-assisted (US) emulsification was used to obtain stable coffee oil–loaded emulsions. VOC release was monitored by proton-transfer reaction time-of-flight mass spectrometry (PTR-ToF–MS). High encapsulation efficiency (EE) (> 80%) was obtained even at a high load (100%) of RCO. EE was only affected by US power while particle mean size (D43) was strongly affected by US power and the RCO concentration. The presence of microcapsules affected the VOC release from the moment of reconstitution. The microcapsules accelerated the VOC release in soluble coffee, while in instant cappuccino, an opposite effect was observed. A zero-order model described well the mechanism of VOC release during the first 300 s. The diffusional exponent values of the Korsmeyer–Peppas equation explained a zero-order transport during the first seconds of release (burst effect) and a non-Fickian release mechanism when the release slowed down. Such findings shed new light on the development of instant coffees in order to improve their sensorial properties.

This work evaluated the use of roasted coffee oil (RCO) and the effects of ultrasound (US)-assisted emulsification on RCO-in-water emulsion properties, the changes in the composition of volatile organic compounds (VOCs) of roasted coffee aroma during US and microencapsulation by spray drying, and VOCs release profile upon instant coffee reconstitution. VOCs were determined by gas chromatography-mass spectrometry, and the release profile was monitored in real-time by Proton Transfer Reaction Time-of-Flight Mass Spectrometry (PTR-ToF–MS). US was found to be effective in producing stable submicron emulsions (≤ 2.0 µm) that resulted in high encapsulation efficiency (> 90%) of the microparticles. Significant changes were detected in VOC composition throughout the microencapsulation process. The addition of microparticles loaded with RCO in instant coffee did not change the VOCs release profile during the brew preparation but was effective in increasing coffee aroma.

We report, on the successful addition of spray-dried microparticles containing roasted coffee oil, to soluble coffee (SC) and instant cappuccino (IC), to increase and tailor aroma release. Using PTR-ToF-MS (Proton Transfer Reaction Time-of-Flight Mass Spectrometry), five parameters were defined from time series intensity for each VOC, to compare the performance of different products: total area under the curve (AUC), area under the curve of burst (AUC-burst), maximum signal intensity, final intensity (5 min), and ratio AUC-burst/AUC. Microparticles with higher loads of roasted coffee oil were effective in increasing aroma intensity in SC while, for IC, all loads of microparticles improved aroma intensity. Volatility drove the VOC release in SC, and volatility and polarity for IC. Most compounds reached maximum headspace concentration in < 16 s upon start of reconstitution. These results open new perspectives for the development of instant coffee products and demonstrate their unique aroma release characteristics.

On-line analysis of coffee roasting was performed using ion mobility spectrometry–mass spectrometry (IMS–MS) with corona discharge ionization. This is the first time that formation of volatile organic compounds (VOCs) during coffee roasting was monitored not only in positive but also in negative ion mode, and not only with mass spectrometry, but also with ion mobility spectrometry. The temporal evolution of more than 150 VOCs was monitored during the roasting of Brazilian Coffea arabica. Mass-selective ion mobility spectrometry allowed a separation of isobaric and isomeric compounds. In positive ion mode, isomers of alkyl pyrazines were found to exhibit distinct time-intensity profiles during roasting, providing a unique insight into the complex chemistry of this important class of aroma active compounds. Negative ion mode gave access to species poorly detectable by other on-line methods, such as acids. In this study, the release of fatty acids during coffee roasting was investigated in detail. These increase early on in the roasting process followed by a decrease at the same time as other VOCs start to be formed.

This study presents an experimental approach to study the kinetics and fast release of volatile organic compounds (VOCs) upon reconstitution of instant coffee products. A sampling setup coupled to PTR-ToF-MS (Proton Transfer Reaction Time-of-Flight Mass Spectrometry) for the automated and reproducible reconstitution of instant coffee products was developed to monitor the dynamic release of VOCs. A rapid release of aroma compounds was observed in the first seconds upon hot water addition ("aroma burst"), followed by subsequent decrease in headspace (HS) intensities over the course of analysis. Differences in time-intensity release profiles of individual VOCs were correlated to their Henry's Law constant, vapor pressure and water solubility. The setup and approach proposed here have shown to be sensitive and to respond to fast dynamic changes in aroma release. It allows studying VOCs release upon reconstitution and supports the development of novel technologies and formulations for instant products with improved aroma release properties.

This article is part of the special issue of the Flavour and Fragrance Journal entitled “On‐line monitoring of odorants using direct‐injection mass spectrometry” edited by Jean‐Luc Le Quere., Changes in the headspace volatile profile of tea infusion during brewing were determined by analysing the aliquots taken every 30 s using proton transfer reaction time‐of‐flight mass spectrometry in conjunction with principal component analysis and hierarchical cluster analysis. The effect of three different brewing temperatures (60, 70 and 80°C), two leaf sizes (broken and full leaves) and two water mineralizations (soft and hard), on the concentration of volatile compounds in the headspace of tea, was studied as a function of infusion time. An increase in brewing temperature resulted in increased volatile content in the headspace, reflecting an increase in extraction efficiency. Such differences on extraction efficiency were more pronounced with increasing brewing times. Leaf size had also a big impact on the extraction of volatile compounds, but mainly during the early phase of brewing. Water mineralization had a low but noticeable impact on the volatile content. Furthermore, clusters of samples prepared with different combinations of brewing parameters but resulting in analogous volatile profiles could be identified using hierarchical clustering analysis.

Resonance-enhanced multiphoton ionisation time-of-flight mass spectrometry (REMPI-TOFMS) enables the fast and sensitive on-line monitoring of volatile organic compounds (VOC) formed during coffee roasting. On the one hand, REMPI-TOFMS was applied to monitor roasting gases of an industrial roaster (1500 kg/h capacity), with the aim of determining the roast degree in real-time from the transient chemical signature of VOCs. On the other hand, a previously developed μ-probe sampling device was used to analyse roasting gases from individual coffee beans. The aim was to explore fundamental processes at the individual bean level and link these to phenomena at the batch level. The pioneering single-bean experiments were conducted in two configurations: (1) VOCs formed inside a bean were sampled in situ, i.e. via a drilled μ-hole, from the interior, using a μ-probe (inside). (2) VOCs were sampled on-line in close vicinity of a single coffee bean's surface (outside). The focus was on VOCs originating from hydrolysis and pyrolytic degradation of chlorogenic acids, like feruloyl quinic acid and caffeoyl quinic acid. The single bean experiments revealed interesting phenomena. First, differences in time–intensity profiles between inside versus outside (time shift of maximum) were observed and tentatively linked to the permeability of the bean's cell walls material. Second, sharp bursts of some VOCs were observed, while others did exhibit smooth release curves. It is believed that these reflect a direct observation of bean popping during roasting. Finally, discrimination between Coffea arabica and Coffea canephora was demonstrated based on high-mass volatile markers, exclusively present in spectra of Coffea arabica. Introduction Coffee is a widely consumed beverage containing antioxidant active compounds. During roasting the phytochemical composition of the coffee bean changes dramatically and highly polymeric substances are produced. Besides chlorogenic acids that are already present in green coffee beans, melanoidins show antioxidant capacity as well. Objective To employ post‐column derivatisation by coupling high performance size exclusion chromatography (HPSEC) to an antioxidant assay to investigate the effect of roasting on the properties of antioxidant active compounds in coffee brews. Methodology We have investigated the antioxidant capacity of Coffea arabica (Arabica) and C. canephora (Robusta) beans that were roasted over the full spectrum of roast conditions (four roasting speeds to three roast degrees) by comparing the results from HPSEC coupled on‐line to the ABTS assay with those from two batch assays, Folin Ciocalteu (FC) and oxygen radical absorbance capacity (ORAC) assay. Results The antioxidant capacity showed a general decrease towards slower and darker roasted coffee for all three assays, indicative of heat degradation of active compounds. Hence, low molecular weight (LMW) compounds such as chlorogenic acids (CGAs) decreased progressively already from relatively mild roasting conditions. In contrast, high molecular weight (HMW) compounds (e.g. melanoidins) increased from light to dark roast degrees with lowering magnitude towards slower roasting profiles. Conclusion By coupling HPSEC on‐line to the ABTS assay we were able to separately quantify the contribution of HMW and LMW compounds to the total antioxidant capacity, increasing our understanding of the roast process. © 2016 The Authors. Phytochemical Analysis Published by John Wiley & Sons Ltd., The composition of green coffee beans is complex, yet roasting adds to this complexity by producing highly polymeric melanoidins. Next to chlorogenic acids melanoidins also show antioxidant capacity, which was measured with batch assays as well as by on‐line coupling to size exclusion chromatography to investigate the roasting effect on the formation and/or degradation of high and low molecular weight compounds. Adding chromatography enabled us to separately quantify antioxidant activity of high and low molecular weight compounds to increase our understanding of the roasting process.

A real-time automated process control tool for coffee roasting is presented to consistently and accurately achieve a targeted roast degree. It is based on the online monitoring of volatile organic compounds (VOC) in the off-gas of a drum roaster by proton transfer reaction time-of-flight mass spectrometry at a high time (1Hz) and mass resolution (5,500m/Δm at full width at half-maximum) and high sensitivity (better than parts per billion by volume). Forty-two roasting experiments were performed with the drum roaster being operated either on a low, medium or high hot-air inlet temperature (= energy input) and the coffee (Arabica from Antigua, Guatemala) being roasted to low, medium or dark roast degrees. A principal component analysis (PCA) discriminated, for each one of the three hot-air inlet temperatures, the roast degree with a resolution of better than ±1 Colorette. The 3D space of the three first principal components was defined based on 23 mass spectral profiles of VOCs and their roast degree at the end point of roasting. This provided a very detailed picture of the evolution of the roasting process and allowed establishment of a predictive model that projects the online-monitored VOC profile of the roaster off-gas in real time onto the PCA space defined by the calibration process and, ultimately, to control the coffee roasting process so as to achieve a target roast degree and a consistent roasting. In the past decade, we have witnessed rapid development of direct-injection mass spectrometric (DIMS) technologies that combine ever-improving mass and time resolution with high sensitivity and robustness. Here, we review some of the most significant DIMS technologies, which have been applied to rapid monitoring and quantification of volatile organic compounds (VOCs) and biogenic VOCS (BVOCs). They include MS-e-noses, atmospheric-pressure chemical ionization (APCI), proton-transfer-reaction mass spectrometry (PTR-MS), and selected ion-flow-tube mass spectrometry (SIFT-MS). DIMS-based MS-e-noses provide the possibility to screen large sample sets and may yield rich analytical information. APCI is a widespread ionization method and pioneered DIMS in environmental and flavor-release applications. SIFT-MS and PTR-MS allow better control of precursor-ion generation and hence of the ionization process. SIFT-MS puts the focus on control of the ionization process, while PTR-MS does so on sensitivity. Most (B)VOCs of interest can be efficiently detected and often identified by DIMS, thanks also to the possibility of switching between different precursor ions and the recent realization of time-of-flight-based equipments. Finally, we give selected examples of applications for each of the key technologies, including research in food-quality control (MS-e-nose), flavor release (APCI), environmental sciences (PTR-MS) and health sciences (SIFT-MS).

Volatile profiles of 63 black and 38 green teas from different countries were analysed with Proton Transfer Reaction-Time of Flight-Mass Spectrometry (PTR-ToF-MS) both for tea leaves and tea infusion. The headspace volatile fingerprints were collected and the tea classes and geographical origins were tracked with pattern recognition techniques. The high mass resolution achieved by ToF mass analyser provided determination of sum formula and tentative identifications of the mass peaks. The results provided successful separation of the black and green teas based on their headspace volatile emissions both from the dry tea leaves and their infusions. The volatile fingerprints were then used to build different classification models for discrimination of black and green teas according to their geographical origins. Two different cross validation methods were applied and their effectiveness for origin discrimination was discussed. The classification models showed a separation of black and green teas according to geographical origins the errors being mostly between neighbouring countries. Fil: Yener, Sine. The formation of acrylamide was measured in real time during thermal treatment (120-170 degrees C) of potato as well as in Maillard model systems composed of asparagine and reducing sugars, such as fructose and glucose. This was achieved by on-line monitoring of acrylamide released into the headspace of the samples using proton transfer reaction mass spectrometry (PTR-MS). Unambiguous identification of acrylamide by PTR-MS was accomplished by gas chromatography coupled simultaneously to electron-impact MS and PTR-MS. The PTR-MS ion signal at m/z 72 was shown to be exclusively due to protonated acrylamide obtained without fragmentation. In model Maillard systems, the formation of acrylamide from asparagine was favored with increasing temperature and preferably in the presence of fructose. Maximum signal intensities in the headspace were obtained after approximately 2 min at 170 degrees C, whereas 6-7 min was required at 150 degrees C. Similarly, the level of acrylamide released into the headspace during thermal treatment of potato was positively correlated to temperature.

The goal of this study was to better understand the correspondence between sensory perception and in-nose compound concentration. Five aroma compounds at three different concentrations increasing by factors of 4 were added to four matrixes (water, skim milk, 2.7% fat milk, and 3.8% fat milk). These were evaluated by nosespace analysis with detection by proton transfer reaction mass spectrometry (PTR-MS), using five panellists. These same panellists evaluated the perceived intensity of each compound in the matrixes at the three concentrations. PTR-MS quantification found that the percent released from an aqueous solution swallowed immediately was between 0.1 and 0.6%, depending on the compound. The nosespace and sensory results showed the expected effect of fat on release, where lipophilic compounds showed reductions in release as fat content increases. The effect is less than that observed in headspace studies. A general correlation between nosespace concentration and sensory intensity ratings was found. However, examples of perceptual masking were found where higher fat milks showed reductions in aroma compound intensity ratings, even if the nosespace concentrations were the same.

We report on the in vivo breath-by-breath analysis of volatiles released in the mouth during eating of ripe and unripe banana. The air exhaled through the nose, nosespace (NS), is directly introduced into a proton transfer reaction mass spectrometer and the time-intensity profiles of a series of volatiles are monitored on-line. These include isopentyl and isobutyl acetate, two characteristic odour compounds of ripe banana, and 2E-hexenal and hexanal, compounds typical of unripe banana. Comparing the NS with the headspace (HS) profile, two differences are outlined. First, NS concentrations of some compounds are increased, compared to the HS, while others are decreased. This indicates that the in-mouth situation has characteristics of its own—mastication, mixing/dilution with saliva, temperature and pH—which modify the aroma relative to an HS aroma. Second, we discuss the temporal evolution of the NS. While 2E-hexenal and hexanal steadily increase in the NS during mastication of unripe banana, no such evolution is observed in volatile organic compounds (VOCs) while eating ripe banana. Furthermore, ripe banana shows high VOC concentrations in the swallow breath in contrast to unripe banana.

The quality of green coffee is influenced by the degree of ripeness of the fruit at harvest. The aim of this study was to identify chemical markers differentiating between degrees of ripeness. Two coffee varieties, Catuai and Tipica, from the same farm were analysed using the following parameters and methods: caffeine and chlorogenic acid content using high-performance liquid chromatography (HPLC), sucrose content using hydrophilic interaction chromatography, high-molecular weight fraction (HMW) using high-performance size-exclusion chromatography (HPSEC) and volatile compounds using headspace solid phase micro extraction gas chromatography/mass spectrometry. The best method for differentiating between degrees of ripeness was found to be principal component analysis (PCA) based on HPLC data. HPSEC showed differences in the HMW fraction for different degrees of ripeness and both coffee varieties. Volatile profiles allowed separation of both varieties; yet, except for ripe Catuai, no separation was achieved for the degree of ripeness.

Using proton-transfer-reaction time-of-flight mass-spectrometry (PTR-ToF-MS), we investigated the extraction dynamic of 95 ion traces in real time (time resolution: 1 second) during espresso coffee preparation. Fifty-two of these ions were tentatively identified. This was achieved by on-line sampling of the volatile organic compounds (VOCs) in close vicinity to the coffee flow, at the exit of the extraction hose of the espresso machine (single serve capsules). Ten replicates of six different single serve coffee types were extracted to a final volume of between 30 - 110 mL, according to the recommended cup size of the respective coffee capsule (Ristretto, Espresso and Lungo), and analyzed. The results revealed considerable differences in the extraction kinetics between compounds, which led to a fast evolution of the volatile profiles in the extract flow and consequently to an evolution of the final aroma balance in the cup. Besides exploring the time-resolved extraction dynamics of VOCs, the dynamic data also allowed the coffees types (capsules) to be distinguished from one another. Both Hierarchical Cluster Analysis (HCA) and Principal Component Analysis (PCA) showed full separation between the coffees types. The methodology developed provides a fast and simple means of studying the extraction dynamics of VOCs and differentiating between different coffee types.

� 2016 IOP Publishing Ltd. The persistence of aroma compounds in breath after swallowing is an important attribute of the overall aroma experience during eating and drinking. It is mainly related to the coating of the oral tract with food residues and the interaction between volatile compounds and airway mucosa. We have studied the persistence of eight compounds (2,5-dimethylpyrazine, guaiacol, 4-methylguaiacol, phenylethylalcohol, ethylbutanoate, ethyloctanoate, isoamylacetate and 2-heptanone) both in-nose and in-mouth after administration of volatiles in gas phase (vapor) to five different panelists. By using volatiles in the gas phase, only the interaction with the mucosa is highlighted and the formation of a liquid coating in the oral and tracheal airway is avoided. The physicochemical properties of the compounds, mainly polarity and vapor pressure, determine the interactions of the volatiles with the airway mucosa. The use of different breathing protocols allowed the study of the differences between nasal and oral mucosa in volatile retention, with higher persistence of volatiles obtained in-mouth. Initial concentration also affected persistence, but only for compounds with high volatility and at low concentration.

An experimental technique is investigated to separate/enrich fullerenes of metallofullerenes, exploiting differences in sublimation temperatures without the use of solvents. Fullerenes are sublimed out of the soot and deposited on a quartz rod along a temperature gradient (gradient sublimation). In a position-sensitive experiment the composition of the deposit on the rod is monitored by laser-desorption mass spectrometry. Strongly enriched regions containing specific fullerene molecules (i.e., C[sub 84] or LaC[sub 82]) are observed. Furthermore, C[sub 74], which could not be extracted from the soot by organic solvents, sublimes out of the soot. 26 refs., 6 figs.

Interest in on-line measurements of volatile organic compounds (VOCs) is increasing, as sensitive, compact, and affordable direct inlet mass spectrometers are becoming available. Proton-transfer reaction mass spectrometry (PTR-MS) distinguishes itself by its high sensitivity (low ppt range), high time resolution (200 ms), little ionization-induced fragmentation, and ionization efficiency independent of the compound to be analyzed. Yet, PTR-MS has a shortcoming. It is a one-dimensional technique that characterizes compounds only via their mass, which is not sufficient for positive identification. Here, we introduce a technical and analytical extension of PTR-MS, which removes this shortcoming, while preserving its salient and unique features. Combining separation of VOCs by gas chromatography (GC) with simultaneous and parallel detection of the GC effluent by PTR-MS and electron impact MS, an unambiguous interpretation of complex PTR-MS spectra becomes feasible. This novel development is discussed on the basis of characteristic performance parameters, such as resolution, linear range, and detection limit. The recently developed drift tube with a reduced reaction volume is crucial to exploit the full potential of the setup. We illustrate the performance of the novel setup by analyzing a complex food system.

The objective of the project is to develop on-line, real-time, and noninvasive process control tools of coffee roasting that help deliver a consistent and high-quality coffee aroma. The coffee roasting process was analyzed by direct injection of the roaster gas into a time-of-flight mass spectrometer and ionized either by resonance enhanced multiphoton ionization (REMPI) at 266 and 248 nm or vacuum ultraviolet single-photon ionization (VUV-SPI) at 118 nm. The VUV ionization scheme allows detecting mainly the most volatile and abundant compounds of molecular mass below 100 m/z, while REMPI ionizes mainly aromatic compounds of molecular mass larger than 100 m/z. Combining the compounds ionized by resonant and single-photon ionization, approximately 30 volatile organic compounds are monitored in real time. Time-intensity profiles of 10 important volatile coffee compounds were discussed in connection with their formation chemistry during roasting. Applying multivariate statistics (principle component analysis) on time-intensity traces of nine volatile coffee compounds, the roasting degree could be traced as a consistent path in the score plot of the two most significant principle components (including 68% of the total variance), for a range of roasting temperatures (200-250 degrees C).

The formation of 4-vinylguaiacol, guaiacol, and phenol during coffee roasting was monitored in real-time, using resonance enhanced multiphoton ionization and time-of-flight mass spectrometry. A model is proposed, based on two connected reaction channels. One channel, termed the “low activation energy” channel, consists of ester hydrolysis of 5-FQA followed by decarboxylation of the ferulic acid to form 4-vinylguaiacol, and finally polymerization at the vinyl group to form partly insoluble polymers (coffee melanoidins). The second “high activation energy” channel opens up once the beans have reached higher temperatures. It leads to formation of guaiacol, via oxidation of 4-vinylguaiacol, and subsequently to phenol and other phenolic VOCs. This work aims at developing strategies to modify the composition of coffee flavor compounds based on the time−temperature history during roasting. Flavour research is a demanding domain in terms of analytical methodology as key odorants usually occur in trace amounts, often embedded in extracts containing volatile compounds at much higher concentrations. Since its early days, GC-MS has been a key tool in flavour laboratories enabling characterisation of thousands of volatile components in food products. However, as flavour chemists delve deeper into the understanding of flavour generation and delivery, there is a need for more powerful methodologies adapted to their specific needs. This paper will present two techniques that allow flavour separation and characterisation, namely GC-TOFMS and MS/MS. Moreover, APCI-MS, PTR-MS and REMPI-TOFMS will be discussed as they enable direct investigation of volatile compounds without any chromatographic step, thus studying release of flavour compounds during food processing or food consumption.

Using REMPI@266 nm or 248 nm several phenolic compounds, such as Phenol or the flavor-active 4-vinylguaiacol, can be detected in the roast off-gas.

Resonance-enhanced multi-photon ionization time-of-flight mass spectrometry (REMPI/TOFMS) has been applied to the detection of volatiles in the headspace of brewed coffee and in the coffee roasting process-gas. A frequency quadrupled Nd:YAG laser (266 nm) was used for REMPI ionization (REMPI@266nm) of the volatiles in an effusive molecular beam inside the ion source of a linear TOF mass spectrometer. A special sampling system provided a time correlated sampling. Under these circumstances REMPI@266nm is highly selective for ionization of phenolic compounds. Several phenolic compounds, such as the flavour-active 4-vinylguaiacol, can be detected in the headspace of coffee brew as well as in the roast off-gas with the application of this approach. Moreover, the nitrogen heterocyclic compounds, indole and caffeine, were detected in both cases. During the roasting process the relative changes in concentration of some volatile components of coffee have been recorded by EMPI@266nm with a time resolution of 1 Hz. The different volatiles exhibit characteristic concentration profiles as a function of the roast time. These results demonstrate the applicability of REMPI-TOFMS for on-line monitoring of coffee processing technologies. Such an on-line monitoring technique is of particular interest for process-control purposes, e.g. quality-protection or feedback process control. For example, monitoring of off-gases from the coffee roast process or monitoring of certain unit operations during the instant-coffee manufacturing could be promising industrial applications.

This article reviews recent work in Los Angeles on elementary processes in fullerene vapors. The production of fullerene molecules typically involves extreme high-temperature conditions and processes which are poorly understood at date [1–3]. Once generated, these molecules may represent the most stable molecules known [4,5]. In a recent work [C. Yeretzian et al., Nature 359, 44 (1992)] we presented clear evidence for coalescence reactions between fullerene molecules. Mass spectrometric measurements on hot, dense vapors of small fullerenes (C60 and C70) reveal the formation of stable higher fullerenes which are multiples of the initial masses. These processes are shown to occur in the gas-phase rather than in the solid film and their dependences on laser fluence and He-gas pressure are investigated. Three distinct reactions are proposed—coalescence, emission and capture—to account for the observed distributions at higher fullerene sizes. Specifically, the heat of coalescence is released through emission of small, even-numbered fragments which, in a very dense vapor, are efficiently captured by other coalesced fullerenes. These findings have implications for the long-time stability of the fullerene vapor, and for the mechanism of fullerene formation and growth, and may open new ways to the synthesis of selected higher fullerenes and encapsulation compounds.

In this article, a method for high-resolution laser spectroscopy of ions—termed ZEro-Kinetic Energy spectroscopy (ZEKE)— is reviewed. Emphasis will be put on a more recent, mass-selective version (mass-analyzed ZEKE). A detailed description of the apparatus, designed and built at the Technische Universitat Munchen, will first be given. In a second part, we outline two applications which are particularly suited to illustrate the potential of the method. We hope to demonstrate to the mass spectrometry community the close connection between a ZEKE spectrometer and a conventional reflectron time-of-flight mass spectrometer (TOF-MS). Adding one single electrostatic field lens to the extraction field region of a TOF-MS allows to go far beyond mass analysis, distinguishing, for example, between isomeric structures or determining the geometric structure of molecular ions.

A review with 111 refs. presenting exptl. aspects of metal-cluster work including: supersonic- mol.- beam technol.; laser spectroscopy; mass spectroscopy; and low- and high-temp. matrix-isolation expts. The exptl. results discussed include: stability of cluster sizes; selectivity of the heterometallic bond; elec. and magnetic properties from the atom to the bulk; insulator-metal transitions; and size-dependent chem. and catalytic properties. This article reviews the evolution of the UCLA fullerene research over the past two years from the perspective of laser desorption mass spectrometry (LDMS). As a fast and sensitive analytical method, it has critically contributed to a wide range of fullerene related research projects. Immediately after the discovery of a method for making C60, C70 and selected higher fullerenes in macroscopic amounts, a concerted effort in different laboratories led to the isolation and structure determination of C76, C78, C82 and tentatively C84. Simultaneously with the work on pure fullerene, important progress was achieved in the synthesis of metallofullerenes and derivatized fullerenes. LDMS continually documented progress or failure in extraction, isolation and synthesis and helped to plan future research. Recently, synthesis of C60 and larger fullerenes from precursors, e.g., C18(CO)6, and coalescence reactions of fullerenes, induced by high fluence of the desorption laser, introduced a new aspect of this otherwise exclusively analytical method.© (1993) COPYRIGHT SPIE--The International Society for Optical Engineering.
