The objective of this study was to determine the storage efficiency and reconditioning of potato cv. Innovator for processing. Tubers were stored at 6, 7 and 8 °C in the dark for 30, 60, 90, 120 and 150 days and reconditioned at 15 °C for 15 days. TRS and RS were reduced as storage temperature increased from 6 + 15 °C to 8 + 15 °C. Regardless of temperature and storage time, sugar contents were suitable for industry; however non-enzymatic browning remained in category 2 for up to 60, 90 and 150 days in tubers stored at 6 + 15 °C, 7 + 15 °C and 8 + 15 °C, respectively. Starch was influenced by storage time, despite the absence of temperature effect. Regardless of the temperature, sprouting started at 90 days, but the growth of shoots was directly proportional to the increase in temperature. The PPO and POD increased at the beginning of storage but did not cause darkening before the frying. Reduction in storage temperature followed by reconditioning did not delay the onset of sprouting, but reduced the size of sprouts, maintained adequate sugar levels, however it promoted non-enzymatic browning.

Black chickpea is a good source of bioactive compounds, particularly isoflavones. Sprouting improves nutraceutical value in chickpea seeds. This study aimed to explore the role of sprouting of black chickpea seeds on the synthesis of isoflavones and evaluate the impact of the soluble isoflavone on cellular antioxidant activity (CAA) and antiproliferative activity in breast cancer cells. Isoflavones were identified and quantified by HPLC-UV-MS. The CAA and antiproliferative activity were determined in HepG2 cells and MDA-MB-231 cancer cells, correspondingly. In sprouted black chickpea, six isoflavones (formononetin, biochanin-A, and its glycosides) were identified and the total isoflavones content increased (0.31 to 35.72 µgBA/mg of extract). The CAA was increased five times from 137.2 to 788.2 µMEQ/100 g of sample. The bioactive compounds in sprouted chickpea decreased the proliferation of MDA-MB-231 cell line. Also caused morphological changes such as cell shrinkage, rounding and nuclear fragmentation. The results herein suggest that bioactive compounds, as isoflavones, in sprouted black chickpea showed a potential antioxidant and antiproliferative activity. Therefore, it may be considered as a value-added product or ingredient for produce functional foods.

Germination can be used to enhance nutritional value and health functions of edible seeds. Sprouts are considered healthier than raw seeds because they are richer in the basic nutritional components (carbohydrates, protein, vitamins, and minerals) and also contain more bioactive components responsible for various biological activities. The effect of sprouting on the antioxidant, antidiabetic, antiobesity activities, and metabolite profiles of alfalfa and buckwheat seeds was investigated in this study. DPPH radical scavenging activity was highest in buckwheat sprouts followed by alfalfa sprout, buckwheat seed, and alfalfa seed, respectively. ABTS radical scavenging potential showed a similar trend as DPPH with buckwheat sprouts exerting the best scavenging capacity. Alfalfa sprout and buckwheat seed exhibited the highest percentage inhibitory activity of α-glucosidase (96.6 and 96.5%, respectively). Alfalfa sprouts demonstrated the strongest inhibitory activity against pancreatic lipase (57.12%) while alfalfa seed showed the highest advanced glycation end products (AGEs) formation inhibitory potential (28.7%). Moreover, thirty-three (33) metabolites were characterized in the seed and sprout samples. Sprouts demonstrated a higher level of metabolites compared to raw seeds. Hence, depending on the type of seed and the target activity, sprouting is a good technique to alter the secondary metabolites and functional properties of edible seeds.

Quinoa plant is a valuable food crop because of its high nutritional and functional values. Total saponin content, sapogenins, polyphenol, and flavonoid contents and antioxidant activities were analyzed in various parts of quinoa plants, including sprout, seeds, bran, pericarp, leave, stem, and root. Quinoa seeds (QS) had significantly higher sapogenin content than quinoa stem (QT), quinoa leaves (QL), and quinoa roots (QR). Quinoa saponin was mainly composed of phytolaccagenic acid. Quinoa root (QR) had the highest amount of total saponin (13.39 g 100 g−1), followed by quinoa bran. The highest total phenolic content (30.96 mg GAE 100 g−1) and total flavonoid content (61.68 mg RE 100 g−1) were observed in quinoa root extract and 1‐month‐old sprout extract, respectively. Quinoa sprouts showed better antioxidant activity than fully grown parts of the quinoa plant. Overall, root and sprout had a higher antioxidant capacity compared to other parts of the quinoa plant, suggesting the potential use of quinoa root and sprout as a nutraceutical ingredient in the health food industry.

The balloon flower (BF) is a potent natural source of phytochemical compounds and is associated with our health. The sprouting process is accompanied by significant changes in phytochemical compounds in comparison with their original plants. Even though many studies are conducted with BF, there are not yet reports of BF sprouts. In the present study, we determined the chemical composition and biological activity of BF sprouts that had been cultivated for 50 days. Kaempferol‐3‐O‐galactoside and 1‐O‐caffeoylquinic acid were identified as major components of whole BF sprouts. The leaves/stems of the sprouts had higher total phenolic and flavonoid contents and lower IC50 values in DPPH• and ABTS•+ scavenging assays than whole sprouts or roots. The roots of the sprouts had the highest polygalacin D content (1.44 mg/g). We also determined the effects of different parts of BF sprouts on RAW 264.7 macrophage cells. When these cells were stimulated with lipopolysaccharide (LPS), their nitrite and pro‐inflammatory cytokine production increased. BF sprouts suppressed the LPS‐induced production of nitrite, tumor necrosis factor‐α, and interleukin‐6 in a concentration‐dependent manner without causing any cytotoxic effects. Nitrite and pro‐inflammatory cytokine production were significantly inhibited by the roots and leaves/stems, respectively. The inhibitory effects of BF sprouts on LPS‐stimulated inflammatory responses in RAW 264.7 macrophage cells were associated with suppressed NF‐κB activation. These findings suggest that BF sprouts could be a valuable source of bioactive compounds and exert anti‐inflammatory effects due to their polygalacin D, deapi‐platycodin D3, and polyphenol content.

The effects of elicitors on broccoli (Brassica oleracea L. var. Italica) and radish (Raphanus&nbsp, sativus L.) sprouts were evaluated. Seeds and then sprouts were soaked daily for 30 min over 6 days in water (control) or a mixture of FeEDTA and sodium silicate or sodium silicate alone. The contents of the flavonoids and phenolic acids (free, esters, and glycosides) were determined using HPLC-ESI-MS/MS. Phenolic compounds were released from the esters after acid hydrolysis and from the glycosides using alkaline hydrolysis. Quercetin, kaempferol, (‒)-epicatechin, naringenin, apigenin, and luteolin derivatives were found in broccoli and radish sprouts, while derivatives of iso-rhamnetin, orientin, and vitexin were not present at measurable levels. The flavonoid contents, especially derivatives of quercetin, were considerably higher in the broccoli sprouts than in the radish sprouts. The quantitatively major phenolic acid content in the sprouts of both species was found to be p-hydroxybenzoic acid. Its content in the radish sprouts was several times higher than in the broccoli sprouts. The total flavonoid content of broccoli sprouts was 507–734 µg/g DW, while that of the radish sprouts ranged from 155 µg/g DW to 211 µg/g DW. In contrast, total phenolic acids were higher in radish sprouts, ranging from 11,548 to 13,789 µg/g DW, while in broccoli sprouts, they ranged from 2652 to 4527 µg/g DW, respectively. These differences resulted radish sprouts having higher antioxidant activity compared to broccoli sprouts. The applied elicitors increased the content of the total phenolic acids and the antioxidant activity of radish and broccoli sprouts, while they decreased the level of the total flavonoids in broccoli sprouts.

Sprout is a nutritious ready-to-eat vegetable. In this study, we examined the effects of ultrasonication treatments (treated with 28, 40 or 80 kHz frequency for 10 min at 25 °C) on the changes in microstructure, seed hydration and germination, sprout growth, sprout quality, and microbial load of two adzuki bean (Vigna angularis) varieties (Kaohsiung 8 and Kaohsiung 10). The results indicated that the ultrasonication at 40 kHz or 80 kHz improved seed hydration and enhanced germination, this is linked to the ultrasound-induced microstructure changes in the hilum and seed coat surface of treated seeds. The ultrasonication-increased sprout growth and yield were possibly attributable to the increased α-amylase activity during germination. Ultrasonication also improved total polyphenols, total flavonoids, and total saponins contents and further enhanced the anti-oxidative activities (FRAP and DPPH) of produce sprouts. The results further indicated that the 40 kHz or 80 kHz treatment decreased microbial loads of treated sprouts to an acceptable level, therefore, these two treatments can be used for germination improvement and an effective microbial control treatment for adzuki bean sprout production.

Wheat (Triticum aestivum Linn.; Poaceae), one of the most popular food crops worldwide, contains basic and essential nutrients and various health benefiting phytochemicals. Among them, flavonoids have attracted significant interest owing to their various health-promoting properties. In this study, 35 wheat mutant lines were developed via gamma-irradiated mutation breeding from the original cultivar. The effects of radiation breeding on the endogenous phytochemical production in the sprouts of these mutant lines were investigated using high performance liquid chromatography-diode array detector-electrospray ionization mass spectrometry (HPLC-DAD-ESIMS) with multivariate analysis for the first time in this study. Fourteen characteristic peaks, including eleven flavone C-glycosides, two flavone O-glycosides, and one flavone, were identified. In addition, the contents of three flavone C-glycosides, namely, isoschaftoside, isoorientin, and isoscoparin, in 37 wheat sprout samples from the original cultivar, certificated cultivar, and the mutant lines were determined. A heat map combined with hierarchical clustering showed variation in the relative content for the flavonoids between the 37 wheat sprout samples, clustering into three groups. On principal component analysis scores scatter and loading plots, significant differences in the levels of flavonoids were found between the samples and several markers responsible for group separation were detected. These results provide a scientific reference for the phytochemical variation in wheat mutant lines, thereby aiding in further mutation mechanism studies and for the quality control of the improved wheat cultivars.

It has been experimentally proven that germinated plant seeds, such as leek, red clover, broccoli, and others contain proteases, which are able to digest animal protein such as gelatin, bovine albumin, casein, and egg albumin. Preliminary tests were carried out with the use of a semi-qualitative gelatin test, which is often applied to prove the presence of fruit enzymes. Quantitative examinations were carried out with the use of a ninhydrin reaction for amino acid determination as well as the Bradford and Smith methods for protein determination. Respective calibration curves were obtained for glycine (amino acid analysis) as well as for egg albumin, bovine albumin, and gelatin (protein analysis), with a full statistical evaluation including Mandel and Lack-of-Fit tests to check for linearity. It has been proven that the selected germinated seeds containing proteases can be applied as an effective aid for animal protein digestion.

Sunflower (Helianthus annuus L.) sprouts accumulate high amounts of caffeoylquinic acids (CQAs) including chlorogenic acid (5-CQA) and 1,5-diCQA. These compounds, which can be found in many plants, including tomato, globe artichoke, and chicory, have many health benefits, including antioxidant, antihepatotoxic, and antiglycative activities. However, CQA profiles and biosynthesis have not previously been studied in sunflower sprouts. In the present study, we found that 5-CQA and 1,5-diCQA were the major CQAs found in sunflower sprouts. We also identified minor accumulation of other CQAs, namely 3-CQA, 4-CQA, 3,4-diCQA, and 4,5-diCQA. According to genome-wide identification and phylogenetic analysis of genes involved in CQA biosynthesis in sunflower, three genes (HaHQT1, HaHQT2, and HaHQT3) encoding hydroxycinnamoyl CoA:quinate hydroxycinnamoyl transferase (HQT) and two genes (HaHCT1 and HaHCT2) encoding hydroxycinnamoyl CoA:shikimate/quinate hydroxycinnamoyl transferase (HCT) were identified. Expression analysis of these five genes in hypocotyls and cotyledons strongly suggested that HaHQT2 could be the main enzyme responsible for CQA biosynthesis, as HaHQT2 had the highest expression levels. In addition, when transiently expressed in the leaves of Nicotiana benthamiana, all three HaHQTs, which were soluble and not membrane-bound enzymes, could increase the content of 5-CQA by up to 94% compared to that in a control. Overall, our results increase understanding of CQA biosynthesis in sunflower sprouts and could be exploited by plant breeders to enhance accumulation of health-promoting CQAs in these plants.

Glucosinolate (GSL) profiles and concentrations in various tissues (seeds, sprouts, mature root, and shoot) were determined and compared across nine Brassica species, including cauliflower, cabbage, broccoli, radish, baemuchae, pakchoi, Chinese cabbage, leaf mustard, and kale. The compositions and concentrations of individual GSLs varied among crops, tissues, and growth stages. Seeds had highest total GSL concentrations in most of crops, whereas shoots had the lowest GSL concentrations. Aliphatic GSL concentrations were the highest in seeds, followed by that in sprouts, shoots, and roots. Indole GSL concentration was the highest in the root or shoot tissues in most of the crops. In contrast, aromatic GSL concentrations were highest in roots. Of the nine crops examined, broccoli exhibited the highest total GSL concentration in seeds (110.76 µmol·g(-1)) and sprouts (162.19 µmol·g(-1)), whereas leaf mustard exhibited the highest total GSL concentration in shoots (61.76 µmol·g(-1)) and roots (73.61 µmol·g(-1)). The lowest GSL concentrations were observed in radish across all tissues examined.

The contents of total Se and of inorganic and organic Se species, as well as the contents of proteins, chlorophylls, carotenoids, and phenolic acids, were measured in 10-day old sprouts of rice (Oryza sativa L.) obtained with increasing levels (15, 45, 135, and 405 mg Se L–1) of sodium selenite and sodium selenate and with distilled water as control. Increasing Se levels increased organic and inorganic Se contents of sprouts, as well as the content of phenolic acids, especially in their soluble conjugated forms. Moderate levels of sodium selenite (i.e., not higher that 45 mg L–1) appeared the best compromise to obtain high Se and phenolic acid yields together with high proportion of organic Se while limiting residual Se in the germination substrate waste. Se biofortification of rice sprouts appears a feasible and efficient way to promote Se and phenolic acid intake in human diet, with well-known health benefits.

Iron (Fe) is an essential element for human nutrition, and its deficiency or low hemoglobin levels are a global health issue. Strategies aimed at increasing the amounts of essential elementals in agricultural products, as sprouts of adzuki bean (Vigna angularis), can be a way to minimize deficiencies, mainly in the populations of developing countries. Therefore, in this work was evaluated: production of Fe-enriched adzuki bean sprouts; Fe accumulation and translocation in plants in different culture media enriched with different Fe masses (500, 1000, 2000, and 3000 µg); and effects of the enrichment by means of 3000 µg FeIII-ethylenediaminetetraacetic acid (FeIII-EDTA): on the distribution of Ca, Cu, Fe, K, P, Mg, S, and Zn in different parts of the plant; on protein concentrations (albumins, globulins, prolamins, and glutelins) and their association with Fe in edible parts of the plant (stems); and on Fe bioaccessibility in the edible part of the plant (stems). The enrichment via FeIII-EDTA favored the translocation and increased Fe content of sprouts (75%), besides promoting interactions of Fe with albumins (141%), globulins (180%), and glutelins (93%). Para solucionar esse problema, foram conduzidos três experimentos, em pomares comerciais localizados na região Noroeste do Estado de São Paulo, com o objetivo de estudar o efeito do Ethephon, aplicado antes da poda de produção, na emissão e desenvolvimento das novas brotações e na duração do período da poda até a floração. Foram testadas quatro doses de ethephon (0 mg.L-1; 720 mg.L-1; 1.440 mg.L-1; 2.160 mg.L-1) aplicadas via foliar antes da poda de produção, nos meses de junho e julho de 2002. Observou-se que a aplicação de Ethephon proporcionou maior número de gemas brotadas, maior comprimento e diâmetro do ramo e não alterou o período da poda à floração. Especialmente quando da ocorrência de condições climáticas desfavoráveis e quando as plantas apresentaram satisfatório grau de enfolhamento, a aplicação de ethephon, na dose de 2.160 mg.L-1, foi a mais efetiva. The production of ' Niagara Rosada ' in tropical and subtropical regions of Brazil has been frequentmently reduced, mainly due to difficulty of emission and development of sprout after the yield prune carried out in the months of occurrence of lower temperatures, what caused reduction in yields and discourage of farmers. Three experiments was carried out to solve this problem, in commercial areas located in northwest region of São Paulo State, with the objective to verify the effect of Ethephon, applied before the yield prune, in emission and development of sprout and in duration of the period of pruning until the flowering. Four levels of Ethephon (0 mg.L-1; 720 mg.L-1; 1,440 mg.L-1; 2,160 mg.L-1) were applied by leaf before the yield prune, in the months of June and July of 2002. It was observed, that the application of Ethephon promoted greater sprouted bud number. Greater growth and diameter of branch and did not modify the duration of the period of pruning until the flowering. Speciallity when the climatic conditions, were unfavorable and when the plants present satisfactory level of leaf, it recommends application of Ethephon in the dose of 2,160 mg.L-1, this revealed be more effective. 10 pages., The changes in antioxidant compounds of Brassica oleracea L. var. costata DC seeds were monitored during the first twelve days of seedling development. Sprouts were screened at time intervals of two days for phenolic compounds and organic acids. The identified phenolic compounds included esters of sinapic acid with glucose, gentiobiose and kaempferol, as well as sinapoylcholine. The organic acids were oxalic, aconitic, citric, pyruvic, malic, shikimic, and fumaric acids. During germination, a depletion of phenolic compounds was observed, although no qualitative changes were seen. Among individual compounds, kaempferol, choline and glucose esters of sinapic acid showed a marked decrease between days two and six, whereas the changes in gentiobiose esters of sinapic acid were smaller. The total organic acids content increased rapidly during the first four days, with less significant variations thereafter. Malic acid, the major organic acid found in sprouts, greatly contributed to this result though oxalic, pyruvic, and fumaric acids also increased in the same manner. In contrast, aconitic, citric and shikimic acids showed decreases between days two and twelve of germination.

Foram testadas as doses 0; 3; 6 e 9L.ha-1 de ethephon aplicado via foliar. Concluiu-se que o uso de ethephon proporcionou aumento do número de cachos e da produtividade de 'Niagara Rosada', especialmente quando da ocorrência de condições climáticas desfavoráveis e com satisfatório grau de enfolhamento. The production of 'Niagara Rosada' in the off season is an excellent option for the region of Jales, São Paulo State, Brazil, due the difficulty of emission and development of the sprout after the pruning, carried through in the months of occurrence of lower temperatures (< 10ºC), that has caused small productions among the grape growers. So to solve this problem, six experiments in the years of 2001 and 2002 had been conducted with the objective to verify the effect of ethephon applied before the pruning, on the number of clusters and production. Four levels (0; 3; 6 and 9L.ha-1) of ethephon applied by foliar via had been tested. It was concluded that the use of ethephon provided the increasing of the number of clusters and the productivity of 'Niagara Rosada', especially with the occurrence of favorable climatic conditions and with satisfactory degree of foliage. The use of ethephon in the dose of 9L.ha-1 provided to increase the productivity in 'Niagara Rosada' in the period between harvests. This research was aimed to determine the potency of hypocholestrolemic properties of protein isolate from cowpeas sprout through in vivo bioassay by using Sprague Dawley male rats. The treatments of the research were rat conditions (normal and diabeic rats) and feed treatments (standard and protein isolate feed). Blood triglyceride, cholesterol total, High Density Lipoprotein (HDL), and Low Density Lipoprotein (LDL), of rats were analysed on 3 th , 6 th , 9 th , 12 th , 15 th days for the treatment and before treatment as control. The result of this research showed that the blood triglyceride, cholesterol total, LDL decreased and the blood HDL increased in diabetics rats with protein isolate treatment. The potency of hypocholestrolemic activity were shown by the ratio of cholesterol total/HDL and LDL/HDL. The ratio of the rats were normal, exception diabetic rats with standart feed.
