Pulmonary arterial pressure (PAP) is a diagnostic measure used to determine an individual's susceptibility to developing high-altitude disease. The importance of PAP measures collected at elevations lower than the intended breeding elevation of the bulls (i.e., ≥1,520 m) is unknown. Therefore, the objective of this study was to determine the genetic relationship between PAP measures collected in a range of elevations using reaction norm models. A total of 9,177 PAP and elevation observations on purebred Angus cattle, which averaged 43.49 ± 11.32 mmHg and 1,878.6 ± 296.8 m, respectively, were used in the evaluation. The average age of the individuals in the evaluation was 434.04 ± 115.9 d. A random regression model containing the effects of sex, a linear covariate of age, a quadratic fixed covariate of elevation, and random effects consisting of a contemporary group and a linear regression of PAP on elevation was used for the evaluation of PAP. Two forms of PAP were evaluated with this model. First, to address the non-normality of the data, PAP was raised to the power of -2.6 (ptPAP) based on the results of a Box-Cox analysis. Second, raw PAP (rPAP) phenotypes were evaluated to compare the results to those obtained from the transformed data. For ptPAP, heritability ranged from 0.25 to 0.37 corresponding to elevations of 1,900 and 1,215 m, respectively. For rPAP, heritability ranged from 0.22 to 0.41 corresponding to elevations of 1,700 and 2,495 m, respectively. Generally, lower elevations corresponded to decreased heritabilities while higher elevations corresponded to increased heritability estimates. For ptPAP, genetic correlations ranged from 0.18 (elevation: 1,215 and 2,495 m) to 1.00. For rPAP, genetic correlations ranged from 0.08 (elevation: 1,215 and 2,495 m) to 1.00. In general, the closer the elevations in which PAP was measured, the greater the genetic relationship. The greater the difference in elevation between PAP measures resulted in lower genetic correlations. The rank correlation between expected progeny differences (EPD) for 1,215 and 2,495 m was 0.65 and 0.49 for the ptPAP and rPAP, respectively. These results suggested that PAP measures collected in lower elevations may be used as an indicator of high-altitude adaptability. Bos taurus indicus cattle have the superior ability for the regulation of body temperature during heat stress due to a number of physiological and cellular level adaptive traits. The objectives of this study were to quantify the change in body temperature in heifers with various proportions of Brahman genes per unit increase in heat stress as measured by temperature-humidity index (THI) and to assess how different breed groups responded to varying intensity and duration of heat stress. A total of 299 two-yr-old heifers from six breed groups ranging from 100% Angus to 100% Brahman were evaluated under hot and humid conditions during 2017 and 2018 summer days. Two strategies were used to estimate the plasticity in body temperature of breed groups in response to environmental challenges: 1) a random regression mixed model was used to estimate reaction norm parameters for each breed group in response to a specified environmental heat stress and 2) a repeated measures mixed model was used to evaluate the response to different environmental heat loads. The reaction norm model estimated an intercept and slope measuring the change in body temperature per unit increase in THI environmental heat stress for different breed groups of animals and allowed the identification of genotypes which are robust, with low slope values indicative of animals that are able to maintain normal body temperature across a range of environments. The repeated measures mixed model showed that Brahman cattle have an advantage under moderate or high heat stress conditions but both Angus and Brahman breed groups are greatly affected when heat stress is severe. A critical factor appears to be the opportunity to cool down during the night hours more than the number of hours with extreme THI. With heat stress conditions predicted to intensify and expand into currently temperate zones, developing effective strategies to ensure sustainable beef production systems are imperative. The objectives of this study were to compare ruminal total tract digestibility, bacterial communities, and eating and rumination activity between Holstein and Angus steers fed grain- or forage-based diets. Six Holstein steers (average body weight [BW] = 483 ± 23 kg) and six Angus steers (average BW = 507 ± 29 kg), previously fitted with rumen cannulae, were fed in a crossover design with a 2 × 2 factorial arrangement of four treatments: 1) Holsteins fed a grain-based diet, 2) Holsteins fed a forage-based diet, 3) Angus fed a grain-based diet, and 4) Angus fed a forage-based diet. Each period was 35 d with 26 d of diet adaptation and 9 d of sample collection. On days 1 and 2 of collection, feeding activity was recorded for 48 h. On day 3, rumen contents were sampled to measure ruminal pH at 0, 3, 6, 12, and 18 h after feeding. A portion of the strained ruminal fluid was subsampled at 0, 3, and 6 h for volatile fatty acids (VFA) analysis. Rumen contents were subsampled at 3 h for analysis of bacterial communities. From day 4 to 8, total fecal excretion, feed, and refusals samples were collected and analyzed for dry matter (DM), neutral detergent fiber (NDF), and starch. On days 8 and 9 (0 and 3 h post-feeding, respectively), total reticulorumen evacuation was conducted and contents were weighed. Data were analyzed using the MIXED procedures in SAS (v9.4 SAS Inst. Inc., Cary, NC). Repeated measures were used to analyze changes in ruminal pH and VFA over time. There were no interactions of diet × breed (P ≥ 0.07). While the main effects of diet were expected, unique to these data is the fact that bacterial diversity and richness were reduced (P < 0.01) in cattle fed grain-based diets. There was no main effect (P > 0.34) of breed on total tract DM, organic matter, and starch digestibility, but Angus cattle had greater (P = 0.01) NDF digestibility than Holsteins. The increased NDF digestibility may be associated with a numerical (P = 0.08) increased numbers of bacterial species in Angus steers compared with Holstein steers. Holstein steers also spent more time (P ≤ 0.05) ruminating than Angus steers. There was no effect (P > 0.80) of breed on reticulorumen content at feeding time; however, Holstein steers had greater (P = 0.04) reticulorumen content on a wet basis 3 h post-feeding. Although Holstein steers spent more time ruminating, Angus steers were better able to digest NDF when compared with Holsteins, regardless of basal diet, and this improvement may be related to changes in bacterial communities in the rumen or to rumination activity., (© The Author(s) 2020. Explicitly fitting effects for major genes or QTL that account for a large percentage of variation in a whole genomic prediction model may increase prediction accuracy. This study compared approaches to account for a major effect of an F94L variant in the MSTN gene within the genomic prediction using bovine whole-genomic SNP markers. Among the beef cattle breeds, Limousin have been known to have an F94L variant that is not present in Angus. The reference population in this study consisted of 3060 beef cattle including pure-bred Limousin (PL), cross-bred Limousin with Angus (LF) and pure-bred Angus, genotyped using a BovineSNP50 BeadChip and directly for the MSTN-F94L variant. We compared prediction accuracies in PL animals using the three datasets from only the PL population, admixed PL and LF (AL) or multibreed analysis using all of the PL, LF and Angus (MB) population according to four-fold cross-validation after K-means clustering. The MSTN-F94L variant was the most strongly associated with five traits (birth weight, calving ease direct, milk, weaning weight and yield grade) among the 13 measured traits in PL and AL populations. Fitting the MSTN-F94L variant as a random effect, the genomic prediction accuracies for birth weight increased by 2.7% in PL, by 2.2% in AL and by 3.2% in MB. Prediction accuracies for five traits increased in the MB analysis. Fitting MSTN-F94L as a fixed effect in PL, AL and MB analyses resulted in increased prediction accuracy in PL for eight traits. Prediction accuracies can be improved by including a causal variant in genomic evaluation compared with simply using whole-genome SNP markers. Fitting the causal variant as a fixed effect along with markers fitted as random effects resulted in greater prediction accuracies for most traits. Selection for production traits with little or no emphasis on health-related traits has the potential to increase susceptibility to disease in food-producing animals. A possible genetic strategy to mitigate such effects is to include both production and health traits in the breeding objective when selecting animals. For this to occur, reliable methodologies are required to assess beneficial health traits, such as the immune capacity of animals. We describe here a methodology to assess the immune competence of beef cattle which is both practical to apply on farm and does not restrict the future sale of tested animals. The methodology also accommodates variation in prior vaccination history of cohorts of animals being tested. In the present study, the immune competence phenotype of 1,100 Angus calves was assessed during yard weaning. Genetic parameters associated with immune competence traits were estimated and associations between immune competence, temperament, and stress-coping ability traits were investigated. Results suggested that immune competence traits, related to an animal's ability to mount both antibody and cell-mediated immune responses, are moderately heritable (h2 = 0.32 ± 0.09 and 0.27 ± 0.08, respectively) and favorably genetically correlated with the temperament trait, flight time (r = 0.63 ± 0.31 and 0.60 ± 0.29 with antibody and cell-mediated immune responses, respectively). Development of methodologies to assess the immune competence phenotype of beef cattle is a critical first step in the establishment of genetic selection strategies aimed at improving the general disease resistance of beef herds. Altitude-induced pulmonary hypertension is a disease once thought to only occur at extremely high elevations (>1,600 m), but recently, it has been observed at moderate elevations of 1,200 to 1,600 m. Pulmonary arterial pressure (PAP) has been used as an indicator of tolerance to high altitude in mountainous beef production systems for over 30 yr. The trait is typically measured on yearling bulls and heifers with values ≤ 41 mmHg being favorable. These observations were historically only considered valid when they were recorded at elevations ≥ 1,600 m; however, if observations from lower (i.e., moderate) elevations were reliable indicators, a greater number of cattle records could be used in genetic improvement programs for high-altitude beef systems. The objectives of this study were to evaluate the relationship between PAP and elevation, as well as to determine whether PAP measures obtained at moderate elevations (ME) less than 1,600 m have a genetic relationship with PAP observations obtained at high elevations (HE) 1,600 m or greater. Elevation and PAP data from purebred Angus cattle (n = 14,665) from 349 contemporary groups were used in the analyses. Elevation and PAP averaged 1,887 ± 1.8 m and 43.0 ± 0.1 mm Hg, respectively. A univariate model containing the effects of sex, age, elevation category (HE vs. ME), elevation (continuous), and elevation category by elevation interaction along with a random direct genetic effect was utilized to determine the relationship between PAP and elevation. In this model, all main effects were found to be significant contributors of variation in PAP (P < 0.001). The interaction between elevation category and elevation was not a significant contributor to variability of PAP (P > 0.05). A bivariate animal model was then used to evaluate the relationship between PAP observations obtained between HE and ME groups. Heritability estimates for these 2 groups were 0.34 ± 0.03 and 0.29 ± 0.09, respectively, and their genetic correlation was 0.83 ± 0.15. Even though this is a strong genetic relationship, results of this study support the hypothesis that PAP observations collected at HE and ME are not perfectly, genetically related. Results suggest that PAP measures collected from 1,219 to 1,600 m may be useful as a correlated trait in a multitrait genetic evaluation to produce EPD useful for selection of animals with reduced susceptibility to pulmonary hypertension., (© The Author(s) 2018. Angus and Hereford beef is marketed internationally for apparent superior meat quality attributes; DNA-based breed authenticity could be a useful instrument to ensure consumer confidence on premium meat products. The objective of this study was to develop an ultra-low-density genotype panel to accurately quantify the Angus and Hereford breed proportion in biological samples. Medium-density genotypes (13 306 single nucleotide polymorphisms (SNPs)) were available on 54 703 commercial and 4042 purebred animals. The breed proportion of the commercial animals was generated from the medium-density genotypes and this estimate was regarded as the gold-standard breed composition. Ten genotype panels (100 to 1000 SNPs) were developed from the medium-density genotypes; five methods were used to identify the most informative SNPs and these included the Delta statistic, the fixation (F st) statistic and an index of both. Breed assignment analyses were undertaken for each breed, panel density and SNP selection method separately with a programme to infer population structure using the entire 13 306 SNP panel (representing the gold-standard measure). Breed assignment was undertaken for all commercial animals (n=54 703), animals deemed to contain some proportion of Angus based on pedigree (n=5740) and animals deemed to contain some proportion of Hereford based on pedigree (n=5187). The predicted breed proportion of all animals from the lower density panels was then compared with the gold-standard breed prediction. Panel density, SNP selection method and breed all had a significant effect on the correlation of predicted and actual breed proportion. Regardless of breed, the Index method of SNP selection numerically (but not significantly) outperformed all other selection methods in accuracy (i.e. correlation and root mean square of prediction) when panel density was ⩾300 SNPs. The correlation between actual and predicted breed proportion increased as panel density increased. Using 300 SNPs (selected using the global index method), the correlation between predicted and actual breed proportion was 0.993 and 0.995 in the Angus and Hereford validation populations, respectively. When SNP panels optimised for breed prediction in one population were used to predict the breed proportion of a separate population, the correlation between predicted and actual breed proportion was 0.034 and 0.044 weaker in the Hereford and Angus populations, respectively (using the 300 SNP panel). It is necessary to include at least 300 to 400 SNPs (per breed) on genotype panels to accurately predict breed proportion from biological samples.

The sensory attributes and flavor chemistry of grilled beef striploins (M. longissimus lumborum, n = 42) varying widely in marbling from commercial production types typical for Southern Australia were extensively characterized. Striploins from Angus grass-fed yearlings (5.2-9.9% intramuscular fat), Angus grain-finished steers (10.2-14.9%), and Wagyu grass-fed heifers (7.8-17.5%) were evaluated. Inherent differences between samples from grass- and grain-fed Angus cattle were minimal when the intramuscular fat content was above ∼5%. After adjusting for intramuscular fat, Wagyu samples had more intense flavor and higher tenderness and juiciness compared to Angus grass-fed samples. Grilled beef flavor, dairy fat, and sweetness increased with the marbling level, and sourness and astringency decreased. Tenderness and juiciness increased with the marbling level and were correlated with Warner-Bratzler peak force measurements. Trained panel sensory differences in flavor corresponded with increases in aroma volatiles and changes in nonvolatile flavor compounds. Unsaturated fatty acids with potential health benefits (vaccenic, oleic, and rumenic acids) increased with the level of marbling.

The objective of this work was to estimate heritability of each of 5 subjectively measured aspects of temperament of cattle and the genetic correlations of pairs of those traits. From 2003 to 2013, Nellore-Angus F2 and F3 calves (n = 1,816) were evaluated for aspects of temperament at an average 259 d of age, which was approximately 2 mo after weaning. Calves were separated from a group and subjectively scored from 1 (calm, good temperament) to 9 (wild, poor temperament) for aggressiveness (willingness to hit an evaluator), nervousness, flightiness, gregariousness (willingness to separate from the group), and a distinct overall score by 4 evaluators. Data were analyzed using threshold and linear models with additive genetic random effects. Two-trait animal models (nonthreshold) included the additive genetic covariance for pairs of traits and were used to estimate additive genetic correlations. Contemporary groups (n = 104) represented calves penned together for evaluation on given evaluation days. Heifers had greater (worse) means for all traits than steers (P < 0.05). The regression of score on age in days was included in final models for flightiness (P = 0.05; -0.006 ± 0.003) and gregariousness (P = 0.025; -0.007 ± 0.003). Estimates of heritability were large (0.51, 0.4, 0.45, 0.49, and 0.47 for aggressiveness, nervousness, flightiness, gregariousness, and overall temperament, respectively; SE = 0.07 for each). The ability to use this methodology to distinctly separate different aspects of calf temperament appeared to be limited, as estimates of additive genetic correlations were near unity for all pairs of traits; estimates of phenotypic correlation ranged from 0.88 ± 0.01 to 0.99 ± 0.002 for pairs of traits. Distinct subsequent analyses indicated a significant negative relationship of 4 of the various temperament scores with weight at weaning (regression coefficients ranged from -0.008 ± 0.002 for nervousness, flightiness, and gregariousness to -0.003 ± 0.002 for aggressiveness). In subsequent analyses, the regression of temperament trait on sequence of evaluation within a pen was highly significant and solutions ranged from 0.05 ± 0.007 for aggressiveness to 0.08 ± 0.007 for all other traits. The apparent large additive genetic variance for any one of these traits may be useful in identification of genes responsible for differences in cattle temperament.

The response of the immune and stress systems have been assessed in response to a lipopolysaccharide (LPS) challenge, yet the role of metabolism in mediating energy requirements during the acute phase response has not been sufficiently studied. This study tested heat-tolerant (Romosinuano [RO]) and heat-sensitive (Angus [ANG]) Bos taurus breeds at different ambient temperatures (Ta) to determine differential metabolic responses to LPS challenge. Twenty-one heifers (ANG: n = 11, 306 ± 26 kg BW; RO: n = 10, 313 ± 32 kg BW) were housed in stanchions in 4 temperature-controlled chambers. Initially, Ta in all 4 chambers was cycling at thermoneutrality (TN; 18.5°C-23.5°C) for a 1-wk adjustment period, followed by an increase in 2 chambers to cycling heat stress (HS; 24°C-38°C) for 2 wk. Five ANG and 5 RO heifers were housed at TN, whereas 6 ANG and 5 RO heifers were housed at HS. On day 19, heifers were fitted with jugular catheters. On day 20, heifers were challenged with LPS (0.5 μg/kg BW; 0 h), and blood samples were collected from -2 to 8 h and at 24 h relative to LPS challenge. Serum was analyzed for glucose, insulin, and NEFA concentrations. In addition, feed intake was measured 3 d before and on the day of the challenge. Feed intake decreased over time (P < 0.001) and was decreased in heifers housed at HS compared with heifers housed at TN (P = 0.013). Glucose concentrations before LPS challenge were greater in RO (P = 0.01) than in ANG heifers and greater in TN-housed heifers (P = 0.02) than in HS heifers. Glucose after LPS challenge initially increased before decreasing below baseline concentrations (P < 0.01) in all heifers. In addition, there was a breed by Ta interaction (P < 0.004), such that HS decreased glucose concentrations in ANG heifers compared with ANG heifers housed at TN (P < 0.001), whereas HS did not affect glucose concentrations after LPS challenge in RO heifers (P = 0.941). Nonesterified fatty acid concentrations before LPS challenge were not affected by breed (P = 0.37) or Ta (P = 0.60). Although NEFA concentration after LPS challenge was unaffected by Ta (P = 0.78), there tended to be a breed by Ta interaction (P = 0.07) such that, when housed at HS, RO heifers had greater serum NEFA concentrations after LPS challenge than ANG heifers (P = 0.009). Insulin concentration before LPS challenge was greater in RO heifers than in ANG heifers (P < 0.01). Insulin after LPS challenge increased (P < 0.01), with RO heifers producing a greater insulin response than ANG heifers (P < 0.01). These data suggest that HS decreases the metabolic response of heat-sensitive ANG heifers in response to LPS challenge, thus providing physiological evidence that may explain differences observed in the acute phase response between heat-sensitive ANG and heat-tolerant RO cattle breeds., (Published by Elsevier Inc.)

The difference in the acute phase response of a heat-tolerant and a heat-sensitive Bos taurus breed to a lipopolysaccharide (LPS) challenge when housed at different air temperatures (Ta) was studied. Angus (ANG; heat-sensitive; n = 11; 306 ± 26 kg BW) and Romosinuano (RO; heat-tolerant; n = 10; 313 ± 32 kg BW) heifers were transported from the USDA Agricultural Research Service SubTropical Agricultural Research Station in Florida to the Brody Environmental Chambers at the University of Missouri, Columbia. Heifers were housed in stanchions in 4 temperature-controlled environmental chambers. Initially, Ta in the 4 chambers was cycling at thermoneutrality (TN; 18.5°C-23.5°C) for a 1-wk adjustment period, followed by an increase in 2 of the 4 chambers to cycling heat stress (HS; 24°C-38°C) for 2 wk. On day 19, heifers were fitted with jugular catheters and rectal temperature (RT) recording devices. On day 20, heifers were challenged with LPS (0.5 μg/kg BW; 0 h), sickness behavior scores (SBSs) were recorded, and blood samples were collected at 0.5-h intervals from -2 to 8 h and again at 24 h relative to LPS challenge at 0 h. Serum was isolated and stored at -80°C until analyzed for cortisol and cytokine concentrations. A breed by Ta interaction (P < 0.001) was observed for RT such that the post-LPS average RT in RO heifers housed at TN was lower than the RT of all other treatment groups (P < 0.001), whereas ANG heifers housed at HS had greater post-LPS average RT than all other treatment groups (P < 0.001). In response to LPS, HS increased SBS after LPS in RO heifers compared to RO heifers housed at TN (P < 0.001), whereas HS decreased SBS after LPS in ANG heifers compared to ANG heifers housed at TN (P = 0.014). The cortisol response to LPS was greater in TN than in HS heifers (P < 0.01) and was also greater in RO than in ANG heifers (P = 0.03). A breed by Ta interaction (P < 0.01) was observed for tumor necrosis factor-α (TNF-α) concentration such that HS increased post-LPS serum concentrations of TNF-α in ANG heifers compared to ANG heifers housed at TN (P = 0.041), whereas HS decreased post-LPS concentrations of TNF-α in RO heifers compared to RO heifers housed at TN (P = 0.008). A tendency (P < 0.06) was observed for a breed by Ta interaction for IL-6 concentrations such that RO heifers had greater post-LPS concentrations of IL-6 than ANG heifers when housed at HS (P = 0.020). A breed by Ta interaction was observed for interferon-γ (IFN-γ; P < 0.01) concentrations such that HS decreased post-LPS concentrations of IFN-γ in ANG heifers compared to ANG heifers housed at TN (P < 0.001), and HS increased post-LPS concentrations of IFN-γ in RO heifers compared to RO heifers housed at TN (P = 0.017). These data indicate differences in the acute phase response between the heat-tolerant RO and heat-sensitive ANG heifers under different Ta which may aid in elucidating differences in productivity, disease resistance, and longevity among cattle breeds., (Published by Elsevier Inc.)

Composite breeds, including Brangus, are widely utilized in subtropical and tropical regions to harness the advantages of both Bos t. taurus and Bos t. indicus breeds. The formation and subsequent selection of composite breeds may result in discernible signatures of selection and shifts in genomic population structure. The objectives of this study were to 1) assess genomic inbreeding, 2) identify signatures of selection, 3) assign functional roles to these signatures in a commercial Brangus herd, and 4) contrast signatures of selection between selected and non-selected cattle from the same year. A total of 4035 commercial Brangus cattle were genotyped using the GGP-F250K array. Runs of Homozygosity (ROH) were used to identify signatures of selection and calculate genomic inbreeding. Quantitative trait loci (QTL) enrichment analysis and literature search identified phenotypic traits linked to ROH islands. Genomic inbreeding averaged 5%, primarily stemming from ancestors five or more generations back. A total of nine ROH islands were identified, QTL enrichment analysis revealed traits related to growth, milk composition, carcass, reproductive, and meat quality traits. Notably, the ROH island on BTA14 encompasses the pleiomorphic adenoma (PLAG1) gene, which has been linked to growth, carcass, and reproductive traits. Moreover, ROH islands associated with milk yield and composition were more pronounced in selected replacement heifers of the population, underscoring the importance of milk traits in cow-calf production. In summary, our research sheds light on the changing genetic landscape of the Brangus breed due to selection pressures and reveals key genomic regions impacting production traits. This study was carried out to compare the fattening performances, some slaughter and carcass characteristics of 10-month-old Hereford (HER) and Angus (ANG) steers fed a high roughage with the same care and feeding conditions in Türkiye. A total of 40 steers, 20 HER and 20 ANG from the same herd, were selected as homogeneously and randomly divided into two groups. The average body weights of the breeds were determined as 276.85±9.70 and 288.10±9.86 kg, respectively, and the differences between the breeds were insignificant (P>0.050). All animals were fed ad-libitum with two different Total Mixed Rations (TMRs) prepared with a concentrate: roughage ratio of 34:66% during the fattening. In the experiment, fattening feed containing 14.12% crude protein (CP) and 2671 kcal/kg metabolic energy (ME) for the first 300 days and fattening finisher feed containing 14.11% CP and 2717 kcal/kg ME for the last 45 days were used. At the end of the study, which lasted for a total of 345 days, the 1 kg live weight costs of the animals were calculated. Differences were insignificant between the two breeds in terms of body weights, final weights (slaughter weights), total weight gains, daily live weight gains, daily dry matter consumption, feed conversion ratios, hot and cold carcass weights, head weight to carcass ratio and longissimus muscle area (LMA) during fattening (P>0.050). Head and skin weights (P=0.000 and P=0.003) and subcutaneous fat thickness (SFT) (P=0.000) were higher in the HER breed. The profit ratio with the cost did not change. It was concluded that both breeds had similar characteristics.

This study was carried out to compare the fattening performances, some slaughter and carcass characteristics of 10-month-old Hereford (HER) and Angus (ANG) steers fed a high roughage with the same care and feeding conditions in Türkiye. A total of 40 steers, 20 HER and 20 ANG from the same herd, were selected as homogeneously and randomly divided into two groups. The average body weights of the breeds were determined as 276.85±9.70 and 288.10±9.86 kg, respectively, and the differences between the breeds were insignificant (P>0.050). All animals were fed ad-libitum with two different Total Mixed Rations (TMRs) prepared with a concentrate: roughage ratio of 34:66% during the fattening. Basic understanding of molecular features of ovaries and comparison of biological events in ovaries of different beef cattle breeds with indigenous potential has been indicated to improve beef production. The objective of the study was to explore the basic molecular features of Xiangxi cattle ovary and to identify the biological processes generating the differences between the ovaries of Xiangxi and Angus cattle. For this purpose, RNA-seq technology was used to analyze transcriptome data between the ovaries of Xiangxi and Angus cattle. A total of 64.87 Gb clean data were obtained that contained 6.10 Gb clean data of each sample. A total of 109 differentially expressed genes were obtained from comparison of transcriptome analysis between Xiangxi and Angus cattle. Among the 109 differentially expressed genes, 60 genes were upregulated in Angus, whereas 59 genes were upregulated in Xiangxi cattle. Gene ontology and Kyoto Encyclopedia of Genes and Genomes Pathway Analysis indicated that many of these genes encode the proteins involved in signal transduction and ovarian development. In this study, the mRNA expression of ASIP, IGLL1, FOSB and IL17RD in ovary of Angus cattle was found to be upregulated. While, the mRNA expression of GSTA3, TICAM1, CCDC6 and TSPAN18 was upregulated in Xiangxi cattle. These observations could provide basic information to improve understanding of fertilization, ovarian development and immune cell functions in the Xiangxi cattle and other closely related cattle breeds. Context. Improving meat quality traits such as marbling is a well established breeding objective for many beef producers. More recently, the inclusion of feed efficiency is being considered. The main driving factors being the direct feed cost, as well as consumer concerns related to environmental sustainability of beef production. Aims. The main aim of this study was to examine modifying the definition of residual feed intake (RFI), by including an adjustment for intramuscular fat (IMF). The secondary aim was to further understand the genetic relationships between feed intake and a range of carcass traits. Methods. Using a population of 4034 Australian Angus animals, feed intake and carcass traits, along with pedigree and fixed effects, were analysed. This included the calculation of three definitions of RFI, being the standard definition, accounting for average daily gain and metabolic mid-weight, and two amended versions accounting for ultrasound IMF (RFIu), or carcass IMF (RFIi). Variance components, heritabilities, and genetic and phenotypic correlations were estimated and compared. Key results. All three definitions of RFI were moderately heritable (0.30-0.32) and highly correlated, both genetically (0.99) and phenotypically (0.99). Unfavourable genetic correlations were observed between RFI and carcass IMF (CIMF), and between RFIu and CIMF at 0.29 and 0.24 respectively. Similarly, there were unfavourable genetic correlations between RFI and ultrasound IMF (UIMF), between RFIi and UIMF, and between RFIu and UIMF at 0.30, 0,21 and 0.23 respectively. Conclusions. RFI can be redefined to account for traits, other than average daily gain and metabolic mid-weight, such as IMF. However due to limitations of phenotypic linear regression, and only small amounts of variation in feed intake being explained by the IMF traits, the redefinition of RFI was a suboptimal approach to breeding candidate selection. Furthermore, the present study confirmed the challenges with selecting for both feed efficiency and meat quality traits as they are generally genetically antagonist. Implications. For beef cattle breeding programs, the investigation of alternative selection approaches is warranted. This may include further understanding the genetic correlations among traits in the breeding objective and, according to their economic value, optimally weighting the related estimated breeding value. Background: Closed breeding populations are usefull to conduct basic and applied research. The Wye Angus herd is one of them. It was founded using only a few animals. The pedigree of the descendants of the original herd can be completely described by historical records resulting from strong selection. Wye Angus genetics has influenced that of Aberdeen Angus, Red Angus, and Brangus cattle worldwide. Objective: To evaluate parameters and genetic trends associated with the reproduction traits of the Wye Angus herd between the years 1937 and 2012. Methods: We used pedigree information of 11,692 individuals. The reproductive traits assessed were age at first calving (AFC), calving interval (CI), and scrotal circumference (SC). The covariance components were estimated by Bayesian inference. The genetic trends were obtained by linear regression of the genetic values over birth years of the animals. Results: The heritability estimates for AFC, and CI were negligible, although a small genetic gain was associated with CI. Because the AFC and CI values of the herd are small, past reproductive management has produced favourable results for the heifers. Conclusion: The Wye Angus herd has enough genetic variability for genetic gain through selection on SC.

• Six SNP on BTA 23 were associated with lean or overall maturity of carcasses. • A single SNP was associated with skeletal maturity on BTA 1. • Associated SNP: marbling score (BTA 12; n = 2) and carcass weight (BTA 14; n = 2). • Electrical stimulation may inhibit detection of SNP-trait associations. • Carcass traits had low or no relationships with measured temperament traits. Genome-wide association analyses were conducted using SNP and carcass traits, with and without electrical stimulation separately, of 350 Bos indicus-Bos taurus steers from a designed mapping population consisting of full-sibling families (embryo transfer) and half-sibling families. Four F 1 Nellore–Angus sires had progeny in both types of families. Relationships of carcass traits with multiple assessments of temperament (correlation coefficients of unadjusted or residual values), including aggressiveness (willingness to hit an evaluator), nervousness, flightiness (nervousness with running or other movement), gregariousness (willingness to separate from other steers), and overall temperament (all temperament traits assigned as 1 to 9 values; higher numbers indicate worse or less desirable temperament) at 1 year of age and with overall temperament evaluated immediately prior to slaughter were low (0 < | r | < 0.18). Significant SNP associations were detected (False Discovery Rate controlled at 0.05) on BTA 1 with skeletal maturity (n = 1), and BTA 14 (n = 2) with carcass weight. Candidate genes were (skeletal maturity) phospholipase C like 2 (PLCL2) and (carcass weight) neutral sphingomyelinase activation associated factor (NSMAF) and thymocyte selection associated high mobility group box (TOX). Two SNP with association with marbling score were identified on BTA 12— dachshund family transcription factor 1 (DACH1) was a candidate gene. A region from 24.25 to 38.54 Mb on BTA 23 contained 6 SNP with significant associations with lean or overall maturity, which may be the first reported for these traits. Candidate genes on that chromosome included fibrocystin/polyductin (PKHD1), glial cells missing homolog 1 (GCM1) , prolactin (PRL), and ring finger protein 144B (RNF144B). All detections of association were in traits measured on the side with no electrical stimulation; it may be that electrical stimulation removes some of the variation permitting detection of association. It was experimentally determined whether crossbreeding with Bos indicus dams compared to Bos taurus dams may provide meat which is competitive in organoleptic properties and fatty acid (FA) profile and if tenderness, assumed to be lower, is really adversely affected. Eight Black Angus × White Lamphun (A×W) bulls were compared with 8 Black Angus × Holstein Friesian (A×H). M. longissimus thoracis, M. semimembranosus and M. infraspinatus were analyzed for organoleptic properties and objective explanatory properties related to tenderness, as well as FA profile. Tenderness was judged lower in the M. infraspinatus of A×W than A×H, but not in the other muscles. Shear force and collagen solubility tended (P < 0.10) to be lower in all 3 muscles of A×W compared to those of A×H. The fat content of the M. longissimus thoracis from A×W was lower than that from A×H. The lipids in the M. longissimus thoracis from A×W were richer in polyunsaturated FA and total n-3 FA, and poorer in C18:0 and saturated FA than those of A×H. Furthermore, the lipids of the M. semimembranosus from A×W had higher proportions of C14:1 and C16:1 than that of A×H. The FA in the M. infraspinatus from A×W had higher proportions of C18:3 n-3, mono-unsaturated FA and total n-3 FA and the proportion of saturated FA was lower than in A×H. The M. infraspinatus from A×W was lower in cholesterol content than that from A×H. There were some differences in tenderness (inferior in White Lamphun crossbreds) and FA profile (superior in White Lamphun crossbreds), but differences were numerically small and, thus, may be of low practical relevance. Crossbreeding is a common strategy used in tropical and subtropical regions to enhance beef production, and having accurate knowledge of breed composition is essential for the success of a crossbreeding program. Although pedigree records have been traditionally used to obtain the breed composition of crossbred cattle, the accuracy of pedigree-based breed composition can be reduced by inaccurate and/or incomplete records and Mendelian sampling. Breed composition estimation from genomic data has multiple advantages including higher accuracy without being affected by missing, incomplete, or inaccurate records and the ability to be used as independent authentication of breed in breed-labeled beef products. The present study was conducted with 676 Angus–Brahman crossbred cattle with genotype and pedigree information to evaluate the feasibility and accuracy of using genomic data to determine breed composition. We used genomic data in parametric and non-parametric methods to detect population structure due to differences in breed composition while accounting for the confounding effect of close familial relationships. By applying principal component analysis (PCA) and the maximum likelihood method of ADMIXTURE to genomic data, it was possible to successfully characterize population structure resulting from heterogeneous breed ancestry, while accounting for close familial relationships. PCA results offered additional insight into the different hierarchies of genetic variation structuring. The first principal component was strongly correlated with Angus–Brahman proportions, and the second represented variation within animals that have a relatively more extended Brangus lineage—indicating the presence of a distinct pattern of genetic variation in these cattle. Although there was strong agreement between breed proportions estimated from pedigree and genetic information, there were significant discrepancies between these two methods for certain animals. This was most likely due to inaccuracies in the pedigree-based estimation of breed composition, which supported the case for using genomic information to complement and/or replace pedigree information when estimating breed composition. Comparison with a supervised analysis where purebreds are used as the training set suggest that accurate predictions can be achieved even in the absence of purebred population information.

Abstract In cow-calf operations the moment the heifer achieves her first pregnancy set up her future productivity. Although puberty itself is a yes-or-no condition, time to the event has a quantitative genetic basis and thus is suitable for genetic selection. However, the trait is difficult to measure directly and proxies such as age at first calving (AFC), or scrotal circumference (SC), are typically used. In genetic evaluations, the age at which SC is measured usually corresponds to last part of pubertal development phase. But given that initiation of puberty in both sexes is controlled by the same neuroendocrine mechanisms, we argue that an earlier measurement, taken instead at the start of the pubertal development phase, is probably a better indicator of female precocity. To support the hypothesis, we fitted a multiple-trait animal model on AFC records and SC measurements taken at 300, 400, and 630 days of age and estimated heritabilities and genetic correlations by REML. Importantly, usually AFC data is afflicted by the problem that when breeding season starts most heifers are already cycling (which is, of course, the desired condition) and thus the record poorly reflects precocity. To avoid the problem, in this study we used records collected from an Angus herd in which heifers receive an early natural first service at 375 days of age. Genetic correlation between AFC and SC300 was twice as large as the one corresponding to SC400 (–0.478 ± 0.13 vs –0.244 ± 0.11) and three times larger than to SC630 (–0.478 ± 0.13 vs –0.152 ± 0.12), a result that supports our hypothesis. Heritabilities for SC300, SC400 and SC630 were 0.429 ± 0.07, 0.704 ± 0.07 and 0.576 ± 0.08, respectively, and 0.371 ± 0.05 for AFC. Our results have an important implication in the age at which SC, as an indirect trait for improving precocity, is typically measured in beef cattle breeding programs. The objective was to evaluate the influence of varying amounts of Brahman genetics on body temperature under pasture conditions during hot weather. Vaginal temperatures were measured at 5-min intervals for 3 to 5 d on four occasions during August and September from a total of 190 pregnant cows that were either Angus, 2/8 Brahman (remainder Angus), Brangus (3/8 Brahman), 4/8 Brahman, 6/8 Brahman or Brahman. Vaginal temperature was higher for the first two replicates than for the second two replicates. In the first two replicates, average vaginal temperature did not differ between genetic groups, but average vaginal temperature from 1500 to 1900 h was lower for Brahman than other groups. In the second two replicates, average vaginal temperature was lower for cows that were 4/8 or higher Brahman than for cows that were 2/8 Brahman or Angus. Average vaginal temperature from 1500 to 1900 h was lower for cows that were 4/8 or higher Brahman than for cows that were 2/8 Brahman or Angus. In addition, Brahman cows had lower vaginal temperatures than cows that were 4/8 Brahman or 3/8 Brahman (i.e., Brangus). In one replicate, a tracking device was used to map cow location. At 1200 to 1300 h, cows that were 6/8 Brahman or Brahman had fewer observations near the tree line (i.e., in shade) than cows that were 4/8 Brahman or less. At 1500 to 1600 h, cows that were 4/8 or higher Brahman experienced fewer observations near the tree line than cows that contained a lower fraction of Brahman genetics. In summary, a minimum of 4/8 Brahman genetics was required to increase the ability to regulate body temperature and at least 6/8 Brahman when heat stress was severe. It is likely, therefore, that using Brahman genetics to optimize adaptation to thermal stress under conditions of severe heat stress requires a preponderance of Brahman genes. [ABSTRACT FROM AUTHOR]

Bos indicus typically perform better than Bos taurus when consuming a low-quality diet; however, the response to supplementation is generally greater in B. taurus. The underlying mechanisms supporting these responses have not been fully elucidated. Characterization of differences in rumen prokaryotic populations and their functional role in the two subspecies may provide additional insight. Ten cannulated steers (5 Angus and 5 Brahman) were used in concurrent 5 x 5 Latin squares. Animals were offered ad libitum access to rice straw (4.7% CP). Treatments consisted of an unsupplemented control diet and two levels (50 or 120 mg N/kg BW) of isonitrogenous supplements (30% CP), that were either high (H; 74%) or low (L; 26%) in undegradable intake protein. Rumen samples were collected at 0 and 4 h postfeeding and separated into liquid and solid fractions. Rumen bacterial taxa were sequenced utilizing a Roche 454 platform based on the 16s rRNA gene. At 97% sequence similarity, 97,826 operational taxonomic units were identified, which included 24 phyla, 108 families, and 255 genera. Analysis included SAS PROC mixed model, QIIME, and PICRUSt. Across all samples, Bacteroidetes and Firmicutes accounted for 65% and 28% of total bacterial abundance, respectively. The families Prevotellaceae (P = 0.05) and Ruminococcaceae (P = 0.004) and the genera Prevotellaceae (family; P = 0.003) within the phyla Bacteroidetes differed significantly in relative abundance with added protein when compared to the control. Consistent differences in the relative abundance of family and genus taxa between B. indicus and B. taurus suggest roles the symbiotic rumen microbiome may have in the capacity of B. indicus to utilize low-quality forage over a range of supplement types and levels including (Prevotella, Ruminococcus [family], Sphingobacteriaceae [family], Bacteroidales [order], Pontibacter, Bacteroides, Succiclasticum, Barnesiella, and Xylanibacter). Overall bacterial community diversity differences across parameters were limited. Rice straw is recalcitrant to bacterial digestion because of high levels of silica in the epidermis making this straw more resistant to bacterial attachment. Thus, this analysis represents the bacterial diversity and function of the rumen under conditions depleted CP, recalcitrant fiber matrix and restricted digestibility which appear to limit the microbial population to those capable of attaching and digesting complexed structural carbohydrates, resulting in reduced plasticity, and more evenness in diversity across parameters. The traditional techniques to measure heat production (HP) are calorimetry (direct and indirect) and comparative slaughter. Both methods are expensive and require extensive amounts of time and infrastructure. Infrared thermography (IRT) could be a faster and less expensive alternative to estimate cattle HP. The objective of this project was to evaluate the use of the IRT technique as an indicator of HP in cattle. A total of 24 bulls (12 Nellore and 12 Black Angus) with initial BW of 380 ± 7 kg were used. Initially, 4 animals of each breed were harvested (baseline animals) and simple regressions were developed for each breed from these baseline animals to estimate the initial chemical composition of the remaining bulls. Eight animals of each breed were fed a silage/concentrate diet for ad libitum intake in individual stalls. On the 25th, 50th, and 75th experimental day, infrared thermal images (Fluke Ti 55ft; Fluke Corporation) were taken of each animal's face to access skin and ocular surface temperatures. A metabolism trial was conducted to estimate the ME intake (MEI). After 84 experimental days, the cattle were harvested and retained energy (RE) and HP were calculated. The data were analyzed using the MIXED and REG procedures of SAS adopting a significance level of 0.05. Angus cattle had a greater daily MEI, HP, and skin and eye temperatures than Nellore. We found significant correlations (P = 0.005) between daily HP and maximum (r = 0.65) and average skin temperatures (r = 0.65) and maximum (r = 0.65) and average ocular surface (r = 0.69) temperatures recorded on d 50. Subjective scores ( n =2603) representing (1) the shedding and regrowth of winter coat and (2) total quantity of hair were recorded monthly for 2 yr for 135 Angus cows. Shedding scores of 1 indicated summer coats (all winter coat shed) and 5 indicated complete winter coats. Quantity scores of 1 and 5 indicated minimal and maximal amounts of hair in the coat, respectively. Scores of 2 through 4 for respective traits indicated intermediate conditions. A trigonometric function representing a sinusoid process was fitted to the residuals of scores across time: A sin [ B ( t − C ) ] + D , where A represents the height of peaks in the oscillatory function above a centralized baseline in the Cartesian plane; B represents the angular frequency, that is, the rate of change of scores across a complete fundamental cycle of the process; C represents the horizontal shift in the cycle; D represents the vertical offset of the function. The time dimension in months is represented as t . Parameters for this function were estimated for the two traits using least squares nonlinear regression procedures (1) across all data, (2) within cow age categories, and (3) within groups of cows representing distinct maternal lineages. In all cases, parameters representing amplitude ( A ) and angular frequency ( B ) seemed to be estimated most reliably (as indicated by magnitude of SE) and the parameter representing the vertical offset seemed to be estimated least reliably. The numerically larger estimate of the amplitude parameter ( A ) for winter coat shedding and regrowth score relative to the quantity of hair score suggested that it better characterized the process, as well as differences among cow age groups or maternal lineages. For both traits within all groupings of records the parameter representing the horizontal phase shift ( C ) appeared to be most informative: curves for younger cows were shifted to the right in the time space, indicating later shedding of winter coat. The phase shift parameter also best characterized differences in the process for cows in different maternal lineages; however, numerical differences in the parameter estimates representing amplitude ( A ) and angular frequency ( B ) also appeared to be responsible for the distinctiveness of group curves. Curves visually represented the shedding of winter coats (April–July in the time parameter space) better than the winter regrowth process. ETH10 is a dinucleotide microsatellite within the promoter of signal transducer and activator of transcription 6 (STAT6) gene on bovine chromosome 5. ETH10 is included in the panel of genetic markers used in parentage testing procedures of cattle breed associations. Allelic sizes of ETH10 PCR amplicons range from 199 to 225 bp. Objectives of this study were to use microsatellite data from beef cattle breed associations to investigate genetic distance and population stratification among Angus- and Brahman-influenced cattle and to use ETH10 genotypes and growth and ultrasound carcass data to investigate their statistical relationships. Three series of genotype to phenotype association analyses were conducted with 1) Angus data (n = 5,094), 2) Brangus data (3/8 Brahman × 5/8 Angus; n = 2,296), and 3) multibreed data (n = 4,426) of Angus and Brangus cattle. Thirteen alleles and 38 genotypes were observed, but frequencies varied among breed groups. Tests of genetic identity and distance among 6 breed composition groups increasing in Brahman influence from 0 to 75% revealed that as Brahman-influence increased to ⩾50%, genetic distance from Angus ranged from 18.3 to 43.5%. This was accomplished with 10 microsatellite loci. A mixed effects model involving genotype as a fixed effect and sire as a random source of variation suggested that Angus cattle with the 217/219 genotype tended to have 2.1% heavier (P = 0.07) 205-d BW than other genotypes. In Brangus cattle, allele combinations were classified as small (⩽215 bp) or large (⩾217 bp). Brangus cattle with the small/large genotype had 2.0% heavier (P < 0.05) birth weight, yet cattle with the large/large genotype had approximately 5.1% greater (P < 0.05) percentage of fat within LM and more LM per BW than cattle with small/large or small/small genotypes. Genotype-to-phenotype relationships were not detected in multibreed analyses. The ETH10 locus appears to be associated with growth and carcass traits in Angus and Brangus cattle. The trait stayability is a way of assessing productive life and has been measured late in the cow's life. Measuring the stayability to each calving is a strategy that can be implemented to obtain earlier indicators of longevity. Thus, the objective with this study was the estimation of genetic parameters for stayability to consecutive calvings for Angus/Brangus and Hereford/Braford cattle breeds. By using random regression animal models, different orders of Legendre orthogonal polynomials were compared. According to DIC, the model with cubic Legendre polynomials (4 coefficients) was the most appropriate. Heritability estimates ranged from 0.05 to 0.08 for and had a similar trend for both breeds, being higher for stayability at intermediate calvings (fourth to sixth). Genetic correlation estimates were from 0.47 to 0.87 and 0.63 to 0.93 for Angus/Brangus and Hereford/Braford, respectively, and were higher for stayability between closer calvings. The estimates observed for genetic correlations indicate that the genetic control of stayability to each calving is performed by the same group of genes, at least partially. For this reason, the selection to increase the probability of stayability to second calving can result in a moderate genetic gain in subsequent calvings. • Electrical stimulation of nellore-angus carcasses influenced 5 of 30 steak flavors. • SNP on BTA 4, 5, and 12 were associated with cooked beef lean flavor. • Two SNP (BTA 16 and 23) were associated with acid flavor post electrical stimulation. • One SNP on BTA 11 was associated with metallic flavor post electrical stimulation. • Beef flavor traits had low or no relationships with steer temperament traits. Steaks from Bos indicus -influenced steers (n = 350) were evaluated for beef flavor and aromatic traits. Electrical stimulation status was a fixed effect. Genome-wide association was conducted with 34,957 SNP from a commercial array using a mixed linear model. Significant effects of electrical stimulation were less intense acid and browned flavors, and more intense cooked beef lean and livery flavors (P < 0.05). There were no strong simple or residual correlations among the flavor traits with carcass quantity, quality, sensory panel palatability, or temperament traits of steers. There were 18 (no electrical stimulation; chemical burn, cooked beef lean, livery, sour) and 8 (electrical stimulation; acid, chemical burn, cooked beef lean, metallic) SNP associated with flavor traits (FDR < 0.18).
