Animal welfare is an essential part of the sustainability of animal production. While low-input farming, such as organic animal production, is often considered animal-friendly, several ways to enhance animal welfare in low-input animal production exist. However, currently there is little information on how farmers and other supply chain actors view different innovations and tools which may influence animal welfare in low-input outdoor and organic production systems. The aim of this study was to examine farmers’ and experts’ reactions to new approaches to pig and poultry production, with special attention to their animal welfare-related measures. The reactions were tested formally in by using a quantitative survey instrument in nine European countries (Finland, UK, France, Denmark, the Netherlands, Belgium, Germany, Italy, Romania). In the survey, respondents’ views on production practices and novel measures were asked. These included aspects such as applicability and advantages and disadvantages of various measures such as avoiding mutilations, using dual-purpose or local breeds, or in-ovo sexing. The data included altogether 218 responses from nine countries. Differences between countries were tested and groups of respondents were identified. The results suggest that supply side stakeholders foresee the welfare benefits and some disadvantages of welfare improving measures proposed to them. However, they also indicate that several measures were considered inapplicable despite their benefits. Inadequate financial provisions to adopt a measure was considered as one of the most important reasons for inapplicability of a measure. This may imply either high costs of implementing measures of low market incentives or perceived low demand for animal-friendly products. Other barriers for adopting welfare-friendly measures included farm-specific factors such as limitations imposed by housing. The respondents indicated a high relative preference for feeding, breeding, shelter from predators and the use of vaccines and anti-parasitic treatments to the provision of enrichments and nesting material to pigs, and to mutilations. Farmers agreed that environmental enrichments are important welfare-improving levers and preferred their use in low-input pig and poultry production. Animal breeding-related measures in pig production were perceived quite favorably by supply side stakeholders. Despite their welfare benefits, farmers in some countries had quite high preference towards maintaining castration and tail docking in pig and beak trimming in broiler production as part of their production method.

In four countries (Italy, Finland, France, United Kingdom), interviews were carried out with eleven key-informants working within the supply chain of low-input or organic production of poultry meat, eggs and pork meat (farmers, vets, companies producing progeny, feed producers, health inspectors in slaughter houses or egg packing company's experts, NGOs). The objective was to understand the major issues in welfare in such productions according to on-field people., Dans 4 pays (Italie, Finlande, France, Royaume uni), des interviews ont été menés auprès d'experts clés travaillant dans des productions à bas-intrants ou en agriculture biologique dans les domaines de production de porcs, de poulets et d'oeufs (fermiers, vétérinaires, entreprises de sélection, producteurs d'aliment, inspecteurs d'abattoir ou firmes de production d'oeufs, ONG). L'objectif de ces interview était de comprendre les principaux problèmes de bien-être animal dans ces productions à partir de personnes de terrain.

Recent research on free-range chickens shows that individual behavioral differences may link to range use. However, most of these studies explored individual behavioral differences only at one time point or during a short time window, assessed differences when animals were out of their social group and home environment (barn and range), and in specific tests or situations. Therefore, it is yet unclear how different behaviors relate to range use and how consistent these behaviors are at the individual level. To fill this gap, we here aimed to describe the behavioral budget of slow-growing male broiler chickens (S757N) when in their social group and home environment during the whole rearing period (from the second week of life to the twelfth week, before slaughter), and to relate observed behavioral differences to range use. For this, we followed a sample of individuals in two flocks (n = 60 focal chickens out of 200 chickens per flock), over two seasons, during three periods: before range access (from 14 to 25 days old), during early range access (first weeks of range access, from 37 to 53 days old), and during late range access (last weeks of range access, from 63 to 87 days old). By the end of each period, individual tests of exploration and social motivation were also performed, measuring exploration/activity and sociability propensities. Our results show that foraging (i.e., pecking and scratching at the ground) was the only behavior that correlated to range use for all three rearing periods, independent of the season. Foraging was also the only behavior that showed within-individual consistency from an early age and across the three rearing periods. Foraging may, therefore, serve as a useful behavioral predictor of range use in free-range broiler chickens. Our study increases the knowledge of how behaviors develop and relate to each other in a domesticated and intensely selected species, and improves our understanding of the biology of free-range broiler chickens. These findings can, ultimately, serve as a foundation to increase range use and improve chicken welfare.

International audience; In free-range and organic production systems, hens can make choices according to their needs and desires, which is in accordance with welfare definitions. Nonetheless, health and behavioral problems are also encountered in these systems. The aim of this article was to identify welfare challenges observed in these production systems in the EU and the most promising solutions to overcome these challenges. It is based on a review of published literature and research projects complemented by interviews with experts. We selected EU specific information for welfare problems, however, the selected literature regarding solutions is global. Free range use may increase the risk of infection by some bacteria, viruses and parasites. Preventive methods include avoiding contamination thanks to biosecurity measures and strengthening animals' natural defenses against these diseases which can be based on nutritional means with new diet components such as insect-derived products, probiotics and prebiotics. Phytotherapy and aromatherapy can be used as preventive and curative medicine and vaccines as alternatives to antibiotics and pesticides. Bone quality in pullets and hens prevents keel deviations and is favored by exercise in the outdoor range. Free range use also lead to higher exposure to variable weather conditions and predators, therefore shadow, fences and guard animals can be used to prevent heat stress and predation respectively. Granting a free range provides opportunities for the expression of many behaviors and yet many hens usually stay close to the house. Providing the birds with trees, shelters or attractive plants can increase range use. Small flock sizes, early experiences of enrichment and personality traits have also been found to enhance range use. Severe feather pecking can occur in free range production systems, although flocks using the outdoor area have better plumage than indoors. While many prevention strategies are facilitated in free range systems, the influence of genetics, prenatal and nutritional factors in free range hens still need to be investigated. This review provides information about practices that have been tested or still need to be explored and this information can be used by stakeholders and researchers to help them evaluate the applicability of these solutions for welfare improvement.

International audience; There has been a strong consumer demand to take welfare into account in animal production, including table eggs. This is particularly true in Europe and North America but increasingly around the world. We review the main demands that are facing the egg industry driven by economic, societal and sustainability goals. We describe solutions already delivered by research and those that will be needed for the future. Already table egg consumption patterns have seen a major shift from cage to non-cage production systems because of societal pressures. These often feature free-range and organic production. These changes likely signal the future direction for the layer sector with the acceleration of the conversion of cage to barn and aviary systems with outdoor access. This can come with unintended consequences from bone fracture to increased disease exposure, all requiring solutions. In the near future, the laying period of hens will be routinely extended to improve the economics and environmental footprint of production. Many flocks already produce close to 500 eggs per hens in a lifetime, reducing the number of replacement layers and improving the economics and sustainability. It will be a challenge for scientists to optimize the genetics and the production systems to maintain the health of these hens. A major ethical issue for the egg industry is the culling of male day-old chicks of layer breeds as the meat of the males cannot be easily marketed. Much research has and will be devoted to alternatives. Another solution is elimination of male embryos prior to hatching by in ovo sexing approaches. The race to find a sustainable solution to early stage sex determination is on. Methods based on sex chromosomes, sexually dimorphic compounds and spectral properties of eggs containing male or female embryos, are being researched and are reviewed in this article. Other proposed solutions include the use of dual-purpose strains, where the males are bred to produce meat and the females to produce eggs. The dual-purpose strains are less efficient and do not compete economically in the meat or egg market; however, as consumer awareness increases viable markets are emerging. These priorities are the response to economic, environmental, ethical and consumer pressures that are already having a strong impact on the egg industry. They will continue to evolve in the next decade and if supported by a strong research and development effort, a more efficient and ethical egg-laying industry should emerge.

International audience; Free-range systems provide an outdoor range for broilers to give them the possibility to express a higher frequency and a wider range of behaviours, such as exploration, compared with those raised indoors. Greater variability in outdoor range use between individuals of the same flock is often reported. Individual variation in range use may result from differences in early-life behaviour or genetic background. Understanding how earlylife behaviour influences range use may provide opportunities to enhance and predict range use. Previous studies have shown that range use could be influenced by the animal’s personality traits such as social motivation, boldness and foraging motivation. Therefore, this study investigated personality traits in several broiler strains, namely Hubbard JA757, Hubbard S757N, White Bresse and a dual-purpose strain; we examined the latter as it represents a potential solution to the ban of 1-day-old chick culling. The present study also investigated early-life behaviours, before range access, of range use to identify and assess the stability of these early-life indicators among the four broiler strains. For that purpose, we recorded the behaviour and range use of 100 male chickens per strain, both in the barn and during individual tests, before and after range access. We examined which behaviours were time consistent, whether early-life behaviours were influenced by genetic variation and whether early-life behavioural indicators predicted range use regardless of genetic variation. There was a significant (p < 0.001) difference between strains in several early-life behaviours, including the time spent resting or standing. Range use was time consistent regardless of the strain as our range use indicator followed a high-quality linear regression model (R2 > 0.7) for 82–99% of the individuals depending on their strain. Besides, time consistency of social motivation and boldness seemed to depend on the strain. Even though foraging showed low (rho = 0.2–0.4) positive correlations with range use in three of the four studied strains, there were no significant and strong correlations in the four studied strains between early-life behavioural indicators and range use. In conclusion, our results show that the link between chick behaviour (before range access) and range use can be modulated by the bird’s strain. It is crucial to consider all these different factors to better understand how range use varies within and between flocks.

International audience; The hen's egg (Gallus gallus) is an animal product of great agronomic interest, with a world production of 70.9 million tonnes in 2018. China accounted for 35% of world production, followed by North America (12% of world production), the European Union (7.0 million tonnes, 10% of world production) and India (5.0 million tonnes, 7% of world production). In France, 16–17 billion eggs are produced annually (14.5 billion for table eggs) and more than 1 200 billion worldwide. In 2019, egg production increased by 3.3% compared to 2018, mainly due to the increase in Asian production, which has risen by 42% since 2000. Chicken eggs are widely used either as a low-cost, high nutritional quality food cooked by the consumer (more than 100 billion eggs consumed in Europe), or incorporated as an ingredient in many food products. The various production methods have changed considerably over the last 15 years with the consideration of animal welfare and changes in European regulations. In Europe, fewer and fewer eggs are produced in confinement and there has been a strong growth in the number of systems giving access to an outdoor run. In this review, we describe the different ways in which eggs are produced and processed into egg products to meet the growing demand for ready-to-use food products. We analyse the effect of this evolution of hen-rearing systems on the set of characteristics of eggs and egg products that determine their quality. We describe the risks and benefits associated with these new production methods and their influence or lack of influence on commercial, nutritional, microbial and chemical contamination risk characteristics, as well as the evolution of the image for the consumer. The latter covers the ethical, cultural and environmental dimensions associated with the way the egg is produced.

International audience; Although organic animal production is based on farming systems that enable a high degree of expression of natural behaviour by the animals, there are still some welfare challenges in such systems. Our study provides a state of the art of practices that could improve animal welfare in organic productions and interviews with key informants have been conducted to identify gaps and opportunities for animal welfare. This study provides a shortlist of practices that could be used to improve animal welfare while taking into account farmer wellbeing and sustainability and so contributing to “One Welfare”.
