While fruit is a common ingredient in beer, our research takes a unique approach by studying the effects of pomegranate juice (PJ) on the physicochemical and nutraceutical characteristics of craft fruit beer. These properties have been studied in PJ and other beverages using pomegranate; however, there is insufficient information on fruit beer. PJ, known for its health benefits, was obtained by compressing the fruit in a manual press and characterizing it. The base beer, a blonde ale with two hops, Cascade (C) and Saaz (S), was used. PJ was added to the beer during the second and third fermentation steps. Beer quality was analyzed using ASBC methods: phenolic compounds, sugars, and ethanol content by HPLC, and antioxidant capacity by ORAC. PJ presented a pH of 3.8 and 14°Brix. The beer evaluated was the third fermentation beer called 3FC and 3FS; due to the type of hops used, in general, 3FS presented better physicochemical characteristics; the relevant result was alcohol content around 6.0%, but ethanol content by HPLC was 7.36% for 3FS and 7.19% for 3FC. PJ in phenolic compounds provides the beer with 4-hydroxybenzoic acid, epicatechin, and synaptic acid. However, the hop used influenced the phenolic profile of each beer. The antioxidant capacity of 3FC was higher at 19.75 mm ET/L. In conclusion, our study demonstrated that pomegranate juice in a fruit beer style provides good physicochemical and nutraceutical characteristics, offering a unique twist to the craft beer industry. Introduction: Craft beer production generates solid waste in significant quantities, which is not put to proper use. Trüb (brewers' waste) has important nutrients, such as proteins and carbohydrates, and physical-chemical compounds; however, its applications are hindered by its astringent taste. Objective: To estimate the enrichment of flour from malts processed in craft beer by addition of fermentable Trüb (sediment). Materials and Methods: The methodology applied was experimental, carrying out the physical-chemical characterization of processed samples of craft beer waste, evaluating moisture, ash, fat, acidity, protein, and fiber, based on the established standards. Results and Discussion: As a result, it was obtained that the best mixture of malt with sediment was the dark malt with kveik sediment with a proportion of 25 %, obtaining protein increase values of 26.73 %. Conclusions: With an increase in protein the best malt and sediment sample was the dark malt - sediment Kveik from 12.95 - 26.73 % w/w, without addition and addition to 25 % of the sediment. Craft breweries are continuously searching for beers made with locally produced raw materials and unique flavor profiles to respond to consumer requests. We explored the behavior of three commercial strains of Saccharomyces cerevisiae in the fermentation of ale beer with a high prevalence of rye malt in comparison to pure barley malt. In total, 34 volatile organic compounds were identified, with esters and alcohols being the quantitatively most abundant classes. The yeast strain appeared to impart more differences in the beer's volatile profile compared to malt. In particular, S. cerevisiae var. diastaticus Y2 strain was associated with a higher production of esters, while strain S. cerevisiae Y3 was correlated to the higher amounts of terpenes together with the lowest relative abundance of volatile acids. Brewer ozone spectrophotometers have become an integral part of the global ground-based ozone monitoring network collecting data since the early 1980s. The double-monochromator Brewer version (MkIII) was introduced in 1992. With the Brewer hardware being so robust, both single- and double-monochromator instruments are still in use. The main difference between the single Brewers and the double Brewers is the much lower stray light in the double instrument. Laser scans estimate the rejection level of the single Brewers to be 10-4.5 , while the doubles improve this to 10-8 , virtually eliminating the effects of stray light. For a typical single-monochromator Brewer, stray light leads to an underestimation of ozone of approximately 1 % at 1000 DU ozone slant column density (SCD) and can exceed 5 % at 2000 DU, while underestimation of sulfur dioxide reaches 30 DU when no sulfur dioxide is present. This is because even a small additional stray light contribution at shorter wavelengths significantly reduces the calculated SCD at large values. An algorithm for stray light correction based on the physics of the instrument response to stray light (PHYCS) has been developed. The simple assumption is that count rates measured at any wavelength have a contribution from stray light from longer, and thus brighter, wavelengths because of the ozone cross-section gradient leading to a rapid change in intensity as a function of wavelength. Using the longest measured wavelength (320 nm) as a proxy for the overall brightness provides an estimate of this contribution. The sole parameter, on the order of 0.2 % to 0.6 %, that describes the percentage of light at the longest wavelength to be subtracted from all channels is determined by comparing ozone calculations from single- and double-monochromator Brewers making measurements side-by-side. Removing this additional count rate from the signal mathematically before deriving ozone corrects for the extra photons scattering within the instrument that produce the stray light effect. Analyzing historical data from co-located single- and double-monochromator Brewers provides an estimate of how the stray light contribution changes over time in an instrument. The corrected count rates of the measured wavelengths can also be used to improve other calculations: the sulfur dioxide column and the aerosol optical depth, the effective temperature of the ozone layer, or any other products. In history there are many approaches to studying beer, and therefore it is not surprising that in the public domain we sometimes encounter practical attempts to reconstruct "historical" beers on the basis of surviving recipes. This article critically evaluates the possibilities and limits of such reconstructions. It is based primarily on the authors' attempt to reconstruct a "historical" beer on the basis of information contained in the work of the Czech brewer František Ondřej Poupě from the turn of the 19th century. From this experience, the study attempts to assess the narrative value of the relevant sources, the reconstructability of the technological processes and the specificity of the raw materials used. The interest in and growth of craft beer has led to an intense search for new beers and styles. The revival of traditional styles has sometimes been hampered by the use of microorganisms such as lactic acid bacteria. Therefore, studies on alternative yeasts for the production of this style of beer have increased. In this work and together with previous studies carried out with yeasts isolated from Madrid agriculture (from grapes, must, wine, vineyards and wineries), the capacity of 10 yeast strains, belonging to the genus Lachancea thermotolerans, for the production of sour beer has been determined. For this purpose, different fermentation scale-ups (100 mL, 1 L and 100 L) have been performed and their fermentation capacity, aroma compound production (33 volatile compounds by GC), organoleptic profile (trained tasting panel and consumers), melatonin production (HPLC) and antioxidant capacity have been studied. Beer fermented with yeast strain CLI 1232 showed a balanced acidity with a fruity aromatic profile and honey notes. On the other hand, the beer fermented with strain 1-8B also showed a balanced acidity, but less fruity and citric flavour than CLI 1232 strain. Finally, the yeast strain selected by the consumers (CLI 1232) was used for beer production at industrial scale and the market launch of a sour beer. [ABSTRACT FROM AUTHOR]

Beer is one of the most consumed alcoholic beverages in the world; its consumption and preference are evolving from traditional industrial beers of low complexity to novel craft beers with diverse flavour profiles. In such a competitive industry and considering the complexity of consumer behaviour, improvement and innovation become necessary. Consequently, consumer science, which is responsible for identifying the motivation behind customer preferences through their attitudes, perception and behaviour, has implemented strategies ranging from simple hedonic measurements to several innovative and emerging methodologies for a deeper understanding of the variables that affect the product experience: sensory, affective and cognitive. In this context, we offer a review inspired by previous research that explores some of the quantitative and qualitative methods used in consumer studies related to beer consumption, ranging from traditional approaches (acceptability, purchase intention, preference, etc.) to techniques that go beyond acceptability and allow a different understanding of aspects of consumer perception and behaviour (segmentation, expectations, emotions, representation, etc.). Also, innovative applications (contexts, immersive technologies and virtual reality, implicit measures, etc.) and current trends related to consumer science (Internet, social media, pairing, product experience, etc.) are addressed. Spectral measurements of UV irradiance are of great importance to ensure human health protection as well as to support scientific research. To perform these measurements, double monochromator scanning spectroradiometers are the preferred devices, thanks to their linearity and stray-light reduction. However, because of their high cost and demanding maintenance, CCD-array-based spectroradiometers are increasingly used for monitoring UV irradiance. Nevertheless, CCD15 array spectroradiometers have specific limitations, such as a high detection threshold or stray-light contamination. To overcome these challenges, several manufacturers are striving to develop improved instrumentation. In particular, Gigahertz-Optik GmbH has developed the stray-light-reduced BTS2048-UV-S spectroradiometer series (from now on called BTS). In this study, the long-term performance of the BTS and its seasonal behavior, regarding global UV irradiance, has been assessed. To carry out the analysis, BTS' irradiance measurements have been compared against measurements of the Brewer MK-III #150 scanning spectrophotometer during three campaigns. A total of 711 simultaneous spectra, measured under cloud-free conditions and covering a wide range of solar zenith angle (from 14° to 70°) and UV index (from 2.4 to 10.6), are used for the comparison. During the three measurement campaigns, the global UV spectral ratio BTS/Brewer was almost constant (at around 0.93) in the 300-360 nm region for solar zenith angles (SZAs) below 70°. Thus, the BTS calibration was stable during the whole period of study (~1.5 years). Likewise, it showed no seasonal nor SZA significant dependence in this wavelength region. Regarding the UV index, a good correlation between the BTS and the Brewer #150 was found, i.e. the dynamic range of the BTS is comparable to that of the Brewer #150. The rapid expansion of the resource‐intensive brewing industry has led to U.S. and state‐level initiatives to encourage sustainable craft brewing practices. These efforts raise questions about brewers' current brewing practices and the conditions and factors that might influence a brewer's decision to adopt sustainable practices. We conducted an in‐depth survey of Iowa craft brewers in 2019 to evaluate current sustainability practices within breweries. In addition, we elicited brewer perceptions regarding consumer preferences and willingness‐to‐pay for sustainably produced beer. We analyze these factors together with data on brewery production characteristics and the brewer's personal beliefs and demographics. While most breweries in our sample track key environmental metrics to some degree, many of them lack environmental plans. Further, we find significant variation in the degree to which brewers believe there is opportunity to leverage sustainable brewing practices to charge consumers a higher price. We also provide insight on relationships between environmental practices and potential resources provided to breweries. These findings improve our understanding of craft brewers' tradeoffs regarding sustainable brewing practices that could apply more generally to other resource‐intensive sectors. A re-evaluated data set of nitrogen dioxide (NO2) column densities over Rome for the years 1996 to 2017 is here presented. This long-term record is obtained from ground-based direct sun measurements with a MkIV Brewer spectrophotometer (serial number #067) and further reprocessed using a novel algorithm. Compared to the original Brewer algorithm, the new method includes updated NO2 absorption cross sections and Rayleigh scattering coefficients, and it accounts for additional atmospheric compounds and instrumental artefacts, such as the spectral transmittance of the filters, the alignment of the wavelength scale, and internal temperature. Moreover, long-term changes in the Brewer radiometric sensitivity are tracked using statistical methods for in-field calibration. The resulting series presents only a few (about 30) periods with missing data longer than 1 week and features NO2 retrievals for more than 6100 d, covering nearly 80 % of the considered 20-year period. The high quality of the data is demonstrated by two independent comparisons. In the first intensive campaign, Brewer #067 is compared against another Brewer (#066), recently calibrated at the Izaña Atmospheric Observatory through the Langley method and there compared to reference instrumentation from the Network for the Detection of Atmospheric Composition Change (NDACC). Data from this campaign show a highly significant Pearson's correlation coefficient of 0.90 between the two series of slant column densities (SCDs), slope 0.98 and offset 0.05 DU (Dobson units; 1.3×1015 molec.cm-2). The average bias between the vertical column densities is 0.03 DU (8.1×1014 molec.cm-2), well within the combined uncertainty of both instruments. Brewer #067 is also independently compared with new-generation instrumentation, a co-located Pandora spectrometer (#117), over a 1-year-long period (2016–2017) at Sapienza University of Rome, showing linear correlation indices above 0.96 between slant column densities, slope of 0.97, and offset of 0.02 DU (5.4×1014 molec.cm-2). The average bias between vertical column densities is negligible (-0.002 DU or -5.4×1013 molec.cm-2). This, incidentally, represents the first intercomparison of NO2 retrievals between a MkIV Brewer and a Pandora instrument. Owing to its accuracy and length, the Brewer data set collected in Rome can be useful for satellite calibration/validation exercises, comparison with photochemical models, and better aerosol optical depth estimates (NO2 optical depth climatology). In addition, it can be employed to identify long-term trends in NO2 column densities in a metropolitan environment, over two decades witnessing important changes in environmental policies, emission loads and composition, and the effect of a worldwide economic recession, to offer just a few examples. The method can be replicated on the more than 80 MkIV spectrophotometers operating worldwide in the frame of the international Brewer network. The total column ozone (TCO3) measurements by the Dobson spectrophotometer (serial no. 84) have been carried out at Belsk station (51 ∘ 50 ′ N, 20 ∘ 47 ′ E), Poland, since 23 March 1963. In total, ∼115000 intraday manual observations were made by 31 December 2019. These observations were performed for different combinations of double wavelength pairs in the ultraviolet range and observation types, i.e., direct sun (DS), zenith blue (ZB), and zenith cloudy (ZC) depending on weather conditions. The long-term stability of the instrument was supported by frequent (almost every 4 years) intercomparisons with the world standard spectrophotometer. Trend analyses, based on the monthly and yearly averaged TCO3 , can be carried out without any additional corrections to the intraday values. To adjust these data to the Brewer spectrophotometer observations, which were also performed at Belsk, a procedure is proposed to account for less accurate Dobson observations under low solar elevation, presence of clouds, and the temperature dependence of ozone absorption. The adjusted time series shows that the Brewer–Dobson monthly averaged differences are in the range of about ±0.5 %. Terada Honke is a natural sake brewery that utilizes practices like call-andresponse and work song to coordinate its fermentation processes across human and microbial participants. I call attention to the concept of attunement, which is the ability to notice, apprehend, and connect with others in meaningful response. Drawing on ethnographic fieldwork, I explain why brewers must attune to the social, spatial, and temporal scales of life within the brewhouse, including the microbes who remain invisible to the brewers. I then analyze how the brewers practice attunement by attending to the relations between (inter-), within (intra-), and outside of (extra-) their bodies. These practices enable brewers to practice an embodied relationality that spans multiple scales and multiple species, or what others have called responseability. I argue that this form of attunement could extend the idea of collective ethics to include microbial others and help rewrite the metaphysics of what it means to be human. [ABSTRACT FROM AUTHOR]

During the 2019/2020 measurement campaign at Hohenpeißenberg (Germany) and Davos (Switzerland) we compared the well-established Dobson and Brewer spectrometers (single- and double-monochromator Brewer) with newer BTS array-spectroradiometer-based systems in terms of total ozone column (TOC) determination. The aim of this study is to validate the BTS performance in a longer-term TOC analysis over more than 1 year with seasonal and weather influences. Two different BTS setups have been used – a fibre-coupled entrance optic version by PMOD/WRC called Koherent and a diffusor optic version from Gigahertz Optik GmbH called BTS-Solar, which proved to be simpler in terms of calibration. The array-spectrometer-based BTS systems have been calibrated with traceability to NMI, and both versions of TOC retrieval algorithms are based on spectral measurements in the range of 305 to 350 nm instead of single-wavelength or wavelength pair measurements as per Brewer or Dobson. The two BTS-based systems, however, used fundamentally different retrieval algorithms for the TOC assessment, whereby the retrieval of the BTS-Solar turned out to achieve significantly smaller seasonal drifts. The intercomparison showed a difference of the BTS-Solar to Brewers of < 0.1 % with an expanded standard deviation (k=2) of < 1.5 % over the whole measurement campaign. Koherent showed a difference of 1.7 % with an expanded standard deviation (k=2) of 2.7 % mostly caused by a significant seasonal variation. To summarize, the BTS-Solar performed at the level of Brewers in the comparison in Hohenpeißenberg. The BTS-Solar showed very small dependence on the slant path column compared to the double-monochromator Brewer and performed better than the single-monochromator Brewer. Total column ozone measured by Brewer and Dobson spectroradiometers at Arosa and Davos, Switzerland, have systematic seasonal variations of around 1.5 % using the standard operational data processing. Most of this variability can be attributed to the temperature sensitivity of approx. +0.1 %/K of the ozone absorption coefficient of the Dobson spectroradiometer (in this study D101). While the currently used Bass and Paur ozone absorption cross-sections produce inconsistent results for Dobson and Brewer, the use of the ozone absorption cross-sections from in conjunction with an effective ozone temperature dataset produces excellent agreement between the four Brewers investigated (of which two are double Brewers) and Dobson D101. Even though other ozone absorption cross-sections available in the literature are able to reduce the seasonal variability as well, all of those investigated produce systematic biases in total column ozone between Brewer and Dobson of +2.1 % to - 3.2 %. The highest consistency in total column ozone from Brewers and Dobson D101 at Arosa and Davos is obtained by applying the Rayleigh scattering cross-sections from , the ozone absorption cross-sections from , the effective ozone temperature from either ozone-sondes or the European Centre for Medium-Range Weather Forecasts (ECMWF), and the measured line spread functions of Brewer and Dobson. The variability of 0.9 % between Brewer and Dobson for single measurements can be reduced to less than 0.1 % for monthly means. As shown here, the applied methodology produces consistent total column ozone datasets between Brewer and Dobson spectroradiometers, with average differences of 0.0 % and a remaining seasonal variability of 0.11 %. For collocated Brewer and Dobson spectroradiometers, as is the case for the Arosa and Davos total column ozone times series, this allows for the merging of these two distinct datasets to produce a homogeneous time series of total column ozone measurements. Furthermore, it guarantees the long-term future of this longest total column ozone time series, by proposing a methodology for how to eventually replace the ageing Dobson spectroradiometer with the state-of-the art Brewer spectroradiometer. Conway, Brewer, and Rork (CBR) have done a thorough reproduction and replication of Reed. Their analysis extending the time period that I used, while applying the same empirical procedures, convincingly demonstrates that the estimated effect of taxes on state-level economic growth has declined in recent years. In this reply, I reflect on the capacity of the regression procedures used by CBR, Reed, and others to identify causal effects of taxes on economic growth at the state level. In the 2019/2020 measurement campaign at Hohenpeißenberg (Germany) and Davos (Switzerland) we compared the well-established Dobson and Brewer spectrometers (single and double monochromator Brewer) with newer BTS array spectroradiometer based systems in terms of total ozone column (TOC) determination. The aim of this study is to validate the BTS performance in a longer-term TOC analysis over more than one year with seasonal and weather influences. Two different BTS setups have been used. A fibre coupled entrance optic version by PMOD/WRC called Koherent and a diffusor optic which proved to be simpler in terms of calibration from Gigahertz-Optik GmbH called BTS Solar. The array-spectrometer based BTS systems have been traceable calibrated to National Metrology Institutes (NMI) and the used TOC retrieval algorithms are based on spectral measurements in the range of 305 nm and 350 nm instead of single wavelength measurements as for Brewer or Dobson. The two BTS based systems, however, used fundamentally different retrieval algorithms for the TOC assessment, whereby the retrieval of the BTS solar turned out to achieve significantly smaller seasonal drifts. The intercomparison showed a deviation of the BTS Solar to Brewers of <0.1% with an expanded standard deviation of <1.5% within the whole measurement campaign. Koherent showed a deviation of 1.7% with an expanded standard deviation of 2.7% mostly given by a significant seasonal drift. Resulting, the BTS Solar performance is comparable to Brewers at the comparison in Hohenpeißenberg. The slant path slope is in-between double monochromator and single monochromator Brewer. The Brewer ozone spectrophotometer (the Brewer) was designed at Environment and Climate Change Canada (ECCC) in the 1970s to make accurate automated total ozone column measurements. Since the 1980s, the Brewer instrument has become a World Meteorological Organization (WMO) Global Atmosphere Watch (GAW) standard ozone monitoring instrument. Now, more than 230 Brewers have been produced. To assure the quality of the Brewer measurements, a calibration chain is maintained, i.e., first, the reference instruments are independently absolutely calibrated, and then the calibration is transferred from the reference instrument to the travelling standard, and subsequently from the travelling standard to field instruments. ECCC has maintained the world Brewer reference instruments since the 1980s to provide transferable calibration to field instruments at monitoring sites. Three single-monochromator (Mark II) type instruments (serial numbers 008, 014, and 015) formed this world Brewer reference triad (BrT) and started their service in Toronto, Canada, in 1984. In the 1990s, the Mark III type Brewer (known as the double Brewer) was developed, which has two monochromators to reduce the internal instrumental stray light. The double-Brewer world reference triad (BrT-D) was formed in 2013 (serial numbers 145, 187 and 191), co-located with the BrT. The first assessment of the BrT's performance was made in 2005, covering the period between 1984 and 2004 (Fioletov et al., 2005). The current work provides an updated assessment of the BrT's performance (from 1999 to 2019) and the first comprehensive assessment of the BrT-D. The random uncertainties of individual reference instruments are within the WMO/GAW requirement of 1 % (WMO, 2001): 0.49 % and 0.42 % for BrT and BrT-D, respectively, as estimated in this study. The long-term stability of the reference instruments is also evaluated in terms of uncertainties of the key instrument characteristics: the extraterrestrial calibration constant (ETC) and effective ozone absorption coefficients (both having an effect of less than 2 % on total column ozone). Measurements from a ground-based instrument (Pandora spectrometer), satellites (11 datasets, including the most recent high-resolution satellite, TROPOspheric Monitoring Instrument), and reanalysis model (the second Modern-Era Retrospective analysis for Research and Applications, MERRA-2) are used to further assess the performance of world Brewer reference instruments and to provide a context for the requirements of stratospheric ozone observations during the last two decades. The 2020 pandemic caused by the novel coronavirus, SARS-CoV-2, also referred to as the COVID-19 [named for the disease caused by the virus] pandemic, shook the world to its core. Not only were populations hurt by the virus physically, the pandemic had deep repercussions economically as well. One of the industries severely impacted by the implications of the 2020 COVID-19 pandemic was the brewing industry, particularly that of the United States. The economic turmoil and uncertainty were felt by both macro and micro brewers alike. Draft beer sales virtually dried up overnight as state-imposed shutdowns closed bars, restaurants, and taprooms as a means to curb the spread of the virus. There were supply chain and logistical issues that arose during the pandemic due to not only closures within the brewing industry but supporting industries such as printers and shippers. In some cases, entire business models had to be turned completely on their head in an instant and business pivots had to be made. The year 2020 was wrought with challenges faced by the brewing industry. There was one saving grace however that kept many breweries afloat during the pandemic, and that was packaged beverage sales, especially those packages intended for off-site consumption. Set forth by trends of the pre-pandemic years aluminum cans and canning reigned supreme for the craft brewing market and allowed breweries to get product into the hands of consumers and ultimately allowed some breweries to stay open. Other options breweries had included the use of glass growlers or aluminum crowlers as a means to sell draft products to-go. The resourcefulness of many brewery owners was tested in 2020 and many rose to the challenge. Objective: To analyze the restrictions on beer consumption in accordance with the Canteens and Liquor Stores of Alcoholic Beverages, and Beer Regulation for the municipality. This is for Hermosillo in force since 1952, and to expose the confrontation among the municipal presidents - between 1952 and 1974- to on the consumption liberty that was promoted through the 1948 federal tax imposed on Beer Production and consumption. Methodology: Based on the findings in the Hermosillo Municipal Archive it came to light the complains about excessive beer consumption; in the Sonoran State of Congress Historical Archive (it was found) the legislation about consumption and beer sale points, where it was identified the decree about the Canteens and Liquor Stores Regulation in 1952, for the municipality of Hermosillo. Results: Firstly, did not have the expected effects for the municipal authorities due to 1951 Presidential Decree which recognized beer as a non-intoxicating drink; secondly, the tax federalization encouraged the increase in sale points, which led to clashes between the local authorities and the association brewers. Limitations: the limited access to document consultation in the Sonoran State of Congress archive. Modern breweries taking inspiration from ancient cultures appear as a quite interesting phenomenon, because beer is absent from the current imaginarium about the ancient Greeks and Romans. Yet it was not unknown to them, as demonstrated by the survey of sources in the first part of the text. Actually, some brewers today are aware of the beverage's presence in ancient literature and use this knowledge in the naming of their products. Others decide on less direct references, to some historical or mythical characters. Some producers do not limit themselves to names of their brews, but also attempt to reconstruct the ancient drinks. In the second (main) part of the article several cases of each type are presented, together with an analysis of methods of the references' presentation and explanation to the consumer. Franchisors operating neither in the state of Washington nor under a franchisor-supplier model will likely glance over this concern; however, franchisors that do will be inclined to revisit their current model and assess the most appropriate way to move forward. Such an initiative could shed light on the separate, yet fundamental, hurdles that both franchisors and franchisees face, potentially shaping the common ground upon which a franchisor and franchisees can move forward harmoniously. It is often suggested that early modern Amsterdam was a thirsty city, in dire anticipation of the technological solutions that would finally provide it with the necessary quantities of potable water in the nineteenth century. However, a piped water system would have been technologically possible even a century before it was finally implemented, and in 1748 was even explicitly considered, but rejected as too inflexible and too vulnerable to sabotage. I consider this decision in its context, and show that while Amsterdam’s system of provisioning changed throughout the early modern era, it was nonetheless able to meet the requirements of the city’s population and its government.
