Background: Farm profitability depends on raising healthy calves, which rests on successful feeding and management programs. Objective: To determine the effects of weaning weight on growth performance, feed efficiency, behavioral traits, as well as feeding cost of Holstein-Friesian and Brown Swiss calves. Methods: Sixty-seven newborn dairy calves were allocated into four weaning-weight groups [60 kg (n=18), 65 kg (n=19), 70 kg (n=18) and 75 kg (n=12)]. Body weights (BW) and measurements were recorded at birth, weaning, and four months of age. An instantaneous sampling method was used to collect behavioral data. Results: Daily weight gain of Brown Swiss calves was higher than Holsteins between weaning and four months of age (p<0.05). During pre-weaning, daily weight gain of calves weaned at 60 kg was lower than the other three groups (p<0.05). Feed efficiency of Holstein-Friesian was higher than Brown Swiss calves in the period between birth and four months of age (p<0.05). Chest depth of calves weaned at 60 kg was (p<0.05) lower compared to the other groups. Water drinking behavior during the pre-weaning period was notably higher in calves weaned at 75 kg (p<0.05). Conclusions: Our results suggest that dairy calves can be weaned at 60 kg of BW without detrimental effects on performance, and their feed cost per kg weight gain is significantly lower compared to higher weaning weights. Aims: This study was carried out in order to determine the current situation and problems in the cattle breeding practices related to shelter characteristics in İspir district of Erzurum province and to provide solutions.Methods and Results: In this research, a face-to-face survey was conducted with 394 business owners selected by a random sampling method among cattle farms in İspir district of Erzurum province. Chi-square and frequency analyzes were performed in the statistical evaluation of the obtained data. It was determined that 97.2% of the surveyed enterprises did not have separate maternity wards in their barns. While the majority of the enterprises housed heifers, young cattle and dry cows together (90.4%), only 9.6% of them housed them separately. It was also determined that the percentages of enterprises providing bedding for cattle in the district were considerably low (12.4%). Grain straw (6.6%) and sawdust (3.3%) were the most popular bedding materials. The enterprises watered their animals through village fountains (90.1%), troughs (70.6%) or carrying the water by the bucket (33.5%). Of all the surveyed enterprises, 54.8% performed general cleaning once a year, while 33.0% twice and 12.2% three times. In 62.9% of the enterprises, manure was used as fertilizer in the fields, and a significant part of the enterprises preferred to utilize manure as fuel (34%). Most of the participants stated that they believed that the cattle would be uncomfortable and that their productivity would decrease at 10-15 °C, which is the optimal temperature for the cattle.Conclusions: The findings of the study demonstrated that there were some improper and deficient practices in the district in terms of breeding practices related to barn characteristics and a large educational campaign on this subject was required for cattle breeders.Significance and Impact of the Study: There are some structural and nonstructural elements in the barn that help the cattle to perform their natural behaviours indirectly increase productivity and ease the work in the enterprises. With this study, the status of cattle enterprises in İspir district in terms of breeding practices related to barn characteristics was determined and some suggestions were made regarding current problems., Amaç: Erzurum ili İspir ilçesinde barınak özellikleri ile ilgili sığır yetiştiriciliği uygulamalarına ilişkin mevcut durumu ve sorunları belirlemek ve çözüm önerileri sunmak amacıyla bu çalışma yapılmıştır.Yöntem ve Bulgular: Bu çalışmada Erzurum ili İspir ilçesinde, sığırcılık işletmeleri arasından tesadüfi örnekleme yöntemi ile seçilen 394 işletme sahibi ile yüz yüze anket yapılmıştır. Elde edilen verilerin istatistiksel değerlendirmesinde ki-kare ve frekans analizleri kullanılmıştır. Ankete katılan işletmelerin %97,2'sinin ahırlarında ayrı bir doğum bölmesinin olmadığı belirlenmiştir. İşletmelerin büyük çoğunluğu düve, dana ve kuru inekleri birlikte (%90,4) barındırırken, sadece %9,6’sı ayrı barındırmaktadır. Ayrıca ilçede işletmesinde sığırlar için altlık bulunan işletmelerin yüzdelerinin oldukça düşük olduğu (%12,4) tespit edilmiştir. İlçede en çok tercih edilen altık materyallerinin tahıl samanı (%6,6) ve talaş (%3,3) olduğu belirlenmiştir. İşletmelerdeki hayvanlarının su ihtiyaçlarını köy çeşmesi (%90,1), yalak (%70,6) veya kovayla (%33,5) su taşıyarak sağlamaktadırlar. Ankete katılan işletmelerin %54,8'i yılda bir kez genel temizlik yaparken, %33,0'ı iki kez ve %12.2'si 3 kez genel temizlik yaptıklarını belirtmiştir. İşletmelerin %62,9'unda gübre tarlalarda kullanılırken, işletmelerin önemli bir kısmı gübreyi yakıt olarak kullanmayı tercih etmektedir (%34). Katılımcıların büyük bir çoğunluğu, sığırlar için optimum sıcaklık olan 10-15°C'de sığırların rahatsız olacağını ve verimlerinin azalacağını düşündüklerini belirtmişlerdir.Genel Yorum: Araştırmadan elde edilen bulgular, ilçede sığır yetiştiriciliği konusunda bazı yanlış ve eksik uygulamaların olduğunu ve ilçede sığır yetiştiriciliğine yönelik geniş bir eğitim kampanyasına ihtiyaç olduğunu göstermiştir.Çalışmanın Önemi ve Etkisi: Ahırlarda sığırların doğal davranışlarını gerçekleştirmelerine yardımcı olan ve dolaylı olarak işletmelerde verimliliği artıran ve iş gücünü kolaylaştıran yapısal ve yapısal olmayan bazı unsurlar bulunmaktadır. Bu çalışma ile, İspir ilçesindeki sığırcılık işletmelerinin ahır özellikleri ile ilgili yetiştirme uygulamaları açısından durumların ortaya konmuş ve problemlerin çözümüne yönelik öneriler sunulmuştur.

Bu çalışmanın amacı, Erzurum ili İspir ilçesindeki sığırcılık işletmelerinde yem kullanımı ve hayvan besleme uygulamalarına ilişkin mevcut durumu belirlemek ve ilgili sorunları ortaya koyarak bu sorunlara çözüm önerileri getirmektir. Metot: Bu amaçla şansa bağlı olarak seçilmiş 394 sığır yetiştiricisiyle yüz yüze anket yapılmıştır. Elde edilen veriler istatistiksel olarak Ki-kare Bağımsızlık testi ve frekans analiz metodu kullanılarak analiz edilmiştir. Elde edilen bulgulara göre yetiştiricilerin %97,7’sinin bitkisel üretim yaptığı saptanmıştır. Önemli bir kaba yem kaynağı olan silaj ise ilçede çok düşük düzeyde (%2,8) kullanılmaktadır. Yetiştiricilerin yemleme uygulamasını genellikle kendi bilgi ve tecrübelerine göre yaptıkları belirlenmiştir. Yetiştiricilerin buzağılara kaba ve kesif yem vermeye doğumdan sonra dördüncü haftada (%97,5), su vermeye ise üçüncü haftada (%98,7) başladıkları tespit edilmiştir. İşletmelerin %99,7’sinin mera kullandığı, genellikle Nisan ayında (%95.4) meraya çıkıldığı ve 5 aydan daha fazla merada kalındığı belirlenmiştir. Sonuç: İlçede hayvan yemleme ve besleme konularında bilgi eksikliği bulunduğu sonucuna varılmıştır. Bu nedenle ilgili kurumlar tarafından eğitim çalışması yapılması, yetiştiricilerin bilgi ve becerilerinin arttırılması ve silaj üretiminin teşvik edilmesi bölge hayvancılığının kalkınmasına fayda sağlayacaktır., The aim of this study was to determine the current situation on feed usage and cattle feeding practices and reveal the concerning problems in cattle enterprises in İspir county of Erzurum Province to suggest solutions for these problems. For this purpose, a face-to-face survey was conducted with the owners of 394 randomly selected cattle breeders. Data obtained were statistically analyzed using the chi-square independence and frequency analysis test. Results: According to the findings, it was determined that 97.7% of the enterprises made plant production. Silage, which is an important source of roughage, was utilized at a very low level (2.8%) in the county. It was also determined that the breeders generally fed their animals based on their own knowledge and experience. They started offering roughage and concentrate feed to the calves in the fourth week (97.5%) and watering in the third week (98.7%) after birth. It was found that 99.7% of the enterprises initiated pasture grazing in April (95.4%) and animals were grazed in the pasture for more than 5 months. It was concluded that there is a lack of information about animal feeding among breeders in the county. For this reason, training activities by the relevant institutions, increasing the knowledge and skills of the breeders, and encouraging silage production will benefit the development of the region’s livestock production.

11. Effects of Slaughter Age of Holstein Friesian Bulls on Meat Quality: Chemical Composition, Textural Characteristics, Sensory Attributes and Fatty Acid Profile.

This study aimed to investigate the effects of slaughter age (young vs. old), muscle type (Longissimus dorsi (LD), Gluteus medius (GM)) and fat deposits (kidney knob and channel fat, subcutaneous fat, intramuscular fat) on chemical, organoleptic, textural characteristics and fatty acid composition of Holstein Friesian bull meat. For this purpose, the carcasses of 26 Holstein Friesian bulls that had been fattened on the same private farm were assigned to two experimental groups based on their age at slaughter: a young group (YG) (average age: 17.0 ± 1.0 months old) and an old group (OG) (average age: 22.0 ± 1.0 months old). The percentage of crude protein, panel tenderness score, polyunsaturated fatty acid (PUFA) and saturated fatty acid (SFA) content, the PUFA/SFA ratio and the hypocholesterolemic fatty acid (DFA)/hypercholesterolemic fatty acid (OFA) ratio of the bull carcasses decreased significantly with increasing slaughter age. By contrast, the OFA content of the carcasses significantly increased (p < 0.05) with increasing slaughter age. Advanced slaughter age resulted in lower panel tenderness scores. Additionally, the meat of the bulls in the OG was considered to be less healthy because of the less desirable fatty acid composition and nutritional indices, such as the PUFA/SFA and hypocholesterolemic/hypercholesterolemic ratios, compared to the meat from the bulls in the YG. Furthermore, the intramuscular fat and internal fat contained high percentages of PUFA and SFA and high PUFA/SFA and hypocholesterolemic/hypercholesterolemic ratios. Interestingly, the percentage of OFA content in the internal and intramuscular fat tissues decreased with increasing slaughter age. In conclusion, this study provided evidence that slaughter age and muscle and fat type are essential sources of variations in the textural characteristics, sensory panel attributes and fatty acid profile of meat from Holstein Friesian bulls. In this study, a survey was conducted with 400 enterprise owners in order to determine the current situation and problems related to the structural characteristics of the barns in cattle enterprises located in the central county of Ağrı province, and the data obtained were transferred into Microsoft Excel program and frequency analysis was performed in SPSS statistical program. Findings were evaluated through graphs obtained from proportional values. It was determined that 66% of the enterprises have free-stall closed barns, the barns in 48.5% of the enterprises were used for less than 10 years and the barns were generally detached (98.5%). Building material for the walls of the barns was mostly stone (72.8%), and sheet metal (72.8%) was the most preferred material for the construction of the roof, and the floors of the were generally made of concrete (88.8%). The feed alley (15%) and automatic waterers (2.8%) are available in a small percentage of the barns. It was determined that 88% of the cattle farms have individual calf units, and calves in the most of the enterprises are housed in a separate group sections (87.5%) in the same barn. Only 15% of the enterprises used bedding and 85% of them did not have bedding material. The majority of the enterprises watered the animals with buckets (51.5%) and village's fountain or trough (43.8%). It also found out that 62.3% of the enterprises implemented general cleaning and 99.3% cleaned the manure with manpower. Furthermore, 94.5% of the enterprises stored the manure near the barn without any cover. In addition, 72.5% of the cattle farms utilized from the manure for heating purpose and 51% of them used it as fertilizer in their field. İşletmelerin %88’inde ayrı buzağı bölmesi bulunduğu, çoğunluğunun aynı ahırda ayrı grup bölmesinde (%87.5) barındırıldığı tespit edilmiştir. İşletmelerin sadece %15’inin yataklık kullandığı, %85’inde yataklık materyal bulunmadığı saptanmıştır. İşletmelerin çoğunluğu hayvanların su ihtiyaçlarını kova ile (%51.5) ve köy çeşmesi-yalak (43.8%) ile sağladığı tespit edilmiştir. İşletmelerin %62.3’ünde genel temizlik yapıldığı, %99.3’ünün gübreyi insan gücü ile temizlediği, %94.5’inin gübreyi ahır yakınında biriktirdiği, %72.5’inin ise gübreyi yakarak ve %51’inin tarlada gübre olarak değerlendirdiği belirlenmiştir. Elde edilen bulgular neticesinde bölgedeki işletmelere verilecek bilgi desteği ve yatırım teşvikleri ile ayrıca yetiştirici eğitimleri yapılarak işletmelerin karlı bir hayvancılık yapabilmelerine olanak sağlanabileceği sonucuna varılmıştır.

Bu çalışmada, Erzurum şartlarında yetiştirilen ve farklı yaşlarda besiye alınan Siyah Alaca ırkı sığırların besi performansı, karkas ve et kalite özellikleri incelenmiştir. Atatürk Üniversitesi Gıda Hayvancılık Araştırma Merkezi Müdürlüğü'nde yürütülen araştırmanın hayvan materyalini 24 baş Siyah Alaca sığır oluşturmuştur. Deneme grupları 8-10 (n=6), 12-14 (n=10) ve 15-17 (n=8) aylık yaşta olacak şekilde düzenlenmiştir. Besi 258 gün sürmüştür. Grupların besi başı ağırlıkları 8-10, 12-14 ve 15-17 aylık yaş gruplarında sırasıyla 200,0±13,193 kg, 302,1±10,840 kg ve 353,8±14,114 kg (P0,05). Grupların 1 kg canlı ağırlık artışı için tükettikleri kuru madde bazında toplam yem miktarları sırasıyla 8,03 kg, 9,07 kg ve 9,89 kg olarak saptanmıştır. Göğüs derinliği, karkas uzunluğu, but uzunluğu değerleri bakımından gruplar arasındaki farklılıklar çok önemli (P0,05) for 8-10, 12-14 and 15-17 month age groups, respectively. The amount of feed consumed by groups for 1 kg live weight gain was 8,03 kg, 9,07 kg and 9,89 kg on the dry matter basis, respectively.
