The article presents a study on protease inactivation in fish muscle by twin-screw extrusion. The effects of material temperatures on inactivation of protease in Arrowtooth flounder muscle were studied. Complete inactivation occurred at 100 degrees Celsius irrespective of screw speed and configuration. Proteolytic enzyme in fish muscle could be completely inhibited by utilizing the capability of a twin-screw extruder.
