The major and minor constituents of cholesterol gallstones were investigated by Laser-induced breakdown spectroscopy. The elements detected in the center and in the shell part were calcium (Ca), carbon (C), copper (Cu), hydrogen (H), magnesium (Mg), nitrogen (N), sodium (Na), oxygen (O) and potassium (K), but Cu was absent from the surface of the cholesterol gallstones. Our experimental results revealed that calcium was a major constituent of cholesterol gallstones. Our results also showed that the concentration of Ca, Cu and Mg were large in the center in comparison with the shell. Laser-induced breakdown (LIB) spectra of both portions of the surface (colored part and discolored part) of the cholesterol gallstones were recorded. The concentrations of sodium and potassium were higher in the non-pigmented (colored) part than in the pigmented part (discolored/pigment), which showed that the deficiency of sodium and potassium was playing a key role in the formation of discoloration at the different locations on the outer surfaces of the cholesterol gallstones. B-type carbonated hydroxyapatites, prepared in aqueous media free of alkali ions, fix ammonium ions present in the reaction medium. A small portion of the carbonate ions introduced into the apatite structure enter by the substitution mechanism (CO3(2-), NH4+)----(PO4(3-), Ca2+). With these results for the structural incorporation of ammonium ions, differences in lattice parameters observed among specimens with the same degree of carbonation were attributed to some substitution of NH4+ for Ca2+. The fixed ammonium ions were shown to be the source of the cyanamide and cyanate ions that develop on heating. Objective: In normal infants, functional residual capacity using plethysmography (FRCpleth) exceeds FRC(N2) (using nitrogen washout) and the within-subject difference FRC(pleth-N2) indicates the part of pulmonary gas volume not ventilated during tidal breathing. We postulated that infants with bronchopulmonary dysplasia (BPD) have an elevated FRC(pleth-N2).Design: In a prospective study, FRC(pleth-N2) in healthy newborns (controls n = 17) was compared to that in neonates recovering from the respiratory distress syndrome without BPD (noBPD, studied at discharge, n = 13) and with BPD (BPD1 n = 14, studied at 36 post-conceptional weeks; BPD2 n = 16, at discharge).Measurements and Results: Paired measurements, FRCpleth and FRC(N2), were performed using a plethysmograph (Jaeger, Germany) and an open-circuit nitrogen washout technique (SensorMedics 2600, USA). In comparison to the controls (5.2 ml/kg), FRC(pleth-N2)/kg in noBPD (12.7 ml/kg, p < 0.001), in BPD1 (24.9 ml/kg, p < 0.001) and in BPD2 (13.5 ml/kg, p < 0.001) was significantly higher. Compared with that of the controls FRCpleth was significantly increased in BPD1 (p < 0.001) and FRC(N2) was decreased in noBPD and both BPD groups.Conclusion: The FRC(pleth-N2) is a reliable indicator for pulmonary inhomogeneities in infants with respiratory diseases. A comparative study was conducted with four improved cowpea (2 pod bug resistant and 2 susceptible) varieties to assess the effect of autoclaving at 105 degrees C under 15 psi for 30 min on their protein quality, as measured by the levels of some antinutritional factors and performance of rats fed the different cowpea diets. Also, the relationships between antinutrients in the cowpeas and protein quality indicators were examined. Results showed that autoclaving completely eliminated trypsin inhibitor, hemagglutinin and HCN, whereas it reduced significantly (p < 0.01) the levels of phytic and tannic acids in the cowpeas. In both raw and autoclaved forms, the insect susceptible cowpeas were better (p < 0.05) utilized than their resistant counterparts, a condition which was attributable to lower levels of antinutrients in the susceptible varieties. In the raw cowpeas, trypsin inhibitor, hemagglutinin and HCN were significant variables affecting cowpea protein utilization, while in autoclaved samples, tannic and phytic acids were important though nonsignificant (p > 0.05) factors. As the search for alternative sources of food to alleviate hunger continues, this study was undertaken to determine nitrogen and amino acid content, chemical score, protein digestibility corrected amino acid score, available lysine and in vitro digestibility of 8 lesser known, wild tropical seeds, gathered in Nigeria. Results were contrasted with a tropical soybean variety (Glycine max, TGX 1660-15F). The investigated seeds were Millettia thonningii, Gliricidia sepium, Lonchocarpus sericeus, Albizia zygia, Daneillia ogea and Afzella bella from the family of Leguminosae, Diospyros mespiliformis (Ebenaceae) and Entandrophragma angolense (Meliaceae). The crude protein content, based on nitrogen determination, was found to be lower in the wild seeds compared to soybean, which was partly due to the relatively high content of non-protein nitrogen. With reference to amino acid requirement and digestibility in most seed samples, lysine, followed by sulphur amino acids and threonine, were the limiting amino acids. It was concluded, that these less familiar wild seed plants may be used as valuable food or feed complements. The nutritive quality of maize-soybean (70:30) tempe flour manufactured by fermentation with Rhizopus oligosporus: Rhizopus orysae (1:1) was determined using weanling rats. Mould fermentation of maize-soybean mixture did not significantly affect its proximate composition. It increased the content of reducing sugars, total acids and aminonitrogen by about 43, 195 and 482 percent, respectively, and decreased phytate content by 46 percent. In vitro iron absorption for maize flour and maize-soybean tempe flour was 2.46 and 5.51 percent, respectively. Protein Efficiency Ratio (PER) and Net Protein Ratio (NPR) for maize-soybean tempe flour and skim-milk diets were 2.71 and 2.96, respectively, for PER, and 3.31 and 3.51, respectively, for NPR. Crisphead lettuce (Lactuca sativa L. var capitata cvs. Marius and Saladin) were grown with a nitrogen supply from 50 to 200 kg N/hectare. Heads were stored for one or two weeks at 1 degree C in cold storage or ice bank cooling. Samples were taken for measurement of dry matter, sugars, vitamin C and nitrate. The content of dry matter, sugars (glucose, fructose) and vitamin C decreased with increasing level of nitrogen, and the content of nitrate increased. Except for nitrate the contents of the other quality attributes decreased at all nitrogen supply levels during storage. No differences were found between the storage systems, and beside fructose no significant differences were found between the two cultivars. The content of dry matter, vitamin C, and nitrate decreased from the outer to the inner head fraction, while the content of sugars increased. Trimming decreased the content of dry matter, vitamin C and nitrate and increased the content of sugars. To obtain heads from storage with a relatively high content of dry matter, sugars and vitamin C, and a relatively low content of nitrate the nitrogen supply must be as low as possible. Except for nitrate where no distinct results were found in this experiment it must also be recommended to store the heads as short time as possible. Possibly the cv. Eighty three leguminous species including crop plants, weeds and trees have been screened for their content of leaf protein as well as extractabilities of leaf protein, total N and protein N. The baobab milk and fermented baobab/acha flour mixtures were analyzed chemically for their proximate, ascorbate, mineral and antinutrient composition. The dry pulp scraped from baobab fruits was kneaded, made into solution, extracted through cheese-cloth and stored frozen until analyzed. The acha and baobab grains were cleaned, fermented for 24 to 120 hours, dried and hammermilled into fine flours. The unfermented flours served as controls. The standard assay methods of AOAC were selected for use for the analysis of the nutrients and the antinutrients. The mixtures were composed of 70% acha and 30% baobab flours (70:30 protein basis). The baobab milk contained more protein (1.5%) and minerals (Fe, 17.8 mg; Ca 134.2 mg) than those of human milk (protein, 1.3%, Fe, 0.2 mg, Ca 30 mg) and cow milk (Fe, 0.1 mg; Ca 1.20 mg) and most leading national commercial infant formulas e.g. cerelac (Fe, 10.0 mg). The composite flours contained more nutrients than the baobab or the acha flour alone. The BF96 had greater advantage over other BF flours as a supplement to acha. Juice was extracted from jicama (Pachyrrizus erosus Urban) and clarified using a 10,000 daltons molecular weight cut-off membrane to improve its stability. Ultrafiltered juice was tested for general composition and Hunter color. Ultrafiltration (UF) retentate and UF permeate showed some changes, compared to fresh juice, in total and soluble solids, total sugars, and nitrogen, whereas ash and pH remained constant. Hunter color of juice samples exhibited some variation by UF. Results suggest that UF has potential to produce jicama juice with desirable and stable aroma and flavor. [ABSTRACT FROM AUTHOR]

Changes in crude protein (CP), non protein nitrogen (NPN), total sulphur (TS) contents, carbon/nitrogen (C/N) and nitrogen/sulphur (N/S) ratios and albumin protein (AP) were studied in four sizes of peas at various stages of the commercial canning process. Of all the parameters considered, NPN, AP, and TS showed the most regular trend to decrease during the commercial canning process. In this paper the use of these three parameters is proposed to obtain a Heat Treatment Index (HTI) applicable to raw, blanched and canned peas, according to the equation: HTI = (NPN x AP)/TS. Barley grains (9 samples from 7 cultivars) with nitrogen contents (N) ranging from 1.45 to 4.01% of dry matter were analysed for their amino acid (AA) composition with high accuracy from six different hydrolysates per sample. AA levels in grain increased as linear functions of N with correlation coefficients close to unity. A comparison with literature data confirmed that the AA composition of any grain sample of normal barley can be predicted from its N for all phenotypes and genotypes. AAs in grain protein changed as hyperbolic functions of N which increased for Phe, Pro and Glx but more or less strongly decreased for the other AAs. By plotting AA scores against N, barley proteins were shown to be always richer than wheat and rye in Val and Phe + Tyr; sometimes richer than both other species for N less than 2 (Lys); 2.2 (Leu and Ile); 3.4 (Thr); sometimes intermediate to wheat and rye above the latter N values. They were also intermediate in sulphur AAs for N less than 1.9 and drastically poorer for N greater than 1.9. However, they were richer than both other species in Trp for N greater than 1.6. The hyperbolic variations of non-protein nitrogen and nitrogen-to-protein conversion factors were determined as a function of N and also compared with those of wheat and rye. [ABSTRACT FROM AUTHOR]

Unlabelled: To evaluate the usefulness of "single stool sample" analysis in the investigation of steatorrhoea instead of 72-h stool collection, we examined 57 stool samples of patients with cystic fibrosis (CF) while on pancreatic enzyme therapy and 29 stool samples of healthy children. We compared results of fat, nitrogen, water and energy content. Fat was determined by the method of Van de Kamer et al. and the Acid Steatocrit (AS) method, water by vacuum drying, nitrogen by the Dumas method and energy was obtained using a bomb calorimeter. Results (median) for CF patients and healthy controls were significantly different (P< or =0.0001) for fat respectively: 8.90 and 4.75/100 g wet weight (ww) stool as measured by the method of Van de Kamer et al. and 28.6% and 7.2% by the AS method. Energy results for energy were also significantly (P< or =0.0001) different: 742.96 and 549.32 kJ/100 g ww stool for CF patients and healthy controls respectively. Results of single stool sample water and nitrogen were similar in both groups. These results were comparable to those of a 3-day stool collection, as reported in the literature.Conclusion: Results from single stool samples yield clinically useful information concerning fat and energy.
