Abstract
- Seed protein concentrates (SPC) were extracted from 4 leguminous species and the extractabilities of total N (nitrogen), protein N and SPC determined. In addition, composition, calorie value and in vitro enzymatic digestibility of these SPCs was analysed. Results indicate the promising nutritional potential of these SPCs. [ABSTRACT FROM AUTHOR]
