Human nutrition is a growing field with an increasing job market and high demand for university study, yet graduates report feeling underprepared for and unaware of potential job opportunities. This scoping review aimed to identify employment initiatives used in undergraduate programs to support an evidence-based approach to the development of future initiatives for human nutrition courses. The scoping review following PRISMA-ScR criteria was initially conducted in October 2018 and updated in April 2020. Search terms were selected to identify studies that reported on employability or work-readiness embedded within the course curriculum for undergraduate students. Fourteen papers met the eligibility criteria. Papers included were from Australia (9), United Kingdom (2), United States (1), New Zealand (1) and Germany (1). Papers described initiatives fitting broad categories of placements, project-based industry collaboration, practice-based eLearning, mentoring and building graduate attributes. Placements were the most common type of initiative and project-based industry collaboration demonstrated the highest levels of student and employer satisfaction. The success of initiatives was often attributed to incorporating diverse approaches to real-world, problem-solving skills. Mentoring and eLearning were used to promote employability soft skills, while industry-based placements provided students with practical experience. Placement in specific workplace settings should be representative of the diverse job options for nutrition graduates. Human nutrition degrees should consider incorporating strategies that develop soft skills and project-based skills while exposing students to diverse workplace settings within industry.

An increasing number of Chinese students pursue their higher education degree in an overseas university. This research paper sets out to raise a discussion about some of the major challenges that such Chinese postgraduates might experience when studying at universities in English speaking countries drawing from ethnographic and sociological perspectives. The paper seeks to enhance understanding of a growing phenomenon amongst student communities in Higher Education institutions in English speaking countries. The challenges faced by Chinese students can be disorientating and stressful but overcoming them can lead to opening up of a range of opportunities from which the students can benefit particularly after they have graduated from their study. As many HE institutions come to depend upon the growing number of Chinese students enrolling with them the paper touches upon an issue of cross national concern. Both authors have experience of students seeking to study in English-speaking countries. They are currently pursuing research at the Institute of Education, University College London. The present paper is drawn from a wider programme of research into student exchanges and flows.

This report shares the findings and lessons learned from an investigation into the economics of disaggregated models for assessing and accrediting informal learners undertaking post secondary education. It presents some key economic and governance challenges for universities to consider in implementing OER assessment and accreditation policies. It also includes discussion of findings from a small-scale survey conducted by two of the authors on perceptions, practices and policies relating to openness in assessment and accreditation in post secondary institutions, with a particular focus on the "OER universitas" (OERu) concept. Student learning outcomes assessment examines whether programs cover the material stated in their learning goals, whether students are learning the material, and the impact on student retention, graduation, post-graduation outcomes, and institutional accreditation, with the aim of providing faculty with data that can be used to help programs evolve or improve. While there is a plethora of research regarding effective methods of assessment used in the United States, little has been written regarding cross-national comparisons of assessment methodologies. This paper examines the current state of assessment in several nations and regions, and draws parallels in practices across countries. A literature search using the term "outcomes assessment" yielded 228 articles, of which, only 35 described practices outside the United States. Generally, searches on the terms "outcomes assessment" and "global" tend to return studies of outcomes assessment of teaching about global issues as it is practiced in the United States, rather than results about outcomes assessment practices used in other countries.

CAN and COULD have multiple uses and multiple interpretations, which can be difficult for learners of English to understand. For example, the difference of "Can you help me?" and "Could you help me?" may go unnoticed to an English language learner, but a native speaker of English would recognise a difference in politeness. The current paper reports on an investigation of learners' use of the modal auxiliaries CAN and COULD, including their negative counterparts ("cannot/can't" and "could not/couldn't"), in an English Proficiency Program (EPP) classroom at a New Zealand University. Through first examining the learners' use of CAN and COULD in spoken and written contexts, comparisons are made to their use in the "British National Corpus", which results in the identification of areas in which learners' use could be strengthened.

This international study investigated the experiences and attitudes of teaching artists whose work is rooted in theatre, dance, and closely-related disciplines. Based on survey data from teaching artists working in Australia, New Zealand, Southeast Asia, United Kingdom, and the United States (n = 172), the paper illuminates participants' perspectives on preparation, practice and professional identity. Emergent themes include: (1) teaching artist training and preparation, (2) work contexts and populations served, and (3) work challenges and obstacles. Following discussion of key survey findings, three case studies based in higher education settings in the USA, UK and Southeast Asia are presented. Hagman's (2005) framework for multiple fields of subjectivity at work in aesthetic experience is employed to illustrate the ways in which the intrasubjective, the intersubjective, and the metasubjective fields of subjectivity inform each teaching artist's practice and professional identity. The paper concludes with an analysis of themes in light of current discussions on reflective practice and implications for teaching artist "praxis". (Contains 7 footnotes.)

The notion of internationalization in higher education is understood as the recruitment of international students, marketing of academic programs and courses, and teaching English as a Second Language to student cohorts from Asia, Africa, and Latin America. Various models of internationalization (Knight, 2004, 2006; Leask, 2009; Pimpa, 2009; Welikala, 2011) have been explored and promoted in Canada, the United Kingdom, Australia, and New Zealand. Often, as noted in the literature, these models emphasize the acculturation of international students into the host country culture rather than a respectful exchange of academic and cultural knowledge and ideas. The central thesis of this critical reflective discussion paper is that "glocalization" in higher education is an appropriate alternative to internationalization. Glocalization advocates a positive learning experience and encourages the enhancement of learners' "glocal" experience through a critical academic and cultural exchange of global and local socio-economic and political issues. Instructional strategies supporting glocalized learning curricula are recommended. The glocalization pedagogical framework for higher education, introduced in this paper, embraces the principles of social responsibility and justice with a firm commitment to sustainable futures for local and global societies.

In this paper we review fifty years of articles published in Australian Journal of Adult Learning in its various iterations. We examine the different roles of the journal: to illuminate the history and trends of adult education authors; to be the flagship of the adult education profession in Australia; to reflect on significant national events; and to mirror the changing knowledge base of the discipline. We analyse the authorship of the articles over fifty years, and determine patterns in contribution to the journal by gender, location, institutional affiliation and author numbers. We also examine key themes that have surfaced in the writings on adult education. The articles published in the journal are significant because they are primary sources of the day, unfettered by the perspectives, viewpoints and standards of later periods. Our paper serves as a useful looking glass through which we might be able to view more clearly the shifting research interests of the past and the challenges in the future for the adult and community learning sector. This paper addresses the question: how can e-learning be embedded in traditional universities so that it contributes to the transformation of the university? The paper examines e-learning strategies in higher education, locating the institutional context within the broader framework of national and international policy drivers which link e-learning with the achievement of strategic goals such as widening access to lifelong learning, and upskilling for the knowledge and information society. The focus will be on traditional universities i.e. universities whose main form of teaching is on-campus and face-to-face, rather than on open and distance teaching universities, which face different strategic issues in implementing e-learning. Reports on the adoption of e-learning in traditional universities indicate extensive use of e-learning to improve the quality of learning for on-campus students, but this has not yet translated into a significant increase in opportunities for lifelong learners in the workforce and those unable to attend on-campus. One vision of the future of universities is that "Virtualisation and remote working technologies will enable us to study at any university in the world, from home". However, this paper will point out that realisation of this vision of ubiquitous and lifelong access to higher education requires that a fully articulated e-learning strategy aims to have a "transformative" rather than just a "sustaining" effect on teaching functions carried out in traditional universities. In order words, rather than just facilitating universities to improve their teaching, e-learning should transform how universities currently teach. However, to achieve this transformation, universities will have to introduce strategies and policies which implement flexible academic frameworks, innovative pedagogical approaches, new forms of assessments, cross-institutional accreditation and credit transfer agreements, institutional collaboration in development and delivery, and, most crucially, commitment to equivalence of access for students on and off-campus. The insights in this paper are drawn from an action research case study involving both qualitative and quantitative approaches, utilising interviews, surveys and focus groups with stakeholders, in addition to comparative research on international best practice. The paper will review the drivers and rationales at international, national and institutional level which are leading to the development of e-learning strategies, before outlining the outcomes of a case study of e-learning strategy development in a traditional Irish university. This study examined the drivers and barriers which increase or decrease motivation to engage in e-learning, and provides some insights into the challenges of embedding e-learning in higher education. While recognising the desirability of reaching out to new students and engaging in innovative pedagogical approaches, many academic staff continue to prefer traditional lectures, and are sceptical about the potential for student learning in online settings. Extrinsic factors in terms of lack of time and support serve to decrease motivation and there are also fears of loss of academic control to central administration. The paper concludes with some observations on how university e-learning strategies must address staff concerns through capacity building, awareness raising and the establishment of effective support structures for embedding e-learning.

This review aims to address the major sources of stress experienced by international students, the role of individual differences, the chronology of their stress levels and wellbeing over time, and gaps in the existing literature. Two electronic databases (PubMed and Psych Info) were searched for English peer-reviewed articles using eight search terms. Thirty-eight studies were included in this paper and divided into themes and sub-themes including sources of stress, individual differences and mental health including stress, depression and wellbeing. The findings highlight major stressors and show mixed results in some areas due to the lack of homogenous samples based on country of origin or ethnicity and sometimes context differences concerning the country or university social dynamics. Limitations were identified in the methodology, and several recommendations for future research are included.

Preparing students to be critical thinkers and effective communicators is essential in today's multinational and technologically sophisticated environment. New electronic technologies provide opportunities for creating learning environments that extend the possibilities of "old" but still essential technologies: books, blackboards, and linear, one-way communication media. Such technologies contribute to engagement and meaningful learning in the higher education sector. Greater understanding in educational psychology and the effectiveness of educational interventions has motivated the development of various student-centred pedagogies (e.g. Problem-Based Learning [PBL]) addressing perceived shortcomings of traditional didactic instruction. PBL as a pedagogy promotes meaningful learning due largely to its power to stimulate critical, reflective and creative thinking. Can teaching staff, then, adopt technology-based approaches to create multi-disciplinary interactive PBL environments that enhance learning and excite students, inspiring them to take ownership of their own education? This paper presents a cross-case analysis of four cases that explore how classroom-based learning activities have been transferred to online formats in universities to improve critical thinking, problem-solving skills, and other learning attributes across a range of disciplines.

This paper provides a synthesis of the pedagogical practices of e-learning teacher experts into a four-part framework of approaches: out-of-class, blended language practice, blended Web 2.0 projects, and online. Examples of each approach are illustrated with short extracts from case studies of the participant teachers. It is hoped that these four approaches will be useful as a means for an individual teacher or institution to objectively assess the level of integration of technology within their teaching context and might also serve as a framework for technology-minded language teachers to communicate with other teachers or administrators who might not share a similar mindset.

iTunes U has become the main worldwide provider of educational podcasts but, despite its popularity, little is known about the type of user who downloads iTunes U language resources, or how those resources are used. This paper presents the results of the first major survey (1891 responses) of users of one of the most successful iTunes U content providers in terms of downloads. It presents a profile of the iTunes U language learner, their listening habits, and their opinion of the resources they download. Comparisons are drawn between language learners and learners of other subjects. The results show that in contrast with profiles of learners in other contexts--such as virtual learning environment-delivered podcasts, identified in previous research (mostly carried out with young university students who download podcasts for instrumental reasons)--iTunes U language learners are different. Respondents in this study are mostly middle-aged and employed, and they download resources for personal interest. Users have a high opinion of the quality of the materials, and they believe the materials help them to learn. The results also show that users listen to language podcasts on mobile devices, in sharp contrast with previous research. Finally, the paper discusses implications for further research.

Significant efforts have now been made to identify the generic competencies required to succeed across different workplace contexts. The aims of this paper were to: (i) outline factors that contributed to the increased demand for generic competencies seen over the last three decades; and (ii) review the early generic competency frameworks developed in Australia, New Zealand, the US, Canada, the UK, and other European countries. It is concluded that whilst there were significant areas of commonality amongst the frameworks, regional differences were also apparent. The paper provides a historical context for more recent research into the generic competencies that should be emphasized within tertiary-level education and training curricula. (Contains 1 table.)

There have been various published histories of Australasian universities but none as rich as the two most recent relating to the universities of Sydney (1991) and Melbourne (2003). The latter, in particular, was the catalyst for this exploratory study. How was it that at a time when many major British cities lacked a university institution, towns (one can hardly describe them as cities) in the remote corners of empire were establishing universities? What were the driving motives for the founding of such institutions at a time when most colonies were barely providing even a basic primary schooling for most children? Were there underlying socio-economic and/or cultural pressures at work or was each university a unique case study of individual initiative as was the case of Wentworth in Sydney and MacAndrew at Otago, or group effort as was the case with the Oxford inspired Anglican "Pilgrims" in Christchurch, New Zealand. Whatever the cause, one cannot fail to be impressed by the sheer audacity of those who found both the time and energy to transplant the roots of Britain's intellectual heritage in alien lands far from home. This paper examines the origins of the first university institutions established in nineteenth century Australasia. At first sight it would seem that the founding of each institution was a unique story in its own right--a response by an individual or a small group to a felt need generated by a unique set of circumstances--but it was surely more than that. Many of the founding professors were outstanding British academics. What prompted them to give up the chance of a comfortable existence at home in order to make what often proved to be a long one way sea voyage to the back of beyond? This paper argues that it was not just distance from home, the practical problems of educating the young, or the need for professional expertise in fields like law, medicine, engineering, or accountancy that gave rise to Australasian universities but rather a deeply ingrained desire to reproduce British culture which was itself an expression of the Victorians' confidence in their ability to shape the future.

Technology and change are so closely related that the use of the word innovation seems synonymous with technology in many contexts, including that of higher education. This paper contends that university culture and existing capability constrain such innovation and to a large extent determine the nature and extent of organisational change. In the absence of strong leadership, technologies are simply used as vehicles to enable changes that are already intended or which reinforce the current identity. These contentions are supported by evidence from e-learning benchmarking activities carried out over the past five years in universities in the United States, the United Kingdom, Australia and New Zealand. In a period of student loan scandals and U.S. financial market instability impacting on the cost and availability of student loans, this paper looks at alternative models of higher education funding. In this context, it also considers the level of financial support that the government should provide to higher education.

The E-Learning Maturity Model (eMM) is a quality improvement framework designed to help institutional leaders assess their institution's e-learning maturity. This paper reviews the eMM, drawing on examples of assessments conducted in New Zealand, Australia, the UK and the USA to show how it helps institutional leaders assess and compare their institution's capability to sustainably develop, deploy and support e-learning. This paper is targeted primarily at doctoral students and others considering hermeneutics as a research strategy. Research using hermeneutics was carried out with occupational therapy educators and clinicians in Australia, New Zealand, Canada, and the UK. A total of 53 participants engaged in focus groups and individual interviews over a one-year. The paper explores hermeneutics as a credible, rigorous and creative strategy to address aspects of professional practice that similarly need to be flexible, adaptable to particular needs, and justifiable in the contexts of evidence-based as well as client-centred practice. The hermeneutic study produced A Model of Professional Practice Judgment Artistry (Paterson, 2003) which is briefly described and the connections. (Contains 2 tables, 2 figures, and 1 footnote.)

As new technologies become less expensive, provide greater access to various forms of multimedia, and are integrated into all aspects of everyday life, online learning environments are becoming more prevalent. Online education, as experienced through course management systems, is being heralded as meeting the needs of students' lifestyles by managing time conflicts and access from remote locations, and helping people to juggle personal commitments (Harrison & Bergen, 2000). However, research indicates that improvements are needed to prevent high drop-out rates and to improve learning results (Byun, et al., 2000; Carr, 2000; Moshinskie, 2001). Online distance education courses need to be designed in such a way that learners with different backgrounds and preferred learning approaches will feel motivated and gain the best possible learning results from such courses. It is a challenge for instructional designers of online education courses to determine learners' preferred learning approaches and related social and cultural issues, and to design learning environments to meet these needs. Designers of such programs should consider cultural differences in their design as students of different cultural backgrounds may have different perspectives and interpretations of learning content (Driscoll, 2000; Gayeski, et al., 2002; Moshinskie, 2001). The case used for this study was a graduate seminar delivered fully online using asynchronous computer-mediated conferencing communication (CMC) for class participants to discuss topics and issues raised from the reading materials assigned by the instructor. Based on a review of literature on asynchronous CMC, the author lists the benefits of this medium as flexibility, participation quantity and quality, communication openness/access, and post-participation review/access for references. Morse also lists various challenges such as technology frustration, coordination, timing/delay frustration, and skills deficits. The author points out that even though culture is a primary factor in "determining individual behavior patterns, and provides the paradigm by which experience is interpreted, assimilated, and adapted"(p. 40), a systematic consideration of the role culture plays in CMC is missing in the literature. This paper discusses different definitions of culture, such as "shared patterns of behavior", "systems of shared meaning and understanding", "...those learned roles of behavior which bound accepted acceptable practice in a group environment", a result of fundamental societal assumption, and the concept of national culture, and argues that the indicator of cultural background should be ethnicity rather than nationality. The author goes on to introduce a continuum between low context and high context cultures, and uses a table to illustrate the difference between low context education perceptions/expectations and high context education perceptions/expectations.

Moving innovation in teaching and learning beyond isolated short-term projects is one of the holy grails of educational technology research, which is littered with the debris of a constant stream of comparative studies demonstrating no significant difference between innovative technologies and traditional pedagogical approaches. Meanwhile, the approaching giant wave of the bring your own device (BYOD) movement threatens to overwhelm education practitioners and researchers preoccupied with replicating current practice on mobile devices. A review of the literature indicates that there are yet few well-developed theoretical frameworks for supporting creative pedagogies via BYOD. In this paper, we overview the development of a framework for creative pedagogies that harness the unique affordances of BYOD. This framework has been used across multiple educational contexts and scale from short workshops through to full courses and international collaborative projects. Our key design principles for supporting creative pedagogies via BYOD include modelling collaborative practice via establishing teacher communities of practice to learn about the affordances of mobile devices in relation to new modes of student learning, collaborative curriculum redesign in response to shifts in conceptions of teaching and learning, and collaborating with ICT Services for infrastructure development across the campus.

Over the past decade, industry relevance and connectedness have evolved into a key requirement for students and their parents, who increasingly perceive employability upon graduation as a critical factor in the degree selection process. Simultaneously, professional bodies emphasise the need for high levels of industry engagement as a condition for accreditation, which in turn further impacts on the "marketability" of a specific degree. However, many of the skills emphasised by potential employers and industry reference groups are more closely aligned with generic graduate attributes, rather than discipline specific knowledge and skills. This increasingly includes an emphasis on cultural awareness, excellent communication skills and the ability to work in dispersed, often even virtual teams. This observation is arguably particularly relevant within the business (degree) context, where workforces become increasingly multicultural, as traditional borders and limitations make way for transnational opportunities. This paper discusses the benefits and challenges associated with a third year student project that set out to combine the need for discipline specific knowledge, with the acquisition of versatile, culturally sensitive business skills. Students participating in the aptly titled "communications challenge" competed against their peers as part of multicultural teams, representing twelve countries, across five continents. The authors conclude that experiential learning opportunities like this global, real life client project may not necessarily be popular amongst the wider student cohort. Furthermore, the acquisition of discipline specific knowledge may be limited when compared to "traditional" teaching deliveries. However, projects like this provide a number of benefits, in particular in the context of capstone units that set out to prepare students for a diverse career in an increasingly global, multicultural and complex environment.

The paper commences with a brief summary of the literature on the quality assurance process in e-Learning in higher education. This is followed by an overview of the U21Global quality assurance framework. Within this framework there is particular emphasis on the process governing the appointment (and re-appointment) of adjunct faculty; a process that incorporates four discrete steps: (i) recruitment; (ii) training and accreditation; (iii) supervision and mentoring; and (iv) reflection and performance appraisal. Importantly, the design of the framework ensures that this element of the internal quality assurance process provides, not only an enhanced learning experience for students, but also rich longitudinal data for the purposes of external verification of quality and standards. The paper concludes that while the online environment certainly presents new challenges for tried-and-tested quality assurance processes, it also provides opportunities to usher in new guidelines capable of bringing about a significant improvement in standards.

This collaborative research project devised a framework to support professional development for e-learning within New Zealand's diverse and integrated tertiary education sector. The research was supported by New Zealand's Ministry of Education. The research included reviews of developments in the United Kingdom, Australia and New Zealand and a range of survey and interview approaches in New Zealand to explore variation in conceptions of e-learning and of professional development for e-learning and the factors that influence the uptake and delivery of current professional development opportunities in institutional contexts. The proposed framework was designed to accommodate highly varied conceptions about e-learning and e-learning professional development and varied contexts within which e-learning develops in different institutions. The framework emphasises a development spiral including analysis of needs, incentives and opportunities followed by active engagement in e-learning or research into e-learning and an evaluative exploration of progress. This paper describes the research and the framework and discusses approaches to apply and evaluate the framework within the diverse institutions that comprise New Zealand's tertiary education sector. This paper discusses how the use of digital technologies may support a shift of cultural practices in teaching and learning, to better meet the needs of 21st century higher education learners. A brief discussion of the changing needs of the learners is provided, followed by a review of the overall impact of digital technologies on teaching and learning. In the final section we suggest how digital technologies may provide a more active and flexible learning experience by adopting a participatory pedagogical approach and by blending formal learning with informal learning.

In common with universities in the United Kingdom, Canada and New Zealand, increasing numbers of Australian universities have established offshore education partnerships, particularly in the Asia-Pacific region. More than one-third of international students currently enrolled in Australian university courses study at a campus in their home country or somewhere other than in Australia (IDP 2002). Such partnerships, also assumed under the rubric of "transnational education" and "franchising", add additional challenges, complexities and risks to the roles of international education managers and administrators. Using convergent interviews and case studies, this paper identifies and examines the critical success factors for the successful establishment and development of relationships between Australian universities and their international partners. Critical among these are the development of effective communication structures and frameworks, the building of mutual trust, and the encouragement and demonstration of commitment between relationship partners.
