Evidence supporting transmural remission (TR) as a long‐term treatment target in Crohn's disease (CD)is still unavailable. Less stringent but more reachable targets such as isolated endoscopic (IER) or radiologic remission (IRR) may also be acceptable options in the long‐term. Multicenter retrospective study including 404 CD patients evaluated by magnetic resonance enterography and colonoscopy. Five‐year rates of hospitalization, surgery, use of steroids, and treatment escalation were compared between patients with TR, IER, IRR, and no remission (NR). 20.8% of CD patients presented TR, 23.3% IER, 13.6% IRRand 42.3% NR. TRwas associated with lower risk of hospitalization (odds‐ratio [OR] 0.244 [0.111–0.538], p< 0.001), surgery (OR 0.132 [0.030–0.585], p= 0.008), steroid use (OR 0.283 [0.159–0.505], p< 0.001), and treatment escalation (OR 0.088 [0.044–0.176], p< 0.001) compared to no NR. IRRresulted in lower risk of hospitalization (OR 0.333 [0.143–0.777], p= 0.011) and treatment escalation (OR 0.260 [0.125–0.540], p< 0.001), while IERreduced the risk of steroid use (OR 0.442 [0.262–0.745], p= 0.002) and treatment escalation (OR 0.490 [0.259–0.925], p= 0.028) compared to NR. TR improved clinical outcomes over 5 years of follow‐up in CD patients. Distinct but significant benefits were seen with IERand IRR. This suggests that both endoscopic and radiologic remission should be part of the treatment targets of CD.

The increasing desire for vegan products has prompted the exploration of plant proteins such as those derived from peas, soy, and sunflowers. Despite offering sustainable alternatives, plant proteins pose certain challenges, particularly in achieving high encapsulation efficiencies for hydrophobic actives. Modulating the techno-functional characteristics of plant proteins through changes in their physicochemical environment, such as pH and temperature, is crucial. Despite being limited in interfacial properties compared to animal proteins, plant proteins can be optimized for successful encapsulation systems, especially with small alterations or pre-treatments like heating or enzymatic hydrolysis. The potential of auxiliary technologies, including ultrasound and high pressure, in enhancing plant protein-based encapsulation systems remains an underexplored area, necessitating further research for industrial applications.

Tubers and roots have been used in human nutrition since ancient times once they are resistant to pests and easy to grow even in soils poor in nutrients. The most consumed include cassava, potatoes, taro, and yam. In many regions, they are the main source of energy, which has led to industrial-scale cultivation of some such as yacon, burdock, Jerusalem and artichoke, known as sources of fructooligosaccharides, due to the increased demand for prebiotic fibers and the need for lower energy foods. This chapter will present a general approach to tubers and roots and their important role in human nutrition. At the end of the chapter, those recognized as prebiotics and the processing methods for extracting fibers will be discussed.

Anthocyanins are phenolic compounds with remarkable antioxidant capacity, known for their wide range of health benefits for consumers. However, its instability is a challenge during digestion, resulting in losses in the gastrointestinal tract. To effectively harness the health potential of anthocyanins, it is essential to improve their bioaccessibility and bioavailability. This review explores strategies that can be employed to improve the stability of anthocyanins in food systems and during digestion. The article investigates how co-ingestion, processing, and different microencapsulation techniques mainly affect the in vitrobioaccessibility of anthocyanins. Co-ingestion with matrices rich in lipids and carotenoids improved the bioaccessibility of some anthocyanins, while the presence of pectin and casein affected them in variable ways. Cooking processing can lead to softening of the food matrix, resulting in increased bioaccessibility. Encapsulation techniques stand out, supported by several studies that show promising results, presenting themselves as a solution to these challenges. However, most studies have been limited to in vitroexperiments, emphasizing the need for additional in vivoinvestigations to fully understand the impact of these strategies in the physiological context.

Over the last decades, treatment for rectal cancer has substantially improved with development of new surgical options and treatment modalities. With the improvement of survival, functional outcome and quality of life are getting more attention.
