Abstract
- •Use of essential oils of different aromatic species were compared.•The potential of these essential oils to production of food with beneficial properties.•The principal beneficial properties of essential oils related were antioxidants and antimicrobials.•Natural alternatives to conventional flavorings and food conservation.
