This book is a collection of research focusing on the anthropological aspects of how food is made in modern society from both global and local perspectives. Modern food consumed in any society is created in a variety of natural and cultural environments. There is a'food democracy'in which how we procure and share food can be an indicator of our participation in society, while food nurtured in particular climates and land can be transmitted to the outside world owing to the influence of tourism and the global economy, a phenomenon that is recognized on a global scale as exemplified by the UNESCO Intangible Cultural Heritage. In other words, food is an aspect of both culture and civilization. Anthropological approaches are used to reveal the humanistic aspects of food, highlighting the strength and individuality of regional and ethnic foods in global civilizations. The book is a compilation of results from sessions of the international symposium “Making Food in Human and Natural History”, which took place on March 18 and 19, 2019, in Osaka, Japan.

Understanding the way in which a substance moves and behaves is essential in order to be able to transport and mix it during processing. Secondly, the rheology of a product dictates much of the consumer experience, e.g. in relation to texture and mouthfeel. This book doesn't overwhelm the reader with complex mathematical equations but takes a simple and practically-focused approach, interpreting the implications of rheological data for use in different food systems. Through this approach industry-based food developers / rheologists, students, and academics are given clear, concise interpretation of rheological data which directly relates to actual perceived functionality in the food. The functionality may relate to texture, structure and mouthfeel, and may result as a function of temperature, pH, flocculation, concentration effects, and mixing. The interpretative view is based on the principle that the food rheologist will produce a graph, for example of viscosity or gelation profiling, and then have to extract a practical meaning from it. For example, if viscosity falls with time as a function of pH, this knowledge can be used to tell the customer that the viscosity can be followed with just a pH meter and a stopwatch. A few members of the Gossypium (cotton) genus are cultivated for the production of elongated single-celled fibers valued worldwide at about $20 billion annually at the farm gate, and which sustain one of the world's largest industries (textiles) with an annual worldwide economic impact of about $500 billion. In a number of ways, cotton production and the textile industry are closely tied to petrochemical usage. At a practical level, cotton genomics offers both bio-based carbon sequestration alternatives to petrochemical use, and improved sustainability of crop production. The Gossypium (cotton) also genus presents novel opportunities to advance our understanding of the natural world and its organic evolution. In particular, the evolution of cultivated cottons from their wild ancestors has involved a fascinating series of events that offer scientists the opportunity to dissect the evolution of a novel organ, the ‘lint fiber', and also to unravel the consequences of polyploidy, both for the generation of biodiversity and for crop productivity. In this book, advances of the past decade will be summarized and synthesized to elucidate the current state of knowledge of the structure, function, and evolution of the Gossypium genome, and progress in the application of this knowledge to cotton improvement.
