- Abstract
complex variety of factors affect linear growth, weight gain, and body composition, with nutrition being one of the most important contributors. However, the mechanisms through which nutrition affects growth is not completely understood. This publication focuses on the interplay between nutrients and the endocrine system via manuscripts describing different clinical conditions and diagnoses covering various aspects of nutrition and growth. As in the previous volumes of the Nutrition and Growth Yearbook, an international group of experts in nutrition and growth selected limited number of significant peer-reviewed papers that were published between July 2021 and June 2022. All of the papers are supplemented with editorial comments which aim to serve as “food for thought”. This publication provides an important contribution in examining the relationship between nutrients and the endocrine system. The authors hope that their selections and comments will increase the interest among healthcare providers and researchers in the field and lead to more research in this area.

- Abstract
It is a well-known fact that children's growth depends on the quality of their nutrition. However, the mechanisms of fetal and child growth and their interactions with nutrition have not yet been fully elucidated and still pose a challenge to those engaged in the field. Exchanging concepts and knowledge among professionals of various disciplines thus remains very important. This second'Yearbook'provides an update on the research published between 2013 and 2015. An international team of experts presents papers that shed light on the mechanisms of interaction between nutrition and growth, and provide insight to the readers. Each paper is briefly summarized and supplemented with editorial comments which evaluate the clinical importance of each article and discuss its application. This'Yearbook'is an important tool for practicing physicians, including pediatricians, subspecialists in pediatric gastroenterology, metabolism and nutrition, and endocrinology. - Abstract
This book offers an insightful exploration into the relationship between diet and Multiple Sclerosis (MS), aiming to address a crucial question: Can dietary interventions serve as effective preventative and therapeutic measures for patients with MS? Delving into this question, the book examines various nutritional components and regimens, shedding light on their potential impacts on the progression, relapse rate, and development of MS. It offers readers valuable insights into how dietary choices can influence the management of this condition. Backed up by evidence gathered from review and clinical trial papers, the book discusses the role of vitamins such as A, B, and D, as well as dietary supplements like caffeine, carnitine, and lipoic acid in benefiting patients with MS. Particular attention is given to the significance of vitamin D in lowering the risk of developing MS and its immunomodulatory effects on the inflammatory processes associated with the disease. In parallel, the book also addresses the detrimental effects of diets such as the Western or high salt diet (HSD) on MS prognosis, emphasizing how these dietary regimens can harm the gut microbiome and exacerbate inflammatory responses, ultimately promoting demyelination of the central nervous system (CNS). The book then explores alternative dietary approaches that confer a protective effect on the gut microbiome and the CNS, including whole grain, fasting, Mediterranean, and ketogenic diets. This comprehensive resource is an essential reading for patients with MS seeking to understand the potential impacts of diet on their overall health, as well as healthcare professionals and researchers interested in exploring dietary interventions for MS management.

- Abstract
Microbial agents (particularly bacteria) represent the greatest risk to public health. The traditional end-product oriented food inspection systems are inadequate for identifying and eliminating the usually symptomless animal carriers of agents causing foodborne infections and intoxications. Modern, risk-based, prevention approaches are the only effective way to reduce the prevalence of these hazards from our foods. As an additional'safety-valve'microbial decontamination procedures are currently being suggested and its implementation in industrial food processing has, at least in some parts of the world, met with governmental approval. The residues in foods of some non-microbial agents have more recently also caused substantial consumer disquiet. This equally applies to non-conventional foods containing GMO's. In this publication these issues are addressed by invited expert scientists from various disciplines, many of which have key-positions in EU-funded research programmes on these very topics and/or are advisers to international public health bodies. The editors firmly believe that the very nature of the theme, the excellence of the papers and the holistic approach chosen will draw an audience from both an industry and academic background.

- Author

- Abstract
This book explores the transdisciplinary approach to general surgery for the frail patient, promoting the use of a geriatric model of care in general surgical settings and thus proposing a “gerosurgery” approach in frail persons beyond chronological age. Aging, frailty, and surgical needs are increasing dramatically worldwide while surgeons are daily facing with the trouble of the trade-off between short-term outcomes and efficacy of surgery in older persons. However, recent studies have clearly shown that age itself is not a prognostic risk factor for complications after elective surgery in older patients, whereas cognitive or functional frailty is. Neither a referring physician nor an assessing surgeon should deny patients surgery purely based on chronological age. Instead, decisions should be based on a CGA (comprehensive geriatric assessment) with a precise picture of the patient considering the cognitive, functional, nutritional, socioeconomic, and affective status. Recent studies examining the use of preparative CGA in surgical patients showed encouraging results on postoperative outcomes in old and/or frail patients. The most compelling current evidence comes from the orthopaedic community, which has embraced the idea of multidisciplinary team care. Preoperative evaluation, postoperative care, pain control, nutritional support, delirium prevention, mobilization, and rehabilitation are necessary also in general surgery. An expert multidisciplinary team, including geriatricians, anaesthesiologists, specialist nurses, physiotherapists, and nutritionists should mandatorily support surgeons. With this book, the reader will have an exhaustive overview and will gain essential, practical knowledge on how best to manage the surgical and frail patient and how to develop clinical systems that do so reliably.

- Abstract
A groundbreaking exploration of celiac disease, a serious autoimmune condition that affects approximately three million Americans, or 1 percent of the populationThe manifestations of celiac disease–including anemia, gastrointestinal problems, and infertility–are diverse and can have severe consequences if left untreated. The only therapy is lifelong adherence to a gluten-free diet. Because many doctors know little about celiac, nearly half of the individuals with the disease remain undiagnosed, and many wait years for the correct diagnosis. In Gluten Free for Life, Emily K. Abel delves into the social, cultural, and historical dimensions of celiac disease, and sheds light on the challenges faced by affected individuals. The book uncovers the profit- driven motivations behind certain food companies, which often produce exorbitantly priced and ultraprocessed gluten-free products that remain out of reach for many people. Abel also emphasizes the parallels between celiac disease and other disabilities, stressing the condition's invisible nature. The absence of observable symptoms poses significant challenges in terms of social interactions, workplace dynamics, and the overall perception of those living with the disease.Abel cautions against viewing a medical cure as the sole solution for celiac disease. Instead, she advocates for a comprehensive approach that addresses the socioeconomic factors impacting adherence to the gluten-free diet. By redirecting attention toward necessary social and political reforms, Gluten Free for Life proposes remedies capable of alleviating the burdens faced by individuals with celiac disease.

- Abstract
This book draws a pathway from metabolic assessment and nutrition support to advances in renal replacement therapy and organ support in critical care, underling the specific clinical aspect and focusing on medical clinical management in critical care. Metabolic alterations in critically ill patients have been studied for many years. Despite everything, the heterogeneity of critically ill patients, the duration and variable severity of the acute phase of the disease and the numerous confounding factors have hindered progress in this field. A cornerstone of metabolic care is nutrition, that is an essential part of the care for critically ill patients, although the optimal feeding strategy for patients in the intensive care unit is still debated and often remains a challenge for the intensive care team in clinical practice. In addition, acute loss of renal function interferes with the metabolism of all macronutrients, responsible for pro-inflammatory, pro-oxidative and hyper-catabolic situations. The physiological and biological modifications related to acute renal failure in critically ill patients, including the current use of continuous renal replacement therapies, have dramatically changed the type and importance of the metabolic and nutrition disturbances observed during treatment of renal failure. This book - addressed to healthcare providers working in intensive care units - aims to provide a comprehensive synthesis and interpretation of the adult critical care nutrition and critical care nephrology literature, with a particular focus on continuing practice gaps and areas with new data, to assist clinicians in making practical, yet evidence-based decisions regarding nutrition management during the different stages of critical illness.

- Abstract
Food is a means of life. The way it is produced affects us all. Largely unnoticed by the public, a system of the agricultural and food industry has developed in recent decades that supplies us with an abundance of food at excessively low prices. However, the undesirable side effects and external costs of this system have long been ignored. Enormous environmental and climate impacts, loss of biodiversity, animal welfare problems and the continuing death of farms only inadequately describe the true extent of the harmful effects. In the interests of the public welfare, these can no longer be tolerated. However, the complexity of the issues and the diversity of vested interests stand in the way of simple solutions. This professional book provides a comprehensive systemic analysis from very different perspectives and explains how this development has come about. It shows what fundamental changes are needed in all areas in order to find a way out of the destructive pursuit ofcost minimisation through evidence-based quality production. Professionals in the agricultural and food industry and the scientific disciplines involved, including veterinary medicine, as well as decision-makers in political institutions, professional associations and NGOs can use this knowledge to redesign the food sector for the future.

- Abstract
While the importance of food to health and well-being is clear, the specific ways in which food systems contribute to individual and community health are not well understood. This is a complex issue, which requires improving food systems as well as changing mindsets and behaviors of individuals within the food system. Many of the food-related health problems in the US disproportionately affect children, women, ethnic minorities, and low-income people. Addressing these problems requires that we understand more about the processes of institutional change, structural conditions, perceptions, and decision-making processes. The environment itself determines much of what individuals can draw from it. Community norms may dictate who has access to food assistance; engaged communities may provide more food assistance and may make food resources more easily accessible for the poor. In addition, consumer and producer attitudes and interests may conflict over some issues surrounding sustainability and health. The present volume focuses on food production, distribution and consumption, and their effects on individual health. The text is divided into three parts: Part One focuses on the relationship between food systems, families, health, sociodemographic and environmental factors; Part Two explores the relationship between food systems, food advertisements, and community engagement; and Part Three discusses current research and interventions toward a more equitable food system.

- Abstract
The harmonizing influence of ancient Daoist philosophy is of much relevance to the world in which we live today, and this is especially so in the field of global education. Among the growing numbers of contemporary teachers and scholars who nurture Daoist wisdom in their classrooms, this book takes the unique pathway of considering its applications through the contemplative lenses of teacher diaries. Its South African-born author has taught academic English for over three decades in Japan, the Middle East, and the People's Republic of China. Since early childhood, he has infused his fascination for Daoist wisdom with his enjoyment of writing diaries – and in ways that derive insights into the compassionate, frugal, and humble foundations of Daoist-inspired pedagogies within contemporary classroom environments. This book presents Daoist wisdom in terms of it being the Supreme Ultimate of all ways. It introduces the classical Daoist texts of the Laozi, the Zhuangzi, and the Liezi, and shares a short historical overview of Daoism with its growing global influence. As such, it emphasizes that Daoist-inspired pedagogies encourage a delicate balance between intuitive insights and intellectual analysis – and in ways that are not antagonistic toward each other, but which dance together as one. In this regard, the role of meditation during the undertaking of diaries is specifically highlighted concerning its propensity to bring one into the present moment, pacify racing thoughts, and transcend the ego. It also shows how a meditative state of mind that accompanies the reading, writing, and analysis of the diary entries contributes to deeper self-discernment along with unique intuitive insights related to oneself as a teacher and the classroom environment. In addition, this book describes how the Wordsmith Tools Program and the Book of Changes can be used as additional approaches to analyzing thought patterns within the diary entries – and how these also nurture inward contemplations and the intuitive insights that accompany them. Thereafter, considerations based on the applications of core Daoist principles for classroom pedagogies are filtered through the contemplative lenses of teacher diaries. These principles are the unintentional integrity of de, the complementary duality of yin-yang, the cosmic vitality of qi, the self-so-ness of ziran, the unforceful spontaneity of wuwei, and the unblemished purity of pu. This book illustrates through its diary lenses how these six Daoist principles can be nurtured in ways that contribute to a scholarliness that is grounded in an equal appreciation for the logical applications of intelligence along with the uniqueness of intuitive creativity which cannot be explicitly taught but which spontaneously arises from within the deep reservoirs of intuitive wisdom which exist within the true selves of everyone. In addition, this book shares pearls of Daoist wisdom for teachers from within the poetic chapters of the Laozi, as well as within the amusingly enlightening stories in the Zhuangzi and the Liezi – such that their ancient teachings can be applied to Daoist-inspired pedagogies, and nurtured in ways that unite the joyfulness and scholarly efficacy of both teaching and learning. It is shown how doing so enhances a sense of awe, wonder, openness, and contemplative oneness within the classroom environment - making it a happier, more contented, and more meaningful place for both teachers and students.

- Aging--Molecular aspects
- Abstract
Aging is a topic that concerns all of us, since none of us can escape it. The molecular and cellular process is built in every of the billions of cells forming our body. Some of these cells, such as immune cells and red blood cells, live only for a few days to weeks and get life-long constantly replaced by cells produced in the bone marrow. In contrast, there are cells, such as neurons and memory lymphocytes, that get as old as we get. The process of aging limits our maximal life span, which is for us humans 120 years. However, only a very few individuals reached this age. How did their life differ from others that died decades earlier? Is it just the absence of life threatening disease paired with a more healthy life style? Or is it build in in our genome or epigenome? In this book we try to give answers to these questions from the perspectives of evolution, our genome, the epigenomes of our different tissues and cell types and the functionality of our cells. We should try to understand ourselves in detail as well as in a global setting. Basic biology explains cellular mechanisms, such as growth, differentiation, and cell death, which make life as a whole possible. Every (human) organism represents a complex interplay between hundreds of different cell types forming distinctive tissues and organs with specialized tasks. These processes need to be highly orchestrated especially during development, maintenance and aging. Studying the cellular and molecular basis of aging is one of the most fascinating areas but also a great challenge. Nevertheless, research made the biggest steps in elucidating biological processes via studying malfunctions of normal mechanisms leading to different diseases, such as progeroid syndrome and cancer. We will start this book with the understanding of the human genome in relation to principles of evolution. Then we will explain the basics of gene regulation and epigenetics, i.e., the interplay of transcription factors and chromatin. Next, we will shift to cellular mechanisms of aging and discuss then the impact of nutrition and immunity on the aging process. In the following the relation of aging to so-called aging-related common diseases, such as type 2 diabetes, atherosclerosis, cancer and Alzheimer. Do we get these diseases because we are aging or are we aging because we get one of these diseases? The book will end how we can slow down the aging process so that we can age healthy. In short, healthy aging is not an option but is a must. An ancient poem says “Teach us to number our days, that we may get a heart of wisdom.” It is up to each one of us and a daily decision to live a healthy lifestyle and to be aware of the unique gift of live we all have.
