It is a well-known fact that children's growth depends on the quality of their nutrition. During the period 29 June to 2 July 1980, a Workshop was held at Timberline Lodge, Mt. Hood, Oregon, entitled'Vitamin B-6 Analyt ical Methodology and Criteria for Assessing Nutritional Status'. The papers which follow are the proceedings of that Workshop and represent the combined works of 36 scientists from across the United States and Canada. In addition to the 19 papers, there were seven short presentations which we consider to be at the very frontiers of analytical methods and status assessment for vitamin B-6. These reports discussed such areas as production of specific antibodies to the various vitamers, the synthesis of deuterated vitamers, comparisons of ultraviolet, fluorescence and elctrochemical deter minations of the vitamers and the identification of polyamine pyridoxal Schiff bases in urine. Those reports are not included in this book solely due to their highly tentative and preliminary findings, not because we considered them of any less importance than the papers presented herein. In fact, these reports may well provide the foundations upon which subsequent workshops are devel oped. The feeling for the need of such a Workshop in part grew out of a previous workshop held at the Letterman Army Institute of Research, San Fra'ncisco, California, 11-12 June 1976.

Human health depends to a great extent on our nutritionally balanced food supply consistent with the evolutionary aspects of diet to which genes were originally programmed to respond. The publication at hand contains selected papers from the Inaugural Conference'Healthy Agriculture, Healthy Nutrition, Healthy People'of the World Council on Genetics, Nutrition and Fitness for Health held at Ancient Olympia, Greece, in October 2010. Topics include the relationship between architecture and agriculture, food production systems and urban agriculture, as well as physical activity, nutrition, genetic variation and other determinants of human health. The papers clearly show that optimal nutrition is consistent with ecologically and economically sustainable agriculture, and that there is a need for scientific and political institutions that can integrate research into urban planning and its regulation, agriculture and health care systems. This will contribute to normal development and health throughout the human life cycle, and prevent or delay chronic diseases such as obesity, type 2 diabetes, cardiovascular disease and cancer. Scientists working in the fields of medicine, physiology, genetics, nutrition, dietetics, economics, architecture, agriculture as well as scientists and policy makers interested in environmental issues such as agricultural sustainability and climate will find this volume of great interest.

In October 2004 the Research Center for Gastroenterology and Liver Diseases of Shaheed Beheshti University hosted in Tehran an Iranian-American workshop on Food Safety and Surveillance Systems for Foodborne Diseases. The purposes of the workshop were to initiate contacts between Iranian and American specialists, exchange information about relevant activities in the two countries, and set the stage for future cooperation in the field. The participants also identified important aspects of food safety that should be addressed more intensively by both countries, including surveillance, research, international trade, and risk assessment. The framework for the workshop had been developed during a meeting of Iranian and American specialists in June 2003 in Les Treilles, France. More that 100 specialists participated in the workshop in their personal capacities, along with representatives of the World Health Organization and the Food and Agriculture Organization. These proceedings include a number of papers that were presented at the workshop together with summaries of discussions following presentation of the papers.

- Abstract
Microbial agents (particularly bacteria) represent the greatest risk to public health. The traditional end-product oriented food inspection systems are inadequate for identifying and eliminating the usually symptomless animal carriers of agents causing foodborne infections and intoxications. Modern, risk-based, prevention approaches are the only effective way to reduce the prevalence of these hazards from our foods. As an additional'safety-valve'microbial decontamination procedures are currently being suggested and its implementation in industrial food processing has, at least in some parts of the world, met with governmental approval. The residues in foods of some non-microbial agents have more recently also caused substantial consumer disquiet. This equally applies to non-conventional foods containing GMO's. In this publication these issues are addressed by invited expert scientists from various disciplines, many of which have key-positions in EU-funded research programmes on these very topics and/or are advisers to international public health bodies. The editors firmly believe that the very nature of the theme, the excellence of the papers and the holistic approach chosen will draw an audience from both an industry and academic background.

The growing attention for healthy eating, intestinal health, combating major disorders such as obesity and diabetes and prevention of cardio-vascular diseases and cancer, has resulted in an increased output of R&D on dietary fibre and related carbohydrates. In recent years, hundreds of new products have been launched annually with claims regarding their fibre content. Existing and new fibres are also increasingly incorporated in products for specific target groups, such as babies, farm animals, pets and for clinical nutrition. New research tools and insights are enabling researchers to obtain a much better insight in the mechanisms of action of bio-active carbohydrates. These include new analytical methods, model systems to measure the impact of fibre on processes in the gastro-intestinal tract and the identification and measurement of new biomarkers, for example markers related to satiety. These insights and tools, will significantly contribute to R&D on ingredients and products aiming at imparting significant health benefits. The Institute of Medicine's (IOM's) Food Forum was established in 1993 to allow science and technology leaders in the food industry, top administrators in the federal government, representatives from consumer interest groups, and academicians to discuss and debate food and food safety issues openly and in a neutral setting. The Forum provides a mechanism for these diverse groups to identify possible approaches for addressing food and food safety problems and issues surrounding the often complex interactions among industry, academia, regulatory agencies, and consumers. On May 6-7, 1997, the Forum convened a workshop titled Enhancing the Regulatory Decision-Making Process for Direct Food Ingredient Technologies. Workshop speakers and participants discussed legal aspects of the direct food additive approval process, changes in science and technology, and opportunities for reform. Two background papers, which can be found in Appendix A and B, were shared with the participants prior to the workshop. The first paper provided a description and history of the legal framework of the food ingredient approval process and the second paper focused on changes in science and technology practices with emphasis placed on lessons learned from case studies. This document presents a summary of the workshop.

The demographic shift in the average age of the population worldwide calls for careful attention to the nutritional and health needs of the elderly. Frailty has been associated with increased disability, postsurgical complications and increased mortality; in a frail state, older adults are at greater risk for adverse outcomes, including falls and admissions to hospital and nursing homes. Despite the strong associations between frailty and subsequent poor outcomes, limited attention to this common geriatric condition has been paid in clinical settings. Emerging evidence suggests that both behavioral (nutrition and physical activity) and pharmacologic interventions may be effective in the treatment and prevention of the frailty syndrome. The papers in this book address our current understanding of the biological basis, clinical presentation and therapeutic interventions that target frailty. They highlight the transitional nature of research on the frailty syndrome and identified key unmet needs and areas for future investigation in this expanding field.

The meeting had a multi-disciplinary character, with the par ticipation of professionals and students from the different sec tors related to the field of food and nutrition, and aroused con siderable interest, which was demonstrated by the presence of 5,026 participants from 92 countries,and the presentation of more than 1,200 scientific papers.

The contents of this book are the proceedings of the ACS symposium,'Fumonisins in Food,'which was held April 4-6, 1995, at the American Chemical Society National Meeting in Anaheim, CA. This symposi'Qm, which was international in scope, brought together researchers from diverse backgrounds in academia, government, and industry. Thirty-three speakers discussed topics ranging from the analysis offumonisins to toxicology and regulatory aspects. The fumonisins became the spotlight of mycotoxin research in 1988, when re searchers at the South African Medical Research Council isolated and structurally charac terized the fumonisins. Since 1988, there has been an explosion in the numbers of papers dealing with fumonisin-related topics. The interest in the fumonisins has arisen for several reasons. First, fumonisins are found in measurable concentrations in corn grown throughout the world. Second, these compounds have been implicated as the causative agents in a variety of naturally occurring animal diseases. Finally, there is speCUlation that fumonisins may in part be responsible for the high incidence of esophageal cancer in regions of the world in which corn is the staple grain.

During the course of the last two decades, the health effects of tea and its catechins have been docmnented in nmnerous scientific studies and the scientific basis of these effects has been elaborated. Professor Kuroda and Dr. Hara provide in this volmne a translation of a thorough and extensive book published earlier (in Japanese), which will be of considerable interest to scientists worldng in the field, and to members of the general public interested in naturaJ ways of maintaining health. Both authors are themselves eminent researchers with extensive experience. Dr. Kuroda is best known for his publications employing tissue cultures. Dr. Ham has published nmnerous research papers on the health effects of green tea and its catechins. This book provides a comprehensive overview of the historical use of green tea in Japan and elsewhere, followed by a description of the many disease conditions against which these teas have preventive (protective) effects. Of particular interest to'senior citizens'is the chapter on the ability of tea components to ameliorate a wide range of age-related diseases including cancer, arteriosclerosis, and various forms of senile dementias. For scientists and others interested in infectious diseases caused by bacteria and viruses, a chapter dealing with the ability of tea components to inhibit these organisms will be of special interest.

Mycology, the study of fungi, originated as a subdiscipline of botany and was a descrip tive discipline, largely neglected as an experimental science until the early years of this century. A seminal paper by Blakeslee in 1904 provided evidence for self incompatibility, termed'heterothallism', and stimulated interest in studies related to the control of sexual reproduction in fungi by mating-type specificities. Soon to follow was the demonstration that sexually reproducing fungi exhibit Mendelian inheritance and that it was possible to conduct formal genetic analysis with fungi. The names Burgeff, Kniep and Lindegren are all associated with this early period of fungal genetics research. These studies and the discovery of penicillin by Fleming, who shared a Nobel Prize in 1945, provided further impetus for experimental research with fungi. Thus began a period of interest in mutation induction and analysis of mutants for biochemical traits. Such fundamental research, conducted largely with Neurospora crassa, led to the one gene: one enzyme hypothesis and to a second Nobel Prize for fungal research awarded to Beadle and Tatum in 1958. Fundamental research in biochemical genetics was extended to other fungi, especially to Saccharomyces cerevisiae, and by the mid-1960s fungal systems were much favored for studies in eukaryotic molecular biology and were soon able to compete with bacterial systems in the molecular arena.

The Taurine Symposium-'Taurine: Beginning the 21''Century'- was held September 20-23, 2002, on the beautiful island of Kauai in Hawaii. The headquarters of the meeting was the Radisson Kauai Beach Resort. This international meeting was attending by approximately 80 individuals from 23 nations and 4 continents. Seventy-five papers were presented either as platform presentations or poster presentations. Taurine, first isolated from ox bile in 1827 by Tiedemann and Gmelin and named in 1838 by Demarcay, became of significant scientific interest in 1968 when the first extensive review article was published by Jacobsen and Smith. Interest in taurine grew exponentially after 1975 when the first taurine symposium was organized by Ryan Huxtable in Tucson, Arizona. Since that date, taurine symposia have been held approximately every two years held in various cities and resort areas around the world. Taurine investigators have had the privilege of attending these scientific meetings on three continents - Asia, Europe, and North America. Since the initial meeting in 1975, a central question addressed during many of the symposia has been:'What is physiological, pharmacological, nutritional, and pathological role of taurine?'. Although taurine has been established as an important osmolyte, it appears to affect many other biological processes. However, the exact mechanism(s) by'which taurine acts'has not yet been definitively answered. In Kauai, the patticipants discussed many topics and asked many questions regarding the role and actions of taurine.

This volume contains the scientific contributions presented at the International Symposium held in Naples, Italy, in November 1992 at the National Tumor Institute'Fondazione Pascale'. The Meeting gathered together experts from different disciplines, all involved in the vital and timely subject of Nutrition and Cancer. About 15 years ago a consensus among cancer epidemiologists began to emerge suggesting that diet might be responsible for 30-60% of the cancers in the developed world. The best estimate, reported in a now classical paper by Richard Doll and Richard Peto (1981), was that by dietary modification, it would be possible to reduce fatal cancers by about 35%. Within about six years there was widespread agreement that the principal changes required were a reduction in consumption of fat, along with an increase in the consumption of fruit, green and yellow vegetables, dietary fiber, and some micronutrients. Attention was also paid to the methods of cooking and preservation of foodstuffs. On the other hand very few, if any, effects were attributed to food additives and to pollution of food by trace pesticides, to which the general public often gives unfounded importance.

Meeting macro- and micronutrient requirements during pregnancy and early childhood is crucial for short- and long-term health and cognitive function. Meta-analyses confirm that supplementation or fortification of food with the'big four'(vitamin A, iron, zinc, and iodine) is efficacious to reduce the risk of infectious disease and improves growth and cognitive outcome. More recently, folate and vitamin B12 deficiencies during pregnancy have been shown to be associated with poor neurodevelopmental outcome and childhood obesity. The papers collected in the book at hand address the fact that maternal and fetal deficiencies can induce inadequate metabolic programming in the offspring, with increased risk for non-communicable diseases later in life. World-renowned experts in the fields of epidemiology and nutritional intervention met with those in genetics, epigenetics, and metabolic outcome to clarify the pathogenesis of micronutrient deficiencies in pregnancy and childhood, preventive methods and strategies, and opportunities for treatment.

The European Cancer Prevention Organization (ECP) was established in 1981 with the objective of developing studies of the aetiology and preven tion of cancer through concerted-action European collaborative studies. It achieves this through the organization of annual symposia, the organiz ation of workshops on subjects of topical interest and the organization of research projects. The annual symposia have all been on themes of high priority for cancer prevention; namely Tobacco and Cancer (1983), Hormones and Sexual Factors in Human Cancer Aetiology (1984), Diet and Human Carcinogen esis (1985), Concepts and Theories in Carcinogenesis (1986), Causation and Prevention of Colorectal Cancer (1987), Gastric Carcinogenesis (1988), Breast, Ovarian and Endometrial Cancer: Aetiological and Epi demiological Relationships (1989) and Causation and Prevention of Human Cancer (1990). At the time of the 1985 symposium a workshop was organized in conjunction with IUNS to formulate a set of dietary guidelines for the prevention of human cancer. Those guidelines were published inNutrition and Cancer, but since then there has been a massive increase in information on diet and cancer and so it was decided that in 1991 we would again have a symposium and an associated workshop on public education on diet and cancer. The symposium was structured into a number of sections, the first of which included a review of the various sets of published guidelines together with general background papers on dietary carcinogens, anticarcinogens (particularly the vitamins) and the value of animal models in studying diet and human cancer.

The study of plant fibers and their effect on human physiology has suddenly, after many years of comparative obscurity, been catapulted to the forefront of the scien tific world. This new interest, first ignited by certain epidemiological reports, has been intensified by new re search and by dramatization in the lay press. To counter act the dissemination of inaccurate information and to elimi nate confusion, several authors have felt the need to make objective, unbiased reports available to the scientific community. The collection of papers in our own Fiber in Human Nutrition (Plenum Press, 1976) is one such effor~ However, even as it was going to press, we realized that increased interest in specific areas of fiber research necessitated a more detailed and up-to-date look at certain topics. This book is directed to that purpose. The first volume of Fiber in Human Nutrition was de signed as a basic reference textbook covering the entire spectrum of plant fibers from chemical, analytical, physico chemical, physiological, medical and epidemiological points of view. The present volume, which enlarges on specific aspects of dietary fiber, is offered as a supplement to Fiber in Human Nutrition. Together, the two volumes should be a most valuable source of information for the student of the scientific intricacies of fiber. An ongoing concern is that many of the substances dealt with in these and other'fiber'books are not, in the clas sical sense, of a fibrous nature at all.

Wide and fascinating is the field of research on tryptophan, a most versatile amino acid, transformed, as it is, in our organism into many biologically active substances. This volume contains the proceedings of the Eighth International Meeting on Tryptophan Research, held at the University of Padova, Padova, Italy, from June 25 to 29 1995, under the auspices of the University of Padova, National Research Council, Italian Chemical Society-Division of Pharmaceutical Sciences, Region ofthe Veneto and City of Padova. The meeting was held in Padova to commemorate Prof. Luigi Musajo twenty years after his death and the editors dedicate this book to him in recognition of his pioneering work in tryptophan metabolism. Prof. Osamu Hayaishi delivered the Musajo Memorial Award Lecture: Tryptophan oxygenase. and sleep. Figure I shows the ISTRY President Prof. Simon N. Young presenting the Musajo Memorial Medal to Prof. Hayaishi during the Opening Ceremony. Two hundred scientists from twenty two countries participated in the meeting. These proceedings contain 121 papers encompassing a variety of topics and disciplines.

- Abstract
Diet significantly affects athletic performance, and adoption of a dietary strategy that meets an athlete's nutrition goals will maximize the possibility of competitive success. Over the years, the focus has shifted from a high intake of (animal) protein to the role of carbohydrate and water. Today, there is a growing recognition that the primary role of sports nutrition may be to promote the adaptations taking place in muscle and other tissues in response to the training stimulus. There is also much interest in the implications of manipulation of the fat and carbohydrate content of the diet. This publication contains the proceedings of the 69th Nestlé Nutrition Institute Workshop held in Hawaii in October 2010. The aim of the workshop was to explore the effects of nutritional manipulations on the metabolic responses to acute and chronic exercise. Another goal was to further identify the possible role of these dietary interventions in promoting adaptive changes in muscle, adipose tissues and other potential sites of limitation to exercise performance. Papers cover the three macronutrients carbohydrate, fat and protein, plus an additional chapter on water, together with the accompanying discussions.

The seventh symposium on “Nutritional Aspects of Osteoporosis” continues to be the primary forum for scientists to focus on the impact of nutrition on bone health in general. Since 1991, the year of the frst symposium, research in this feld has increased impressively and has become an established part of research and science in osteology. This symposium in particular featured many global comparisons in diet and the effect on bone. As Western diet permeates more of the globe and the popu- tion continues to grow, it is meaningful to study the impact of these changes on bone health as diet is one of the few major modifable factors which in turn affects health care costs. Calcium, vitamin D, and acid-base balance continued to dominate the discussion. The symposium offered an opportunity to learn about theories and data in nutritional research concerning bone as well as methodological approaches to cl- sify diets. The proceedings allow the reader to capture the new messages, to analyze thenew scientifc data presented, and to use the book as a source of references in this feld. - Abstract
There is no longer any doubt that the inherited genetic constitution of the individual has a large influence on the entire life cycle, from human fetal development and pre- and postnatal growth to subsequent health status. However, growing evidence suggests that this predisposition is not rigid, but that early genetic imprinting, caused by exposure to a diverse spectrum of nutrients, macromolecules, microbial agents and other cellular or soluble components present in the external environment, is also of importance. According to this concept of the developmental origins of adult diseases, intrauterine and early life events play an important role in the etiology of human diseases: there seems to exist a critical ‘window of opportunity'in the human infant before and during pregnancy, and up to 24 months of age. Altered exposure to different environmental agents during this critical period may determine the nature of responses in the perinatal period, and the expression of specific disease states in later life. The papers presented in this publication thus focus on the impact of perinatal growth, nutrition, environmental microflora, and host immune responses on the outcome of health and disease in later life.
