Abstract

Hotels are offering catering services as an additional source of income and to address the demand for off-site accommodations by customers. Hotels such as the Newport Marriott and Hyatt Regency have entered the market for catering services, placing them in direct competition with independent caterers. Their services include a few extras which cannot be furnished by ordinary caterers such as complete equipment, decorations, and staff. Areas that need special consideration in such ventures include additional staff and uniforms, special food equipment, weather and food spoilage, and quality control of service.
