Abstract
- The use of unhydrogenated oils, such as rapeseed and soybean oil, can increase alpha-linolenic acid intake. Other sources of alpha-linolenic acid include margarines and some other fats. Partially hydrogenated vegetable oils in margarines increase the share of poly-unsaturated fatty acids in the total fat intake. A study involving Dutch elderly men shows that a diet rich in alpha-linolenic acid can prove beneficial to heart patients.
