Abstract

Many oven manufacturers have stopped producing convection ovens on the grounds that combination ovens can do the work of former. Although combi-ovens are more versatile, convection ovens are more targeted at baking. Staffordshire County Council and the University of Newcastle student's union both use convection ovens for school meals and student snacks.
