Abstract

Response surface method is used to deduce the right combination of pH, NaCl concentration and temperature for the growth and pectinolytic enzyme activity of Pseudomonas marginalis. Methyl esterase is not secreted in culture conditions unlike pectin and pectate lyases. The influence of enzyme activity and bacterial growth on the shelf life of vegetables is evaluated.
