Abstract

A copper chelation method identifies a biogenic amine, histamine, in yellowfin tuna steaks. This method requires cation exchange chromatography to purify histamine and a fluorometer for product identification. Scombroid fish undergoes microbial decomposition to generate histamine, which causes scombroid poisoning.
