Abstract
- A study conducted reported on extrusion-cooking as an effective means of removing total Aflatoxins (AF) from contaminated rice meal. Extrusion-cooking was observed to reduce aflatoxin (AF) content, which ranged from 51% to 95% depending on the type of AF and the studied variables.
