Surface dilational rheology of mixed beta-lactoglobulin/surfactant layers at the air/water interface

Abstract: Results are reported on experimental studies of the dilational rheology of a beta-lactoglobulin mixture with the nonionic surfactant decyl dimethyl phosphine oxide (C10DMPO) at the solution/air interface. The results indicated that the calculated limiting elasticities of the mixtures comply with the experiments.
