Abstract

Three Southern chefs develop recipes that use chicken and incorporate at least five of the ingredients from peas, beans, rice, tomato, melons and lettuce. These recipes include Hoover's Picnic Salad with Honey-Mustard Dressing, Tom's Roasted Chicken with Wilted Salad Greens and Sara's Grilled Chicken-Cornbread Salad.
