Influence of nutritional factors on the nature, yield, and composition of exopolysaccharides produced by Gluconacetobacter xylinus I-2281

Research reveals that nutritional factors exert a strong influence on the yield and nature of the exopolysaccharides produced by Gluconacetobacter xylinus I-2281. Data indicate that fructose and sucrose are the appropriate substrates for gluconacetan production, while glucose is not. Furthermore, in G. xylinus I-2281, production of biomass and exopolysacchardies is dissociated.
