Abstract

This study aims to present simulated application of the Theory of Constraints (TOC) to production management in a small dairy industry. For this, a case study with a qualitative approach was carried out in a dairy industry in Ceará through data collection from company documents and direct observation, over a period of four months. With the simulated application of the five-step TOC optimization tool, it was possible to identify and explore the main constraints of the productive system, suggesting, as a result, a change in the productive process that would allow not only the elimination of the restrictive resource but also the increase in the productive capacity of the production line in which the restriction was imposed.
