Food Education Activities and Students' Learning : Planning an 'English Kitchen'

本研究は、保育者養育校において、幼児とその保護者を対象とした子育て支援食育講座を企画・運営し、その成果と学生の学びを検証したものである。5～6歳児とその保護者が英語遊びと調理の両方を楽しむ講座「English Kitchen」では、2名のネイティブ講師を交えて英語のやりとりを行い、子どもたちは緊張感やワクワク感を楽しみながら活動した。調理活動は、英語遊びとの関連を図ったものになるよう工夫し、メニューやヘルシーなもの、旬のものなどを取り入れた。アンケートやインタビュー結果より、参加したどの親子も講座内容に満足していることが示された。調理活動のメニュー決定、材料配分から片づけまで、学生たちは様々な役割を担った。企画・実践・振り返りを通して、学生たちは、親子で一緒に活動する時間の大切さや、安全で衛生的に調理を行うための準備や配慮など、様々なことを学んだ。
Several aid-for-childcare food education activities for children and their parents were planned and carried out as part of the kindergarten teacher and childcare worker training program at Matuyama Shinonome College. The program was called "English Kitchen," and was open to five- and six-year-old children and their parents. Everyone enjoyed both playing with the English language and cooking health food. Through actually talking with two native English speakers, children felt encouraged to speak up more and were excited about the various speaking activities. The words and phrases studied during the English play were later repeated in the cooking lessons. Economical and healthy menus were chosen, along with seasonal dishes and fun foods suggested by the sudents. From the questionnaire or the interview, we found every parent and child who participated in the lecture was satisfied with the experience. During the cooking lessons the young students played many roles from the planning of menus to the food preparation and cleaning up. Through observing English play that involved both children and their parents, our student teachers learned the importance of the time children spent with their parents actively working on a project together. They also learned of the importance of a child-safe and sanitary kitchen.
