Abstract

Iodine is indispensable for the functioning of the organism and the daily recommended amounts of this mineral are crucial for the prevention of a large number of diseases. The available sources of iodine are food, water, as well as dietary iodine supplements. Well-balanced diet, safe and strictly controlled drinking water and consultation with experts about which quantities at certain times reduce the possibility of deficiency, but also the iodine surplus. The legal regulations enabled the successful implementation of iodine prophylaxis in the middle of the XX century, and consequently the reduction of diseases caused by insufficient iodine intake. Today, the problem of raising awareness about the importance of iodine in food is still being addressed to the professional public, especially due to the trend of reducing salt intake in the body for the prevention of cardiovascular diseases.
