Abstract
- The global pork industry produces more than 100 million tons of pork annually and is the most consumed meat animal protein in the world. Pork is raised in North and South America, Asia, Australia, and Europe as a major component of the agriculture economy on those continents. Many factors such as sex, age, body weight, climate, breed, and culture influence pork quality and how it is perceived and consumed.
